I DIDN’T know whether to laugh or cry at the latest occurrence on TV’s highly popular Mastermind.
Amid unofficial experts on the composer Chopin, the plays of Samuel Beckett and the life of American activist Gloria Steinem was Danielle, specialist subject – children’s cartoon The Simpsons.
And she won!
Traditional Mastermind fans are, reportedly, very upset at the programme for “dropping its standards” with this particular subject.
But the part of me that always wanted to go on the programme with a specialist subject like Cake Decoration in Britain 1975 to 2000 or The Life and Times of My Reception Class Teacher Miss O’Brien couldn’t help but glory in Danielle’s success.
Since Mastermind first hit our screens in 1972 with the excellent Magnus Magnusson in charge it has been a home of not only general knowledge but also quirky, acquired knowledge.
Although studying The Simpsons in quite such detail does seem slightly different there have been quite ordinary people coming up with unusual specialist subjects that demand the question “Why on earth …..?”
While it was always wonderful to realise that there are people out there who acquire very detailed knowledge purely for the love of a subject, it’s somehow reassuring that one as lightweight as the popular cartoon series should demand the same attention.
Such dedication to any subject – but especially historical, possibly dry subjects - is really awe-inspiring and can make the contestants seem like higher intellectual beings.

It is also a cause for genuine joy if, for a particularly heavy subject, those of us sitting at home open-mouthed might just get one question right.
This time, one delighted viewer reacted to The Simpsons’ answers with “I got eight correct!”
However, we might simply be being snobbish here. What separates The Simpsons from the composer Chopin is purely personal taste.
It’s the format of Mastermind that isolates contestants in the big black, spotlighted chair and worth remembering that the programme was created by a writer who drew inspiration from being interrogated by the Gestapo in World War II.
Even the iconic opening music to Mastermind is called Approaching Menace to create that atmosphere.
Nothing much menacing about Homer Simpson, though. Doh!
I SUPPOSE it’s no wonder that the UK cost of living would be prompting more people to relocate to other countries.
The latest is a British family of four who have gone to live in Cyprus on just one wage.
James and Sarah Moore gave up on life in Middlesborough and took their two children aged nine and five off to the island sunshine.
James, an IT technician, had the opportunity of remote working there and it was probably a no-brainer to ditch their 60-hour working week and £400 a month heating and council tax bills.
They were also looking for better schools, an improved work-life balance, lower crime rates and more affordable living. James now works less hours but earns enough for the family to live on just one income.
Sarah, a former teacher, says the children were “unhappy” in the UK education system but has found that schools in Cyprus are more child-oriented and better.
At one time, the Moore’s story was fairly unusual, something you aspired to over years and planned for. James applied for the new job “almost on a whim”, deciding that if it didn’t work out they’d just treat the whole thing like an adventure and return to the UK.
As it happens, they’re delighted with the move, now live in a three-bed house with a pool, a stone’s throw from the beach, in a family-friendly neighbourhood.
Good luck to them, not just for opting for sunshine over UK weather but also for not bothering to moan about life instead actively finding a solution.
It’s not the answer for everyone, of course, and many people wouldn’t want that life. But as a dream plan for a young family, well, you’ve just got to applaud them.
And I suspect that, looking back over this period in domestic history in a couple of years time, we’ll discover that the Moores’ story was replicated many times over.
NOW that “stars” seem to be measured by how successful their social media is or how many people they “influence” it’s refreshing to see a true celebrity recognised.
The newly knighted Sir Gary Oldman isn’t normally pictured staggering out of a nightclub at 3am or attending the opening of an envelope.
He’s one of the quiet breed of thespian doers who just work hard to give a brilliant performance on stage, screen or TV and avoid the spotlight. Their work speaks for them.



For all that low-key approach, Oldman is one of the most versatile actors around, regularly giving a great performance.
Whether he is Sirius Black in a Harry Potter film, Winston Churchill in the amazing Darkest Hour or Ludwig van Beethoven in Immortal Beloved he creates the same kind of absorbing result.
In fact, so immersive is he in any role that you completely forget it’s Gary Oldman playing a part. No two performances are the same and his understated approach to acting is totally persuasive.
His versatility has been regularly acknowledged by award nominations but I suspect the knighthood will be enough for Sir G.
WHY on earth are there still problems around fireworks as soon as the dark nights start to draw in?
Weeks away from Bonfire Night and long afterwards, there are nightly bombardments of loud bangs that start at teatime and continue until the early hours.
Legal rules include general usage from 7am to 11pm, not in public places like streets, used safely and you have to be 18 or older for most fireworks.
Now, they are set off for every type of celebration, at any time, by anyone – and become weapons against people like fire-fighters.
Let’s get real enforcement underway, prosecute and stop this annual anti-social menace.

