Delta Rae, an Americana folk rock band, is set to headline. Jandt says although he spent several years in Los Angeles, he strives for his music to be a voice of the northern plains. “My voice is more of an anonymous voice of the northern plains and the life here in South Dakota,” said Jandt. “There’s something about the people and the stories in this place, it’s like the last bit of America mixed with the 'Wild West.'” Park States, a Rapid City-based project led by Jason Ward (formerly of Mystery Pills), will return as a three-piece with Benjamin Lemay (bass) and Luke Gorder (drums). Ward says he’s looking forward to playing in Lead and playing an outdoor festival. “A lot of it started out with this solo project, which is keyboard-y and drum machine-y,” said Ward. “Now since we’ve been working together a little bit more, those songs were the core of the idea… the Mystery Pills songs are where it started for us.” Corduroy Vinyl began as an acoustic duo with Max Carlson and Mike Palmer 20 years ago in Spearfish, and have evolved lineups through the years to create a fuller folk rock sound. “We met in photography class at Black Hills State [University],” said Carlson. “We’re not too picky with where we play. Any events in the community, we like to play those places. I’m excited to be part of this first one, and all the breweries and local microbreweries that will be there.”

Kellen Boice is the director and face of the Sioux Falls Design Center located in downtown Sioux Falls. The non-profit organization strives to build connections among diverse people and organizations interested in design, like planners, architects, interior designers, engineers, landscape architects, artists, community leaders, and the greater public. One of the (many) ways the SFDC does that is with Sioux Falls Design Week, which includes presentations, workshops, and interactive events that celebrate design. The fifth annual event will take place September 28 through October 5. 605 chatted with Boice to see a day in her (busy) life.

In the last month I recently purchased a 100-year-old house in the McKennan Park neighborhood with my partner, Joel. We’ve loved being able to walk to get just about everything we need. We spend a lot of time exploring the outdoors. One of our favorite places to meander around has been Good Earth State Park [1]. They’ve recently upgraded their trail system and overlook points that frame the vistas so well. Check out the new visitors' center! 2

One of my favorite places to go is K Restaurant [2] to grab a Pot Roast and Havarti Sandwich and a tall glass of their mint flavored ice tea. So good! Every month the SFDC highlights a design-related book. It’s great to have a store like Zandbroz Variety within walking distance to pick one out. When I find myself without an office for the day, I love heading over to Queen City Bakery [3] to grab a cup of coffee and quiche and work remotely. It's always a great place to get things done or to socialize with the local crowd. As a way to help fulfill the mission of the SFDC, we host and promote events. One of my favorite things to do for work is pounding the pavement to hang up posters and talk to people about what events are coming up. Vishnu Bunny Tattoo & Piercing [4] is

always one of those stops since they have a great community board. They also have one of the most beautiful handmade signs over their awning. When it comes to fashion, I’m all about function and comfort. So, I love the Great Outdoor Store [5] with their endless supply of pocketed dresses, skorts, and reversible everythings. I can always find something that works, and the higher quality products end up looking new and lasting for years. When working with designers, or anyone for that matter, it helps to be in a great location and have a great space. We get both being located at 108 W. 11th Street in one of my favorite buildings downtown at the Boyce-Greeley [6]. Built in 1910 and meticulously renovated in the last decade, the Boyce-Greeley stands as a beacon for the importance of historic preservation in our downtown, and we are proud to call it home.

to his friends when he was in high school and college. He is formerly a graphic designer, which gave him the eye he has for design. He began receiving requests from friends for balloon décor for their children’s birthday parties, and the requests increased from friends telling friends, who then told more friends. Because it was something he enjoyed doing and he was busy completing many orders, Ryan and Christine decided to open the business three years ago. Since then, they have gained a large following on Instagram and Facebook of people admiring the unique balloons they create for customers. The Instagram account shows off the high-end creations, which give customers ideas when contacting Queen City via the website or Facebook.

“We’re very interested in design, and we try hard to make things look cohesive. We add little touches to match the color scheme,” said Ryan. Ryan says providing excellent customer service is essential. As far as the balloons go, they focus on style, not trends. They like to do classy, creative, and whimsical designs with interesting color combinations. Creating elegant balloon décor that is customized to their customer’s needs is their goal. Queen City Balloon Bar is able to do a variety of arrangements and can special order products if needed. The standard balloon size they use is a size of 16 inches, which is larger, but lasts longer. The bigger balloons are also a signature part of the business, and Ryan says customers love the variety of large sizes available.

Balloon designs include confetti, glitter, mirror orbs, marble, a "peacock" print, and many more. Tulle and satin ribbons can be added as well. They can even do different shapes, like cubes. Ryan then combines these balloons into bouquets and asymmetrical garlands, collages, and installations. “The life progression of our customers is cool to see, from weddings to baby showers to first birthdays to eventually graduations,” said Ryan. “One of the things we love is celebrating people’s life events with them and getting to be a part of it.” Queen City Balloon Bar also enjoys collaborating with businesses to create beautiful balloon concepts. One collaboration done recently was with Girl Friday of Minneapolis for the Sioux City Art Center, where more

than 30,000 white balloons of various sizes were designed into an installation piece. Ryan says while it was a huge undertaking, it was one of his favorite projects to work on. Because the focus is on creating elegant balloons, Ryan hopes to encourage customers to enjoy the balloons for longer than the day of the special occasion. Christine says that a gift of balloons is like flowers; they are beautiful and can be enjoyed

for a while, but are disposable so they don’t add permanent clutter to your home. “Balloons are delightful, especially when you see the different types. AT HOME CALE FELLER

C

ale Feller has lived in The Crane Centre in downtown Sioux Falls for five years, and moved into his current two bedroom three years ago for more space and a better view of 8th & Railroad.

