轉眼間又來到12月。忙碌了一整年，是時候放慢腳步；也在這個節興的冬日，好好放輕鬆，讓身體休休息，以新姿態的迎接新一年。大時大節當然要跟親朋好友聚一聚。中國人最注重吃，澳門高級餐飲一日一驚喜，自然是過節好地方（第24頁）。長假期不防出國透透氣。上海外灘新酒店湧現，重新開業的和平飯店無疑是世界焦點，而即將完工的華爾道夫亦讓人期待（第56页）！想遠離塵囂，皖南（安徽长江以南地）是內行人之首選（第64页）。有名的西递、宏村就在里。一年復始，正是投資好時機。人民幣走勢強勁，在存款之外，還有什麼投資出路（第74页）？2011年，祝大家有個美好開始！ 2010 is drawing to a close, and it’s time to wind down and rest up to start the new year afresh. Holiday time means get-togethers with family and friends. The Chinese love their food and Macau’s top restaurants are the perfect place for a celebration (p.24). Fancy a long break abroad? The Shanghai Bund boasts a crop of new hotels including the re-opened Fairmont Peace Hotel and the hugely anticipated Waldorf Astoria (p.56). If you prefer a rustic paradise, head for southern Anhui in China, where you will ﬁnd World Heritage villages Xidi and Hong (p.64). A new year is a great time for ﬁnancial planning too, so we’ve got the best advice on what you can do with the strong Chinese yuan, besides saving it (p.74). Here’s wishing you a brilliant 2011!

帝王的甜點 ROYAL TREAT

對 Fernando Marques 來說，節日和國王蛋糕是同義詞。這位經驗豐富的主廚來自葡萄牙中部的 Nazaré，從19歲開始在里斯本的四季酒店工作，曾任職於多家五星級酒店，如今在澳門定居超過 10 年，並且在議事亭附近開設澳門咖啡，店裡最暢銷的產品就是他自製的國王蛋糕。葡萄牙人在每年 1 月 6 日慶祝國王節。傳說三王就是在那一天蒞臨，迎接耶穌的誕生。「在節日期間，每個葡萄牙家庭都把國王蛋糕擺在廚房桌子的正中央，讓每個人自己切一塊來享用。」 Marques一邊解釋，一邊熟練地製作麵糰。「能夠吃到、贈送和收到國王蛋糕都象征好運。」用大量糖漬水果和堅果製作國王蛋糕時，他說揉麵糰一定要用冷水，而且最好有一張桌面不沾黏的大桌子。他先用手肘在麵糰中間戳一個洞，然後開始裝飾。「因為麵糰非常厚實，戳一個大凹洞，蛋糕才烤得均勻。」為提升蛋糕的味道，他還加了波特酒和蘭姆酒。傳統國王蛋糕內都藏著一顆蠶豆和一枚錢幣；誰吃到有蠶豆的那塊蛋糕，誰就倒霉一整年，吃到有錢幣的蛋糕則會幸運一整年。「我在聖誕節時只放錢幣。」他特別強調。「國王蛋糕以前只有在冬天的特殊日子才吃得到。」Marques說，「現在大家的日子過得好，一年到頭都可以吃國王蛋糕！」

Fernando Marques’ recipe for Bolo Rei, a traditional Portuguese King’s Cake, sweetens the holiday season For Fernando Marques, the holidays are synonymous with Bolo Rei. Originally from Nazaré in central Portugal, the chef started at Four Seasons in Lisbon at 19. After stints at various 5-star hotels, he relocated to Macau over a decade ago to set up Café Ou Mun, and over the festive period, his version of King’s Cake – traditionally commemorating Jesus’ birth – is a runaway bestseller. “For every Portuguese family, the cake is set out in the centre of the kitchen table and everyone helps himself to a piece over the holidays,” Marques explains as he deftly works another batch of dough. “It’s lucky to give and receive Bolo Rei-like mooncakes for the Chinese.” Marques makes traditional Bolo Rei with luxurious candied fruit and nuts. “It is very important to use cold water in the dough,” he advises, “and a large table with a non-stick surface.” He uses his elbow to form a well in the centre of the dough before garnishing it. “I make this hole large to help the cake bake evenly.” For more intense ﬂavour, Marques adds port and rum, ensuring the alcohol is thoroughly evaporated through the baking process. Historically, King’s Cake contains a fava bean and a coin; the person with the piece that contains the bean receives bad luck throughout the coming year, while the one with the coin gets good luck. “I only put the coin in on Christmas Day,” Marques notes.