Düsseldorf
Düsseldorf, the German capital of the North Rhine-Westphalia, lies at the junction of the mighty Rhine and the Düssel, where the original settlement of Dusseldorp was founded and the earliest record with reference to Dusseldorp dates back to 1135. The Holy Roman Emperor, Frederick I, was elected King of Germany in 1152 and his forces, based in Kaiserwerth, north of Düsseldorf, defended the Rhine from a strategic outpost. In 1186, Düsseldorf was ruled by the Counts of Berg and in 1288 the Battle of Cologne took place with the Archbishop of Cologne and the Count of Berg vying for control. Adolf VIII of Berg was victorious and he awarded town privileges to the village of Düssel. In 1380, Düsseldorf was proclaimed the regional capital of the Duchy of Berg. The city suffered a decline during the Napoleonic Wars between 1803 and 1815 during which Napoleon declared Berg a Grand Duchy with Düsseldorf as its capital. Following Napoleon’s defeat, Berg and the Rhineland were declared part of the Kingdom of Prussia. As a result of the Industrial Revolution Düsseldorf prospered but again experienced decline due to strategic bombing during WWI and again in WWII. In 1946, the new federal state of North RhineWestphalia proclaimed Düsseldorf the capital and the reconstruction of the city began in earnest.
Today, Düsseldorf is one of Germany’s wealthiest cities and an important telecommunications and financial hub. This impressive metropolis reflects modern examples of architecture, a flourishing art scene and a vibrant nightlife. For a bird’s eye view of the city I headed to the Rhine Tower, which was built between 1979 and 1982, and is Düsseldorf’s tallest structure, soaring up to 240 metres. The tower features QOMO, a modern Japanese restaurant, which rotates every 72 minutes, and a viewing platform at 168 metres where I made my way to the bar and sipping on a chilled gin fizz, I admired the stunning views of MedienHafen, Hofgarten, Alstadt, Königsallee and, of course, the Rhine.
Back on terra firma, I made my way to Altstadt, the city’s ‘old town’, which offers more than 260 bars and pubs and the world’s longest bar. Düsseldorf’s tradition of brewing dates back to the
Roman age and ‘Alt’ relates to the brewing style of Altbier. I spotted several long, wooden tables where local people were gathering and I decided to join them. I ordered a glass of Altbeir, which has a wonderful fragrance of spices. Welcomed by my fellow patrons I was invited to join them on their journey from one bar to another. Alas, pressed for time, I reluctantly left and headed to MedienHafen, an area which houses numerous media and communication corporations, and fashion, architecture, art, and culture businesses. Strolling around at leisure I was particularly impressed with the Stadttor; a steel and glass structure, which is considered to be the city gate, and the Gehry buildings; high rises with tilted walls and inclining towers, built in 1999. I then embarked on a stroll around Burgplatz, the cobblestone square, which links the old town and the banks of the Rhine. The Burgplatz features an imposing castle tower; a remnant of a baroque castle, which was built in the 16th century and today houses the Maritime Museum. Exhibits include shipbuilding history and trade and travel linked to the Rhine. I then made my way to the tree-lined Königsallee, the widest boulevard in Germany, which features four walkways and a wide choice of luxurious shops including Dior, Prada, Chanel and Gucci. I could sense that my credit card balance was under threat and decided to retreat to the comfort of a local hotel.
I was most fortunate to spot the Breidenbacher Hof, situated on Königsallee. The check-in procedure was warm and efficient and I was swiftly escorted to the Duchy Suite, which measures 79 square metres and consists of a spacious, classically furnished living room and a separate bedroom with the most comfortable extra large bed swathed in crisp, white linens. Following a soothing soak in the Jacuzzi/bath and an extensive cat-nap I headed off to the sumptuously furnished lobby bar and sinking into a plump velvet chair I ordered the delicious lobster soup, followed by the succulent salmon sashimi accompanied by a chilled glass of bubbly, which were served with aplomb.
Up with the larks, and after indulging in an extravagant breakfast, I took a leisurely stroll along to the Hofgarten, which covers twenty eight hectares and features an impressive collection of trees and


plants including magnolia, chestnut, hop beech, amber, trumpet and red maple, shrub plantations and perennials. The floral displays are wonderful and the intoxicating fragrances hanging in the air add to the overall experience.
For those of us with an insatiable thirst for art, a visit to the Kunstsammlung Museum is a must. The collections are housed in K20, located on Grabbeplatz, which focuses on the 20th century and K21, located on Ständehaus, which focuses on international modern art.
K20 displays works by Paul Klee and focuses on surrealism, Dadaism, and expressionism. I was particularly drawn to the masters; Matisse, Picasso, Dali, Magritte, Max Ernst and Francis Bacon.
My thirst for art knows no bounds and I set off to explore the K21 Museum, located on Ständehaus. This modern art exhibition features works by Ei Arakawa, Marina Abramovi, Robert Gober,

The most intriguing exhibit has to be ‘in orbit by Tomás Saraceno’, a room installation, which hovers 25 metres above ground level and consists of near-transparent steel nets beneath a glass dome and five air-filled spheres. Visitors are welcome to climb the nets and enter the spheres placed within the 2,500 square metre networks. The illusion for viewers on ground level means that the people above appear to be floating or walking on air. It is quite simply mesmerising.
After being surrounded by art and utterly absorbed for an extended period I was feeling rather peckish and headed for Heimwerk, a restaurant, located on Hafenstrasse. I ordered the first rate mushroom Schnitzel followed by the Kaiserschmarrn; a delicious sliced, caramelised, powder-sugared pancake with applesauce and accompanied by a chilled glass of Riesling, it was perfect. I raised my glass aloft to Düsseldorf, which is, quite simply,Wunderbar.

THE name Stephen Graham has become a new Industry Standard – spot a new film, play or TV series with him in the cast list and you just KNOW it’s worth watching.
He’s just won three Emmy’s for the amazing Netflix psychological crime drama Adolescence for acting, writing and producing the programme that had everyone talking and which has prompted social perceptions to change.
This should be no surprise to most fans as Stephen is quoted as insisting: “I’m drawn to dramas that make people think. I want to make an impact.”
Well, the 52 year-old Liverpudlian has certainly done that. Ever since, in fact, he first came to public attention playing the dimwitted Tommy in Guy Ritchie’s 2000 film Snatch. His story, though, goes back to his upbringing in Kirkby, Lancashire where he was encouraged to try for an acting career while performing in a school production of Treasure Island.
“I was 10 and I played Jim Hawkins,” recalled Stephen, “and this great Liverpudlian actor called Andrew Schofield – he was Johnny Rotten in Sid and Nancy – came to watch it and he had a word with my mum and dad afterwards and told them I should have a go at the Everyman Youth Theatre. I’ve never looked back.”
After attending Ruffwood School, and receiving some theatrical training at the Rose Bruford College of Theatre and Performance, he began an acting career which initially saw him taking on bit parts.
All that changed, though, when he went with a friend who was auditioning for Snatch and was offered the role of Tommy. He followed that up with a role in Band of Brothers in 2001.
This exposure led to America taking notice of the quirky Brit actor and a part in Gangs of New York in 2002.
Then he had his breakthrough role as Andrew “Combo” Gascoigne in the 2006 film This is England. On TV, Stephen then reprised this role for This is England ’86, This is England ’88 and this is England ’90.
He played Al Capone in the HBO series Boardwalk Empire from 2010 to 2014 and a slew of high-profile appearances followed. These included film roles in Pirates of the Caribbean: On Stranger Tides and later in Pirates of the Caribbean: Dead Men Tell No Tales.
He was Anthony Provenzano in The Irishman in 2019 and Patrick Mulligan in Venom: Let There Be Carnage in 2021 and its sequel Venom: The Last Dance in 2024.

