          Since Abundant Montana’s early beginnings in 1995, we’ve been committed to connecting Montanans to Montana-grown food, and to the resources–human, animal, and land–that make food possible. Today we’re still making those connections, now through our expanded marketing and media platform.
          In this Local Food Guide you’ll find over 800 listings of purpose-driven food and farming businesses committed to Montana-grown foods. We’ve organized these listings by region and business type, beginning on page 31, along with a helpful map on page 6, making this the ultimate guide to eating locally in Montana. We also have separate sections just for farmers markets (page 8) and local food recipes (page 61). Keep this magazine as a resource as you explore the region where you live or travel around the state. Delicious local food is everywhere!

          Thea, harvesting raspberries at Thunder Road Farm, which she co-owns with husband Bryce Andrews. Located in the heart of the Jocko Valley near Arlee, Montana, Thunder Road Farm specializes in direct-to-consumer sales of all-natural, grass-finished beef and U-Pick berries. Strong community advocates, Thunder Road Farm’s Community Beef Donation Program provides an easy way for customers to participate in reducing hunger and food insecurity in western Montana.
          In our “Grow & Tell” section, beginning on page 14, we share stories of Montana food champions. These include agritourism businesses helping folks make memorable connections to their food through workshops, meals, and play; Native Fish Keepers protecting native Flathead Lake trout; communities helping newcomers feel welcome through food growing; and intergenerational families seeking to ensure that future generations of farmers on their lands continue that familial commitment and connection to the land, whether or not these farmers are related by blood.

Organized for easy reference and designed to be cut out to post on your fridge or take with you when you shop, our Seasonality Guide is a great tool for planning meals with fresh, locally harvested fruits and vegetables.           What you might not know is that another way we are connecting Montanans with their food is by offering promotional and marketing technical assistance services to our food and farm business partners, and helping them make business-to-business connections. Our team, distributed across the state, is made up of local food systems experts who build engagement where they live, and marketing professionals who specialize in communications strategies for food and farm businesses.
          Abundant Montana’s local food table is one that builds authentic, lasting relationships between food buyers and food growers/sellers in a way that adds value for everyone–consumers, producers, and communities–for our common health and sustaining food security.             agritourism: Connecting Us To Our Food
          Bob Thaden, owner of Tongue River Winery in Miles City, Montana, guides a woman as she uses bright orange clippers to cut robust bunches of grapes from vines strung up on wire fences. The woman isn’t an employee of the winery but a Harvest Host guest. She and other guests at the winery experience being a farmer for a day. Tongue River Winery is one of many farming businesses welcoming guests to experience the hands-on work of their business–it’s become known as “agritourism.”
          Agritourism is where agriculture and tourism intersect. Farmers, orchardists, vintners, brewers, and ranchers increasingly recognize that welcoming visitors onto their lands and into their operations benefits everyone.
          For businesses, creative on-farm engagement with the public through tours, harvest parties, U-Picks, demonstration classes, farm-to-table meals, and overnight camping stays, to name a few, enhance and diversify income streams for the farm or ranch, helping them thrive.

        For visitors, agritourism both creates memorable, once-in-a-lifetime experiences and allows for the opportunity to connect tangibly with the sources of our food: the land, water, plants, and animals.
          
    Today, connection to our food’s origins is surprisingly rare for most of us, to the detriment of our health and community food security.
          In the three generations since World War II, our food sources have become centralized, industrialized, chemicalized, and globalized. In Montana, that has meant farm consolidation, surrendering diversity in favor of monocropping, and mainly growing for export into the global supply chain.
          The result? In 1950, about 70% of the food Montanans ate was grown in Montana. By 2006 that number was down to 10%; today, it is 3%.1
          As we saw during the COVID-19 pandemic, importing 97% of our food from the global supply chain puts Montanans at risk when access to that chain gets disrupted. Chemical agriculture has unintentionally harmed soils, wildlife, water, and human health. Farm consolidation has meant the loss of family farms and the rural communities that support them. As these food resources have disappeared, including local butchers, bakers, and dairies, our connection to our food sources has become scarcer.
          The five enterprises profiled here represent a growing number of Montana farms and ranches reversing the trend of growing big for export.           What if you were told that, globally, 1.3 billion tons of gold is thrown out and buried deep in the earth each year,

          You might think, “Why is that happening? Why would we allow such a valuable resource to be wasted? What can we do to ensure it doesn’t happen in the future?”
          Literal gold isn’t being buried in the earth, but another type of gold is: food scraps.
          According to Feeding America, nearly 40% of all food in the U.S. is wasted, 2 most of which goes to the landfill with the rest of our garbage. Food scraps are full of valuable nutrients, and instead of burying this veritable gold, we could harness its power through composting to fertilize our soil and help grow even more food.
          
