Last but not least, it goes without saying last month’s news of Episcopal Priest Israel Ahimbisibwe, his wife, Dorcus, and their five-year-old son, Jay, was horrific. Jay attended Bunker Hill Elementary, so seeing the news crews in our neighborhood really brought the tragedy to close to home. It is unthinkable and most tragic. Eat Mor Chikin! Greg Kubala Brings to Memorial

W

hen Greg Kubala says chicken is his life, he means it. Since he was a teenager, Kubala has been devoted to Chick-fil-A, the Atlanta-based fast food restaurant that has become a cultural icon since it was founded in 1946, and he now runs one of the newest additions to the chain, which opened in the Memorial area in late February. 12

Kubala’s restaurant joins 59 other locations in the Greater Houston area and is the first stand-alone Chick-fil-A in the Memorial area. Found at Memorial and Dairy Ashford, this location features the chain’s traditional interior and kitchen design that allows team members to quickly serve customers who dine in, drive-through or request catered orders for larger off-site events. This location will also have a multipoint drive-through, which is two lanes that will lead into one lane. “This is great because we’ll be able to serve customers accordingly,” said Kubala, the branch’s franchised restaurant operator. “And this isn’t meant to rush the customer but to better organize and maximize our service.” If that’s one thing Chick-fil-A is about, it’s quality service that Kubala knows first-hand because he’s been with the chain for nearly 28 years. Kubala planted his roots into the company when he was growing up in Baytown, Texas, which had a Chick-fil-A in its San Jancinto Mall. The operator of that restaurant lived down the street from the Kubalas and already had Kubala’s older brother Brent as a team member. “Mr. Nelson asked me if I’d like to come aboard as a team member,” Kubala said. And the rest, as they say, is history. Kubala, now 41, has come a long way from being the eager 14-year-old boy who cleaned the restaurant on Saturday afternoons to now opening and operating branches around Texas. Throughout high school, he worked as a team member for Chick-fil-A and even went to grand openings across the country with his brother. Texas, Oregon, Georgia, Louisiana, it didn’t matter. If there was a grand opening, chances were Kubala was there. Even when he decided to further his education in college at Texas A&M, where he majored in Agribusiness, he worked for the company. “When I was in college, my brother was an interim manager in Salt Lake City, Utah, and I helped him a bit

The following year in 1995, Kubala also became an interim manager in Utah before returning to college, where he graduated in 1997. Afterward, Kubala immersed himself into Chick-fil-A becoming an operator and taking over a Chick-fil-A in Grapevine, Texas in 1998, the first one west of the Mississippi River. For his work there, he earned the 1999 Symbol of Success, the restaurant’s highest award given for achieving aggressive sales goals over the previous year. He was also named Rookie of the Year, and he then followed up in 2000 by again being honored with the Symbol of Success.

Focused on Community That same year, Kubala opened a new location in Southlake, Texas, where he became heavily involved with the community, specifically with local school districts. “I had 32 schools that we sold to and partnered with,” he said. “We sold sandwiches in the cafeteria line, partnered with bands, cheerleaders, the debate teams ... that was a fun ride.” In 2002, Kubala returned to Houston and opened the Chick-fil-A at Westheimer and Kirkwood, where he continued the tradition of connecting with the local school community, but this time, he also developed corporate connections. “That location was heavily involved with corporate catering in the Energy Corridor and Westchase,” he said. At that location, Kubala was able to put Chick-fil-A’s “Second Mile Service” into action. This kind of service focuses on two aspects: the product and the customer. “That ‘first mile’ is about how well we take care of our product,” Kubala said,

explaining that means how clean and inviting the restaurant is, as well as the quality of taste of any of the menu items. The ‘second mile’ of the service is what most customers rave about, however. This is how we connect to our customers,” Kubala said, explaining that in his eyes, customers are not just dollar signs. They are people looking for a pleasant dining experience who deserve respect and hospitality. “We like to emotionally connect with our customers, whether that’s inside the restaurant, in the drive-through or even if they’re just picking up food.” At each of the locations he’s opened, Kubala has experienced the importance of community connections, and by using key leaders at his restaurant, he’s been able to foster strong community ties. “I have a leader for the drive-

through, a leader who takes care of customer satisfaction, another for the facilities and leaders for marketing and catering,” Kubala explained. “Through them, we’ve been able to stay involved with the school and the community.” From school spirit nights — when the restaurant will donate 10 percent of that day’s proceeds to a school — or becoming involved with special events like ProGrad to catering for corporation events, Chick-fil-A consistently demonstrates its support of the community. Kubala, who will be moving to the Memorial area soon with his family, said he looks forward to bringing that same exceptional service to the Memorial area. “That’s my goal, to work with the community and be a partner,” he said.