He has become a regular favourite in some of the best TV of the past decade, like the thought-provoking 2017 drama Little Boy Blue, based on the true-life murder of 11 year-old football fan Rhys Jones.
Stephen played Detective Superintendent Dave Kelly in the four-part series, earning attention and accolades and ramping up his burgeoning acting reputation.
He had a pivotal role in the fifth series of multi award-winning Line of Duty in 2019 and played Hayden Stagg in the sixth series of Peaky Blinders in 2022.
One of his key skills is handling accents in his many roles and as a result he has accurately portrayed characters from various parts of Britain, Ireland and America. For example, he played Welsh detective Taff Jones in 2020’s TV series White House Farm based on more true-life murders.
“People in New York are surprised when I open my mouth,” he has stated.
Not content with all that exposure, he has also appeared in music videos like When The Sun Goes Down with Arctic Monkeys and Unlovable by Babybird which was directed by Johnny Depp. He has also been on Radio 4’s Desert Island Discs.
Unsurprisingly, his varied and highly accomplished work has brought him plenty of official recognition through awards.
He was nominated for an RTS Award for his work in The Street and for a British Independent Film Award for his role in this is England. He has received nominations for five British academy Television Awards and
two British Academy Film Awards among others.
Stephen was also made an OBE (Officer of the Order of the British Empire) in 2023 for his services to drama, which he dedicated to his late mother.
In 2020, he set up a production company with his wife Hannah Walters. Matriarch Productions exists to “try to develop good stories that will be a broader representation of the cultural aspects of our society.”
He and Hannah – whom he met while they were both training as actors – have two children and live in Leicestershire.
“I wouldn’t rule out LA life but I love England,” he is reported as saying. “I have a lovely house and garden. I walk my kids to school – family is most important to me.
“I don’t need to move to the States. I love our little village, Ibstock.”
A plainly moral man with a strong sense of social justice, he applies his straightforward approach to his profession. “There has to be something that I like about a character for me to be able to play him,” he stated.
“I’m a mixed race lad from Liverpool. I get to play a lot of hard characters and some people perceive that’s what I’m like, but it’s great for me ‘cos they’re always the most interesting characters.”
In fact, he has had three fine portrayals onscreen of infamous gangsters – Baby Face Nelson in Public Enemies in 2009, Al Capone in Boardwalk Empire and Anthony “Tony Pro” Provenzano in The Irishman.
Stephen is quite traditional in various areas of his life. For instance, “I like how TV used to be,” he once commented. “Boys from the Blackstuff and Play for Today instead of Stars in Your Eyes and Celebrity Come Cook with Me or whatever. I hate all that stuff.”
In spite of his success and international recognition, Stephen Graham keeps his feet firmly on the ground.
“There are moments when you’re stepping out of a really nice car on to a red carpet and you feel inside like ‘this is quite nice.’ But I’m never whisked off my feet.”

Old fashioned candleholders on the table cast a lovely glow over the meal and instead of paper serviettes, search out real serviettes in charity shops for your “grand” table.
People still enjoy Christmas crackers – they’ll usually pop on the paper hats, swap jokes and play with the toys. Consider making your own crackers with kits from Amazon or Etsy – then add a little personalised gift inside to heighten the fun!

The issue of care and welfare is gaining more and more coverage in the media. It’s not surprising really as there are more of us living well in to old age. Not only that, mental health and wellbeing is high on the social agenda.
The subject presents a thorny question; how will you be looked after if anything happens to you? If you’re diagnosed with a degenerative mental condition, such as dementia what will you do? If you need care because you’ve been involved in an accident that’s left you mentally unable to cope on your own, or if you simply need more help as you age, whether that be at home or in a residential care facility, how
will you ensure you’re wellbeing is taken care of?
From a legal perspective, there’s a simple answer: a Lasting Power of Attorney. This is a legal document which allows a person (the donor) to select another person, or persons, to act on their behalf if they can no longer do it for themselves.
There are two types of power of attorney; property and financial affairs which gives someone of your choosing the authority to make decisions about your money and assets – paying bills, collecting benefits, selling your home – and a health and welfare Power of Attorney. This gives an attorney (the person you selected to act

for you) the authority to make decisions about your lifestyle. This includes any medication you may need, where you live, what you eat and even whether you’re given life sustaining treatment or not.
Health and Welfare Power of Attorneys are increasingly being taken up because many care homes are asking for them now. Even if people are receiving care at home, more local authorities are seeking confirmation that there is one in place and who has the authority to deal with the council on the donor’s behalf.
Before a Power of Attorney to be implemented it has to be registered with the Office of the Public Guardian. Your solicitor will do this for you. Once set up and registered, a Health and Welfare Power of Attorney can only be activated at a time when you’ve lost mental capacity.
The advantage of setting up a Power of Attorney is that it gives you options. Perhaps the most important one is that it allows you to choose who you want to look after you rather who the state thinks should act for you.
You can appoint as many attorneys as you like who can make decisions for you collectively or you can give individuals authority on specific matters. Although your attorney has as much decision making power as you, you can limit their complete control if you have concerns. Your solicitor will be able to discuss this with you.
When it comes to choosing an attorney, you should think about how well the person looks after their own affairs. Are they good with money, do they make foolish or rash decisions? Do you know the person well and, more importantly, do you trust them to make decisions in your best interests? After all, they’re likely to be making what could be some very important decisions on your behalf.
For a Health and Welfare Power of Attorney, you can choose anyone over the age of 18. The usual choices are a spouse or relative. You can also appoint a friend to the task or even your solicitor. If, for any reason, your attorney is unable or unwilling to act for you, you can stipulate a replacement.
Finally, a Power of Attorney gives you peace of mind. Putting one in place ensures that there’ll be someone on hand who can manage you affairs if you can’t.
If you choose not to set up a Power of Attorney and you need someone to act for you, your family will have to apply for a Deputyship with the Court of Protection. The problem with this is that it’s a costly and time consuming process (around six months) during which time the Court will decide what happens to you, not your loved ones.
There’s also the risk that the Court will appoint a Deputy which may not be a family member or a person you would have chosen. While all this is being sorted out, your assets will be frozen which could mean your loved ones end up paying for your care, medication and any other expense you need until the Deputy has been appointed.