國王蛋糕 BOLO REI (KING’S CAKE) 1 把乾酵母、糖和麵粉放進碗內，加一點溫水，放10分鐘等麵糰發酵；2 混入切碎的糖漬水果、葡萄乾、檸檬皮、柳橙皮、波特酒、蘭姆酒、黃油、糖、蛋、小麥粉、溫牛奶、杏仁片、胡桃片和松子，再加上包著防油紙的蠶豆一顆及錢幣一枚； 3 將所有的材料混合，並揉成結實有彈性的麵糰，可視情況酌量加水或麵粉；4 在麵糰表面點綴鳳梨、櫻桃、無花果之類的糖漬水果，塗一層蛋汁，再灑上細糖霜；5 烤熟；放涼後即可食用。 ** 國王蛋糕可作為日間點心或葡萄牙傳統節日大餐的餐後甜點，這種大餐的主菜包括馬介休（鹹鱈魚）、烤雞和烤乳豬。

1 Combine dry yeast, sugar and flour in a small bowl and add a little warm water; set aside for 10 minutes until foamy. 2 Blend in finely chopped crystallised fruit, raisins, lemon zest, orange zest, port, rum, butter, sugar, eggs, wheat flour, warm milk, chopped almonds, chopped walnuts and pine nuts, plus one dried fava bean and one small coin, each wrapped in greaseproof paper. 3 Turn onto a well-floured surface and knead until firm and elastic, adding more flour or water as required. 4 Top with crystallised fruit such as pineapple, cherries or figs and glaze with beaten egg; dust with icing sugar. 5 Bake; then let cool before serving. ** Bolo Rei is often eaten as a snack during the day, or after a traditional Portuguese holiday feast that includes bacalhau (salt cod), roast chicken and roast suckling pig.

• 你為什麼會選擇音樂作為職業？我從小學鋼琴和小提琴。跟很多小孩一樣，我也曾想放棄。但我母親和祖母勸我堅持下去，她們說做事應該有始有終，不能半途而廢。就像推石頭上山，非常吃力。但到了山頂後，一切變得得心應手。 • 指揮和演奏的差別在哪兒？當我指揮時，整個樂團都由我掌控。我從不同樂器中發現不同的特色。當我演奏時，我只能控制自己手上的樂器。我比較喜歡指揮，因為我可以和團員們分享我對音樂的各種看法。 • 你如何準備一場音樂會？我必須比每一位演奏者更熟悉樂譜，有點像犯罪現場調查，結果我已經知道了，但我必須以倒退方式追溯從頭，仔細探究每一個環節，才能達到我所要的結果。 • 你上場還會緊張嗎？我從20歲出頭就不再緊張了。有一位歐洲教授 Igor Ozim教我不要排斥緊張，而應該把上台前的緊張心理視為理所當然。再說，我指揮時又不需要面對觀眾！ • 你對澳門的音樂環境有什麼看法？自從名指揮家呂嘉在兩年前接任音樂總監以來，澳門樂團可以說是脫胎換骨。他對引導一般大眾接受音樂有非常卓越的貢獻，能夠看到這麼多年輕人聆聽古典音樂，感覺太好了。 • 談談你即將在1月8日舉行的音樂會。我將指揮澳門青年合唱團，在玫瑰堂演出莫札特的G小調第25號交響曲。玫瑰堂是一座古蹟，在那裡舉行音樂會將是極為獨特的經驗。1月的氣候正合適，因為澳門的教堂沒有空調，如果舉行夏季音樂會，大概沒有人受得了！

• What led to your career in music? I studied piano and violin when I was little. Like many kids, I got to the point where I wanted to quit. My family persuaded me to keep at it. It was like pushing a rock up a mountain: at the top, I began to roll on my own. • How is conducting different to playing the viola? When I conduct, the instrument is the orchestra. I can ﬁnd colours with different instruments. When I perform, I can only control my instrument. I prefer conducting, since I can share ideas on where to take the music. • How do you prepare for a concert? I have to know the score better than every performer. It’s like a CSI investigation. I know the outcome already and work backwards to get there, tracing each step along the way. • Do you still experience stage fright? No, not since my early twenties. I had a European professor, Igor Ozim, who advised me not to ﬁght my fears – instead, I should accept stage fright as part of performing. Besides, when I conduct, I don’t have to face the audience! • How do you feel about Macau’s music scene? Since Maestro Lu Jia took over as music director two years ago, the Macao Orchestra has improved tremendously. He has done phenomenal work with educating the general public. It is great to see young people hearing the classics. • Tell us about your upcoming concert on 8 January. I will be conducting [the Macao Youth Choir performing Mozart’s Symphony No 25 in G Minor] at St Dominic’s Church. As [it’s such] a historic venue, the concert will be a unique experience. The climate in January will be fantastic since Macau’s churches don’t have air-conditioning – which makes summer concerts unbearable! Francis Kan

Originally from Hong Kong, Francis Kan toured the world for a decade with his mentor, the late Sergiu Comissiona, Kan began conducting with the Macao Orchestra. He has been principal conductor with the University of Hong Kong Union Philharmonic Orchestra since 1999, and joined the Guiyang Symphony Orchestra as resident conductor in 2010.

