Perfect Roast...

Remove your bird or roasting joint from the fridge, and it’s packaging, for at least 1 hour before cooking so that it comes up to room temperature. Do not cook from fridge cold.

For beef and pork, place in a suitable roasting tray and season well with salt & pepper. We recommend searing your roast at 250c for 15 minutes, then reduce the heat to 190c fan and cook to your liking.

Once cooked, remove from the oven and cover well with foil and allow to rest for at least 20 minutes, but more if you can.

For Turkey, whether whole or a crown, turn your bird upside down and roast breast side down to help keep the turkey juicy. Season well with salt & pepper, and add a glass of white wine along with a chopped onion, carrot and some herbs of your choice.

After about an hour, turn your bird over, and allow it to continue cooking. When done, ensure you rest your bird for 20 minutes or more. Not only will this ensure your turkey is juicy and moist, it will free up your oven space to get the roasties and yorkshire puddings done.

Try cooking your gammon in your slow cooker. Add a chopped onion, carrot and garlic, the gammon joint, and cover in Cola. Cook on low for 6 - 8 hours or until the meat is beginning to fall apart. Remove from the liquid (which makes for a delicious soup stock), slice off the excess skin, criss-cross the remaining thin layer of fat and baste generously with a sticky glaze to finish in the oven or under the grill.