When we think of legacy, it often conjures images of financial inheritance or treasured heirlooms. But increasingly, a deeper, more profound form of legacy is emerging. It’s the conscious choice to step into a new chapter, not just for yourself, but for the generations that follow.

Kia had a big problem with their new Sportage model…. how to follow the success of the previous version, which was the UK‘s bestselling SUV in 2024, and number two in the UK’s top ten cars.
Plus, the Sportage is the Korean firm’s top-selling motor world-wide with over 587,000 of them snapped up by eager buyers last year –47,000 of those in the UK.
So, no pressure then. With such a hard act to follow – does the 2025 Sportage live up to its predecessor and is it likely to keep that bestseller crown?
Well thanks to those awfully nice people at Bolton Kia, we got to test drive one! I am glad to report that rather than throwing out the baby with the bathwater, Kia have given the new Sportage a facelift and an upgrade, rather than going for an all-new version.
With a radically different front end and design tweaks elsewhere, the new Kia Sportage is still the SUV that customers loved so much. Although it does feel a little more compact on the outside, there is plenty of space on the inside, especially the boot.
And despite the upgrades, the price of the new Sportage has stayed pretty much the same, with the range starting from a shade over £30k for the ‘Pure‘ grade petrol model, up to the GT-Line S HEV, which was the version we got to sample.
Highlights on the ’GT-Line S‘ HEV spec sheet include heated and ventilated front seats with memory function on the driver’s side, a premium sound system, panoramic glass sunroof, smart power tailgate, 360 degree camera system and a customisable head-up display.
As with the previous Sportage there is also a sat-nav, wireless charging, adaptable cruise control and lots more – including the very latest driver aids and safety systems. What has changed is a much improved suspension setup giving an even more comfortable drive on our pot-holed roads.
Under the bonnet of the ’GT-Line S‘ HEV is a 1.6-litre turbo petrol engine linked to an electric motor meaning 235bhp on tap, 0 to 62 in a shade over 8 seconds and four wheel drive. Being a HEV, the car can only do a few miles in EV mode, but the upcoming PHEV version will have arounds 40 miles of petrol free range.

Those of you who, like me, can remember the Austin allegro and all the fuss over its ‘square’ steering wheel in the 1970s will be bemused with the smaller steering wheel on the new Sportage which is somewhat similar – perhaps British Leyland were ahead of their time?

Q. What is Equity Release?
Equity release is the releasing of some of the equity/capital that has accrued in your property during your ownership. You have two options when choosing an Equity Release product.
1) The most common is through a lifetime mortgage, whereby you release the lump sum by way of a mortgage against your property. Monthly repayments are not required and the interest accrues against the property. On your death, or on moving into long-term care, the loan and interest will have to be repaid usually by the property being sold.
2) The other option is a home reversion plan whereby you sell all, or a portion of your property to the home reversion provider. Similar to the first option there is no interest to be paid, however it is likely that the provider will buy the proportion of the property off you at less than market rate. You will have the right to reside in the property for the rest of your life.
It is important that if considering equity release you seek advice from a specialist financial advisor as this product is not right for everyone but it can make a difference to those that it is suitable for, for the rest of their lives.
Q. Can I sell my house if I have taken out an Equity Release?
Yes you can. However the loan would have to be repaid, unless you have agreed with the Equity Release provider that the loan can be transferred to another property. The lender would not automatically transfer the loan as the new property would need to meet the lender’s criteria.
Q. Would taking out an Equity Release affect my Pension credit?
If you are considering taking out an equity release it could reduce your Pension Credit. It is therefore essential that you obtain the appropriate advice before proceeding with an Equity Release to see whether the product would be appropriate or not.
Q. Can you obtain further money from both schemes if required?
For both types of equity release some providers offer facilities that can allow you to draw more funds in the future. However, this can depend on the valuation of your property at the time that you require the extra funds. Also if you have opted for a reserve facility this may mean that the interest that you pay is higher than those products without a reserve. Again it is important that you obtain the advice to ensure that the product you get is appropriate for your particular circumstances
Q. Will taking out an Equity Release affect my benefit?
Equity Release might affect any means tested benefits, particularly if you receive Pension Credit, council tax support or housing benefit. It may affect your tax position. Therefore you should take appropriate advice from the Inland Revenue, Benefits Agency or local Citizens Advice Bureau before proceeding further.
Q. Will I no long need to maintain or insure my home?
Your obligation to insure and maintain your home continues after taking out an Equity Release. It would be classed as a breach of a term of the mortgage if you did not insure or maintain the property once you have taken out an Equity Release.

Indecently sticky balsamic-roasted red onions, spiked with smoky chipotle honey and folded through warm lentils, along with salty, soft blue cheese to cut through the honey and crisp, electric pink or buttercup yellow bitter leaves, with fresh mint leaves for freshness and more flavour.This is a lovely little salad and makes a wonderful starter.
150 g (51⁄2 oz/generous 3⁄4 cup) green lentils
1 teaspoon Dijon mustard
1 tablespoon balsamic vinegar (I love apple balsamic vinegar)
3–4 tablespoons olive oil
150 g (51⁄2 oz) bitter leaves, such as radicchio, chicory and watercress handful of mint leaves, roughly chopped
150 g (51⁄2 oz) blue cheese (I love Cashel, Oxford, Stilcheton and St Agur)
For the chipotle honey
1 garlic clove
1 teaspoon sea salt
140 g (41⁄2 oz) chipotle en adobo
75 g (21⁄2 oz) honey
For the onions
4–5 red onions, each cut into 6 wedges
2 tablespoons olive oil
3 tablespoons balsamic vinegar
Preheat the oven to 200°C fan (400°F/gas 7) and line a baking tray with foil or a silicone baking mat.
Start by making the chipotle honey. Using a pestle and mortar or small food processor, bash or blitz the garlic and salt to form a paste. Add the chipotle and honey and bash or blitz to a purée. Set aside.
To prepare the onions, arrange the onion wedges in lines in the prepared tray. Drizzle over the olive oil, balsamic vinegar and 5 tablespoons of water. Season generously with salt and pepper, cover with foil and roast in the oven for 30 minutes.
After 30 minutes, remove the foil and drizzle over 3 tablespoons of the chipotle honey. Toss to coat and continue to roast, uncovered, for another 10–20 minutes until the onions are looking beautifully sticky and caramelised.