A Chain with Values Not only does Kubala’s older brother operate a Chick-fil-A in Sugar Land, his brother’s sister-in-law, Cynthia Whitley, operates one in Katy, and Kubala’s dad runs one in Missouri City. Not to mention, Kubala also met his wife, Laura, through Chick-fil-A when she was the marketing director for Kubala’s brother and dad. “I come from a family of chicken,” Kubala said with a laugh, adding that he’s not sure if his three sons, Carter, Chase and Cole, will follow in his footsteps.

“Chick-fil-A is just a great place to work,” he said. “And I’ll tell you why, because this company knows the key to growing, to being successful and is not about the almighty dollar. It’s about service to one another and keeping to the standards and values this business is known for.” Chick-fil-A was one of six organizations to win a Management Excellence Award from Foodservice Equipment Reports magazine, which recognizes excellence in the management of unit and facilities development, design, equipment and supplies purchasing and maintenance functions in commercial and non-commercial foodservice operations. In 2014, the chain was given the inaugural HALO Award for its healthy menu innovations, and it was the only restaurant named to 24/7 Wall Street’s 2014 Customer Service Hall of Fame after a survey of 2,500 adults were asked about the quality of customer service at 150 of America’s best-known companies across 15 industries. Chick-fil-A ranked fourth amongst other brands, including highly-rated companies such as Amazon, Hilton, Marriott and Apple. “That’s why people are pleased with our service,” Kubala said. “When we hire people, we look at the confidence of that person, their character and how well they work with the team.” The chain also helps its employees with their educational endeavors through its scholarship program. Since founder Truett Cathy established the first scholarship program in 1973, Chick-fil-A has earmarked a portion of its proceeds to give back to its team members in the form of college scholarships. Over the past 40 years, Chick-fil-A has provided more than $30 million in Leadership Scholarships to more than 30,000 restaurant team members — including Kubala — who have attended more than 3,100 colleges, universities and other educational institutions. “Chick-fil-A gave me a great opportunity,” Kubala said. “I’ve had a great past, and I’m looking forward to a great future here in Memorial.” Kubala’s new Chick-fil-A is located at Dairy Ashford and Memorial at 753 Dairy Ashford Road. And as the Chick-fil-A cow would say, “Memorial, eat mor chikin!”

Championship Goat Milking

T

here is a big difference in milking a goat and milking a cow. With a goat, you gently squeeze the milk out, and with a cow, you push the milk into the pail. I tell my pals that I am not just a little farm girl. As a goat milker, I am a genius! At least, I thought I was when I won the World’s Celebrity Championship Goat Milking Competition at the Houston Livestock Show and RodeoTM for at least three years in a row. The officials even tried to give me a billy goat once so I wouldn’t win. I do know you can’t milk a male goat, so that little scheme didn’t work. I was riding high, but that was before I competed with Dana Tyson, the voice you hear on Sunny 99.1 Radio every morning. That sweet thang is a competitor, and she absolutely puts me to shame. She puts everyone to shame every year at the Celebrity Goat Milking Competition. She wins consistently, and not by a drop or two. She wins by a bucket! She even has a group of fans who come each year to cheer her on. I don’t know what her goat milking secret is, but here is how she told it. “Jan, it started out as beginner’s luck! I have no talent, just heart! For me, I need to bond with this precious mama. I nursed five kids – ahem – so I get it. I always get nervous, but like Katy Perry preparing for the Super Bowl Halftime

Dana Tyson making friends with her goat before the 2013 competition. performance, I turn those nerves into adrenaline! “I had a temperamental goat one year, which caused us to have a ‘milkoff’ after my goat kicked over a full bucket of milk. Although my fingers no longer moved, I still won. Actually, the goat will usually do her thing. I just have to make sure the wonderful 4-H volunteer holds that bucket no matter what!” It takes two to tango, and at the Celebrity Goat Milking Competition, the milker doesn’t get to meet the goat until a few minutes before the milking begins. It doesn’t give much time for that precious bonding. I have had a few unruly

