Mayor’s Message Carrot Fest Greetings On behalf of Council for the Town of Bradford West Gwillimbury, I am proud to welcome you to the 19th Annual Carrot Fest, celebrating our agricultural heritage. Over the years, this event has transformed from a small local market into the huge attraction that it is today, drawing thousands of visitors from near and far. New this year, we are pleased to add a full Friday celebration of vendors and entertainment. Carrot Fest has something for everyone – please browse through this guide to learn more about the entertainment, vendors and food to be enjoyed, as well as the many special activities such as the Dock Dogs competition, live demonstrations, and so much more. Be sure to stop at the Town Booth located at the main four corners to taste a Holland Marsh grown carrot! If you are a visitor to our town, we welcome you and encourage you to try some of the best locally grown produce in the world and experience all BWG has to offer. Carrot Soup Ingredients 8 servings
• 1 tablespoon butter • 1 tablespoon extra-virgin olive oil • 1 medium onion, chopped • 1 stalk celery, chopped • 2 cloves garlic, chopped • 1 teaspoon chopped fresh thyme or parsley • 5 cups chopped carrots • 2 cups water • 4 cups reduced-sodium chicken broth, “nochicken” broth (see Note) or vegetable broth • ½ cup half-and-half (optional) • ½ teaspoon salt • Freshly ground pepper to taste
• Heat butter and oil in a Dutch oven over medium heat until the butter melts. Add onion and celery; cook, stirring occasionally, until softened, 4 to 6 minutes. Add garlic and thyme (or parsley); cook, stirring, until fragrant, about 10 seconds. • Stir in carrots. Add water and broth; bring to a lively simmer over high heat. Reduce heat to maintain a lively simmer and cook until very tender, about 25 minutes. • Puree the soup in batches in a blender until smooth. (Use caution when pureeing hot liquids.) Stir in half-and-half (if using), salt and pepper.

Garbanzo-Carrot Hummus with Grilled Yogurt Flatbread
Makes 2 cups
1 ½ teaspoons ground 2 medium carrots, peeled coriander seeds and chopped 2 tablespoons lemon juice Salt 4 teaspoons olive oil 1 cup cooked garbanzo 2 teaspoons chile flakes beans, drained 2 teaspoons Moroccan 4 teaspoons chopped cilantro plus 1 teaspoon Spice Blend (see below) for garnish Coarse salt and freshly 2 tablespoons chopped ground black pepper red onion 1 batch Yogurt Flatbread 2 ½ teaspoons ground (see below) cumin
CAPTION: Garbanzo-Carrot Hummus with Grilled Flatbread Yogurt
In a medium saucepan, combine the carrots with 2 quarts water and 2 teaspoons salt. Bring the mixture to a boil then reduce the heat and simmer for 8 to 10 minutes, until the carrots are tender. Remove the pan from the heat and allow the carrots to drain and cool in a colander. Combine carrots and remaining ingredients, except for Yogurt Flatbread, in the work bowl of a food processor and puree until smooth. Season to taste with salt and pepper and garnish with the remaining cilantro. Serve with fresh, hot Yogurt Flatbread cut in wedges.