    Speaking to Montana composting companies revealed that a large part of their jobs is educating consumers about their role in the food system. Alissa La Chance, owner of Dirt Rich Composting in Columbia Falls, said, “Everyone consumes food, and yet most people would say they’re not part of food production or the food cycle.”

          However, organisms that break down food can’t survive in landfills because they need oxygen, which isn’t available in tightly packed spaces like landfills.
          Ryan Green, co-owner of Happy Trash Can Curbside Composting, explained, “Without oxygen, it takes food scraps hundreds of years to decompose, during which they produce methane gas, a greenhouse gas that is 30 to 60 times more environmentally harmful than carbon dioxide.”
          Composting is an aerobic process (meaning it needs oxygen) that converts food scraps and other organic materials (such as twigs, grass clippings, leaves, etc.) into a nutrient-rich soil amendment through natural decomposition.
          Rather than producing toxic methane, composting closes the food production loop by returning the nutrients and organic matter from the food scraps to the soil, where they can grow food once again.
          When our food scraps are thrown away and taken to the landfill, this system becomes a straight line that starts at the farm and ends at the landfill. When food scraps are instead recovered, turned into compost,

          Buying local filets gives Flathead Lake’s native fish a fighting chance.
          Cold water dripped back into Montana’s largest natural lake as nets full of silvery, shining trout slid into the boat. Beneath the towering Mission Mountains, the Confederated Salish and Kootenai Tribes harvest non-native lake trout from Flathead Lake to aid the fish that have supported them for generations.

        Native Fish Keepers, a tribally run, not-for-profit corporation, is commercially netting adult lake trout and selling the filets to support their ongoing efforts. By reducing the population of lake trout, the tribes are not only restoring native fish to healthy numbers but also restoring ecological integrity and the tribes’ critical natural heritage.
          “This is a mitigation program first and a business second,” said Lynn DuCharme, who manages education and marketing efforts for Native Fish Keepers. “We’re excited about making a difference in the lake.”
          In 1905, lake trout were introduced into Flathead Lake to create a sports fishery. Unfortunately, these large fish prey on and suppress the native species in the watershed, including native bull trout and westslope cutthroat trout. According to DuCharme, “both species are important culturally and spiritually to the tribes.”
          There are more Salish place names in western Montana describing bull trout than any other plant or animal, reflecting this fish’s importance to native tribes.
          Bull trout populations are declining at a rate where many experts believe they could vanish from Flathead Lake by the end of the century. Since 1998 they’ve been listed as “threatened” under the Endangered Species Act. Furthermore, westslope cutthroat trout have decreased by roughly two-thirds since monitoring began in 1981.3

          To catch the lake trout, the tribes set nets in the lake’s deep waters–similar to how fishermen harvest salmon in the Pacific Ocean. They are carefully placed in specific areas and depths to improve the odds of only catching lake trout. When checking the nets, the fish are quickly removed and placed on ice before being transported to an onshore processing facility owned and managed by the tribes.
          The program is expensive; it requires multiple boats, extensive fishing gear, and nearly two dozen tribal personnel. Most importantly, it must go on perpetually since the Native Fishkeepers cannot remove lake trout from the watershed entirely.
          Though proceeds from the sale of fish will never wholly offset costs, all sales funnel back into the operation, and purchases of their filets will continue to support ongoing native trout conservation.
          
    Native Fish Keepers supply approximately 20,000 pounds of fish annually to food banks, restaurants, and grocery stores across the state. “The response from customers has been phenomenal,” said DuCharme. “Demand exceeds supply.”
          When purchasing their products from local retailers or restaurants, you support the conservation of native bull trout and westslope cutthroat trout in the Flathead watershed and the communities that rely on them.

