No-Cook Chickpea Salad with Yogurt-Tahini Dressing
Ingredients (Serves 2):
For the Salad:
• 1 can (15 oz) chickpeas, drained and rinsed
• 1 cup cherry tomatoes, halved
• ½ English cucumber, diced
• 1 small red bell pepper, diced
• ¼ cup red onion, finely chopped
• ¼ cup crumbled feta
• 2 tbsp fresh parsley, chopped
• 1 tbsp fresh mint, chopped (optional)
For the Dressing:
• 3 tbsp plain Greek yogurt
• 1 tbsp tahini
• 1 tbsp lemon juice
• 1 tsp olive oil
• 1 small garlic clove, minced
• Salt & pepper to taste
Optional Add-ons:
• Toasted pita chips or flatbread on the side
• A handful of arugula tossed in before serving

3. Toss & Serve
Pour dressing over the salad and toss gently. Chill for 10 minutes or serve immediately with pita on the side.
TIP:
Add a drizzle of chili crisp or a spoonful of hummus on top for extra richness and texture.