goats who didn’t like me at first sight. They wouldn’t give me a drop of milk even if I bribed them with extra feed. My one “no-no” in milking is don’t pull on the teat and be aggressive. It hurts the goat, and she will turn around and hurt the milker! Worst of all, she will kick over the bucket of milk the milker worked so hard to get. It takes patience, perseverance and a willing and lactating participant to be the expert goat milker you want to be. In the beginning, it can “get your goat,” but eventually, a full pail of milk will be your reward. What is the goat’s reward? A nice scratch under her chinny-chin-chin is all she wants for a job well done. Tyson is a five-time Celebrity Goat Milking Champion at the Houston Livestock Show and Rodeo. This year, she competes for number six. She is already warming those hands and getting mentally prepared. Tyson said, “To prepare mentally, I get new boots! Also, I have heard that I am the odds-on favorite in Vegas, and that helps!” Personally, I have hung up my goat milking boots for now, because I can’t beat Tyson. She also beat me in the Turkey Carving Contest for the Star of Hope. Let’s face it. She truly is a winner!

Are you ready, readers? Aye, aye, reviewer! I can’t hear you! Aye, aye, reviewer! Ooooooooooh Who lives in a pineapple under the sea? SpongeBob SquarePants! A marketer’s dream of a cash grab is he! SpongeBob SquarePants! If nautical nonsense be something you wish, SpongeBob SquarePants! Then this unmemorable feature is a perfect dish! SpongeBob SquarePants! Ready? SpongeBob SquarePants, SpongeBob SquarePants, SpongeBob SquarePants SpongeBob SquarePants! Ha, ha, ha!

As the Bikini Bottom version of the Avengers, all have odd and amusing skill sets, where they each conveniently find their way to stopping the bad guy and turning everything back to normal by the time the credits roll. Watching the review in a theater filled with children, including one of my own, had me braced for raucous laughter. The theater was relatively quiet. Sure, everyone applauded at the end, but I wondered if it was for the craftsmanship or for the brief duration of the film. As an adult, I think one of the best parts of SpongeBob is the nods above the heads of their main demographic — stray comments crafted to keep the older set engaged. Will kids like it? Sure. Will you enjoy sitting through it? Probably not. There just isn’t enough for adults to enjoy over the full 92 minutes of the film. Of course, this wasn’t written for adults. It was written for college-aged kids in between bouts of the munchies and for young kids. If you are in those subsets, you will find reasons to enjoy the film — and there are moments to enjoy. Unfortunately, these moments are just too few and far between. This is a typical show from the series slightly dressed up to rob you of your gold. No wonder the main villain is a pirate. Arghhhhhh!

he laughter is not from the audience. Instead, it comes from the Nickelodeon executives who decided it was time to roll SpongeBob SquarePants

back to the big screen to improve bonuses this year. For fans of the series, of which I am one, there is a similar ring to the story as Bob’s arch nemesis Plankton is back, and as always, he is trying to steal the famous formula for Krabby Patties, the apparent addiction of choice for the residents of Bikini Bottom. The recipe mysteriously disappears, and their home rapidly turns into an apocalyptic mess. For the uninitiated, if neither of those sentences makes sense, don’t worry — neither does the movie. Of course, that is a part of the charm of SpongeBob. The bottom line is that Sponge and his team have to go to the surface to find and return with the recipe. If you had seen the film preview or any of the advance marketing, you would have thought the movie was a three-dimensional SpongeBob adjusting to life in our world, a sponge out of water story, so to speak. Instead, it takes an hour just to get to the surface, and unfortunately, not much is done with the 3-D world. Instead, the executives cash in on trends, with Sponge and his team being granted

Area Students Selected to Perform in Texas All-State Music Ensemble

Orchestra members Meredith Aucock, Catherine Cai, Tiffany Hu and Jonathan Keith, band member Ryan McArthur and choir members Hannah Susman and Cameron Trout performed with the Texas All-State Band, Choir and Orchestra in San Antonio in February at the Henry B. Gonzalez Convention Center as part of the 2015 Texas Music Educators Association Clinic/Convention. These students were chosen for this prestigious honor through a competitive process held this year across the state at district, region and area levels. Each of these students perform in music ensembles at Memorial High School under the direction of Choir Directors Kerri Elrod and Lawrence Johnson, Band Directors David Kastor and Suzanne Thompson and Orchestra Directors Danielle Prontka and Bingiee Shiu, who are all members of the Texas Music Educators Association (TMEA), an 11,000 member organization headquartered in Austin. This is Cai’s third and Hu’s fourth year to perform with the AllState Orchestra. High school students selected to perform in the All-State concerts have competed through several levels of auditions beginning in the fall of 2014 to qualify at the state level. All-State is the high-