            Putting Down Roots
          Missoula Nonprofit Facilitates Space to Grow in a New Country

        As the sun dips below the mountains, a woman slips off her shoes and kneels barefoot in the dirt. Despite having spent her day caring for others, she now gives her attention to the tiny plants before her–once precious seeds from her home country. Like the seeds, she is learning to thrive in a new environment. As she attends to the needs of her garden, the garden, in turn, takes care of her. Beyond simply food, the garden provides her joy, confidence, and purpose.
          Interacting with the land and growing our own food strongly ties us to the places we live. This is also true for many refugees and immigrants. Farming shaped their food practices and deeply connected them to the land they lived on, but forced departure from their countries jeopardized this bond. Soft Landing Missoula, a community-based nonprofit, partners with Garden City Harvest, Tower Gardens Community Garden at FARM, Seedlings 4 Solidarity, and the Community Food and Agriculture Coalition to facilitate the supply of sponsored garden plots to refugee and immigrant growers. This program allows them to preserve a connection to their homeland through farming while putting down roots in their new country and increasing their confidence and autonomy.
          “The garden, and growing, has proven to be this nostalgic, happy space for them,” remarked Greta Bates, Director of Community Partnerships and Client Engagement for Soft Landing Missoula.
          
    
    “It gives them a sense of place. A little bit of familiarity. Something they know…A lot of things are so foreign when they come here, but having access to land, dirt, and soil is something they are very familiar with, and they’re confident in.”
          Emily Kern Swaffer, Community Gardens Director at Garden City Harvest, echos Greta’s thoughts, adding further benefits,
          “I think just having that piece of land to tend, care for, visit, and get you out of the house has immense positive impacts on people’s overall quality of life, but especially mental [and] emotional health, and physical activity.”

            What comes next?
          As more of Montana’s farmers approach retirement age, the future of the family farm requires careful planning.
          “The farm, once the work of parents, grandparents, and great grandparents, and the dream of so many who came before, is itself like an old, immortal relative. . . It has, and it will endure beyond the time of its current steward or their successors,” opens Megan Torgerson on an episode of her narrative podcast, Reframing Rural, during which she deep dives into the succession of her family’s farm.
          While returning home to her family’s wheat farm in Dagmar, located in far northeastern Montana, for her father’s final season before retirement, she asks, “what happens in the transitional space between the farm’s present caretaker and the next? Who will step in and nurture the land, come flood or come drought? What happens to my dad and our family’s identity when he’s not farming anymore?”
          Questions like these are cropping up across the state as the average age of Montana’s farmers approaches 60. Agricultural land is changing ownership at an astronomical rate–some foreseen and planned for, and others at the whim of the market.
          According to Elyse Caiazzo, a masters student studying methods of farm succession at the University of Montana, an important goal for many Montana farm and ranch families is transferring land and business to the next generation. The process is challenging because it includes a complex web of economic, legal, and familial decisions. However, if the transfer and succession processes never begin, serious problems can arise for both the younger and older generations.

          Elyse wants families to understand that it’s never too early to start planning, that the process won’t be linear, and that everyone’s situation is unique. Her advice to farmers and ranchers approaching this process is to “carve out a little bit of time every year” to start working on a strategy. It’s not something that solidifies overnight, and it’s worth making the initial structure flexible so that the plan can “shift as life shifts.”
          On the opposite side of Montana, a different farmland succession model is employed in Missoula that doesn’t involve inheritance or family relations for a handful of productive acres within city limits.
          
    Corner Farm Village, a locally owned and operated company, aims to build farm resiliency and financial sustainability for the next generation of farmers through community participation and by transferring farmland to a community land trust. The land trust will permanently protect prime agricultural land, and Corner Farm Village will provide qualified farmers with long-term, affordable leases to keep agriculture accessible in the city.
          This model is emerging to address what the National Young Farmers Coalition has found to be the number one challenge young farmers and ranchers face today: land access. Because the average value of an acre of land in Montana has increased by over 10% this decade, access to land has become a limiting factor for the next generation of farmers. A
          community land trust is well positioned to face this challenge by leasing, rather than selling, land on the open market to new farmers.
          While placing land in a trust may be attractive to some farmers, there may be better choices for some. The Torgersons, back in Dagmar, spent years solidifying their goals and agreed they wanted to keep the land in production. Planning for this change has been an intentional, multi-year journey.
          In her podcast, Megan’s father, Russ Torgerson, shares, “I’ve spent my whole life putting it together, and I don’t want to dwindle it away. I want to give whoever an opportunity to carry it forward if they would want to.”
          While planning for the farm’s future has been emotional and complex, Megan and her two sisters want the farm’s legacy to continue. The Torgersons used a framework provided by the Montana State University Extension that guided them to develop a series of answers for how they wanted the land managed when the sisters became joint owners; they decided not to farm the land but made a long-term plan to lease the pastures and cropland to a cousin.
          “I hope that at least being aware of the weight of this momentous change will incentivize me to keep the connection going into the future,” Megan says near the end of her episode. “And, for now, at least my family has a reason to get together and plan for something as precious as a farm.”