Meanwhile, put the lentils into a saucepan and cover with plenty of cold, salted water. Simmer according to the packet instructions until just tender.
In a large bowl, whisk the mustard with 1 tablespoon of the chipotle honey, along with the vinegar and olive oil. Season lightly and taste, adding more honey, vinegar or salt as needed.
Arrange the bitter leaves on a large platter and scatter over all but a few tablespoons of the mint. When the lentils are cooked, drain, then, while they are still warm, add them to the bowl of dressing and toss. Add the sticky onions and toss again. Check the seasoning.
Arrange the lentils and onions over the leaves, dot with kernels of the blue cheese and finish with the last of the mint and plenty of freshly ground black pepper.
A wonderfully garlicky but subtle dip, the garlic soothed and tamed by poaching in oil. It is lent delicious accents of spice and citrus from the jalapeño oil, full of smoky attitude and licks of heat, an exciting way to start a feast.The jalapeño oil also does wonders to anything on the grill.

Start by making the confit garlic. Bash the garlic bulb(s) apart with a mortar or rolling pin, then bash each of the cloves once or twice to release their skin. Put the peeled garlic cloves into a small pan with the olive oil and rosemary. Heat over a medium heat and, once warm, reduce the heat to low. Cook for 25–30 minutes until the garlic is soft and just starting to colour. Fish the garlic cloves out of the oil and set aside. Set aside the garlic oil too.
Toast the jalapeños in a dry frying pan over a high heat until blackened all over, about 8–10 minutes. Set aside. Now add 1–2 tablespoons garlic oil to the pan, followed by the lemon halves and sauté for 4–5 minutes, cut sides down, until they are caramelised and smelling delicious. Take off the heat.
Slice the stems off the toasted chillies and put the chillies into a blender, along with half the confit garlic cloves. Squeeze in the juice of one of the sautéed lemon halves, then add 130 ml (4 1/2 fl oz/ generous 1 1/2 cup) of the confit garlic oil. Season with the salt, then add the extra olive oil or vegetable oil. Blitz to a green oil and taste, adjusting the seasoning as needed. Pour into a sterilised jam jar. It will keep for weeks in the refrigerator.
To make the dip, drain the beans and empty into the blender, along with the juice of the other sautéed lemon half. Add the rest of the garlic cloves from the confit garlic and the remaining garlic oil, along with the salt, leaves from the rosemary sprigs and cider vinegar. Blitz to a smooth purée and taste. You will probably need more salt, and you may need a splash more vinegar. You should have a smooth, glossy purée, the consistency of thick Greek yoghurt, and it should taste rich and garlicky.
Serve the bean dip in a pretty bowl, with the charred green jalapeño oil drizzled over the top. Any leftover dip lasts for a week in the

refrigerator and will have an entirely positive effect on work-fromhome lunches. This dip is all about the garlic, so try to find big, generous bulbs.






Spatchcocking a bird means cutting out the backbone and pressing it flat – ask a friendly butcher or follow the instructions here.
1 large chicken (about 2 kg/4 lb 8 oz)
2 red onions, cut into wedges
For the marinade
200 ml (7 fl oz/scant 1 cup) coconut milk
25 g (1 oz) coriander (cilantro) leaves
3 teaspoons panela or soft brown sugar
1–3 fresh serrano, jalapeño or other green chillies
1 lime
2 teaspoons cumin seeds thumb-sized piece of fresh ginger
For the salsa
3 mangoes, diced
1⁄2 cucumber, diced
1⁄2 red onion, finely diced
1 jalapeño or serrano chilli, finely diced zest and juice of 1 lime handful of coriander (cilantro), stalks finely chopped, leaves roughly chopped

Spatchcocking a chicken is one of my favourite ways to cook a bird. Like chicken on a spit, it maximises the skin-to-grill contact, meaning more crispy chicken skin and more flavour. Here, the flavour comes from spicy, grassy jalapeño chillies, fiery ginger and garlic, tempered by sweet coconut and fresh coriander and made smoky and sticky on the grill.
You will be left with a carcass and the sticky roast bits and pieces from the bottom of the pan, perfect to make a stock with. Deep, aromatic flavours lifted with that vibrant, juicy mango salsa. Delicious with the warm, herby rice on page 123 and a huge salad.
If you’re spatchcocking the chicken yourself, turn the chicken so it is lying breast side down and cut along each side of the backbone with meat scissors or a strong knife, then remove the backbone.
Turn over the bird and place your hands firmly across its middle, then bounce down on your hands firmly to flatten it. Make the marinade by blitzing all the ingredients together in a blender.
Place the chicken and red onion wedges in a large bowl. Season with salt, then add the marinade and rub it all over both chicken and onions to coat generously. You can cook the chicken straight away but it will taste better if allowed to sit for a few hours or overnight. To make the salsa, toss all the ingredients together in a bowl, then season with salt and pepper and allow to sit for half an hour to infuse.
When you’re ready to cook, light a barbecue or preheat the oven to 200°C fan (400°G/gas 7). Grill, roast or barbecue the chicken and onions for 30–35 minutes, regularly basting in the marinade until the chicken’s juices run clear and the skin is crispy and delicious-looking. Carve and serve with the salsa.
A baked custard is a lovely thing.This one is rich and creamy but not too sweet, with that gentle scent of vanilla a soothing, luxurious foil for the plums, roasted to intensify their plumminess and offset with herby flecks of tarragon and a lovely splash of orange liqueur.

