Cowboy Sliders

1 dozen Hawaiian savory butter rolls

1 lb ground beef

½ sweet or yellow onion, diced

½ tsp garlic powder

½ tsp seasoned salt

2 tbsp Worcestershire sauce (divided)

1 tbsp Montreal seasoning

1 med jalapeño, seeded, sliced thin

½ lb bacon, cooked crisp and crumbled

8 thin slices cheddar

1 cup sharp cheddar, shredded

1 cup crispy fried onions

½ cup butter, melted

1 tbsp dijon mustard

1 tbsp fresh parsley, chopped

1½ tsp everything bagel seasoning

Preheat oven to 350ºF. Grease 9x13 baking dish. Split rolls in half horizontally and place the bottom half in the dish.

Add ground beef, onion, garlic powder, seasoned salt, 1 tbsp Worcestershire, and Montreal seasoning to a medium skillet. Cook over med-high heat 8-10 minutes until browned, breaking up the beef as it cooks. Remove from heat; drain any excess grease.

Layer cheese slices over the rolls in the pan, top with hamburger mixture. Evenly distribute jalapeños, shredded cheese, bacon, and fried onions over the mixture. Cover with the top half of the rolls.

Combine butter, mustard, remaining Worcestershire sauce, and everything seasoning. Brush liberally over the tops of the rolls.

Cover with foil and bake 15 minutes, or until the cheese is melting and bubbly. Remove foil and bake for an additional 3-5 minutes, or until the tops of the sliders turn a golden brown.

Spring

branding etiquette

Arrive on time. Have your gear organized the day before and understand where you are to meet. Call the boss the day before, the morning of branding there is enough going on to try and be answering phone calls asking for directions.

On the gather never ride in front of the boss. And stay in your lane, ride wherever he tells you to go. If an errant calf or cow turns back stay with the herd. Don’t lose the whole herd to chase one down. The boss will designate who and how these strays will be gathered. Once the cattle are gathered and, in the pen, tie your horse up and find a way to help afoot. The boss will assign you a job and if you are to rope, you will be asked.

In the branding pen, remember slow is fast. No loping or fancy heel shots on a long rope. If you are roping stay on your side and stick to it.

If you are on the ground crew the object is to work quickly and stay out of the way. Remember horses and ropers

Safety Reminder With spring works in full swing it is important to think about safety and consider the protocols your operation has in place

have the right of way, keep your head on a swivel. Wait until the calf is down and restrained before approaching. Keep your eyes up; there are hot irons and sharp needles everywhere.

After the branding it is time to socialize, however before you do that, take care of your horse. He is no doubt just as thirsty as you, make sure you are prepared to water him before you head out or eat. Once the meal is served be sure to find the host of the meal and offer thanks.

Ask if there is anything else you can do before leaving. Bid your farewell and go home. Brandings are a huge undertaking with lots of time and effort and planning put in beforehand, be grateful to be part of the community and recognize the host family is likely exhausted.
