Making its mark INK is a three-day festival of new short radio and stage plays that has become an indelible fixture on the theatre circuit. I catch up with artistic director Julia Sowerbutts to make some notes on how it all started and what they have lined up for 2020. INK was originally set up in 2015 to showcase the talents of East Anglian playwrights and actors, however, now in its 6th year, this net has been widened and writers from around the country, and indeed across the ocean, have been putting pen to paper. Such is its growing popularity that over 750 scripts dropped onto Julia’s doormat – they only had 15 submissions their first year – and she and the rest of her team then had the unenviable task of whittling this down to the final 40-45 plays that will be performed to audiences this April. 4
The hub of the festival is based at The Cut in Halesworth, but other performance spaces around the town include the museum, the library and the car showroom at MR King. The plays are directed by twenty-two directors and performed by a troupe of around fifty actors, many of whom have connections with Suffolk as it is important to Julia and her fellow directors, Jane Zarins and James Christopher, that the festival retains strong ties with the region. And, INK is not only a brilliant weekend of ground-breaking drama, laughter and
learning, it also runs a programme of events, including community projects such as the INK Youth Theatre, creative writing workshops and INK on Tour, where the best plays will hit the road to perform in rural villages, plus they have been booked to perform at both the Aldeburgh Literary Festival and the Aldeburgh Festival Fringe.

It is the little-known history of Joe Kennedy, the elder brother of JFK, who was lined up to become president until, during WWII, he volunteered for a secret mission that involving flying a plane packed with explosives from a Suffolk airfield, with disastrous results.
Across the festival weekend you can enjoy a series of workshops, talks, the art exhibition, performance poetry led by one of INK’s patrons, the exuberant Luke Wright and, new this year, three special comedy nights starring well-known faces such as Arabella Weir and Arthur Smith. There will also be a series of five-minute plays written by amongst others the fabulously funny Miranda Hart, Will Gompertz, the BBC Arts Editor and Elliot Cowan, who recently starred in Peaky Blinders and Luther. INK has also commissioned a play about a local
The mix of writers, from all backgrounds, ages and experience, results in plays which cover a hugely diverse range of subjects, a real melting pot of different cultures and a wonderful reflection of life in the modern world. This year’s sound bites include dating in the cyber age, Dignitas, Alzheimer’s, love, post-natal depression and inevitably Brexit, although Julia assures me it is a brilliant comedy. A rare find 18
Overlooking the square in Wickham Market, Crafers is an 18th century property packed to the rafters with antiques, retro collectables and vintage finds. Refurbished and re-imagined by Jilian and Neil Evans, it is now a highly desirable holiday rental with accommodation for up to eight people. Having holidayed in Suffolk since she was a child, in 2003 Jilian and her family finally made the move here from London. “We wanted to be near Framlingham so the boys could go to Thomas Mills, and after viewing Crafers we immediately saw its potential and knew we could turn into a fabulous family home.” The house had already undergone alterations to the layout as in the 1990s several of the rooms to the front had been converted to commercial use, amongst them, a beautician, café and shop. For Jilian this was an added bonus because whilst she was living there it offered her the
opportunity to run her own café, Café 46, and set up the antique shop, Vintage 46 – she later relocated to Vintage 49 in Woodbridge. Being Grade II Listed there were restrictions to what Jilian and Neil could do within the main house, but their main challenge was relocating the kitchen from the first floor back to the ground floor. “The kitchen was originally where Bellissima is now, but we wanted to have access to the garden so moved it to the back of the house and created an open plan kitchen/diner where we could spend time as a family.” 19
It is a wonderful space, filled with light from the large sash windows that overlook the garden, and as well as a large dining room table there is an island where you can perch for coffee when friends pop round for a chat. To the centre, Jilian installed a woodburning stove so this really is the heart of the home, whatever the season, and it has great character, with a plethora of exposed beams, walls adorned with retro enamel signs and an old lectern that makes the perfect cookbook stand. Jilian is a regular at antique fairs such as Old Jet and Snape Vintage Market, and the whole house is packed with interesting finds. In the hallway a pair of old-fashioned leather riding boots stand to attention next to an antique French confit pot stuffed with wooden tennis racquets, and an oak butter
churn finds its place next to a gorgeously worn work bench. An impressive staircase rises to a split landing where four original posters of the Beatles look down on an antique bureau. â€œMy husband collects posters and so the house is home to quite an eclectic mix of artwork that he coveted over the years.â€? Neil is a talented craftsman who did his apprenticeship at The London College of Furniture and he carried out the majority of the restoration work himself, as well as indulging in some rather fun quirky pieces such as the pendant lights in the kitchen that are strung off a ladder fixed to the ceiling and the table lamps in the sitting room that he fashioned from old fire extinguishers. The four double bedrooms are all located on the first floor and command views over
either the village square or the large walled garden to the rear, and on this level there is also a drawing room where two large settees are centred around an open fireplace and statement antique pieces add a feeling of grandeur. They have all been decorated in soft neutral colours punctuated by vibrant works of art and complimented by sumptuous furnishing and vintage treasures. There is also a sitting room where a wooden sleigh, discovered at Marlesford Mill and reinvented as a coffee table, makes a marvellous talking point. “The sitting room was where we would tend to gather in the evenings to watch television and catch up. Once we had the surround sound system installed it was also very popular with the boys friends, so we converted the attic into a games room so at least they could all disappear up there!”
