Wyoming’s New Economic Frontier

• 2 cups diced fresh pineapple

• ½ cup diced red pepper

• ½ cup diced orange pepper

• 1 finely chopped jalapeno

• ½ cup finely chopped red onion

• ½ cup finely chopped red onion

• 3 tbsp fresh lime juice

Pineapple salsa will last for 3 to 5 days in the refrigerator. Serve it with corn chips, on seafood, or add it to your favorite bottle of tequila for a bright infusion!

Pineapple Salsa

To Make the Pineapple Bowl:

1. Slice a whole pineapple in half lengthwise, keeping the stem attached.

2. Use a paring knife to cut around the edge of one half, leaving a ½-inch border. Don’t cut through the skin.

3. Cut the flesh down the middle and across a few times, then scoop out the pieces with a spoon. Set aside for the salsa.

4. Drain any juice from the shell and chill until ready to use.

To Make the Salsa:

1. Chop the reserved pineapple into small cubes.

2. Dice the red bell pepper, jalapeño (remove seeds), and red onion into small pieces.

3. Finely chop the cilantro.

4. In a large bowl, toss everything together with fresh lime juice.

5. Cover and chill until serving to let the flavors blend.

6. Spoon the salsa into the pineapple bowl and serve with chips.