Macau-born Wong worked in hotels and restaurants worldwide before returning home. “Holiday dishes are for the family to celebrate and enjoy together,” he believes. “Ingredients must be fresh, colourful and cheerful.” Chow emphasises the idea of community: “We have to carry on these traditions; otherwise, our culture will be lost.” Wong feels that sweet New Year’s cake is an essential part to the celebration, for giving and sharing during visits. But as he is often working over the holidays, he cherishes the memory of enjoying an end-of-year dinner with his family. “Everyone comes home to eat together, no matter what,” he says. “That is the best memory of all.”

JUST LIKE LAS VEGAS, Macau is evolving from a gambling mecca to a sophisticated entertainment resort and one new show, The House of Dancing Water, is stealing all the headlines at the moment. This US$250 million extravaganza housed at the City of Dreams is the largest water-based show in the world and is directed by Franco Dragone, who spent over a decade working with esteemed Canadian dance troupe Cirque du Soleil. Drawing creative inspiration from Chinese culture, particularly Confucian beliefs, it’s a heartfelt love story with plenty of twists and turns to keep audiences gripped in their seats, and the show is spectacularly set within a 50m-long, 8m-deep pool – the largest commercial pool in the world. Ever resourceful, the City of Dreams recently paired up with its sister property, the Altira Spa, to offer guests limousine transfer to the spa for treatments and spa cuisine prior to the show, in what promises to be the first of a line of dual entertainment promotions. The House of Dancing Water has provided stiff competition for Dragone’s former employers Cirque du Soleil, whose Macau offshoot was the first permanent outlet for the brand in Asia, making its debut in August 2008 with Zaia. This magical tale of a young girl’s journey of selfdiscovery, told through dance and aerial acrobatics, is about to enter its third year at The Venetian’s custom-built theatre, which is capable of housing 1,800 people. While Wynn Macau’s Performance Lake is no rival for The House of Dancing Water‘s dazzling show, the lofty plumes of fire and water that unfurl nightly are nevertheless impressive, as is its Dragon of Fortune, which emerges from a lotus blossom in a dramatic rolling fog to a height of 8.5m in the hotel atrium. Afterwards, stroll down Thanon Maharat to the Pak Klong Talad ﬂower market (best after 10pm), which explodes with a thousand colours and scents. Pick up an armful of ﬂowers for $5 and hail a taxi home. On Saturday morning visit Chatuchak Market (Mor Chit BTS station), one of the largest in the world and a Bangkok mainstay for decades. Marvel at the insane variety of knick-knacks, grab lunch at one of the many food stalls, and savour the milk inside a freshly opened coconut. After that, head to Health Land Spa (+66 2 261 1110) for a Thai massage to rest your weary muscles. In the evening, splurge on an Ultra Screen movie at Paragon shopping mall for the ultimate in cinema luxury. Sunday’s brunch at Crepes & Co. (+66 2 653 3990) is a Swiss-style affair – reserve a garden table. Then head to the Jim Thompson House (National Stadium BTS) for a tour of the mysterious silk legend’s gorgeous home. As the sun sets, stroll in Benjasiri Park (Phrom Pong BTS) and check out the acrobatic games of takraw near the back corner. Top it all with a street-food feast at Sukhumvit soi 38, which draws huge crowds with its incredible variety.

不單止時裝潮流鼓吹「less is more」，連樂迷的音樂口味，都有回歸基本的趨勢。一向行在最前的Karen，亦帶頭放下以往愛冒險的音樂風格，親自創作新專輯內十首作品。由開始到完成只花了半年時間，做起自己喜歡的事，果然比較得心應手。「年初寫好第一首歌《寶貝》，到6月已經把所有歌曲錄好，以一張全創作大碟而言，真是極速完成。做唱片或是其他創作，都不一定要蘊釀很久，有時忽然靈光一閃，很快就可以完成。我們事前並沒有擬好計划，只知道完成上一張翻唱專輯後，下來應該推出全創作大碟。」對比上一張翻唱專輯《回蔚》的熱鬧喧嘩，《寶貝》顯得溫婉細膩，更平易近人。「我對今次這張專輯非常滿意，完全符合我的要求，以一種沈穩平靜的方式，真正唱出我的心聲。」Karen說，今次她花了特別多心思在唱片製作上，多方面兼顧雖然很累，不過看得出她十分滿足，並認為很值得的。完美孤獨《寶貝》的唱片封套遠赴澳大利亞昆士蘭拍攝，當地風景美得令人心醉，可惜Karen每天的行程都很緊湊，只能走馬看花。「6天行程被排得密密麻麻，因為那裏的景色都很優美，各具特色，我們不想錯過每一個地方，所以每天天未亮就起床準備拍攝，爭取每一分秒。」回憶起昆士蘭的行程時，Karen 眼睛閃爍，直言回港後仍非常懷念。「一天我們去到一個白色沙灘拍攝，那是世界十大海灘之一，很美很美，可惜那時是冬天，氣溫只有十度左右，所以不能跳進水裏游泳。不過那情景很配合其中一首歌《完美孤獨》的感覺，令我很容易投入情緒。」