The south-facing walled garden to the rear is another place you can truly escape to. A seating area tucked beneath a jasmine scented pergola offers the perfect spot to take in the beautifully established borders and on the patio, a large table means al fresco lunches are a must on sunny days. Dennington Arts is to host its second art exhibition ‘Awakening’ at Dennington Village Hall. Curated by Rosie Mackenzie, its founder, this year’s exhibition is inspired by nature awakening and the joy of that awakening reflected upon the land. Rosie, now in her late 60s, is still driving a bus for Saxmundham Free School as well as running the arts community and is also a cancer survivor. Having taken up art relatively recently herself, she has been inspired by the support from fellow artists such as Maggie Archand. ’I wanted to share a space with talented people and because of my cancer, I think I was more determined than ever to try and do it. Last year’s exhibition attracted hundreds of visitors, and we hope for more this year. The school was one of just 17 non-selective state schools nationwide to receive the mark in 2019. To be successful, the school had to be judged ‘Outstanding’ from Ofsted and meet a range of criteria, including being independently endorsed and developing students in ‘ground-breaking’ ways. It also had to submit a self-audit for students’ skills and competencies as well as producing a video capturing the life of the school in a typical week. Added to this, a group of three students had to attend an Assessment Day in Reading. Phil Hurst, Headteacher said, “The students were amazing ambassadors throughout the process and have rightly been described as world class. It’s a real team effort and it’s wonderful that the school’s achievements have been recognised.” 29

If you go down to the woods today you just might bump into Maria Clarke-Wilson of Botanical Being mindfully foraging for leaves, bark and berries, the natural ingredients she uses to create the most amazing textiles and beautiful organic dyes. Maria set up Botanical Being in 2018 after taking a break from an established career within the education system. â€œI just got to the stage where I felt I needed to reconnect with myself and my life, and I felt the best way to do this was to first reconnect with the natural world around me.â€? Having grown up in East Anglia, Maria always had a passion for nature and the great outdoors, so this holistic journey of discovery and enlightenment, which involved many hours of meditation and mindfulness, allowed her to rewire her values and once again take delight in the simple beauty of her
surroundings. It also prompted her to engage with another of her earlier passions, art, and in 2017 she enrolled on a two-year Textiles & Design Masters at Norwich University of the Arts. Over the two-year course, Maria explored how the colours of nature: a fallen oak leaf; scattered pine needles; a strip of birch bark or handful of ivy berries could be incorporated into her textile designs. She reimagined ancient extraction techniques, stirring up vats of boiling twigs and leaves, soaking materials in baths of dye, the vibrant colours having been unlocked from

their natural resource, and creating amazing printed fabric by rolling leaves treated with iron sulphate in cloths and silks. “I familiarised myself with practices that have been used for centuries using heritage dyes such as madder, woad and weld. I then spent ages playing with the simmering and soaking times, how best to prepare the fabric for the dyeing process (mordanting) and investigating the rich array of colours that the plants around me would release.”
