Highfield Level 3 Award in Food Safety for Catering (RQF) Qualification Success Story Highfield Learning is delighted to announce that more than 1,000 students have passed the Highfield Level 3 Award in Food Safety for Catering (RQF) qualification since it was launched.

The qualification was developed by Highfield Learning with the support of an expert advisory group, and is a fully accredited course under the Regulated Qualifications Framework (RQF). The qualification is designed to meet and exceed the requirements of the CIEH syllabus, and replaces the previous CIEH level 2 or 3 food safety qualifications.

The new course focuses on providers and managers of catering services, who need to ensure that food is prepared safely. This includes those responsible for preparing hot or cold food in restaurants and cafes, takeaways, bars and pubs as well as caterers providing meals for staff and customers at schools, hospitals or sports clubs.

The course aims to provide learners with a thorough understanding of how to comply with legislation regarding hazard analysis and critical control point (HACCP) principles. It also covers microbiological hazards and the importance of personal hygiene when handling food.

Lee Roper enjoyed working as a chef at Casa Italia Tapas & Cocktail Bar in Taunton, Somerset, but he wasn’t looking to progress in his career. That was until he was given the opportunity to take on greater responsibilities in the kitchen – but only if he could prove he had food safety knowledge.

The restaurant owner, Jim Sayers, knew that Lee would thrive with additional responsibility but first needed him to show that he understood food safety and hygiene practices.

Jim was familiar with Highfield qualifications and so encouraged Lee to do Highfield’s Level 3 Award in Food Safety for Catering (RQF). Lee successfully completed this qualification, which gave him access to more responsibility and broader opportunities.

Lee said: “The course gave me a better understanding of food safety and allowed me to become a senior chef. I now have an increased level of responsibility within the kitchen and it has opened up my options for future job roles. In fact, I am now helping other members of our team complete their own Highfield qualifications.