IT ISN’T ONLY THE FASHIONISTAS who are preaching “less is more”. Even musical stars are going back to basics, and Karen Mok is right there leading the way. The ten tracks in her new album are a radical departure from her edgy musical style, and it took her only six months to finish the whole album. “I finished the title track of Precious at the beginning of the year, and by June I had recorded all the songs already. It is amazing speed for an original album. If inspiration strikes, you can get it all done in a flash. It was not even planned – all we were conscious of was that after the last album, we ought to work on original compositions next.” Compared to the bright and brash cover album Hui Wei, this new release Precious seems mellow and refined. “I’m very happy with how the album turned out. This is exactly the result that I wanted to achieve. The serenity conveys everything I wanted to express.” Karen told me that she spent a lot of extra time and effort on the production. It wore her out, but from the contented look on her face, I could tell that she considered the effort well worth it. Perfection in Solitude The new album’s cover was shot in Queensland. The mountains, seaside and fields all boast their particular beauty, but the tight

莫文蔚選擇回歸音樂最純樸的風貌 Her latest album Precious is a refreshing return to her musical roots

熱鬧與獨處 Karen 最喜歡的新作之一，是《完美孤獨》。林夕的歌詞完全寫出了她的內心感受，意境動人。 Karen個性直爽，她說雖然很享受與朋友共聚的時光，但她也需要有獨處的時間。「作為一個藝人，工作性質繽紛熱鬧，身邊總是圍著很多人，但當工作結束後，我還是需要一個寧靜的空間，讓我好好沈澱一下。」 Karen笑言一天里最放鬆的時候，就是在浴室里的時間。新碟有一首《洗澡時唱的歌》，就將這份心情寫了進去。「浴室對我來說，非常重要，在洗澡的時候想想事情，哼哼歌，完全私密的個人空間。」雙線發展這兩年Karen比較專注於音樂發展，推出過兩張口碑不俗的專輯，相信亦有不少影迷很期待看到她的新電影。「其實我並沒刻意放緩電影方面的發展，我也非常熱愛電影，只要遇到好劇本，我還是會拍的，雙線發展不成問題。」今年剛步入40 的Karen，貴為金曲獎最佳國語女演唱人，而出道以來主演與參與的電影也有數十部，不少角色如《食神》中的火雞姐、《西遊記》中的白骨精等都令人印象深刻。事業得意，愛情路上屢敗屢戰的她近期被傳與唱片監製張亞東打得火熱，作為樂／影迷的，當然希望她愛情、事業兩得意！

schedule meant that they could only catch a ﬂeeting glimpse of each place they visited. “We were in Queensland for six days and our schedule was jam-packed. There were so many beautiful places and every one of them was unique. We didn’t want to miss out on any of them so we rose at dawn every day to make full use of our time there.” Karen became quite animated as she recalled the photo shoot in Queensland. “One day, we went to shoot at a wide expanse of white sandy beach. It was one of the top ten beaches in the world! It was a dazzling sight, but it was winter there and the temperature was around 10ºC, so I didn’t hop in for a swim. The beach perfectly illustrated the song ‘Perfection in Solitude’, so I got into the right mood for the shoot very easily.” Being Together, Being Alone Karen’s favorite song in the album is “Perfection in Solitude”. She said that Lin Xi’s lyrics captured her feelings perfectly. One might think that a forthright person like Karen would love being around people. Karen admits that she enjoys the companionship of her friends, but she also needs time for herself. “A showbiz career means that the very nature of my work requires me to be

with many others, but once the work is done, I need to find a quiet space to regain my equilibrium.” Karen smiles broadly as she remarks that the most relaxing time in her day is the time she spends alone in the bathroom. Another new song, “Singing in the Bath”, describes her feelings then. “The bathroom is indispensable to me. I spend a great deal of time in there, reflecting on matters as I shower, or crooning a tune. It’s my private time.” Dual-Track Career Karen has been concentrating on her music the past couple of years, producing two highly acclaimed albums. Aside from her musical output, her fans are hoping she’ll also make another movie. “I haven’t put acting on the backburner. Acting is my other love. It runs without conflict on a dual track alongside singing. I’m just waiting for a good script.” At 40, Karen has won the Golden Melody Award for Best Female Mandarin Artiste and acted in scores of movies. She is best remembered for her roles as Sister Turkey in God of Cookery and the White Bone Demoness in A Chinese Odyssey. Recently she’s been rumoured to be dating music producer Zhang Yadong. You could say with some justification – this woman has it all.