“I love that one tree or plant can give me such a range of colour and that by using the leaves or the stem or the berries I can create a wonderful continuum.” Since setting up Botanical Being just over a year ago, Maria forages for treasures from her garden or from walks close to her home near Framlingham almost daily. She has a reciprocal attitude to gathering, taking only what she needs, mindful that nature’s bounty is part of the delicate balance of the living eco-system that exists around us.
The results are astonishing. The amazing colour palettes that Maria creates are just wonderful, the mustard tones of marigold, the warm earthy tones of hawthorn, the golden bronze of the walnut leaf and the stunning spectrum of the life-giving oak tree, which produces the most delicate creams through to deep rich nutty browns.
“Over the last twelve months I have concentrated predominantly on trees, especially their leaves which I use for my botanical printing, weaving their patterns to create intricate designs that I then use to make lampshades, upcycled clothing, book covers or purses. It is a process that still intrigues me. What will these horse

chestnut leaves give up, what secrets are hiding amongst the field maple or the smoke bush tree?” Maria’s curiosity is infectious, and I am not surprised that the workshops she runs from her studio in Earl Soham have proved to be very popular. She offers a choice of art classes for adults and children, as well as an Introduction to Natural Dyeing and Wildcolour Kitchen Workshops, where you can enjoy foraging and creating dye baths over open firepits – a wonderful way to reconnect with nature and rekindle the childish delight of stirring up vats of bubbling potions. Maria also instigated two inspiring global projects involving other eco-dyers: The World Wide Weave where she invited them to send her their own yarns to create a collaborative weave, and How Far Does the Hand Reach when she asked for
squares of dyed fabric which she then stitched into a Peace Cloth. With over 100 squares the result is truly stunning, and it is wonderful to think that the hugely diverse range of colours and patterns have been lovingly created from across nearly thirty counties. Ideas for this year include investigating the diversity of the plants that grow beneath the trees and a lovely project with Moat Farm Flowers, creating memory scarves infused from the flowers of a bridal bouquet or funeral wreath – I can’t think of a more beautiful gift. I leave feeling inspired, knowing I will be taking a closer look at what is growing in my garden and what secrets it is waiting to reveal. In her laboratory in Letheringham, Pauline Bickerton of Loggique can be found blending scents such as the highest quality Oud from the Middle East, Vetiver from Java, Neroli (bitter orange blossom) from Tunisia or home-grown lavender from Suffolk, all in her quest to create the perfect fragrance. Pauline has been obsessed with the process of creating the perfect scent ever since she nearly poisoned herself in 2016 after lighting a number of scented paraffin candles in her bathroom. The combination of benzene and toluene emitting from these candles was not dissimilar to the effects of directly breathing in exhaust fumes and so not surprisingly, she woke up in A&E! However, it did trigger the idea that she could deliver a vision of making scented products: candles, diffusers, perfumes, soaps and moisturisers which contained and emitted no detectable levels of harmful chemicals. Commercial perfumes had
become very clever at disguising their use of synthetics and so Pauline looked to the major perfume houses such as Fragonard and more experimental ones such as La Labo for her inspiration. Scent is fascinating because it is so evocative, just one drop can have the power to conjure vivid memories of a specific place or person. In the acclaimed bestseller, ‘Perfume’ by Patrick Süskind, the main character is driven to commit murder by an overpowering desire to capture and own the scent of a young woman he encounters on the streets of Paris. And, while this may 37
be taking things a little too far, it is true that most of us choose a perfume that represents some elusive quality of ourselves which we hope others will find attractive. For Pauline, it is all about blending a scent which truly represents who and how we are in the world and her skill lies in her ability to produce inspirational and highly evocative scents which are also healthy and gentle on the environment. After two years of research, Pauline launched her brand, Loggique, the name derived from her home, Letheringham Lodge, as it is believed to have originally been a medieval â€˜Loggeâ€™, a French word for a prestigious place from which to view a spectacle. Her candles are made from unscented coconut wax which is far
superior to paraffin or soya as it has a much lower burning point meaning that the delicate balance of her fragrance is not altered once the candles are lit. The wax is so pure that you can dip your finger in the warm wax and use it on your skin as a moisturiser, she uses mainly therapeutic grade organic essential oils and her beautiful products are packaged in glass so they 95% plastic-free and vegan friendly. The laboratory is lined with over five hundred tinted scent bottles, reminiscent of a Victorian Apothecaryâ€™s cabinet, and like a true alchemist the work bench is lined with racks of test tubes that she uses to blend the scents. Pauline takes great joy in sharing her experience and passion and, as well as producing her own range of Loggique
candles and toiletries, she also runs workshops for prestigious brands and hotel companies such as The Savoy and Sofitel, alongside smaller, more personal courses at her lab in Letheringham. Last year I was lucky enough to be invited on one of her candle and scent-making courses by the Art for Cure Team and we had great fun creating a scent for their Christmas Candle. Pauline explains how, like an aromatic symphony, fragrances are made up of different notes. Top notes give you that first hit and include scents such as bergamot, neroli and clary sage, these then fade to reveal the middle notes where you might find lavender, rose and jasmine, and finally you reach the base notes. These are the ones that linger longest, they are the underlying aroma of any scent and tend to include the woody, earthy notes such as sandalwood, vetiver and patchouli.
