o it’s Christmas time again: time to shop for presents; time to get the food in; time to arrange to meet up with family and friends; time to get the decorations out of the loft… However, this is also the time of year when most of us could do with a bit more ‘time’ to prepare ourselves for the start of the celebrations. We will all be aiming for everything to come together for Christmas Day; getting the timing just right is the key. Time was also important recently for Lee Rutherford from Northumberland. He was caught driving at 129mph along the A189 in Blyth, after he stopped at a McDonald’s drive-thru’ earlier this year. Mr Rutherford was followed by police despite him managing to record some incredible speeds in his Renault Clio. After being pulled over, he explained that he wanted to get home and eat his burger and chips while they were still warm! Obviously, there is no excuse for dangerous driving and Mr Rutherford’s reasons for his ridiculous behaviour is nothing but pathetic. Yet, how many of us will be rushing around over the next few weeks to ensure that we have everything just as we want them to be when the big day arrives? The Bible tells us that when Jesus arrived in the world, God got the timing just right. When it comes to God’s working in the world, timing isn’t everything, it’s the only thing! At just the right time, when we needed Him most, God showed up in the world and Christmas is a time to remember that fact. Jesus still shows up when we are least expecting Him. So what happened to Mr Rutherford? He was found guilty; banned from driving; given a 20-week prison sentence [suspended for a year]; ordered to pay £1,120 and take an extended driving test. What will you be left with after this Christmas time? Why not pop along to one of the local churches in the area this Christmas? Take some time to get things just right before the big day arrives. N A Christmas message from the Chairman of Rochford District Council Since becoming the Chairman of Rochford District Council in May 2016, I have had the opportunity to meet many local residents and business owners at events such as Wild Woods Day, the Rochford and Castle Point Sports Awards and Crucial Crew. I have also been very fortunate and privileged to be invited to lots of events around Essex and the surrounding areas, which has given me the perfect platform to promote our wonderful district far and wide.

Traditional Chinese food is globally famous and offers an entire universe of different flavours, styles and ingredients. China’s vast and gigantic geography etches itself upon its food culture. There are twenty-three main provinces (including Taiwan) which all uphold a tangibly unique yet nationally recognisable identity. Regarding its area; China is the fourth largest country in the world and boasts the highest population figure of over one billion people. Naturally, food was always going to be a highly creative and colourful aspect to China’s culture and lifestyle. Within China’s vast history; food has often been used to represent both historical celebrations and meanings. Moon Cakes: A type of treat and snack consumed traditionally during China’s Mid - Autumn Festival. The Mid - Autumn is held on the 15th day of the 8th month in accordance to the lunar calendar. Moon Cakes are typically a small rounded pasty delight with an inner of either egg, meat, bean-paste or sweets.
Zongzi: Made from glutinous rice and stuffed with either a filling of sweets or meat; the Zongzi are then wrapped in large bamboo leaves as a preparation for steaming. They are traditionally eaten during the Dragon Boat Festival which is 28th - 30th May. The Dragon Boat festival celebrates the sacrifice of a great warrior who had drowned himself in the sea. This was a heroic act to show the Emperor that neither him or others were scared of death. The Zongzi were then traditionally thrown into the sea to lure the fish away from eating the warrior’s body. Spring Rolls: One of the most iconic and instantly recognisable dishes throughout China and the world. Spring rolls have held their status as one of China’s most famous snacks for centuries. Spring Rolls are traditionally consumed as an appetiser during the beginning of the Lunar Calendar; which is known as The Spring Festival. Joel Windle, Writer & Photographer.