“I’ve always loved the downtown vibe and aesthetic, and I love the character of a lot of the buildings that are loft-style homes,” he said. “This one in particular has some of the best themes.” The Crane Centre’s design is known for exposed beams, ceilings, and ductwork, with polished concrete flooring and nickel hardware and lighting. Feller, who is in communications and public relations for Avera Health, has made the more-than 1,000-square-foot loft into a colorful, unique space that’s perfect for lounging around or for hosting his next get together.

O THE KITCHEN The kitchen is right next to the entrance, and the open floor plan leads to the dining space and living room. The first thing you notice are the pops of color and the mix of patterns in furniture, rugs, and artwork. “There’s a little overall quirk to my aesthetic,” said Feller with a smile. “I wouldn’t say it falls into any certain genre. I think for me overall, when I’m putting my space together, it’s finding things that make me happy or mean something to me.” There are several things in the kitchen that tell a story, including a fan on top of the maple cabinets.

“The fan up there was in my grandpa’s workshop for many, many years,” he said. As an avid cook, there is one of several gifts from his aunt hanging from the oven. “My aunt hand-screen printed this towel, and she doesn’t live here, so it’s a nice reminder,” he said. “I love to cook, so my kitchen gets used a lot.” One of the most meaningful sections is a collection of Feller’s grandmother’s recipes on pieces like a clipboard and cutting board. “That’s actually my grandma’s handwriting,” he said. “She passed away 15 years ago, and I cooked with her a lot, so it’s nice to have that sentimental piece.” There is also one of a couple photos from trips to Hawaii in the kitchen, which looks beautiful, but the story behind it is not. “That’s Electric Beach in Honolulu. It’s such a gorgeous photo, but it was a terrifying experience,” said Feller. “I’ve never really snorkeled in my life, and it was really, really rough that day. We heard a day later there was a shark attack near there 24 hours prior.”

O DINING In Feller’s “urban dwelling” there is a small space for a table, which his narrow wooden dining set fits perfectly. “The table is custom. My sister and brother-in-law within the last couple of years have gotten into woodworking, and they had some slabs of wood and had one that didn’t work for them, and it was exactly what I wanted,” he said.

Feller also got creative and placed décor on the exposed beams with things that make him happy, like a South Dakota cheese board and faux taxidermy.

He also made the light fixture after researching the process. “I saw the project online and loved it, and I made it myself,” he said. “That was

O LIVING ROOM A lot of mixed patterns are in the living room, with faux cowhide chairs, the statement rug, throw pillows, and a palm leaf tapestry.

Walking to the center of the room, he explained there are a lot of pieces that are special to him.

“There’s a lot of patterns, and I’m sure it gives some people anxiety,” he laughed. “I like playing with different patterns and combining them. It’s not necessarily something you think of, and I like to play off of that and challenge that. It’s interesting how things can work out, or at least they do in my mind.”

He pointed to the coffee table, “This trunk was actually what my grandma stored her wedding dress in.”

There is plenty of seating with two chairs and a large couch, which is ideal for hosting. “I have friends over quite a bit,” said Feller. “It’s perfect in the summer for block parties, Downtown Riverfest, or the 605 Summer Classic to come over before we go out.”

Marbles on the side table were Feller’s grandparents’, and he keeps them there “as a reminder.” A variety of plants are around the loft to add more life (though many aren’t real) and pops of green. Greens, greys, and yellows are Feller’s favorite colors. “Those are colors I gravitate toward,” he said. “I feel there’s still a bit of masculinity in it, but also very styled. They play quite well together, and I’m not afraid of color.”

“It’s a bed spring that she cut into pieces,” he said. “They’ve been a couple of colors, so it changes depending on what style I have going on.”

On the wall is another gift from his aunt (who he said is so close in age he almost considers her a sister).

The dresser was originally from his grandparents’ home and has been passed down several generations. “It was a funky wood color, and many years ago we painted in black and gave it a new life,” he explained. “I loved that it was something my grandma had used and that my mom had growing up.”

The art above the master bed is from a local artist Idali Hall, who displays at Rehfeld’s. “She did those custom for me,” said Feller.

O GUEST BEDROOM It’s no surprise that the guest bed itself is a statement full of colors and designs, including banana printed pillow cases. The bed itself is from the Novogratz Collection. “If there was any sort of style that mine has evolved into I would say it’s theirs,” said Feller. “I like that their pieces tell a story.” Feller ordered a full bed and a queen arrived. He said he decided to keep it, even though it took up a lot of space in the smaller room. “This room was more of a challenge,” said Feller. “There isn’t a ton of space, but it works for what it is.” On the dresser is more color with a Rubik’s Cube and

more memorabilia from his grandparents. “My grandma gave me that [ship in the bottle] after a trip to Lake Michigan,” he said. A very unique light is in the corner that was made with an antique (also from Four Seasons Flea Market). “That’s a vent from the top of a building,” he said. “I thought it would be a neat lamp, and my brother’s an electrician, so we turned it into one.” There is also a small office nook and a chair for reading or resting. These small spaces are great for overnight guests. “I have guests quite a bit,” he said. “There are a lot of family and friends who come to town.”