The candle I created is still burning bright and I love my perfume, but with so many scents to choose from I can see how addictive this could become and why Pauline is still searching for that elusive blend of notes that will create her own fragrant version of alchemistâ€™s gold. Although, having tried her gorgeous products, I think she is very near to mastering that perfect harmony. The dead wood stage
Winter is the perfect time to take a step back from your garden and look at the form and structure of your larger shrubs and trees. With the leaves long scattered to the wind you can now see their true outline and shape which makes it much easier to identify what needs cutting back. Many plants need to be pruned when they are dormant as this encourages flowers and fruit, gives them a good shape and promotes strong healthy growth. When pruning your larger specimens such as apple and pear trees, start by cutting away any dead, diseased or damaged stems. Now take out any branches that are crossing or not growing in the main direction of growth. If you are looking to correct the outline, make sure you cut back branches to just above an outward-facing bud. Late flowering clematis also needs a good chop, but cut back to 30cms from the soil, just above a healthy bud. Once the
temperatures start to creep up so will the new shoots so make sure you keep on top of winding these through your supports to ensure an even distribution of flowers. Roses can also be pruned, cutting back the thinner stems and leaving only the thicker ones, pruning to about 15-45cm tall depending on your preference. In February, ornamental grasses, autumnfruiting raspberries and most herbaceous perennials can be cut down to the ground as this will encourage them to send up fresh new stems. The ones to leave include evergreen perennials such as euphorbias, hellebores and epimediums, and penstemons should be left until the spring as the stems will give protection to the crown if there is a late frost. I also like to leave any with decorative seed heads, such as hydrangeas as these give your otherwise bare winter garden some much needed architectural structure. 43
Winter chores If, like most people, you needed a snorkel and flippers to visit your garden over the last few months, at last it seems we can finally get out to see what has been going on. The winter months are always the quietest of the gardening year but, with such a wet end to 2019, you may need to pull on your wellies and catch up with a few chores. Firstly, check your beds and borders to make sure they are not drowning in fallen leaves or debris and that your pots are not waterlogged. Secure climbers and tree stakes to protect stems from rougher weather – we need to be ready in case the Beast blows in from the East – and give any apple or pear trees a good prune to ensure healthy regrowth in the spring.

Frosts in February can be harsh, so protect tender plants by wrapping them in insulating fleece and add a thick layer of mulch to the base of any evergreens to try and keep the soil frost-free. With the garden laid bare, indulge in new designs for the spring and plan your planting, sowing seeds to plant out once it warms up – you can’t beat Sweet Peas, Dianthus, Gaura or Aquilegia for wonderful scent and colour. As we skip into March, the garden wakens and like a magic trick new shoots emerge from the soil bringing new life and an abundance of possibilities. With the sun on your back, carefully tidy beds and borders, dividing perennials such as Agapanthus, Crocosmia, Geranium, Delphinium and ornamental grasses to fill in any gaps and, if it stays dry, mow the lawn– nothing says spring like the smell of freshly cut grass.

