The Chef of the Year Award stands as tribute to the culinarian who has surpassed the goals of sharing their expertise and passion, enriching the association in the process. The Associate of the Year Award recognizes an individual or group of individuals from our associate membership whose invaluable wisdom and guidance have elevated both our organization and community. Lastly, the Student Culinarian of the Year Award celebrates the student member who has surpassed the standard curriculum of their culinary school by actively engaging in extracurricular pursuits that enhance their skills and community engagement. The accomplishments of these individuals we celebrate tonight have left an indelible mark on our organization and community. Passing the Torch
Hello Culinary Colleagues, Families, and Friends,
What an amazing year it has been! We successfully launched the inaugural Viva Careers: Discovering Hospitality Pathways, an event close to my heart that encourages students to pursue careers in hospitality by providing key tools like networking, mentorship, workshops, and a new scholarship. This event was made possible by the support of our community and culinary sponsors, for which I am deeply grateful. To continue thriving, we must engage with and develop today’s youth into tomorrow’s colleagues.
I am honored to pass the torch to Chef Darren Walters, who will continue to inspire future generations of culinary professionals. Honoring Darren with the Chef of the Year award has been a long-time coming. He has dedicated countless hours to our chapter as a board member and treasurer for many years, supported our youth through donating private dinners for Chefs for Kids Dinner & Auction, and volunteered at the non-profits Cookin’ Up Breakfast events. I look forward to seeing his accomplishments in the coming year. Welcome, Darren!

Born and bred in the charming countryside of Leicestershire, England, Chef Darren Walters found his culinary spark in his mother’s cozy kitchen. By 16, Darren was already diving into the restaurant scene, starting as a dishwasher and working his way up the culinary ladder. From waiting tables to chopping veggies and perfecting his cooking skills, he soaked up every bit of knowledge about the culinary world. After honing his skills at Southfields College of Further Education and earning top-notch certifications from the London Institute of Culinary Arts, he kicked off his professional journey as a Commis Chef at the Cedars Hotel.
Darren’s culinary adventures didn’t stop there. He spiced up his career by working at some of the finest hotels in the Midlands, including Hinckley Island, Bosworth, Elms, and Barnsdale Country Club, all known for their award-winning restaurants and gourmet delights. But the real twist in his tale came in 1992 when Darren decided to cook his way around the globe on the luxurious SixStar Cruises. As a Chef de Partie, he mastered a myriad of world cuisines in roles like Entremetier, Saucier, Chef in Charge, and Garde Manger. It was on these high seas that he met his wife, Joanne, adding a romantic flavor to his culinary journey.
Bringing his European culinary flair to the United States, Darren dazzled diners at prestigious hotels and casinos, including The Rio, Ameristar, Palazzo, and Stardust. In 2005, he found his culinary home at the South Point Hotel Casino & Spa, working under the guidance of

Executive Chef Christopher Johns. As Assistant Executive Chef, Darren transformed the property into a culinary hotspot, overseeing everything from restaurant operations to banquets and arena services. Leading a team of 300 kitchen and stewarding staff, his dedication earned him multiple Supervisor of the Month awards.
Beyond the bustling hotel kitchens, Darren is a pillar of the culinary community in Las Vegas. Joining the Las Vegas chapter of ACF Chefs in 2016, he served as Treasurer for four years and now remains on the Board. He passionately supports the organization’s charitable efforts. Through Chefs for Kids, Darren has raised thousands of dollars by crafting unforgettable private dinner experiences to be auctioned off to the highest bidder at the organization’s annual Dinner & Auction. He stays sharp with the latest culinary trends and maintains certifications, including the National ServSafe Food Safety Manager and AllerTrain.
When he’s not in the kitchen, Darren loves exploring new restaurants and staying on the cutting edge of the culinary scene. A true sports enthusiast, he’s often found cheering on his beloved Leicester City in the Premier League and rooting for the local Vegas Golden Knights. In 2021, Darren celebrated becoming a U.S. citizen, blending his British roots with his American dreams. With his extensive career and relentless passion, ACF Chefs of Las Vegas can’t wait to see what’s next for Darren as he steps into the spotlight as Chef of the Year.

Joseph Snyder Student Culinarian of the Year
Joseph Snyder, a sophomore at UNLV, is already making waves in the culinary world. His love for cooking began in his childhood, spending countless hours in the kitchen with his grandma and grandpa. During the COVID-19 pandemic, he rekindled his passion for cooking, mastering various techniques and recipes from social media platforms like YouTube and TikTok. He later applied these skills at Lot One in his hometown of Arvada, Colorado, where Executive Chef Patrick Maciula entrusted him with creating his own specials sheet, which sold out!
In addition to attending school to earn his Bachelor of Science degree in Hospitality Management, he is immersing himself in the culinary industry working as a Cook at both Lake Las Vegas Resort and on the UNLV Catering Team. In his first year at UNLV, he has worked events such as: multi-course plated dinners at the Liberace Mansion, private menu events in UNLV’s Hospitality Hall kitchen, three hundred plus guest buffet lines as well as several cocktail hours. He did all of this while maintaining a full course-load, 4.0 GPA, and even earned a spot on the Dean’s list. He also is beginning to leave his legacy on the university by starting the student chapter of the Club Management Association of America.
His hard work has already been recognized by others in the community as he has been awarded the inaugural scholarships from Guy Fieri Foundation, Chefs for Kids, American Hotel & Lodging Association, and the Nat Hart Scholarship Fund at UNLV. ACF Chefs of Las Vegas is proud to acknowledge his extraordinary efforts in his young culinary career by naming him Student of the Year, and looks forward to seeing all the things he will accomplish.

Western Regional Recognitions
ACF San Francisco Chapter established the Antonin Carême Medal in 1969. The award honors individuals, chefs, and gastronomes who have made valuable contributions to the culinary profession, particularly in education and the advancement of gastronomy.

Founded nationwide in 1929, The American Culinary Federation, Inc. is a professional organization for chefs and cooks. Our goal is to promote the professional image of American chefs worldwide through education of culinarians at all levels.
In 1976, ACF forever changed the culinary industry by elevating the position of the executive chef from service status to the professional category in the U.S. Department of Labor’s Dictionary of Official Titles. Since this change, the culinary industry and our organization have grown tremendously.
ACF is now the largest professional chefs’ organization in North America. We are made up of more than 14,000 members belonging to more than 170 chapters in four regions across the U.S.
Today, ACF is the leader in offering educational resources, training, apprenticeship, competitions and programmatic accreditation designed to enhance professional growth for all current and future chefs and pastry chefs.