With downtown growing and expanding every year, Feller says he doesn’t see himself going anywhere anytime soon. “Downtown has that great vibe, and this building has so much personality and character that you’ll never find in new construction, and especially out in suburbia. SIOUX FALLS SPECIALTY HOSPITAL’S URGENT CARE

N THE CORNER OF 85TH STREET AND MINNESOTA AVENUE IN SIOUX FALLS SITS THE SIOUX FALLS SPECIALTY HOSPITAL’S URGENT CARE UNIT. AT FIRST GLANCE, THOUGH, THE ANGULAR GLASS BUILDING MAY LOOK MORE LIKE A MODERN ART MUSEUM THAN A HEALTHCARE FACILITY. And that’s the idea. The unit’s chief executive officer, Dr. Blake Curd, says the building was designed with a purpose in mind. From the wrap-around windows to the architectural elements made to

resemble a heart monitor, Sioux Falls Urgent Care was built to be different when it opened late last fall. “People are used to a certain type of architecture in this part of the country,” said Dr. Curd. “We wanted something that stood out from the norm in terms of hospital concepts.” The facility, which combines urgent care with occupational medicine, is filled with new forms of advanced medical technology, something Curd says makes it noteworthy for the area. “Modernism and tech were very important to us when designing the building,” he said. “You see some things common in technology reflected in healthcare. We wanted to wrap that idea of new technology around an extremely functional and inviting environment.”

As a combination urgent care and occupational medicine facility, patients can have a variety of needs met when they come through the building’s tall glass doors. Curd says the urgent care designation of the facility means that anyone can walk in without an appointment and be treated for whatever is bothering them, from work injuries to a sore throat. Being an occupational medicine unit as well, pre-employment physicals, drug screenings, and vision testing are common occurrences. Both the urgent care and the occupational medicine units are open on weekends. Curd says he believes the dual purposes of the building make it especially valuable for employers in the area. “This is the only facility I know of that combines the two,” he said. “We

designed it to flip back and forth depending on the need.” And patient needs, whether that be a broken toe or hearing test for an employer, are what the facility was designed to cater to. Too often patients have to go inside urgent care units to get treatment, but with its bright and sleek feel, Curd wants patients to know they aren’t walking into a place full of doom and gloom, but one that was made with their comfort in mind. “This is one of the only purpose-built buildings for urgent care in the world,” said Curd. “This wasn’t some other building that was converted into what it is now. It’s here for the purpose of caring for people.” And that purpose is reflected from the moment patients enter the facility.

The couple moved to town with friends Ethan Jones, manager, and Brandon Swords, assistant manager, hoping to create a place “for people to linger in.” “The whole concept behind Sundog Coffee is we want to take a taste of the world, focusing on more Americana aspects of it, and give it to Madison, South Dakota,” said Jones. “This town is kind of a clash between the past and the future. We’ve got the cyber-tech school, we’ve got farmers. We’re trying to appeal to everybody. ” As far as food, Sundog is best known for sandwiches. “If you come in here, you want to try The LeRoy sandwich,” said Jones.

At the High Mountain Climbing Gym in Spearfish they can be. Owner Justin Stephens opened the state-ofthe art indoor rock climbing gym this past May after hearing customers at High Mountain’s three outdoors stores asking about the addition of an indoor climbing gym. Stephens set out to fill that need.

Bouldering, or rock climbing on boulders without ropes or a harness, is also a major sport in the area, Stephens says. So naturally, he made sure High Mountain had a bouldering section. The gym is open seven days a week, and anyone from seasoned climbers to novices can enjoy High Mountain’s variety of climbing features designed for any skill level. The only thing each area of the gym has in common? Stephens’ commitment to taking the outdoors inside in a way that pays tribute to the natural beauty of the area, not simplifies it.

“Our design is welcoming and interesting to climbers of all ages,” said Stephens. “We have lots of young kids climbing every day, along with expert climbers who come and climb when they pass through town. “We were very intentional on creating climbing walls and features in our gym that replicate actual areas of the Black Hills,” said Stephens. And when climbers set foot in the gym, they’ll take notice. “One wall has something called ‘crack volumes’ which replicate the style of climbing in cracks found on Devils Tower,” said Stephens. “On another wall we have overhangs and features that enable people to train for climbing the limestone cliffs of Spearfish Canyon.”

“Since the first day our Spearfish gym opened, the number one question we’ve been asked is, ‘When are you going to open a gym in Rapid City?’" said Stephens. "Both cities have large climbing communities, and we are very happy to provide them with indoor climbing facilities.” Stephens says the Rapid City gym will feature its own kid-specific climbing area, along with an events space for things like birthday parties and teambuilding activities. Though he came from a retail family, Stephens says his love of the outdoors was what inspired him to open High Mountain’s gear stores, and the subsequent customer feedback in the stores spurred on his venture into the gyms.

Recently Stephens says a customer stopped by the retail store in Custer to ask for a hiking recommendation. That same commitment to design and passion for making rock climbing accessible to everyone will translate into their second indoor climbing gym opening this winter in Rapid City.

“I absolutely love helping people find and grow in their outdoor passions,” said Stephens. “Yes, there is the health and athletic aspect of it, but I think that the more important piece is what being outdoors and hiking or climbing a mountain can do for one's mind and spirit.”

When Bill Barber began construction on a historic school building just outside of downtown Rapid City, he knew the project was more than just a unique remodel. It was an opportunity to breathe new life into a community. Originally constructed in 1908, The Garfield building

operated as a school for nearly a century, until it was decommissioned by the Rapid City School District in 2007. At the time, the property was sold at auction to a group looking to start up an art school in the historic space. Ultimately, nothing transpired with the project, and the building continued to sit empty.

Barber, the vice president and project manager for Glen C. Barber and Associates Inc. (GBA), frequented the school on his running route. As someone steeped in the construction industry, it was hard not to take notice. “I’d run around the block at night and just always thought

it would be a neat, interesting project,” he said. And, as a Rapid City native, the project’s potential was meaningful to Barber in more ways than one. “It’s a really unique property, and it was an opportunity to repurpose the neighborhood and give it a jump start,” said Barber.