Jeong-un Creagh of Korean Kitchen is on a mission to open the lid on the mysteries of kimchi, a traditional Korean dish that delivers an addictive hit of tangy fermented vegetables and warming oriental spices. I visit her in Woodbridge to find out some of her family secrets. Jeong-un comes from the Jeollanam-do province of South Korea where kimchi is part of the fabric of family life and is a staple side-dish, often being eaten for breakfast, lunch and dinner. Family recipes are handed down generation to generation and there are over three hundred different types of kimchi, each one varying slightly in heat and piquancy. In the autumn, many communities come together for Kimjang, a day of making and sharing kimchi that is now part of Korean heritage, where families stock up in preparation for the long harsh winters. Traditionally it was stored in large earthenware pots that were buried in the
ground to prevent it from freezing but now many households in Korea have dedicated â€˜kimchi fridgesâ€™. Jeong-un has been making kimchi from her own family recipe for years, but it wasnâ€™t until last February that she decided to try it out on her local community at one of the Old Jet monthly markets. Its fresh, spicy flavours were an instant hit and so, along with her husband Henry, she set up Korean Kitchen and went into production. The main ingredients in her kimchi are napa cabbage, a large cabbage with a distinctive wrinkled leaf, and mooli radish, a long white radish 49
that grows to over a foot in length. These are sliced and the cabbage is left to soak in a brine bath for up to eight hours before being rinsed and then mixed with a paste made from gochugaru (Korean chilli flakes), garlic, spring onions and ginger, as well as other seasonal fruit and vegetables that Jeong-un sources locally. The key to any kimchi is the fermentation process. The naturally occurring lactic acid bacteria in the sliced vegetables flourish after salting and therefore no starter culture needs to be added to the ingredients. This spontaneous fermentation starts on day one and continues to work, slowly changing both the flavour and texture of the kimchi with time. Jeong-unâ€™s products are valid for three months once opened if kept in the fridge. If the kimchi is eaten within 3-4 weeks you get a real zing from the 50
spices and the flavour of fermentation. Left longer, the vegetables still retain their crunch but there is a different experience with the flavours deepening and becoming more intense. She produces four different types: Crazy, crunchy and spicy with loads of zing; Vegan Bliss, refreshing with added richness from shiitake mushroom and kelp stock; Naked, a traditional â€œwhiteâ€? kimchi with a milder flavour that is vegan friendly; and Insane, full-flavoured with blasts of extra spice. As a side-dish, kimchi is delicious with oily fish such as salmon or mackerel, or with cold cuts of meat when you use it like a pickle, but Jeong-un and her family happily have it with everything. Her three young daughters have it on their pizza, mix it with omelettes, pop it in their burgers or even add it as a topper to a slice of sour dough
bread and avocado. At Snape Farmers’ Market regulars have also embraced the authentic flavours of her hand-crafted traditional recipes and some brave souls are even asking for a slightly spicier version. It is not just the addictive flavour of kimchi which makes it so popular, because it is full of probiotics which support the immune system and help improve levels of good bacteria in the gut, it is also believed to be good for you. It has been a busy first year as the kimchi is now stocked at a number of local farm shops and delis, such as Leo’s Deli, Woodbridge Deli, Black Olive, Little Gems, Salter and King, New Street Market and Grange Farm Shop, and Jeong-un also offers catering, providing delicious Korean dishes for working lunches or small
gatherings. In 2020, she and Henry would love to find a way of sourcing the napa cabbages and mooli radishes locally and would be interested to hear from anyone who might be able to help. I leave clutching a jar of Naked, and back home discover the secrets of kimchi for myself. It is like nothing I have ever tasted before, a flavour I cannot quite express or recognise, but one thing is for sure, it has me reaching for the jar again and again! La Dolce Vita comes to town What was the Lemon Tree is to become Watson & Walpole, reopening early April as a neighbourhood Italian restaurant. Ruth and David Watson – formerly of the Crown and Castle in Orford – are the new leaseholders, with partners
Rob Walpole and Stefan Babel. The premises will be completely refurbished over the following weeks and once open, will serve lunch and dinner from Wednesday to Saturday inclusive, and breakfast and a long lazy lunch on Sunday. You can expect authentic regional Italian food and the pasta will be homemade. Also on the move are George and Sue at The Common Room, who will re-open the café in the newly converted Conservative Club, which is also scheduled to open in April. Building on their tremendous success and to please their loyal following, the couple will continue with similar dishes but plan to open in the evenings with a grill menu.