est honor a Texas music student can receive. Over 1,600 students are selected through a process that begins with over 60,000 students from around the state vying for this honor to perform in one of 15 band, orchestra and choir ensembles. Texas Music Educators Association sponsors the Texas All-State competition. This competitive process begins throughout the state in auditions hosted by 28 TMEA regions. Individual musicians perform selected music for a panel of judges, who rank each instrument or voice part. From this ranking, a select group of musicians advances from their region to compete against musicians

from other areas in seven TMEA Area competitions. The highest-ranking musicians judged at the TMEA Area competitions qualify to perform in a TMEA All-State music group. Only the top three percent of musicians who initially audition become All-State musicians. These All-State students participated in three days of rehearsals directed by nationally recognized conductors during the TMEA Clinic/Convention. Advise the other parent and child well in advance what the plans for extended periods of possession are so there can be anticipation of the plans. Get a child’s airline ticket far enough in advance for long-distance travel to select reasonable times for a child to travel. Be at the airport ahead of time to meet your child. Do not make them wait! Show your child you care enough to be on time and not put them at risk in a public place. Make arrangements for activities and/or suitable childcare during extended periods of possession. Ask a child what they want to do during extended periods of possession. Give consideration to their thoughts and feelings. Encourage and allow a child to communicate at a reasonable time and for a reasonable duration with the other parent, affording the child privacy and respect.

DON’T:

Take a child for periods of possession unless you are prepared to take care of and engage them. Act like it’s a burden to care for a child. Introduce your child to a new “significant other” (SO) when they visit you. Be discerning and introduce a “SO” only when you are in a serious relationship with the “SO.” Don’t sleep in the same room with a “SO” when a child is with you. That might be your routine, but it will make a child uncomfortable. Make disparaging remarks about the other parent while the child is in your possession, and don’t allow other people to do so. Make the child feel like they have to keep secrets from the other parent.

The Pin Oak Charity Horse Show: A Tradition of Excellence and a Legacy of Giving

The Pin Oak Charity Horse Show will celebrate a 70 year tradition of excellence and a legacy of giving when more than 1,200 competitors of all ages and 2,000 horses and ponies of all sizes gather March 17th through March 29th at the Great Southwest Equestrian Center in Katy. One of the oldest and most prestigious charity horse shows in the nation, the 70th Pin Oak Charity Horse Show is presented by Irish Day Farm and Haras Dos Cavaleiros. This family-friendly horse show is a series of events that take place in covered and outdoor arenas at 2501 South Mason Road. Most events are free and open to the public. Proceeds from The Pin Oak Charity Horse Show benefit three organizations that focus on healing sick children: Texas Children’s Hospital, Ronald McDonald Family Rooms at Texas Children’s Hospital and Candlelighters Childhood Cancer Family Alliance, which supports the Texas Children’s Cancer Center. The Pin Oak Charity Horse Show has entered into a $550,000 commitment to the Sports Medicine Program at Texas Children’s Hospital West Campus, enabling the program to have a Sports Medicine Fellow, which is critical to expanding the care for adolescent athletes. This pledge brings Pin Oak’s giving to the West Campus of Texas Children’s Hospital to $1.25 million in recent years. Pin Oak has also pledged a $100,000 commitment to Texas Children’s newest hospital in The Woodlands, which is slated to open in 2017. “Pin Oak has supported the growth of Texas Children’s Hos-