鴉片戰爭後，這塊充滿新古典主義的濱江之地，一直是上海市對外的一扇窗。1949年後風華不再，直到1999年，多個藝術、時尚熱點如Bund 18、D&G、夏姿等陸續出現，才開始為外灘注入新活力。近幾個月，外灘掀起一陣文藝復興熱潮，主張恢復昔日繁華。橫跨南京路兩頭的老和平飯店北樓與南樓，前身分別為華懋飯店與和平飯店，在費爾蒙酒店與斯沃琪集團尊崇古蹟及專業管理下，華麗變身，再現光芒；外灘向南行，蜚聲國際的上海總會大樓，也以華爾道夫酒店的新姿態重新問世。外灘自1948年後出現的首座新建大樓半島酒店於 2009年落成，帶動各個俱樂部會所、精品名店進駐。上海皇家亞洲文會會長彼得希巴說：「這場重現古蹟風華的浪潮雖進度緩慢，但意義非凡，隨著外灘美術館和羅斯福會所的登場，外灘已擁有更明確的共同價值觀。」重臨黃金年代老上海得以復活，得力於古蹟保存風潮，以及當局的支持。前華懋飯店2007年暫停營業，進行一場高達港幣5億元的嚴密整建修繕。「我們非常重視原有的裝飾藝術風格。費爾蒙只是扮演建築監護人，著重修復重現，讓飯店恢復當年在上海的指標性地位，使後人也見證到它的傳奇風采。」和平飯店北樓總經理納馬尼說道：「除了大堂東入口的地板與電梯，一切包括大堂的懸吊燈飾都是真跡原件。」門上印有華懋飯店的老標誌，也被珍貴地保留下來。環顧整個大堂，你都可以看到飯店徽章上兩隻獵犬的裝飾藝術設計，陽光從玻璃天幕流瀉而下，洋溢活力、積極樂觀的黃金年代又來臨了！和平飯店的前身華懋飯店建於1929年，是維克多沙遜爵士最閃亮的珍寶，他出身於英籍猶太裔富商家族，賦予和平飯店一段精采的歷史。納馬尼熱情地說道：「他熱衷賽馬，醉心於上流社會品味生活，經常舉辦派對和化裝舞會。」在當年各國匯聚雲集的上海黃金年代，這是英國上流社會的聚會場所，也是世界最時尚的飯店之一。「飯店設有空調，這在1929年前所未聞，還有室內電話系統，當時連歐洲也沒有。」華懋飯店接待過不少世界聞人，包括卓別林、蕭伯納、科沃德等。中國第一支勞力士錶就在這裡售出，電影《太陽帝國》、《伯爵夫人》也以這裡為背景。修繕後的和平飯店北樓提供270間客房，包括9間九國套房，以及地佔整層10樓，由沙遜爵士閣樓所改裝的沙

INTERSECTING NANJING LU, the north and south wings of the old Peace Hotel, originally the Cathay and Palace Hotels, have been reincarnated under the respective visions and management of Fairmont Hotels and Swatch Group. Further south on the promenade, the famed Shanghai Club has reopened as the Waldorf Astoria Shanghai on the Bund. They bring an infusion of new energy to the Bund, joining a spate of new luxury restaurants, clubs and shops that began in late 2009, when the Peninsula Hotel became the ﬁrst new building on the Bund since 1948. Peter Hibbard, director of the Royal Asiatic Society in Shanghai, is a seasoned observer of the city’s life. “The whole thing, even behind schedule, and with the Rockbund and House of Roosevelt, makes for a massive difference,” he says. “It is going to have a much more cohesive identity now.” A VOGUE FOR RESTORATION The revival comes at a serendipitous time in Shanghai as architectural preservation is increasingly in vogue with – and understood by – the local authorities. The former Cathay was closed in 2007 for a meticulous overhaul costing HK$500 million. “Paying homage to its original art deco heritage, Fairmont very much sees itself as a custodian of this attentively restored icon in order to preserve its legend for future generations,” Fairmont Peace Hotel general manager Kamal