Tunisian Orange & Almond Cake This deliciously sticky, sweet cake, with its alluring scent of orange and almond, is perfect with just a dollop of crĂ¨me fraiche. Make it now while Seville oranges are in season. Ingredients 2 medium unwaxed oranges, preferably Seville 225g caster sugar 1 tbsp honey 6 eggs, separated 300g ground almonds 1/4 tsp salt Handful of flaked almonds, toasted For the syrup 4 Seville oranges (or 4 ordinary oranges and 1.5 lemons) 1-3 tbsp caster sugar, to taste 2 tbsp candied orange peel 56
Method Heat the oven to 180C and grease and line a 23cm springform tin. Pop the Seville oranges in a saucepan and cover with water so that they just bob to the surface. Bring to the boil then cover and simmer for approximately 1.5 to 2 hours. Turn them once, and when soft lift out and leave to cool slightly before slicing to remove any pips before pureeing. Separate the eggs and beat the yolks with the sugar and honey until thick and pale. Now add the ground almonds followed by the puree and mix until well combined. Whisk the egg whites and salt until stiff, then gradually fold into the mixture, being careful to knock as little air out as possible. Spoon into the tin and
bake for about 45-50 minutes, or until firm and golden on top. While your cake is in the oven make the syrup. Squeeze the oranges then pour the juice into a small saucepan along with the sugar. Bring to a simmer, stirring to dissolve the sugar - add more sugar if required - add the peel and then allow to cool. When the cake is ready, leave it in the tin and poke a few holes in the top with a skewer. Pour over the syrup a little at a time â€“ you may not need to use it all depending on how moist you like your cake. Scatter with the toasted almonds and leave to cool completely before transferring to a plate and serving with a dollop of crĂ¨me fraiche. (recipe inspired by Felicity Cloake)

Guided by the light Clear blue skies and a nip in the air, the perfect combination for brisk winter’s walk on a Sunday afternoon. It’s adults only this issue, the grown-up Ferrars and Churchills arranging to gather in the carpark at Blythburgh Church at 2.30pm for a five-mile circular walk out along the river and back through the village of Wenhaston. Things don’t get off to a good start. Martin decides to ignore instructions and parks at the village hall instead and I discover that I have managed to scoop up one size 4 and one size 8 walking boot! Who needs kids to have a good time! Once we finally meet up and I have managed to cram on an old pair of boots that have been rolling about in the back of the car for a few years, we set off. We 62
follow the A12 over the River Blyth before joining a footpath to the left that leads along the riverbank. The dogs all roar ahead, and we delight in the winter sunshine as it tints the tops of the reeds with a golden light and silhouettes the walker in front. Across the river, the magnificence of Blythburgh Church is admired, and we all take a moment to imagine a time when ships laden with corn and wool would have berthed in its shadow. The walk follows the river for some time, only briefly dipping inland, and after we pass Blythburgh Hospital, an imposing building up to the right that has been converted into apartments, we cross the river and head across Blower’s Common.

After the recent rain the meadows are waterlogged and so apart from Kerry, who sensibly chose to wear wellies, we pick our way carefully through the soggy ground, pushing her ahead to test any particularly deep-looking swamps that threaten to swallow us whole. Meanwhile the dogs are having a ball, blasting through the shallows, leaping ditches and spraying us with water as they race past. At the end of the common, we follow a farm track past a row of pretty cottages and up towards the village of Wenhaston. Bearing right, we come out by St Peter’s Church which is sadly locked and so we are unable to see ‘The Wenhaston Doom’, a 16th century painting depicting the Last Day of Judgement. Luckily, The Star Inn just down the road is open and welcomes dogs, even wet ones, so we happily
content ourselves with a comforting pint at the bar. This soon turns into two and by the time we leave, daylight is sliding away at an alarming rate. The sensible option would be to follow the lane back to where it joins the A12 but, buoyed by our convivial hour in the pub, we brave the cross-country route and find ourselves knee-deep in mud and ducking under electric fences that threaten to make even Damian’s hair stand on end! Sunset is swift and after blundering across a few more fields in the dark, we thankfully find the footpath and allow ourselves to be guided home by the light from Blythburgh Church. It has certainly been a memorable walk, well at least the first half where we could see where we were going, as for the second half – as thirst-quenching as it was, that seems to be where it all went wrong! 63