Preheat the oven to 130°C fan (260°F/gas 2). Combine the cream, milk and vanilla pod in a saucepan over a medium heat. Warm until ‘shimmering’ and a few bubbles are beginning to break on the surface. Scrape out the seeds from the vanilla pod into the custard, then discard the pod or use it to make vanilla extract.
Whisk the eggs and yolks together in a bowl with the caster sugar, then whisk in the hot cream. Pour into an ovenproof dish and place the dish in a baking tray. Pour enough boiling water into the baking tray to come about halfway up the outside of the custard dish.
Carefully transfer to the oven and bake for about 40 minutes until it is just set. When you wiggle the dish, it should still have a gentle wobble. Remove from the oven and allow to cool, then chill in the refrigerator for several hours.
400 ml (14 fl oz/generous 11⁄2 cups) double (heavy) cream
300 ml (10 fl oz/11⁄4 cups) whole milk
1 vanilla pod
2 eggs, plus 5 egg yolks
50 g (13⁄4 oz) caster (superfine) sugar
5–6 tablespoons demerara sugar (optional)
For the plums
450 g (1 lb) plums, stoned and cut into eighths
zest and juice of 1 orange
4 tablespoons caster (superfine) sugar
1–2 tablespoons Cointreau
3 tablespoons finely chopped tarragon
Shortly before you want to eat, preheat the oven to 220°C fan (430°F/ gas 9) and line a baking tray with baking parchment. Arrange the plum wedges in the prepared tray and scatter over the orange zest and sugar. Pour over the orange juice and Cointreau, scatter over the tarragon and roast for 20 minutes until soft and caramelised.
Serve the roast plums with the cold custard. If you are feeling decadent, you can brûlée the custard just before serving by scattering with the demerara sugar and blow-torching or grilling under a high heat.

Emmaus Bolton is asking supporters to donate their unwanted Christmas decorations or gifts to help stock a festive pop-up charity shop.
People supported by Emmaus Bolton have opened an exciting new Christmas Emporium inside its courtyard of charity shops and café, and any donations will help the charity provide a home and support for people in need.
Emmaus residents, known as companions by the charity, have taken pride in putting together the seasonal store which stocks affordable decorations, trees and other items to help ensure that everyone celebrating, has a very merry Christmas.

The homelessness charity needs gifts, preloved tinsel, wrapping, seasonal crockery and other household goods for the festive shop, which is a snowball’s throw from the entrance of Emmaus Bolton’s car park off Fletcher Street –look out for the Christmas tree and the furniture on the wall!
Anyone walking or travelling by car down the driveway to drop off donations will see the charity’s accommodation for up to 22 individuals with experience of homelessness, which adjoins the main charity shop.
People who have experienced homelessness aren’t just given a home at Emmaus Bolton; everyone has support and a routine, contributing to the running of the charity shops and services. Having a role helps build confidence and selfesteem to equip people to move on to independent living.
Everyone coming to the charity can develop skills and experience in the charity’s social enterprise and is given the opportunity to learn woodwork and upcycling in an on-site wood workshop.
Part of the Christmas Emporium will be devoted to Emmaus ‘makes’ - upcycled wooden and fabric items created and kindly donated by people, who are part of Emmaus, to help the charity raise funds for its home and support people after experiencing homelessness.
Unique items include beautiful Christmas wreaths upcycled by volunteers, from clean textiles and other donated items that make beautiful items though reuse.
Every item donated is reused to help Emmaus Bolton provide a home, support and opportunities for personal development and training for companions.

Sitting down at a cafe on Siena’s famous shell-shaped square, I’m delighted to find the view exactly as I remember it. The Piazza del Campo with its soaring bell tower and imposing Palazzo Pubblico has always held a special place in my heart.
Many years ago, I made a decision at this very spot that was to change my life. Fresh out of language college, I had embarked on an evening class in creative writing and as I sat here over lunch soaking up that iconic view, I resolved to give writing my best shot. Now


here I am, several decades later, raising a glass with my husband to a fulfilling career as a travel writer.
John and I are on a week-long tour with Riviera Holidays that is delivering on every front. ‘Walk & Discover Florence and Tuscany’ is a two-centre escorted holiday that combines a blend of guided urban and country walks with free time to explore some of Italy’s best heritage cities at your own pace.
We spend our first three nights in Florence often called ‘La bella’ or ‘the beautiful’. By day we stroll from the Uffizi gallery, the Ponte Vecchio, and the Pitti Palace - the Renaissance home of the powerful Medici family. By night we seek out cosy restaurants specialising in authentic Tuscan cuisine.
A full-day excursion from Florence enables us to tick lovely Lucca off our bucket list. After a short, guided walk along part of the city walls, we have free time to browse the Sunday craft market on the site of the Roman amphitheatre, climb to the top of Torre Guinigi for panoramic city views, and still fit in a refreshing Caprese salad lunch in a quiet square.
From Lucca we head to Pisa where Riviera guests have tickets to visit the cathedral, baptistery and tranquil Campo Santo burial ground in the city’s celebrated Piazza dei Miracoli. If you want to climb ‘That Tower’ (you know which one I mean), you need to buy a timed slot online and join a queue, so we decide to admire it from ground level instead. Pick your photo shot carefully as from some angles, the Leaning Tower can actually look straight! And don’t be surprised at tourists contorting themselves into all manner of suggestive selfie positions.
After the bustle of Pisa’s Miracle Square, we enjoy the next day’s scenic drive through rolling hills and lines of iconic cypress trees

as we leave Florence for the Chianti wine region. At Greve, we follow local guides on a vineyard walk where the harvest is in full flow, before a short drive to a wine domaine. Here we enjoy an excellent lunch of local charcuterie and cheeses, accompanied by generous glasses of quality wines.
From our accommodation in the Tuscan countryside, we look across farmland to the bijou hilltop town of Monteriggioni with its 13th century city walls and 15 towers, a popular option for a walk on our final free day.
But first, two more Tuscan gems, both listed as UNESCO World Heritage Sites. We start with a full day in Siena, just ten kilometres from base camp. After visiting independently all those years ago, I am delighted to get under the skin of the city on a morning tour with a guide who paints a vivid picture of the city’s traditions.
John and I have lunch at my treasured spot, and I make a new friend of our waiter who loves the story of my career moment. Then we set off to explore independently, starting with the extraordinary wall paintings inside the Palazzo Publicco that dominates the Piazza and moving on to the Cathedral for more extraordinary artworks, which include a fabulous marble floor.
Next day, we enjoy another Medieval gem, San Gimignano which became rich from travellers on the Via Francigena pilgrim’s route. We start with a country walk to admire the unique skyline at a distance before passing through the city gate amongst the 14 statussymbol towers that remain from 74 originals.
We drink a toast to Tuscany with a lunchtime glass of delicious white Vernaccia, only produced in a small area around the town


and rarely sold elsewhere, and we savour an ice-cream at Gelateria Dondoli, winner of The World’s Most Famous Gelato in 2024.
We have thoroughly enjoyed our week with its well thought out balance of town and country, guided activities and free time. Expect guided city walks of up to two hours, and two options on each of the country walk days. None of the routes should present problems to anyone of reasonable fitness.