If the appeal of transforming a 107-year-old structure to new life as an apartment complex wasn’t enough, moving forward on this project was a step toward transforming a quiet, older neighborhood into a desirous place to live, says Barber. And so, three years ago, he made an offer on the property. What followed was roughly a year and a half of planning, demolition, and construction. Barber and his team worked tirelessly to create an intentionally designed, multifamily living complex with 12 distinctive units. The complex exists today as part of a larger project, dubbed Garfield Green. On the surrounding school grounds, the Black Hills Area Habitat for Humanity constructed eight single-family homes. “Creating community was an important part of us wanting to do this project,” Barber said. The combination of modern apartment living, affordable housing, and the area’s existing homes aim to build a unique and diverse demographic for what Barber believes is an up-andcoming neighborhood. The location is quiet and residential, with the conveniences of downtown living just blocks away. The Rushmore Plaza Civic Center, Central High School, downtown Rapid City, and the city’s system of parks and trails, are all within walking distance of the Garfield. “It’s a neighborhood where it’s just starting to turn over in ownership from the original people that moved there in the '50s and '60s,” said Barber. “It’s just coming into its new phase.”

Today, the Garfield is at full occupancy, home to a mix of students, young professionals, and plenty of dogs (it’s pet friendly and includes an enclosed yard). But pet-friendly living and a convenient location aren’t the only draws to moving into The Garfield. Like any historic structure, the old school building offered plenty of character for Barber and his team to work with.

“It was fun to peel back all the layers,” said Barber. “We tried to reuse and take advantage of as much of the building materials as possible.” Each unit is distinct, with different elements of the building’s former life shining through. It’s an old building refreshed with modern style. According to architect Gene Fennel, the style can best be described as "artistic minimalism."

Fennel, the lead of the design team for the project, appreciated the chance to bring new life to a community and a structure, and to see old materials come back as new items. “The Garfield offers Rapid City a unique housing opportunity for a discerning clientele,” said Fennel. Much of the original structure was removed to create the artistic, minimal style Fennel referred to. Plaster, framing, studs, and floor

joists were ripped out, exposing the stone and brick foundation. “We really just deconstructed the building, stripped it down to its bones,” said Barber. Throughout the units, elements like traditional black chalkboards, the old gymnasium floor, and even the auditorium stage were reimagined to fit a residential purpose, while still honoring the building’s history.

One of the greatest challenges the GBA team faced was the abundance of common areas in the building. “In a space like that, there’s a lot of common spaces and hallways, and we wanted to eliminate the majority of that to create individual living spaces,” explained Barber. “So that created a really unique property where you have access from each part of the building.” The team’s incorporation of the original hallways allows tenants to enter the building from all sides.

“The building, which was inherently non-accessible, is now an example of accessibility and adaptability, plus a possibility for a unique mix of neighbors, energizing a transitional neighborhood,” said Fennel. Beyond those unique touches, Barber and his team took care to include desirable amenities as well. The original boiler room now functions as a storage space and bicycle workshop, meaning residents don’t need to bring their bikes into their units.

Raised garden beds were also constructed outside, which tenants have enjoyed filling with a variety of crops. “They’ve got corn, squash, flowers, and strawberries,” said Barber. “It’s been really neat to see them jumping into that.” And the amenities don’t end in the common spaces. Each unit has a washer and dryer, but beyond that, Barber intentionally created a modern, open layout with plenty of built-in features.

Much of the original wood flooring was repurposed into larger furniture items, such as wardrobes, dressers, and mobile kitchen islands. “We wanted to make it as easy and affordable for people to live there as possible,” said Barber. “With these builtins, you don’t necessarily have to have a dresser or a kitchen table to live here. Repurposing these elements was something that just kind of excited me and made it fun to build.” When possible, units were equipped with balconies and patios. The west-facing units have private patios, and upstairs apartments get to share an outdoor space with views of the skyline, downtown, and of course, Black Hills sunsets. Additionally, local artist Bob H. Miller was commissioned to create all the wayfinding elements and apartment numbers. “Each doorway is a piece of art,” said Barber. Miller’s artwork is also featured on a grander scale, in the school’s higher windows. “We took some of those windows, and instead of replacing them with new glass or a solid color, we had some of his artwork photographed and then overlaid onto the panels,” said Barber. “Hopefully it can be sort of a landmark for the property. It really adds something to the neighborhood.”

“It was fun during construction to have people coming up to us in the neighborhood, saying ‘Gosh, we’re so happy something’s happening with the school,’” he said. The team received many similar comments of appreciation during the process, but not everyone thought the project was sensible. “Even when we did an appraisal, the best value or use was said to be to tear it down and build low-income housing,” recalled Barber. “We’re pleased we got to do what we did, and it’s been well received.” When the GBA team saw the opportunity to build community in a quiet neighborhood, they felt it was important to move forward. “It would have been really easy for that not to have happened, but we really believe it was the first step toward this neighborhood becoming a thriving area,” said Barber. Already known as one of the top places to grab breakfast in the state, their evening menu recently had a makeover for a more informal dinner experience. Haskett gave 605 a bite (or five) of one of the offerings, along with a refreshing beverage.

INGREDIENTS

Chicken breast

Seasoned flour (with pepper and salt)

1 Egg scrambled

3 Anchovy filets, coarsely chopped (optional)

Panko bread crumbs

3 Tbl. olive oil, divided

1 Shallot, julienned

2 Garlic cloves, finely chopped

1 Tbl. of capers

3 Oz. of Kalamata olives, coarsely chopped

1 Medium tomato, diced largely

2 Oz. Dry white wine

Salt

Pepper

Fresh basil, chiffonade-cut

1 Lemon wedge

DIRECTIONS

Season the chicken breast with salt and pepper to taste.