pital from the very beginning. We’re truly honored to have Pin Oak give so generously to expand our care in the Sports Medicine Clinic at West Campus and at our newest campus in The Woodlands,” noted Mark Wallace, president and chief executive officer of Texas Children’s Hospital. The Pin Oak Charity Horse Show combines extraordinary equestrian competition, ringside social events and charitable giving – almost $6 million since the show’s inception in 1945, with a donation of $200,000 in 2014. The vision of J.S. Abercombie, founder of The Pin Oak Charity Horse Show, continues to bring the best horse show teams together to benefit the community, specifically children, through the establishment of a pediatric hospital that would turn no child away. In 1947, Pin Oak made the first donation to build Texas Children’s Hospital. That vision became reality in 1954 when Texas Children’s Hospital opened its doors. Today, the hospital serves children not only from Houston or Texas, but from around the world, with over three million patient encounters annually from over 50 nations. Olympic caliber Grand Prix events and the International Hunter Derby are highlights of the two-week horse show that attract thousands of spectators. Week one of the Pin Oak Charity Horse Show, March 17th to 22nd, features various breeds, including American Saddlebreds, Andalusians, Lusitanos, Hunter competition, Show Jumping and All-breed Working Equitation. Pin Oak Week One also includes the Collegiate Invitational, with eight equestrian teams competing in Hunt Seat. Week two finds elegant Hunters and exciting Show Jumpers in all rings from March 24th to 29th. Walk on the Wild Side with Easter Seals Greater Houston and Macy Bouchard Join Easter Seals Greater Houston and Chairmen Krista and Butch Bouchard on Saturday, April 25th at 8 am for the 2015 Easter Seals Walk with Me event at the Houston Zoo. The Bouchard’s will honor their daughter, Macy, who is a determined 11 year-old with special needs. Those who meet Macy know right away that she will not allow her disabilities to slow her down. Macy has an infectious personality and an optimistic, can-do spirit that is an inspiration to others. Macy lives in Wilchester West with her family. Butch is an executive at Team, Inc., and Krista is a retired software consultant. Macy’s big brother, Travis, is a seventh grader at Cornerstone Academy. Macy attended Wildcat Way and Wilchester Elementary and now attends Crossroads, a school that focuses on children with learning and other differences. Macy is active in Girl Scouts, Memorial Drive United Methodist Church Choir and Bells, Special Olympics Gymnastics and enjoys adaptive sports with Soaring Kidz and snow skiing with Challenge Aspen. At birth, Macy’s parents knew she was special. Macy was born without sight in one eye and with physical and cognitive impairments. There is no diagnosis for Macy’s condition. “We treat the lack of diagnosis as a blessing, because with no diagnosis, there are no pre-conceived limits as to what Macy can accomplish,” said Krista.

Macy has always worked hard to learn to do everyday tasks such as eating, dressing, communicating and walking. Even as an infant, Macy had difficulty eating and needed supplements to gain weight and get adequate nutrition. Although she had a rough start to life, it was clear from an early age that Macy was born with something doctors cannot measure – optimism and grit – which have her well-prepared to take on these daily challenges. Although her neurologist did not expect Macy would ever walk without a walker, as a first grader at Wilchester Elementary School, Macy was determined. After many hours of therapy, she set her walker aside and has not used it since. Macy has spent thousands of hours in therapy and tutoring learning to walk, talk, eat, dress, read and write. As she was struggling to learn to walk, Macy often fell, and her family would ask, “Macy, what do you do when you fall?” Macy responded, “Get back up!” Although Macy is naturally optimistic,

she still has moments when she struggles. Macy’s biggest supporter has always been her big brother Travis. “Macy is determined. It may take her longer to do things, but if she wants to, and you give her the time, she will eventually get it,” said Travis. Macy has access to great medical and therapeutic services, and the Memorial community has always been inclusive and supportive of Macy. “We truly believe Macy’s success has been attributable to where we live,” said Butch. The Bouchard’s believe in giving back to the community. Butch serves on the Board of Easter Seals Greater Houston, and Butch and Krista look forward to the 2015 Easter Seals Greater Houston Walk With Me event. “Easter Seals provides life-changing services to people of all ages with all types of disabilities. Many children do not have the same access to services that Macy has had. Fortunately, Easter Seals is a great organization that is equipped to help people like Macy,” said Butch. “They just need our support.”

School Binds Valley Oaks Elementary Community Some say it takes a village, but at Valley Oaks Elementary, it’s all about community. The new Valley Oaks Elementary (VOE) opened with students on January 6th after they spent 18 months at the East Transition Facility – the former Edgewood Elementary. Valley Oaks is the 12th elementary school rebuilt as part of the 2007 bond program. At the January 22nd grand opening with 150 dignitaries, district officials and members of the Valley Oaks community on hand, talk was about that Valley Oaks community. Hedwig Village Mayor Shannon Whiting, herself a Valley Oaks parent, said that she could see Hedwig’s City Hall from where she was speaking, from the stage of the new cafeteria. “The new Valley Oaks Elementary is a feather in the cap for our community,” Whiting said. Whiting was followed by Spring Valley Mayor Tom Ramsey, who said that Valley Oaks Elementary was part of Spring Valley, although it’s technically in the city of Houston. “Valley Oaks has to be the most important thing in Spring Valley Village, even though it’s not in Spring Valley Village,” said Ramsey. The $597.1 million 2007 bond program originally called for 12 schools to be rebuilt over 10 years, but the program was accelerated early on to take advantage of savings from highly favorable