    Ivan & Chia Thrane Awarded Jane Kile Memorial Scholarship

          In late February, Red Lodge, MT was under two feet of snow and experiencing yet another wave of sub-zero temperatures. Chia and Ivan Thrane, the owners of Healthy Meadows, a family ranch in the hills above town, were busy ensuring their 200 breeding goats were staying warm and getting enough hay. “It feels somewhat like the Vikings when they settled in Greenland,” joked Ivan, warming up in front of a wood stove.
          The Thranes manage a herd of Montana-hardy meat and milk goats they use for targeted grazing and weed management. As approved grazing contractors in Carbon County, Chia, Ivan, and their herd of goats offer weed management services for local landowners, practicing rotational grazing with the goal of having a positive impact on the land. Their goats not only help keep invasives in check without using herbicides, but they also help fertilize pastures, promoting microorganisms that contribute to improved soil health.
          Healthy Meadows was the 2022 recipient of AERO’s Jane Kile Memorial Scholarship. Supported by an endowment made in honor of early AERO member Jane Kile, a conservationist and pioneer in Montana’s organic and communitysupported agriculture movements, the scholarship awards funding for projects aimed at furthering sustainability efforts and resiliency in the state. The Thranes used the $600 award to purchase a meat grinder for their expanding butchering facility, which they use for processing their own meat and offering workshops on holistic butchering.
          “During a time of uncertain and unreliable meat processing facilities in our region and our country, we see the ability to process our own meat as a source of resiliency for not just ourselves,” says Chia. “Part of our vision is to have this space be a resource for neighbors and community members.”
          Ivan and Chia host an annual two-day Holistic Goat Butchering Workshop, offering participants
          
    a chance to reclaim the tradition of home butchery. Through the course, participants learn best practices for processing small ruminants with minimal waste and spend time with the herd, exploring the animal in its context as a part of a healthy ecosystem. After processing the meat, the class prepares a meal together using in-season ingredients.
          “Holistic butchering fills a need in our region to educate about regenerative agriculture, to empower people with the knowledge and skills involved in harvesting and butchering, and we hope it can also be part of growing a local culture that celebrates the caretaking of a place and eating well,” explains Chia.
          The Thranes envision building a larger facility and growing their capacity to host more workshops. Knowledge-sharing and learning are core values of their business. Ivan and Chia invite visitors to deepen their connection with nature by participating in place-based workshops, children’s summer camps, and guided hikes. Through these offerings, and by engaging their neighbors in their weed management practices, Ivan and Chia are excited about fostering ‘ecological literacy’ in their community and sharing traditional agrarian skills that support reciprocal relationships between people, animals, and landscapes.
          “Often [in the West] our land use doesn’t reflect the practices to optimize land health,” says Chia. “We love that our work promotes awareness in our community of natural land management, as well as encouragement to connect and engage with wildlife, livestock, and the natural world.” Learn more about

        Herb Whipped Goat Cheese with Marinated Tomatoes
          
    Servings: 8
          Vegetarian
          GOAT CHEESE INGREDIENTS
          6 oz plain goat cheese
          ½ cup plain greek yogurt
          1 ½ cups fresh herbs, packed (we used basil and mint)
          2 Tbsp olive oil
          2 Tbsp maple syrup or honey
          1 Tbsp lemon juice
          1-2 Tbsp water (as needed)
          Pinch of salt
          Bread or crackers of choice
          MARINATED TOMATOES
          1 pint cherry tomatoes, halved
          1 Tbsp olive oil
          1 tsp lemon juice
          1 clove garlic, minced
          Pinch of salt and pepper
          INSTRUCTIONS
          Toss all of the tomato ingredients in a medium bowl. Set aside to let marinate while you prepare the goat cheese.
          In a food processor or blender, add all of the goat cheese ingredients except for the water and blend. If the mixture is too thick, slowly add water – a tablespoon at a time – and blend until desired consistency is achieved.
          Transfer the herb whipped goat cheese to a bowl and top with the marinated tomatoes. Serve with toasted bread or crackers and enjoy!