Naamani explains. “All the mouldings are original. The entire East Entry lobby, with the exception of the floor and lift cab, is original.” Some of the light fixtures – the pendants in the lobby, for example – are original. Some of the original door hardware with the original Cathay Hotel logo was preserved, as were the many 1920s Lalique glass ornaments and fixtures. “The original art deco frieze of the two-greyhounds design, the emblem of the hotel, still surrounds the entrance atrium, and once again, light pours through the original skylight, gilding all who stand below in the golden light of energy, optimism, and success.” Naamani enthuses about the colourful past of this institution, built in 1929 as the crown jewel of Sir Victor Sassoon, the best-known scion of the JewishBritish business clan. “The Peace Hotel has such a fascinating history,” he says. “Sir Victor had a passion for racehorses, high style and high society, and for giving fabulous parties and extravagant costume balls.” Excluded by virtue of his religion from the upper echelons of British society, he turned the Cathay into the epicentre of the high life during Shanghai’s golden era. The hotel was among the world’s most modern at the time, Naamani recalls. “It had air-conditioning, which was new in 1929 when the hotel opened, and inhouse telephones, not even in use in European hotels at the time.” It hosted luminaries including Charlie Chaplin, George Bernard Shaw and Noël Coward, sold the first imported Rolex watches in China, and provided a backdrop for films including Empire of the Sun and White Countess. The restored Fairmont Peace Hotel offers 270 rooms, including the nine famous Nations Suites, and Sassoon’s penthouse is now the Sassoon Presidential Suite occupying the entire 10th floor. Favourite staples of the original Peace Hotel have reopened, including the ornate Chinese restaurant Dragon Phoenix Room serves Chinese food, and the old Grill Room has been revived as the Cathay Room. At the Peace Hotel Jazz Bar, once the only place to witness live music in Shanghai, a band of septuagenarians continue to perform, as they have through the decades. Across Nanjing Lu, the new Swatch Art Peace Hotel presents a more contemporary vision of the Bund. Its shopping arcade resembling more a museum of watch design opened this summer, and the hotel upstairs is slated for an early 2011 opening. The building was previously the south wing of the Peace Hotel; its second and third floors will contain 18 dedicated artist apartments and studios for a rotating residency programme.

THE RETURN OF A GIANT In terms of anticipation and historical clout, the Shanghai Club at Bund 2 is a rival for the Peace Hotel. It first opened in 1864 as the premier British gentlemen’s club in Asia. The current building opened in January 1911 and was famed for its Jacobean, oak-panelled, 34m Long Bar. At “tiffin” hour the crowds at the bar would be three men thick. Newcomers, or “griffins”, started at the back of the bar and would slowly move forward as their status and time in Shanghai progressed, and only the city’s top businessmen, politicians and gangsters were afforded the coveted window seats. The Shanghai Club later entered a period of decline, first as the International Seaman’s Club and the East Wind Hotel. Later, in 1990, the Long Bar reopened – as China’s first Kentucky Fried Chicken. The building was closed in 2000, and smouldered in quiet mystery for a decade until summer this year, when the Shanghai Club reopened as the first Waldorf Astoria in China. From the moment you enter the grand atrium, the results of the painstaking restoration take your breath away: it is an old photograph brought to crisp, crystal-clear life, in every sparkling detail down to the vintage elevators. “We tried to minimise any intrusive change to the interior,” explains public relations

62 THE NAME’S BUND… 外灘，是上海的代名詞，更是富裕生活、繁華老上海的時代象徵。但外灘歷史學家彼得希巴認為外灘不是一直如此招搖：「數年前，上海人還覺得『外灘』一詞令人聯想到列強侵佔中國時期。現在人人都說『外灘』，就像個品牌。」整個外灘區沿黃埔江而行，向北到蘇州河口的延安路，延安路南區即今日的南外灘，過去的法租界。上海如火如荼的建設，從蘇州河／外灘東北楊浦區，延燒到北外灘，大大翻新了整個城市的面貌。彼得希巴在《上海外灘：中國面對西方》一書中指出，外灘從啟動歷史以來就不斷發生變化，沿著黃浦江的外灘區分東南西北四區，清楚地描繪了當年英、美租借地的輪廓。今日的黃埔外灘是昔日的外灘東區；西區環繞護城河（即今日的西藏路）；北區與南區分別面臨蘇州河和洋涇濱。護城河與洋涇濱昔日的建築無一留存，但是洋涇濱還存在於上海的土話中。

The Bund, meaning a waterfront promenade, now enjoys all sorts of enthusiastic use and abuse as a signifier of old-time opulence. It was not always that way, recalls Bund historian Peter Hibbard. “A few years ago, people felt they shouldn’t use the term Bund, for its associations with China’s colonial domination. Now everyone uses it,” he explains. The Bund consists of the stretch along the Huangpu River from the mouth of the Suzhou Creek to its north to today’s Yan’an Road, which originally was a creek called the Yangjingbang. What is now called the South Bund, south of Yan’an Road, began as the smaller French and Chinese Bunds. Development is under way to transform Yangpu District, north-east of the Suzhou Creek and the Bund, into the North Bund, and many other projects around suburban Shanghai near rivers also speciously claim Bund-front status. As Hibbard specifies in his book The Bund Shanghai: China Faces West, the parameters of the Bund have been shifting since its inception, when there were briefly North, South, East and West Bunds along the waterways delineating the original English and American settlements.