construction costs and interest rates during the nation’s economic downturn in 2009-10. Rummel Creek Elementary is scheduled to open in January 2016. Ground is expected to be broken in May for reconstruction of the Spring Branch Education Center (SBEC), the former Spring Branch High School, on Westview, the 2007 bond program’s last major project. Superintendent Duncan Klussmann recognized the bond program’s progress. “We’re celebrating the 12th school of the original 12 promised in the bond program, ahead of schedule and under budget,” said Klussmann. Spring Branch ISD (SBISD) Board of Trustees President Chris Viera said that she knew the rebuilt Valley Oaks would be “amazing” from the time she first saw the design. “I especially love the beautiful cafeteria, letting the outside in with walls of windows, the bright blues and greens everywhere you look and the inspirational murals seen around the campus,” Viera said. Principal Gary Henry – only the school’s eighth principal in its nearly 60 year history – called several students to stand on stage with him and later revealed that all of those students were at least second-generation Valley Oaks Eagles. Henry noted that SBISD Project Manager Kris Drosche, who worked on the Valley Oaks reconstruction, is himself

an alumnus of Valley Oaks. The original parcel at 8390 Westview was purchased 60 years ago from Mr. A.L. Hillendahl and Mr. Holdreith for a staggering $77,000. The total cost for the original school, which opened on September 10, 1956 with 822 students, was $367,350. The new Valley Oaks, with its 117,872 square feet and 800 student capacity, cost nearly $24 million to build. The new school was built largely on the former building’s footprint. District A Council Member Brenda Stardig, a Spring Branch native and graduate of Spring Branch schools, echoed the community theme. “I love the Spring Branch community,” she said. “This is what Spring Branch is all about – community.” State Representative Dwayne Bohac, whose District 138 includes Valley Oaks, presented a Texas flag that has flown over the Capitol in Austin. He thanked taxpayers, Klussmann, the board of trustees, who he described as “leaders with the right core values,” and the parents and teachers at Valley Oaks. State Representative Jim Murphy, represented by District Director Deanna Harrington, presented Henry a resolution commemorating the day. Former PTA President Karin Donovan, who served on the new campus’ design team, praised Henry for “valuing everyone’s voice.” She too stressed the value of the school. “Valley Oaks is the very heart and soul of the community,” Donovan said. “It’s a great place for Eagles to soar and learn.” The Valley Oaks 5th Grade Choir performed their version of My Favorite Things, replacing items favored by Julie Andrews with “things” from Valley Oaks Elementary, then rounded out the program with the Valley Oaks school song. Current PTA President Ann Novero said that she and her children – Valley Oaks students – watched the new building’s progress over the last 18 months, brick by brick. “It’s been a joy watching this building being built,” Novero said. “Truly – there’s no place like home.”

he 2015 Volvo S60 is a prime example that the entry-level luxury car segment is changing for the better. The newest version of Volvo’s mid-size sedan maintains its pared-down Scandinavian style with pumped up performance and sharp handling. No longer a smaller version of its dowdy big brother the S80, the new S60 is ready to go toe to toe with the best that Germany has to offer. Volvo, an iconic automotive brand that dates back to the 1920s, has always been known for being in the forefront of safety. We can thank the engineers at Volvo for promoting safety features that we now take for granted such as the three-point seat belt, the

rear-facing child seat and rollover stability control. And although Volvo is still based in Sweden, it’s been owned by the Chinese automaker Geely Automobile since 2010. It’s an odd international relationship that has proven very beneficial for Volvo. And if you need proof, just check out their current line up. The latest version of the S60 continues to build on the heritage of safety that made Volvo famous with Pedestrian and Cyclist Detection, an innovation that scans the area ahead. If a cyclist heading in the same direction suddenly swerves in front of the car as it approaches and collision is imminent, there is an instant warning and full braking power is applied. This technology also detects if a pedestrian steps out into the road in front of the car and can automatically activate the brakes. But the 2015 S60 has also moved into the performance realm that BMW and Mercedes once thought they owned. The base model T5 Drive-E