Dredge it in seasoned flour, shake off excess flour.

Whisk egg vigorously, until yolk and egg whites are foamy.

Dip chicken breast into egg mixture until it’s fully coated.

Coat it with panko bread crumbs.

In a sauté pan, with medium-high heat, coat the pan with olive oil.

Begin to fry the breaded chicken breast until it’s light brown on one side.

Flip it, and let it cook through on medium-low heat.

Remove chicken breast to let it rest.

Wipe out any crumbs from the pan, and add more olive oil.

Add the julienned shallot and chopped garlic cloves.

Sauté until light brown, mostly wilted on medium heat.

Add the anchovies, let cook for 30 seconds.

Add capers, olives, and tomatoes.

Continue to sauté for 30 seconds.

Add the wine and salt and pepper to taste.

Plate chicken breast with the Puttanesca sauce over the top.

Garnish with basil and lemon wedge.

here’s a new Mexican restaurant opening in Spearfish,” someone mentioned last spring.

For some reason I didn’t jump for joy at the tip. Why? I feared it was going to be "just another Mexican restaurant” that may or may not have good salsa (big problems, right?) and would turn out to be an average AmericanMexican restaurant experience where it doesn’t really matter if you order the enchilada or burrito, because they’re almost the same thing. Back in town this past July, my partner in crime Liz and I walked from Main Street to Illinois Street to find said new place that opened May 3. It’s so small we literally walked past it.

“Sir, do you know where Antuñez Cuisine is?” I asked a stranger confidently as they pointed their thumb back over their shoulder. It was right in front of us. “Of course it is,” I said bashfully, as I sashayed past him and saw several tables outside of the quaint establishment. Inside was adorable. The walls were specklepainted a dark ocean blue, and there was a framed Chocolat poster near the front. If

BRUSCHETTA DE ESPAÑA A Spanish take on Italy’s classic bruschetta. Pan-fried artisan bread, topped with seasoned butter beans, roasted tomato, freshly wilted spinach and kale, and their homemade lemon and roasted garlic aioli.

TACOS DE LA CASA Two tacos per plate and choice of beans and arroz verde.

BEEF CHILE COLORADO A very deep and richly flavored beef, slow-braised with chiles, spices, herbs, and dark chocolate. Piled on two warm corn tortillas and topped with homemade crema, fresh chopped lettuce, homemade green hot sauce, cilantro, and onion.

ROJO (RED) CHICKEN Two enchiladas rolled with corn tortillas, with their spiced and roasted chicken. Topped with rojo sauce, cilantro, and a sprinkle of melty cheese. Served with choice of beans and arroz verde.

DOUBLE CHEESE & GREEN CHILE QUESADILLA Two cheeses, fire roasted green chiles, chopped onion, salsa verde and Cholula hot sauce, all melted inside a flour tortilla. Served with a side of homemade chipotle crema.

HEARTS OF PALM & MANGO An exotic and tropical mix of fresh cut hearts of palm and mango tossed with a lime vinaigrette and cilantro, topped with a locally produced poached hen’s egg.

BARRAMUNDI FISH GRILLED IN BANANA LEAVES A sweet and flaky fish, sustainably sourced from Australian waters. Wrapped in banana leaves with homemade green chimichurri, lemon, and scallion, grilled to perfection. Served with arroz verde and sauteed zucchini and squash.

GRILLED QUAIL WITH ADOBO BUTTER AND CHIPOTLE GRAPE GLAZE Two semi-boneless quail seasoned with house rub, grilled to perfection, then topped with adobo compound butter and chipotle grape glaze. Served with arroz verde, sauteed zucchini and squash, and choice of beans. Chipotle grape glaze served on the side.

There were also pieces from a piano used as art on the wall, as well as part of the custom host stand and bar in the corner. We were greeted by a staff member who took us outside on the patio, per our request for food lighting (though I wish we could have stayed inside for the unique ambiance).

Receiving the giant paper menus, we read the restaurant was “beautiful, flavorful, nutritious cuisine from Mexico, South America, and Spain.” Alright, alright (throwback). Let’s do this. I also noticed that, once again, somehow Spearfish seems to be ahead on restaurants being very vegetarian and gluten-free conscious, as options were noted on their menu. Even Leones’ Creamery in town has gluten-free ice cream (duh, did you think I could talk about food and Spearfish and not mention this?). Owner and chef Jared DeGraaf came out to say hello, as well as owner and chef (also DeGraaf’s

She asked if she could pair wine and beer with our meals. It’s like we won the lottery or something. I looked for Ashton Kutcher to see if we were being punked, but lucky for us, we were not (throwback). First up, the Pork Carnitas. The menu is helpful and also has some fun descriptions. For example, “the taco that helped put them on the map” is “a party in your mouth” with pork shoulder spiced with house rub and slow-roasted, piled on warm corn tortillas, and topped with homemade cilantro aioli, cabbage slaw, cotija cheese, and cilantro and onion. I could see why this is their numberone seller. But before I really even dug in, I went for the side of rice, because. Well. Rice, right?! It was nice and

light, which is good to have with a heavier meal. The other side was Mexican pinto beans, which were made with pork belly. I never just eat beans, and I had to focus on the main prize after finding myself eating more beans than I anticipated. The main dish was on top of a shell, so we couldn’t find a way to pick it up, nor did we think we should after some quick dialogue on the topic. We grabbed a fork and went to town. There was definitely a party in my mouth with all of the fresh flavors. Liz commented, “The aioli is fantastic.” It paired well with a Dos Equis to showcase their draft beer selection. Next up, the Spinach & Mushroom Enchildadas, which had two enchiladas rolled with corn tortillas, with a “mouth-watering” blend of spinach, mushroom, diced green chiles, and herbs. They were topped with verde sauce, cilantro, and a sprinkle of melted cheese. The side of Cuban Black Beans was very good and flavorful. I thought