manager Suki Pan. “The renovation of this historic and prestigious social club will continue the Shanghai Club’s legacy of refined indulgence.” Along with the Long Bar – which offers Waldorf Astoria favourites such as the Dubonnet, gin and bitters Zaza – on the first floor the reading room has now become the Salon de Ville tearoom. Its name references Shanghai newspaperman Henry Morris, whose home was called Morrisville. Now, decked out with red velvet chairs, it serves red velvet cupcakes at its New Yorkstyle tea. The Shanghai Club’s original 40 rooms have been refurbished into 20 suites resembling opulent apartments. A second wing in a new building behind the Shanghai club, with 251 more rooms, will open at the end of this year. Investment totalled around RMB1.2 billion in renovation of two buildings of 17,000 sq m. A third phase, containing a spa, shops and other amenities, is under way. “You walk in and feel like you’re stepping back in time,” Hibbard says, praising the restoration as a “10 out of 10” initiative. “The Long Bar and the reading room are fantastic… Unlike the Peace Hotel, it was built as a club, and is a much more intimate space that creates a sense of belonging in a space. I am very impressed.”

Huangshan has witnessed a blossoming of ink art among its watery surrounds

黃山 HUANGSHAN 「薄海內外無如徽之黃山，登黃山天下無山，觀止矣！」這是明代旅行家、地理學家徐霞客兩遊黃山後，為黃山所寫下的注腳。如今，黃山作為世界自然與文化雙重遺址，更是無人不識，顯赫遐遠。黃山古稱黟山，因軒轅黃帝在此煉丹的傳說，令開元盛世之君唐玄宗于天寶六年（西元747年）敕改黟山為黃山。黃山36 大峰、36小峰，幾乎有三分之一的峰名，如煉丹峰、浮丘峰、天都峰、軒轅峰、仙都峰、仙人峰等都是因此神話傳說而來。辜勿論其與仙道之緣有多深，黃山天造地設的獨特氣質，備受古往今來無數才子佳人、書畫名家的青睞，為其卓絕風姿留下千古動人的篇幅大作。有人說黃山是水墨世界。我們在纜車上，看那畫卷徐徐鋪開：雲蒸霞蔚、怪石勁松、銀瀑飛瀉，在秀峰疊嶂幽壑縱橫之中，恣意鋪陳，有鈎畫、有潑灑、有皴、有描，充滿水墨意境。不過，這個乍寒還暖的秋天為黃山多添一份瑰麗，隨著纜車徐徐上升，山際間耀目的紅黃配上天空深邃的藍，仿佛梵高大膽肆意的筆觸。前方山谷間充盈著霧海，靜止不流動，被低色溫的陽光照耀成半透明的海洋。李白所吟誦的「素手把芙蓉，虛步躡太清。霓裳曳廣帶，飄拂升天行」，說的正是此等美景。在那幽居空穀絕崖間，黃山松披風而上，萬壑松濤伴斜陽。在那筆直陡峭的花崗岩中，上演的是一場生命力的博弈，無盡的張力懾人心魄。

XU XIAKE, A FAMOUS traveller in the Ming dynasty, was so deeply impressed by Huangshan that he gave profuse praises after his second visit: no mountains anywhere in the world, he said, could ever be as magniﬁcent as this. Nowadays, Huangshan holds a lofty position among the world’s natural and cultural heritage. Originally known as Yishan, it was renamed Huangshan in AD 747 in recognition of the legendary Huang Di, the reputed ancestor of the Chinese people, made magic pills 登黃山天下無山， who for immortality here. There are in total 72 觀止矣 peaks in Huangshan, and one-third of them are named after this ancient myths. Huangshan is a paradise for talented writers and artists, who have been inspired by its grandeur and beauty and created great works detailing their experiences. Huangshan is also described as a world of water and ink art. Riding in a cable lift, you will see a magniﬁcent view of the whole mountain. The straight and steep granite perfectly presents the mountain’s vigorous and immortal life force. Innumerable artists are enraptured by Huangshan, not only because of the beautiful view but also its inner spirit.