with an MSRP of $33,750 comes standard with a 240 hp, 2.0-liter turbocharged inline-4 engine that’s mated to an eight-speed automatic transmission. This little powerhouse can move from zero to 60 in six seconds with impressive fuel economy estimates of 25 mpg in the city and 37 mpg on the highway. The T6 Drive-E boasts a turbocharged and supercharged 302 hp, 2.0-liter inline-4 that’s only drinks a touch more gas with estimates of 24 mpg city and 35 mpg highway. If you’re looking for an entry-level luxury car, but you don’t want to follow the pack in the direction of Lexus and BMW, the 2015 Volvo S60 is a solid choice with a lot to offer in terms of safety, styling and performance. Because magical thinking and curiosity are part of this stage of development, giving too much information too early may cause your child to imagine unrealistic or negative experiences. Use simple words without too many details, and include sensory information. Reassure your child the reason for the visit is to help and not because the child did anything wrong. Be honest and ask your child how he or she feels. Encourage your child to ask questions. • School-Aged Children: Depending on their temperament and previous experience, you could prepare your child one to two weeks ahead of time. Be open to answering the questions your child has in the best way you can. Explain what will happen before, during and after the visit using minimally threatening sensory language. Sometimes, procedures are painful and difficult for children, so allow them to cry, as it may be their only outlet for expression at that moment. Praise your child for their efforts to comply and follow directions, and encourage expression of fears and concerns. If your child becomes angry or quiet in the hospital, know that this is normal. Be supportive and treat your child as normally as possible. • Adolescents: Your child is often aware of the necessity of the visit. Facilitate choices when possible, giving the child a sense of control. Include them in the plan of care, respect autonomy and respect privacy. Give complete, honest explanations about the visit and provide opportunities for your child to discuss concerns with the staff. If your child is extremely anxious, you can schedule a medical play session to enhance learning and encourage self-expression. Lastly, when you arrive on campus, ask for Child Life Services.

How to Build a

Buffet T

here are many opportunities in the coming months to put together a home buffet for Easter, Mother’s Day or for graduating seniors. If you are ambitious enough to try one at home, here are some tips from Shane Bruns, director of Food and Beverage at Omni Houston Hotel. Season The seasonality of ingredients is very important, as you want to create a buffet that fits the season or holiday. For example, you would not want to serve fresh strawberries in the middle of December. Even though people are very resourceful and can fly almost anything in from around the globe, strawberries taste better when they are local and in season.

Geography Geography plays an important role as well. When creating the menu and knowing who your guests will be, you more than likely want to keep menu items regionally inspired and use locally sourced ingredients. The complexity of the menu and the recipes must be taken into consideration. When entertaining, you would like to at least have a conversation with your guests while they are about to join you in a feast. You don’t want to be in the kitchen the entire time. Cooking simple food simply is the key. There is no need to be avantgarde or whimsical in menu approach.

Budget Budget plays a key role in what you will have as your main entrée or protein for the buffet, ranging from a single protein to multiple or from chicken to lobster. Selections should be balanced and colorful. Ideally, you want to offer guests a variety of dishes that will represent these main categories: protein, salads, fruits, vegetables and sweets. Themed buffets/stations can also be a fun route to take. Get creative with the presentation, especially if there are young ones in attendance, where you may have a separate buffet just for the kids with their own offerings, such as cotton candy.

Location and Flow Placement is crucial when choosing a spot to create the buffet, as you don’t want bottlenecking to occur. Sometimes, it is better to create stations instead of a buffet so that the crowd can spread out, eliminating long waiting times in a line. That way, guests are free to visit the station they are most interested in.

Sequence of Food When placing creations on the buffet, it is typical to start out with chilled offerings, such as composed salads and chilled soups. Then, lead into lighter fare and hot items, such as vegetables and starches. Next, place the focal point – the entrée – toward the end. Desserts should be separated from the main buffet, as most guests do not have room on their plate after going through the buffet. This allows you to become more creative in the dessert presentations. For example, fill martini glasses with chocolate mousse or display “loaded spoons” of tiramisu.

Beverages Beverages should be on a separate table from the food station. If coffee and tea is served, you can add it your dessert station, depending on how big the guest list is. Beverage selection should be focused. Know your guests, and possibly create a specialty cocktail for the evening. For guests who don’t drink alcohol, create a “mocktail.” It is important to offer a balance of wines. Weather can play a big part in this. On a hot summer day, a nice rosé may fit the bill for a light and crisp wine, followed by a medium body red like Pinot noir and a Cabernet Sauvignon for a more robust, heavier wine. Always choose the wine that you think will go best with the buffet items. Don’t forget about dessert wines, such as a nice, late harvest wine or a port to finish chocolate cake with.