            Street Corn Tacos
          
    INGREDIENTS
          2 lbs boneless chicken, seasoned (breast or thighs)
          Tortillas
          Avocado, optional
          SPICY AIOLI
          ½ cup mayonnaise, homemade or store-bought
          1 Tbsp sriracha
          1 Tbsp lime juice
          SWEET STREET CORN
          2 cups sweet corn (about 3-4 ears of corn)
          ½ Tbsp butter or oil
          ½ cup chopped herbs, cilantro and green onions
          1 Tbsp lime juice
          1 small jalapeño pepper, deseeded and diced
          ¼ cup cotija cheese or queso fresco
          Salt to taste
          INSTRUCTIONS
          Servings: 4-6
          Gluten Free
          Season the chicken with your favorite taco seasonings and cook on a 400°F grill, flipping halfway through, until an internal temperature of 165°F is reached.
          While the chicken is on the grill, remove the husks and silk from the corn. Carefully cut the corn off the cob as close to the cob as possible. Heat a large skillet over medium heat. Melt the butter or oil in the pan and add the corn. Season with salt and pepper. Cook for 7-10 minutes or until corn is sweet and tender.
          Combine the sautéed corn, chopped herbs, lime juice, jalapeño, and cotija cheese in a bowl. Sprinkle with salt to taste and toss it all together.
          For the aioli, combine the mayo, sriracha, and lime juice in a small bowl. Mix until smooth.
          Toast the tortillas on the grill for a minute on each side and slice the chicken. To assemble the tacos, spread a bit of the aioli on the tortilla first and layer the chicken and street corn on top. Sprinkle with more cheese.

            Summer Steak Salad
          Servings: 4-6
          SALAD INGREDIENTS
          15-20 oz spring mix
          ¼ cup red onions, sliced
          1 cup roasted beets
          1 cup strawberries
          1 cup goat cheese or feta
          1-2 lbs top sirloin, Denver, flank, or flat iron steak
          DRESSING
          ⅛ red onion, chopped
          ¼ cup rice vinegar
          ⅓ cup oil, olive or avocado
          ¼ cup honey or sugar
          1 tsp salt
          ¼ tsp ground mustard
          INSTRUCTIONS
          To make the dressing, blend together all the ingredients and let chill in the refrigerator.
          Cut your beets into cubes and roast in olive oil in a pan. While your beets are cooking, slice your strawberries. Set both aside.
          Either grill or pan fry your steak. Cook until the internal temp reads 125℉ for rare, 135℉ for medium, or 145℉ for well done.
          Remove steak from heat source and place on a plate or cutting board. Cover with foil and let rest for 5-10 minutes. After it has rested, slice thinly against the grain of the meat and set aside.
          To assemble the salad, lay the spring mix on a large platter. Top with red onion, beets, strawberries, and cheese. Drizzle the dressing across the top. Lay slices of steak over the top of the whole salad. Serve and enjoy!
          
    VARIATIONS
          For a more savory salad, omit the strawberries or reduce the amount of honey used in the dressing.
          For a sweeter salad, omit the beets and add more strawberries.

          1 small sugar pumpkin
          (1 ½ cups pumpkin purée)
          1 ¾ cups flour
          1 tsp baking soda
          2 tsp ground cinnamon + extra for sprinkling
          ½ tsp nutmeg
          ¼ tsp ground ginger
          ¾ tsp salt
          2 large eggs
          ½ cup vegetable oil
          1 ½ tsp vanilla extract
          ½ cup granulated sugar
          ½ cup brown sugar
          ¼ cup freshly squeezed orange juice
          1 tsp orange zest
          CRUMB TOPPING
          ½ cup flour
          ½ cup brown sugar
          1 tsp ground cinnamon
          4 Tbsp unsalted butter, melted
          
              
              