Over 50? You might have noticed your back doesn’t always feel as youthful as it once did. Ageing inevitably leads to getting a bit stiffer and slightly less able, but the good news is that most back pains are a normal part of getting older,

1. Don’t panic about MRI findings
If you’ve had a scan, you might see words like “degeneration” or “disc changes.” But most of these changes are completely normal for your age. Think of them as wrinkles on the inside, not necessarily the cause of pain.
2. Posture doesn’t cause pain
We often blame slouching or sitting wrong for bad backs, but research shows posture isn’t the main culprit. What matters most is the variety of movement. Change positions, stretch, and avoid staying still for long periods.
3. Stay active
Gone are the days when doctors prescribed long rest for back pain. In fact, sitting still can make things worse. Gentle, regular walking helps keep joints mobile and muscles strong.

5. Strength training is safe - even in your 70s
Building muscle supports your spine and protects you from injury. With proper guidance, resistance training is safe and hugely beneficial well into later life.
6. Sitting isn’t the problem - staying still is
Many people blame chairs or sitting for too long, but sitting itself isn’t harmful, prolonged stillness is. Get up, stretch, or move around regularly to keep your spine happy.
7. Keep your hobbies - adapt, don’t stop
Whether it’s gardening, golf or hiking, don’t give up on the things you enjoy. Often, simple adaptations can help you stay active while protecting your back.
Golfers, for instance, often discover that with a tailored strengthening programme and pacing strategies, they can return to the course, enjoying the game without the stiffness that once held them back.
8. Know the red flags
Most back pain improves with time and movement, but if you experience sudden leg weakness, loss of bladder or bowel control, or numbness in the saddle area, seek urgent medical help.
9. Don’t bounce between practitioners

A Southport bride who tied the knot this summer has shared how she found her dream wedding dress at a fraction of the price and all while supporting a local charity.
After struggling with the pressure of traditional bridal boutiques, Kimberley Hall and her mum visited the Regenerage Charity Superstore at Middlebrook Retail Park, Horwich, Bolton in March, following a feature they’d seen on Granada News.
“I instantly felt at ease. The staff were welcoming and let us browse at our own pace,” she said. “It didn’t feel like a charity shop at all the bridal section was beautifully laid out, with so many dresses to choose from.”
After searching through the many beautiful dresses for sale, Kimberley spotted ‘the one’. She shouted to her mum, “That one!” She tried it on and beamed, “ I knew it was perfect” she said.
The gown turned out to be a Morilee designer dress retailing at £1,500, but at Regenerage it cost just £149.99. After a £100 dryclean and minor £12 alteration, it was as good as new. Kimberley also found a veil, tiara, and belt for less than £10 altogether.
On her wedding day at Lancashire Manor on 2nd August, Kimberley said she felt “a million dollars.” Guests showered her with compliments, and even her mum, her self-confessed “toughest critic” admitted she looked stunning.
“I couldn’t justify spending thousands on a dress I’d wear once,” she said. “I love that instead, the money went to charity, supporting the great work that Regenerage does.”
The bride is now encouraging other couples to consider second-hand for their weddings. “You never know, your perfect dress might be waiting for you on the rails at Regenerage.”

Experiencing dental issues is uncomfortable and often can have a real impact on quality of life. Eating, speaking, and smiling with confidence can all depend on a healthy mouth. Yet when we talk about ageing, we often focus on mobility, memory, or chronic illness, while oral health quietly slips down the list.
Too many older people feel embarrassed about changes in their mouths. Misconceptions and stigma leave some believing dental problems are only personal failing, when in fact they’re a common part of ageing. Oral health should never be a source of shame, so it’s time we start having more conversations about common issues.
Dental issues in later life are common. Conditions like gum disease, dry mouth, and tooth loss affect many older people, yet for reasons we don’t often question they are rarely spoken about openly.
It’s important to remember: dental problems are not always the result of “poor brushing.” Natural changes to the body as we age, the side effects of medications, and underlying health conditions all play a role. What matters most is recognising these issues early and knowing that steps can be taken to improve comfort, protect oral health, and regain confidence.
When the mouth doesn’t produce enough saliva, it can lead to dry mouth. Saliva isn’t just about comfort - it plays a vital role
in washing away bacteria, protecting teeth, and making chewing, swallowing, and tasting possible.
If you’ve noticed a persistent dry mouth, it could be linked to the medicines you take. Treatments for high blood pressure, depression, and even some painkillers are well-known causes. Certain health conditions, such as diabetes, stroke, and autoimmune diseases, can also contribute. If this is affecting you, you don’t have to ignore it. Your dentist or GP can suggest ways to relieve symptoms, from saliva substitutes (such as sprays, lozenges, or gels) to reviewing medications.
As we age, gums can gradually pull away from the teeth: a change known as receding gums. This creates a small space for bacteria to build up, and eventually this can lead to tooth decay, gum disease, and even tooth loss. Brushing too hard and untreated gum disease are two of the main causes.Gum disease itself is widespread, affecting nearly half of adults over 30 in some form. Early signs include:

➔ Swollen, red, or sore gums

quality of life.You are far from alone, in fact, as many as 15% of people visiting the dentist in England wear full or partial dentures. Just make sure the dentures fit properly and are maintained, as if not, this can lead to other issues.
Oral cancer is diagnosed more often later in life, especially between the ages of 65 and 69.
Other factors raise the risk, including:
➔ Smoking or chewing tobacco
➔ Heavy alcohol consumption
➔ Previous cancer history
➔ Leukoplakia (white patches in the mouth that don’t heal)
Symptoms to keep an eye out for:
➔ Persistent mouth ulcers that don’t heal within three weeks
➔ Red or white patches in the mouth
➔ Unexplained lumps in the mouth, tongue, or neck
➔ Difficulty with swallowing or continuous hoarseness
Oral health is about far more than teeth. It affects how we eat, speak, and feel about ourselves. Talking openly, seeking help early, and knowing that these challenges are part of the ageing process - not necessarily a personal failing - can help end the shame. After all, ageing is a privilege.
Most importantly, good oral health allows people to enjoy the hard-earned years of later life with confidence. Laughing, smiling freely, and confidently enjoying meals with family and friends shouldn’t be something you have to miss out on due to oral health.