Décor China, Glass, Silver and Linens Choosing the right plate for the right function is also important. If the buffet is more of a reception instead of dinner, the size of the plate should convey that to guests. Small plates at the beginning mean that the event is meant for grazing. Large plates send the message of a dinner. Once the style of the event is determined, place plates at the beginning of the buffet or station. Cutlery can either be preset at the table settings, or silverware rolled up in napkins can be placed at the buffet. At a reception, cocktail forks and spoons are typically displayed at the buffet. Depending on the beverages being served, glassware is key. For a reception-style approach, in most cases, glassware should be placed at the bar or wherever the beverages are located. For an elegant dinner, glassware is usually preset. Be sure to choose the right glass for the right wine. Serving vessels on the buffet can be part of your creative approach in creating a memorable experience for guests. Instead of using chafers for hot food items, there are many ways to display offerings. Griddles, mini grill tops with le Creuset Dutch ovens or casserole dishes can make items more appealing to the eye. Remember, guests always eat with their eyes first.

Try to utilize florals, candles and accent pieces within empty spaces to create a full and decorative look. Don’t go overboard – sometimes less is more. You don’t want to lose focus of the food and beverages being offered. Now that you have the tools to put together your own buffet, all you need to do is decide the menu. any traditions involve recording births, deaths and marriages of ancestors in the family Bible. Often after several generations, such information would be lost entirely were it not for these wonderful artifacts. The Heritage Society is fortunate to have the Nichols family’s priceless heirloom Bible, where entries trace the family back to 1787! The Nichols Bible is a unique document of early Houston history, providing insight into the lives of people who were instrumental in developing Texas. The first inscriptions indicate this Bible entered the family as a gift to “William Hamilton Nichols from his grandmother Catherine Wood Nichols.” The mother of prominent Texan Ebenezer Bacon Nichols had given the pioneer’s son the Bible. E.B. Nichols was the business partner of William Marsh Rice, the founder of Rice University. Nichols operated the Galveston branch of their business before entering many entrepreneurial pursuits of his own. Prior to moving to Galveston, Nichols built a house in Houston, which he later sold to Rice. It still stands at The Heritage Society in Sam Houston Park. The Nichols family only lived in the house a few years. In 1838, E. B. Nichols arrived in Houston with a load of lumber, a common practice due to the lack of sawmills. A year later, he was bankrupt. Nichols decided to hire workers to gather pecans, which he shipped to New Orleans. The idea worked to pay his debts and begin a small business. By 1844, Nichols and Rice were in the mercantile business. They were able to build their fortunes by branching out as importers. They invested in shipping, importing ice and exporting cotton. In the 1850s, they invested in the first railroad for Houston/ Galveston and the plank road from the Brazos to Houston. At 17, Nichols left home and apprenticed to a merchant in New York six years before coming to Texas. He had grown up in Cooperstown, New

Ebenezer Bacon Nichols York, where his father was a successful jeweler. This success meant a very respectable home known as Greystone, which stands today. The Nichols were a genteel family, and E.B. practiced his religion and generosity all of his life. A member of Houston’s Christ’s Church and a founder of Trinity Episcopal of Galveston, he was an esteemed member of the congregation, credited with helping to furnish the church and being charitable. Nichols was a man of integrity and duty. He saw service in the military in many forms, first fighting Indians on the Texas frontier and later as an officer in the Texas Army. He was in the 9th regiment of Texas Infantry, Aide de Camp for General Magruder and Finance Commissioner for Texas in the Confederacy. As commissioner, Nichols was charged with providing the means of sustaining the Texas Army. He went above and beyond in his duties, transforming his home into an armory and headquarters for General Magruder. Nichols was also a family man. He married Margaret Clayton Stone August 7, 1842. Their first child, William, was born almost a year later on July 15, 1843. Having been orphaned at age 16, Margaret came to Houston with her uncle, William Fairfax Gray, a promi-

nent attorney. Margaret was a capable woman, managing to help run a hospital for fever epidemics during the Civil War, while raising seven sons. Known as a charitable and gracious lady, she counted friends among the highest social circles, including Margaret Houston, Sam Houston’s wife. Although the building of Texas certainly included unsavory characters, such as men fleeing debt, criminals escaping justice and opportunistic adventurers often lacking scruples, there were also upstanding citizens of high moral character. Ebenezer Bacon Nichols and family were of the latter, and Houston, Galveston, and indeed, Texas are better because of them. This sentiment is evident by the following account of General Nichols’ burial by eyewitness Jesse Ziegler: “When the General passed away, hundreds plowed through deep sand to follow his hearse on foot to the cemetery. The procession was a long one. The seven sons served as his pallbearers. With martial steps, the cortege moved to the cemetery, keeping time with the muffled drums and soft notes of the military band. Veterans of both the battles of San Jacinto and of the ‘Lost Cause’ took part in the services. A sight like this can never be seen again. It has lingered in my mind for 62 years.”