            
            Pumpkin Bread with Crumb Topping
          
    INSTRUCTIONS
          Cut the pumpkin in half lengthwise. Using a large metal spoon, scoop out the seeds and strings. Sprinkle a little cinnamon over the insides and place them flesh-side down on a baking sheet greased with butter.
          Roast the halves at 400°F in the oven for 45-50 minutes or until easily pierced with a knife. Let the halves cool face-down on the baking sheet. Scoop out the flesh and mash with a potato masher or fork. Set aside 1 ½ cups pumpkin purée for this recipe.
          Preheat the oven to 350°F. Grease a 9x5 loaf pan.
          Prepare the crumb topping by stirring the flour, sugar, cinnamon, and butter until you get a texture resembling small pebbles. Set aside.
          To prepare the batter, combine the flour, baking soda, cinnamon, nutmeg, ground ginger, and salt in a bowl.
          In a separate bowl, whisk together the eggs, oil, pumpkin purée, and vanilla extract. Add granulated sugar, brown sugar, orange juice, and orange zest. Add the dry ingredients to the wet ingredients and, using a large spoon or spatula, stir until just combined. Pour the batter into the prepared loaf pan.
          Spread an even layer of the crumb topping over the loaf. Bake in the center of the oven for 45 minutes to an hour, or until a knife inserted into the center comes out clean. Cool completely before removing it from the pan. Slice, top with butter, and enjoy!

          Preheat oven to 400°F. Grease baking sheet with oil and set aside.
          Add the walnuts and rolled oats to a food processor.* Pulse until a coarse meal is formed. Add in the shredded beets, pinto beans, soy sauce, worcestershire sauce, garlic powder, cumin, chili powder, and paprika. Process until well combined but some texture remains. Use a spatula to scrape the sides of the processor as needed. Using your hands, press the mixture to make sure it holds together. If the mixture is too dry, add a small amount of water. If the mixture is too wet, add more oats.
          Form the burger patties using a ½ cup scoop and place on the greased baking sheet. Use your hands to flatten and shape the patties to your desired thickness.
          Bake in the middle of your oven for 30-40 minutes, flipping halfway through cooking time. Let the patties rest and cool for a few minutes before removing them from the baking sheet.
          While the burgers are in the oven, prepare the sriracha mayo by adding the mayonnaise, lime juice, and sriracha to a small bowl and mixing until well combined. Serve the burgers with your favorite buns and toppings.
          * Optional: Use a mortar and pestle to grind the walnuts and oats into a coarse meal. Add to a bowl with remaining ingredients and mash with a potato masher until well combined.

            Garlic Confit
          
    Vegetarian
          INGREDIENTS
          4-5 heads of garlic, cloves peeled (about 1 ½ cups)
          1 ¼ cups extra virgin olive oil
          A few sprigs of fresh rosemary and thyme (optional)
          Pinch red pepper flakes
          INSTRUCTIONS
          Preheat the oven to 250°F.
          Add the peeled garlic cloves to a small baking dish. Add the olive oil, adding more as needed to fully cover the cloves. Add in fresh herbs and red pepper flakes.
          Bake in the oven for an hour or until the garlic cloves are golden and soft.
          Allow the garlic to cool. Using a slotted spoon, transfer the garlic and then the oil to an airtight jar. Store in the refrigerator for 2-3 weeks. It’s normal for the garlic confit to solidify in the fridge. It will become liquid again when returned to room temperature.
          Enjoy with everything – pasta, soup, sandwiches, salad dressings, eggs, potatoes! The possibilities are endless.
          
              
              
            
            Parsnip & Potato Gratin
          
    Servings: 6 Vegetarian, Gluten Free
          INGREDIENTS
          1 ½ lbs large parsnips
          1 lb yukon gold potatoes
          1 ½ cups heavy cream (do not substitute milk or the sauce will be runny)
          ¼ tsp nutmeg
          1 Tbsp fresh thyme, sage, or both
          1 Tbsp flour
          4 cloves garlic, minced
          8 oz shredded gruyere or swiss cheese
          1 ½ tsp salt
          Freshly ground pepper
          INSTRUCTIONS
          Preheat the oven to 400°F.
          Peel the parsnips and potatoes and, using a mandolin or knife, slice them about ⅛ inch thick. Toss the slices together.
          Grease a 9-inch oval (or 8x8-inch) baking dish with oil or butter.
          Add a layer of parsnips and potatoes to the bottom of the dish. Top with about a quarter of the cheese and a pinch of fresh herbs. Continue layering until all the vegetables have been added, making sure to reserve some shredded cheese for the top layer. In a small saucepan over medium heat, warm the heavy cream. Whisk in the flour, garlic, nutmeg, salt, and pepper. When the mixture begins to simmer, remove it from the heat and pour it over the vegetables. Tilt the baking dish to make sure the sauce is evenly distributed. Sprinkle the top with the remaining shredded cheese.
          Cover with foil and bake for 40 minutes until the parsnips are fork-tender. (If your gratin is filled to the top of your pan, grease the foil inside so the cheese does not stick to it when baking). After 40 minutes, remove the foil and bake uncovered for another 10-15 minutes, or until the cheese is golden brown.
          Rest the gratin for 15 minutes before serving to allow the sauce to thicken and set.