Many denture wearers suffer with poor fitting, worn out or artificial looking dentures that cause the wearer to feel a lack of confidence in their dentures. This can present itself when chewing or even by just worrying about the denture dropping during a conversation. All these are issues that Bolton Denture Centre specialise in correcting.


A Clinical Dental Technician (CDT) is a qualified dental technician that has under gone further Education and Training to gain a Diploma in Clinical Dental Technology as Awarded by the Royal Collage of Surgeons (RCS).
At Bolton Denture Centre our clinician is one of the first registered Clinical Dental Technicians in the country, and able to offer a bespoke service of treating the patient AND making the denture in the laboratory.
Over recent years there have been many improvements in both the way we construct dentures and in the materials and denture teeth that we use. One such innovation currently on the dental market is DIGITAL DENTURES.
However as with any new technology it usually gets rushed to market before it is fully developed. We have seen an upturn in enquiries for this technology, but after many meetings with sales reps and looking into the technology behind it we feel the quality and aesthetics are extremally substandard in comparison to a bespoke handmade tradtional denture.
We also feel the fit of digital dentures are not going to be as good as the fit of traditional dentures as the digital impression cannot replicate the compressive action of the denture, therefore leaving in general reduced suction. This is why we have chosen not to offer this service as of yet here at Bolton Denture Centre. You still have to be a clinical dental technician to provide digital dentures.

In most cases we do not know what your teeth looked like, what size they were or what position they were in originally. We have a few indications but mostly we have to rely on our visual and artistic judgement.

What is a funeral plan?
A funeral plan allows you to pay for your funeral upfront saving your loved ones from the financial burden of covering the cost themselves. Funeral plans can only be sold by firms authorised and regulated by the Financial Conduct Authority (FCA) or their Appointed Representatives.
You will pay for the funeral at today’s prices, potentially saving the cost of inflation from between when you take the funeral plan out and time of need.
Planning your own funeral can be a difficult and emotional thing to do for most people, nobody wants to think about, let alone have a conversation about the day when they are not here. However it can provide loved ones with all the help and support they will need at a difficult time.
If you have ever had to plan a loved one’s funeral, you will know first hand how distressing and difficult this can be. In order for the funeral director to arrange the funeral they have to ask you a series of questions. You need to make certain decisions which when you are grieving and upset can be an incredibly difficult thing to do, especially if you didn’t know your loved one’s personal preferences. This can make you question if you made the right choice and then there is the financial burden of also having to cover the cost of the funeral.
A funeral plan can be a positive, practical and productive thing to do not only for yourself but very importantly for your loved ones.
What are the benefits and risks of having a funeral plan?
If you are thinking about a funeral plan, it is important that you have all of the information in order for you to decide if a funeral
plan is right for you, it is important to weigh up the benefits and the risks.
Benefits of having a funeral plan:
• They potentially protect you from inflation. You pay for the funeral at today’s price avoiding any future inflation. If funeral costs continue to rise in the future as they have done consistently in previous years, you will not need to pay anymore. Currently in the UK, the cost of a basic funeral is now £4,141.00 which has increased by 4.7% compared to last years price (according to the Sunlife Cost of Dying Report 2024).
• The financial burden is taken away from your loved ones at time of need.
• Your funeral arrangements and personal wishes are taken care of.
• Funeral plans are exempt from Inheritance Tax.
Risks of having a funeral plan:
• A funeral plan only covers items/ services included in the plan, these vary depending on the plan so it is important to check you have included everything. If at point of need items / services need to be added, for example an additional car for relatives, your relative will have to pay for this.
• The funeral plan provider could fail, if this was the case your plan could be refunded in full or be transferred to another provider.
• The Trust in which your money is invested may fail, if this was the case and a return of your monies is not possible you may be entitled to compensation under the Financial Services Compensation Scheme (FSCS).
• In the unlikely event that funeral costs fall in the future, the price paid for your funeral plan would remain the same.
What’s included in a funeral plan?
This can vary depending on the plan provider and the type of funeral plan however most funeral plans include funeral directors’ costs, a coffin, a hearse, a minister, cremation fees, burial fees up to the cost of cremation. It is important when buying a funeral plan that you read and understand exactly what is and is not included in the funeral plan. Funeral plans can be tailored and personalised to suit your individual needs and wishes.
How does a funeral plan with Haven work?
Haven sells funeral plans through a network of family-owned funeral directors who are Appointed Representatives of Haven Personal Funeral Plans. The funeral homes cover East Lancashire, West Yorkshire and Greater Manchester. Funeral plans are sold face

to face by funeral directors who have been specifically trained in funeral plans.
When you take out a Haven Personal Funeral plan, the price you pay includes an administration fee that is kept by the company to cover the day to day running costs. The balance is then transferred into The Haven Funeral Trust where it is invested by an FCA regulated investment manager. The money is held there until needed.
During the lifetime of the funeral plan, you will be contacted every 18 months with a summary of your funeral plan and given the opportunity to change any details of the funeral plan to suit your current needs and wishes. Changes to your funeral plan can be made at any time, you do not need to wait for the 18 month summary. Haven do not charge an admin fee for changes being made to your funeral plan.
When you take the funeral plan out, you will be given the opportunity to appoint a Nominated Representative. A Nominated Representative is someone who will know about your funeral plan so that at time of need, the funeral plan does not go unclaimed. A nominated representative can’t make any changes or cancel your funeral plan.
At time of need, whoever is arranging your funeral simply needs to get in touch either with Haven directly or your nominated funeral director where they will be informed of what happens next. They will then be supported throughout the entire process leading up to during and after the funeral by our team of dedicated caring and professional staff.
Once the funeral has taken place, Haven will pay your nominated funeral director for carrying out your funeral in accordance with your planned wishes. Your loved ones will not be charged any extra for this, these costs will be covered by your funeral plan. If any extras are required at time of need that are not covered by the funeral plan, these will be payable to the funeral director by your loved ones.