I would be polite and try them as I’m not normally a fan, but I had more bites and realized… maybe I was eating black beans at the wrong places? This dish was swimming in verde sauce, which is everything I could ask for. I could drink it. Not really, but doesn’t it sound kind of good? What a great option in general and for a vegetarian for sure. Also, this was paired with a rosé. Trust me, I was still pinching myself at the pairings. A white wine came out with Smoked Salmon Tostadas. This consisted of three freshly fried corn tortillas, topped with smoked salmon, homemade chipotle crema, avocado, cucumber, crispy pan fried onions, and cilantro. “A heavenly union of flavors,” said the once-again clever menu. The shell was so crispy, and it was a delight. It was all so light, and the flavors went so well together. Smoked salmon for sure was a homerun, but my favorite was the onions... until I ate more homemade crema. Die.

When I handed the plate to Liz, I stared at it longingly. “Heavenly it is,” she said after a taste. As if this wasn’t enough, out came the Dry Aged Beef Boneless New York Steak with Saffron Butter. The 12-14 oz. steak dry aged in-house at Spearfish’s Prairie Harvest was seasoned with house rub, grilled “to perfection,” then plated with housemade saffron compound butter.

Because there were two of us, we asked for it to be done medium, which super annoyed Liz because she’s a rare steak kind of gal. She took the first bite. “If this was medium rare, I would cry,” said Liz, genuinely. I took my first bite, and the saffron butter hit my entire body. I mumbled, “Omg, omg, omg,” and made other noises that could be confused as otherwise. It was even better with the red wine pairing.

“This is straight up fine Spanish dining,” I said, realizing I said it in the least “fine dining” sounding way. Finishing up, we chatted about what could possibly be our favorite part, as DeGraaf came out to chat and told us we had to try their dessert. We looked at each other and nodded, as in, “Let’s do this.” Dessert meant a piece of Chubby Chipmunk Chocolate, which, if you haven’t heard of it

yet, do it now. These South Dakota truffle delicacies are based out of Deadwood, and also have a location in the Hotel Alex Johnson in Rapid City (also, fun fact, Chubby Chipmunk has been found in Grammy and Academy Award celebrity gift bags). Impressed? I was even more impressed that DeGraaf said Antuñez has a special Chubby Chipmunk made just for their eatery Chocolate Spice.

Owner and chef Sabrina Heredia is also a level one sommelier, which is a wine steward, or a knowledgeable wine professional who goes through impressive formal training. Heredia can take patrons' dining experience several steps further by pairing each dish with a recommended wine.

I took a bite and kept making “wooh” noises, as the sweet turned into a spicy kick. So many “woohs” were made, in fact, that the guy at the table next to us was like, “Yeah? Is that pretty spicy?” In the most delicious way, yes, sir.

BOTTOM LINE: What an experience. This is a must in South Dakota as a whole. DeGraaf sat and chatted with us for a while, and soon after I saw him talking to a couple and giving them tips on what to do around the area. The food was so fresh and uses local ingredients, as well as having a sommelier on hand (what?!). Go. Now. Go.

Every single one of the staff and family members were so kind, it’s like we've known them forever. With the piano art, the unique blue walls, and the intimacy of maybe a dozen tables, this is an experience. Also, the restroom had a cell phone holder. It’s the small things.

I was sitting out on a restaurant patio today and I felt it: The undeniable hint of fall riding on an almost-crisp breeze. I looked up at the sky and shuddered with a tinge of sorrow. Summer is heaving its last breath for the year. Now, if you know me, you know winters have become synonymous with… well, to put it boldly, torture. Yes, I am that dramatic. Something about the negative degree temps, inhumane windchills, childhood colds, and the disappearance of grass and sun for months on end is honestly wretchedly tortuous. But this year, while I am dreading the inevitable winterpocalypse that is ready to afflict us all, my tinge of sorrow is actually rooted in another cause altogether.

Before summer began, I read a piece online about how we realistically (Lord willing) have 18 summers with our children while they are living under our roof. Only eighteen. Meaning, with my oldest, I’m already down to 11. Eleven summers. That seems like an absurdly low number, as if that could not possibly be correct. I don’t remember a ton of my childhood. Not because I had some horrific childhood that I blocked out, but because truthfully I think I may just be losing intelligence and brain cells at an alarming rate due to pregnancy, childbirth, and the delightful stresses of parenting. I’m only half-joking. But the childhood memories I do have largely surround the summers I spent with my family. Weekends spent at the ball fields for baseball and softball. Lighting

off fireworks on the huge sledding hill across the street from our house. Almost setting each other ablaze with said fireworks. Trolling the neighborhood pool for my childhood crush. Almost drowning in said pool whilst trolling for said crush. So, when I think of summertime now through my children’s eyes, I’m wondering, what will they remember? Will they recall their summers with such nostalgia, too? It was this line of thinking and the alarming realization that I only have 11 summers left with my daughter, that led me to try to make every effort to construct the most glorious summer for my children these past few months. I had plans. I had a loose schedule of things we would do. It was going to be magical. In an attempt to