          MONTANA LENTIL HUMMUS
          INGREDIENTS:
          227 grams (½ lb) crimson lentils
          
    590 grams (2 ½ cups) water
          1 ½ tsp salt
          1 garlic clove, whole
          30 grams (¼ cup) tahini paste
          3 Tbsp (about 1 lemon) lemon juice
          27 grams (4 Tbsp) olive oil
          DIRECTIONS:
          Combine the lentils, water, salt, and garlic clove into a medium-sized saucepan, and bring to a boil over medium-high heat.
          Once the lentils come to a boil, reduce the heat to a simmer and cook for 15-20 minutes, until the lentils are very soft and start to fall apart.

    In a blender, combine the lentils with the remaining cooking liquid, boiled garlic, tahini paste, lemon juice, and olive oil. Blend until smooth. The hot blended lentils will seem very loose and soft, this is ideal. Once slightly cooled, the hummus will firm up to the desired consistency.
          Taste for seasoning and adjust as needed.

            Spring Vegetable Fried Rice
          
    Servings: 4
          Vegetarian, Dairy Free, Gluten Free (optional)
          INGREDIENTS
          4 cups cooked and cooled rice* (see notes)
          2 ½ cups diced spring vegetables (carrots, spring onion, asparagus, peas, broccolini)
          2 cups chopped spring greens (bok choy, kale, spinach, chard)
          3 cloves minced garlic
          2 tsp neutral vegetable oil
          4 Tbsp low-sodium soy sauce or tamari
          2 Tbsp rice wine vinegar
          1 Tbsp sesame oil
          4 eggs, or 1 per person (optional)
          Green onions for serving
          INSTRUCTIONS
          This recipe comes together quickly so make sure all your vegetables and greens are prepped before starting to cook.
          In a small bowl, combine the tamari or soy sauce, rice wine vinegar, and sesame oil and set aside.
          In a large skillet, heat 2 tsp of neutral oil over medium high heat. Wait until the pan is hot and add your hearty vegetables (onions & carrots). Give them a quick toss and let them cook for about 4 minutes, stirring
          
              
              
            
            Strawberry Agua Fresca
          
    Servings: 4
          Vegan, Gluten Free, Dairy Free
          INGREDIENTS
          3 cups fresh strawberries (about 1 lb)
          1 Tbsp sugar
          ½ lime, juiced
          2 ½ cups water
          INSTRUCTIONS
          occasionally until they start to caramelize.
          Stir in the remaining diced vegetables (asparagus, peas, broccolini, etc.) and cook for 3 more minutes or until tender. Stir in the minced garlic and chopped greens and cook until greens start to reduce in size.
          Add the cooked rice and your tamari sauce mixture to the skillet and mix until the sauce is fully incorporated. Cook for 3-5 more minutes or until the fried rice is cooked to your liking. Turn off heat and set aside.
          Serve with sunny side up eggs (optional): In another skillet, heat a little bit of oil over medium heat. Once the pan is hot, crack your eggs into the skillet. Cover with a lid and let cook for 3 minutes or until your egg white is set. Remove from the pan and season with a little salt and pepper.
          Divide rice among bowls. Top with a fried egg and sliced green onions. Enjoy!
          *Notes: Day old rice works best here. If you start with fresh, warm rice, your fried rice will turn out mushy. If you don’t have time to prepare a day ahead, cook and cool your rice in the fridge for at least an hour to dry it out.
          You can use any rice you have on hand for this recipe: jasmine, long-grain, white, brown, or farro – they all work great.
          Rinse and roughly dice the strawberries. Add them to a large blender with the sugar, lime juice, and water. Blend until the mixture is completely smooth.
          Taste, and if you prefer it sweeter, add more sugar and blend again.
          Serve immediately over ice. Garnish with a lime wheel and enjoy!
          Notes: For a seedless drink, strain the mixture through a fine-mesh sieve into a small pitcher. Excess can be stored in an air-tight container in the fridge for up to 3 days.