stay academic, I even said we’d have a “library day.” But, then I was eight months pregnant. Then, I was nine months. Then, it was 99 degrees. Then, there were gnats and mosquitoes of Moses’ plague-time proportions. Then, I had a baby. Needless to say, my plans quickly unraveled. My “loose” schedule became looser to the point of non-existent. And I am still to this day getting texts from Siouxland Libraries that our books are overdue from our one library day we did back in May. So, instead of well-scheduled and wellplanned days, our summer involved the opposite. We took the kids to the pool on the hottest days. But the other days, I would send the kids outside and they hunted for frogs. They caught lightning bugs in jars. They played with the precious neighbor kids for hours until it was dark. They were dirty all of the time and so was my house. We ate ice cream for dinner upon the advice of our neighbors. We had popsicles every day. We had a hard time getting anywhere by even 11 a.m. because we were all so tired. All

summer long we lived schedule-less and messy lives. And all of this, to the soundtrack and incessant watching of The Greatest Showman. I hugged my daughter on her last night before she began school and asked her “What was your best memory of this summer?” I was feeling a little guilty that we didn’t do more “fun” things because of being pregnant and having a newborn. I was half expecting her to say she was disappointed that we didn’t get around to all the things I told her we were going to do. But instead, she thought about it for a while and finally she said, “All of it. Every day was the best day of my life.”

Even as the tinge of sorrow creeps in because my summers with her are numbered. NEW KIND OF GRAPHIC DESIGN BUSINESS IS IN TOWN. YOUNG AE KIM AND JOE SCHAEFFER WELCOMED 605 INTO THEIR STUDIO TO EXPLAIN MADE BY THAW’S PROCESS. THEIR STRATEGY GETS BENEATH SURFACE LEVELS TO SOLVE PROBLEMS FOR CLIENTS.

The duo set to work after opening their doors approximately four months ago. Schaeffer and Kim started out as student and teacher. Kim taught at the University of South Dakota while Schaeffer pursued his undergraduate degree. “Young Ae reached out to me and asked if I would be interested in opening up a studio together,” said Schaeffer. “Of course I said yes.” Reaching out to Schaeffer was calculated for Kim. The designer and current South Dakota State University

professor owned a business in Korea before moving here 13 years ago. “When I hire designers, there’s a few things that are really important. One is work ethic and another is honesty. The third is a mindset of growing at all times,” said Kim. Made by Thaw’s setup lies within Kim’s own home. An open floor plan, natural lighting, and warm smiles greet visitors. The location fit needs of accessibility and wanting to merge their cultures with the Midwest’s.

“I’m half Mexican, Young Ae’s Korean,” said Schaeffer. “Within these cultures, family is very important. We’re taking that approach, inviting people into our house and making them feel comfortable.” A team of two proves to be all they need to succeed at this time. The studio may expand its team in the future, but manpower isn’t an important factor in delivering quality graphics. “These days, it’s not about size. I would say that we are very customizable for the clients,” explained Kim. “We have the

capacity to do all requests with a very different approach.” Keeping a balance allowed expansion already. Made by Thaw opened a small studio in Los Angeles as well. Purchasable items also accompany self-initiated exhibits and past projects on their website. “We do a lot of self-initiated work that we’re either interested in or that’s research-based,” said Schaeffer. “Different ideas and experimentation filter into our work professionally.” The designers believe even unsuccessful projects fuel growth of their skills. Kim says that some designs were never destined for a price tag. “Not everything's made to sell. Some are limited editions or remain online,” said Kim. “We also sometimes do pop-up events and randomly send out to a couple of people a surprise gift.” One of these events focused on the now official Sioux Falls Flag. The board that introduced the design included Schaeffer. Made by Thaw gave away posters of their take on the flag.

“We sent out five posters to people in town. If we want to do it, we don’t hesitate,” explained Schaeffer. “That’s another nice thing about being small. So what’s next at Made by Thaw? Kim and Schaeffer plan to keep expanding their influence on the area. “With this speed, we hope we can do more contributions to the community, such as hiring interns,” said Kim “The biggest goal we have is to make our footprints in the community.” The pair already completed projects for Sanford Health, USD, and a video production. There’s several more in the works. “We’re aiming to solve the problems of our clients with solutions that aren’t typically like anything you’ll see,” said Schaeffer. “It’s about redefining what design is in the Midwest.”

What better way to use the power of social media than to create a social movement “to make kindness a conscious and constant part of our everyday lives?" The Kind Way is a social movement, using “The Kind Mural” as a symbolic vehicle to promote good vibes around the globe. The founders, Rebekah Rinehart and Sarah Nelson, are natives to South Dakota and alumni of the University of South Dakota. Rebekah majored in communication studies with a minor in English. While Sarah majored in business marketing, she says she enjoyed the creative side a little bit more so she added a minor in art with a graphic design emphasis.

The two have been using their combined forces of passion, creativity, and caring souls since October 2017. Kind Murals can be found in Nashville, Chicago, and now Sioux Falls. Recently the two returned to their home state to show it a little love. Located in the Empire Mall food court, the two barely slept to create the third mural. As they plan to make this movement global, Dallas, Minneapolis, and Denver will be seeing some of their kindness within the next few months. THE EARLY WORKINGS “I was on a train from Cannes, France to Paris, and I witnessed a small act of kindness that sparked the idea,” said Rinehart. “I decided that I wanted to start a movement,

something that would reach the masses and make an impact. I thought a mural would be perfect, except I can't paint. Sarah was a co-worker, a sorority sister, a dear friend, and a sensational artist. She has brought it to life, I couldn’t imagine going on this adventure with anyone else!” Nelson recalls the night Rinehart called her about the movement. “She asked if I would be willing to paint a mural. I said yes, but on the inside I was completely hesitant. Who would let an amateur paint on their wall?” joked Nelson. “Being a part of The Kind Way has truly been the greatest thing I’ve ever been a part of – it has taught me even more about kindness, perseverance, and how far a small act of kindness goes in someone’s life.”

They decided from the beginning that wildflowers would be the symbol/ branding that would be incorporated into each mural. However, since the message is represented in so many ways, they had a difficult time settling on one “design” or “object” that defined it. Not long after, they discovered the saying that kindness can grow as quickly and as beautifully as wildflowers – thus “spread kindness like wildflowers.” THE DESIGN When choosing a design for a city, the two collaborate on how they want the design to somehow relate to the individual city, but still tie in their wildflowers. Each mural has either a quote regarding kindness or simply, “Kindness is ___”. This gives spectators the opportunity to be the focal

The artists want these projects to be interactive, with people sharing their own pictures of the murals and captioning what it means to them. “But really, the final design doesn’t come out until it’s up on the wall. I like to roughly sketch out an idea first, and what’s nice is that Bekah can read my mind of what and how it actually looks in my head,” said Nelson. “I freehand everything knowing and risking that I will make mistakes, but that’s what makes it fun and challenging.” MORE THAN MURALS Each mural created by the duo is painted “In Honor Of” or “In Memory Of” a person, group, organization, etc. that embodies kindness in their work and life as a whole. The Empire

Mall’s mural recognizes the two founders’ families, both still residing in the Sioux Falls area: The Nelson and Rinehart families. In addition to the pieces of art, they have “The Kind Jacket,” which incorporates different hand-painted designs with their branding of wildflowers and quotes regarding their mantra. They are also in the process of designing t-shirts and creating a new lifestyle blog that will cover topics like recipes, life’s joys and struggles, workouts, movie and book recommendations, their favorite products, fashion, etc.

ee Walsh, stage name El Dub, has had a busy year. The funk, reggae, rock, and jam musician recently returned from a two-week European tour and a full East Coast tour. Releasing his fourth album this November that has been three years in the making, Walsh will reunite with Sioux Falls band Lunar Funk Theory for a long-awaited home show September 7 at Bigs Bar. 605 caught up with the “one man band” (or “looper”) on life on the road, growing up in South Dakota, and coming together with his original bandmates again.

I GOT INTO REGGAE/FUNK/SOUL THROUGH… well, I love almost all forms of music, and these are just a few I like to explore and experiment with at this time in my life. When I was younger, I was a fan of playing punk rock and metalesque types of music and then moved into hip hop and have continued toward reggae, funk and jam etc. It just depends on where I'm at in life.

I STARTED PLAYING MUSIC WHEN… I was gifted my first guitar for my 12th birthday and have loved

BEING FROM SOUTH DAKOTA, BRINGING REGGAE TO THE STAGE IS IMPORTANT BECAUSE.... people don’t generally expect reggae to come out of South Dakota, so it’s funny to see people’s reactions when you tell them where you're from. Reggae is a music that really goes anywhere if your heart and mind are open to it. THE SOUTH DAKOTA MUSIC SCENE IS… diverse and everchanging. It's been fun to play through the many different places and jam with so many great local bands along the way. MY FAVORITE PART ABOUT TOURING IS… I love traveling and

seeing and experiencing new things all of the time and, of course, getting to play for many different people from many different walks of life. Being on a full time music tour and being able to sustain my wife and two kids with the income from just that has truly been a blessing and a dream come true. I’m extremely grateful and do my best to give thanks often. MY MOST MEMORABLE SHOW… is really hard to pick, but a few of the favorites for El Dub were opening for 311, touring Europe, and playing many awesome festivals around the country. For Lunar Funk Theory, the time we drove out to Montana to headline a festival was pretty epic, but there's really too many great times to count!

“We felt the area needed a bridal place that focused on the whole experience of dress shopping since women are going out of state to bigger cities for more of a selection,” said Rallis. The bridal store opened this spring, and Rallis and Thompson, who are also sisters, say they’ve received numerous compliments from clients and those passing by. “One of the first things we picked out in the store was the wallpaper. We found it and needed to have it. It’s so pretty, fun and feminine, so we based our whole look around the wallpaper,” said Thompson.

The store features private party sections, and designer dresses ranging from $1,000-$6,000. Plus, the dresses are unwrapped and freehanging which the sisters say gives a modern, clean, and sleek look. “When the brides come in, they can look at the dresses and they’re spread out and not scrunched together. The dresses are also not in clear plastic bags, so that’s how our design affected our business process and how we serve the brides,” said Rallis. Finding the perfect dress isn’t the only to-do on the wedding planning list. From picking the wedding colors to budgeting and finding the reception hall, the list can seem endless.

Katie Murphy and her team at Jane Rae Events have been looking to ease the stresses of wedding planning since January of 2017. The shop is located at South Minnesota Avenue. “We want the brides to be relieved and more excited of their vision coming to life for their big day. A lot of clients know what they want but can’t bring it to life,” said Murphy. Her styling and rental company offers a variety of wedding planning packages. They shoot for a timeless and classic look with a dash of popular trends mixed in with the couple’s style.

“With events, things are always changing from year to year, so with our look and style we want to keep something that’s timeless, but also have the trendy aspects,” said Murphy. “It’s not cookie cutter, and every [couple] is different.” Jane Rae Events says there are a couple things that make them unique. “We have all floral, design, and event rentals under one roof, which is crucial,” said Murphy. “People can come in and explain their vision and we go in and pick out the pieces right here.”