西遞 XIDI 黃山腳下的古黟桃花源——西遞，距黃山風景區僅41公里。建於北宋皇佑年間，至今已近 900多年歷史。西遞自古文風昌盛，到明清年間，部分讀書人棄儒從賈，經商成功後，在村內大興土木，建起美輪美奐的庭院、祠堂，並鋪路、架橋，做福故里。因此西遞的民居建築結構嚴謹，古樸雅致，至今保存完好的明清民居共124幢，被譽為「明清建築博物館」。村頭僅存的一座明萬曆六年（公元1578年）建的三間四柱「胡文光牌坊」——青石牌坊，崢嶸巍峨，結構精巧，堪稱明代徽派石坊的代表作，是皇帝恩恤胡文光政績卓越而敕建。歷史上，西遞村頭曾建有13座牌坊，為的是旌表孝子和貞節，彰顯胡氏家族曾地位顯赫。村中康熙年間建造的「履福堂」，陳設典雅，充滿書香氣息，廳堂內題有「書詩經世文章，孝悌傳為報本」、「讀書好營商好效好便好，創業難守成難知難不難」的對聯，昭示著儒學對徽州人生活的滲透影響。村中另一古宅是「大夫第」，門額下「作退一步想」的題字，語意雙關，引人思暇。此外，村中各家各戶的富麗樓宅，精致的大理石門框、漏窗，奇花異卉、飛禽走獸的石雕，樓臺亭閣、人物戲文的磚雕及精美的木雕，絢麗的彩繪、壁畫，都體現了中國古代藝術之精粹。

XIDI, ORIGINALLY BUILT during the Song dynasty over nine centuries ago, and located only 41km away from Huangshan, is also known as “Garden of Eden”. All the buildings in Xidi are well preserved and full of elegance, their simple appearance underpinned by rigorous structure. They are decorated with elaborate marble gates, exotic ﬂowers and rare herbs, stone carvings with birds and beasts, and colourful paintings which portray the essence of ancient Chinese art.

68 重歸古樸，悠然而自得

A flawless combination of the man-made and the natural world

宏村 HONG VILLAGE 2000年，宏村溫婉的景致或許在《臥虎藏龍》裏第一次與世人見面，但其時它已冠上世界遺址的光環。這個有900多年歷史的小村，從此喧鬧起來… 相較於西遞，宏村的特色在於村落和自然景致完美相融。明永樂年間，宏村76世祖汪思齊因宏村枕山、環水，特三次聘請風水先生何可達為宏村進行全面規劃，形成沿用至今的「牛形」水系：引西溪水繞村，開鑿總長1200多米的「牛腸」水圳，九曲十彎的水圳，穿堂過屋，長年清水不斷，經月沼，最後注入南湖，出南湖，灌農田果木。真可謂「浣汲未防溪路遠，家家門前有清泉」。走進宏村，但見層樓疊院，青石板的小路，婉蜒曲折。以正街為中心，兩旁民居大多二進單元，馬頭牆層次疊落，古木青藤探過幽幽牆頭。清朝是徽商最鼎盛時期，他們特別注重雕梁畫棟和門樓的修建，有「千金門樓，四兩屋」之說，代表作是敬德堂門樓上雕刻的圖案，都具有顯貴的象徵意義。承志堂是大鹽商汪定貴的住宅，是村中最大的建築群，有「民間故宮」之美譽。內部有房屋60餘間，圍繞九個天井分別佈置。正廳和後廳均為三間回廊式建築，全宅有木柱136根，木柱和額枋間的精雕細刻，堪稱徽派「四雕」藝術中的木雕精品。斜日余暉下，遊人的足履聲在小巷裏漸漸消散。宏村中央半月形的池塘，波光鑠金，四周古民居的倒影蕩漾其中：素牆、黛瓦、馬頭牆... 浣洗的婦女、嬉戲的兒童此時重現月潭邊，老村終於遠離外來的煩囂，重歸古樸，十分悠然而自得。

HONG VILLAGE BECAME RENOWNED in 2000 as the location for the film Crouching Tiger, Hidden Dragon, but its history goes back more than 900 years. As with Xidi, its main feature is the flawless combination of the village and its natural sights. During the Ming Dynasty, the 76th leader of the village asked a geomancer to form an overall plan for Hong. He devised a water system in the shape of a cow that is still being used today. A 1,200m-long flume goes through the whole village and flows into the south lake to water the crops. A winding path leads to the village, its walls covered with bluestones and ivy creeper. An arched gateway was considered important in the Qing dynasty, and the Hui merchants gave it considerable thought. The representative piece of that period is Jing De Hall, whose engraved design symbolises wealth and power. With more than 60 rooms and nine patios, Cheng Zhi Hall is the biggest building in the village. The intricate and exquisite engravings on the pillars have become classics of Anhui wood carving art. When dusk arrives and visitors start to ebb away, the reflection of women and their playful children reappears in the crescent pond in the glow of twilight. Restored to tranquillity, the village settles for the night, free of the clamour of the day.

Jackson Lee, a 38-year-old Hong Kong businessman running a design and packaging company in Guangzhou, thinks there’s always an exception. Like an increasing number of his fellow investors in Hong Kong and Macau, over the past few years Lee has exchanged a big chunk of the cash in his bank accounts into renminbi, whose value has picked up in recent years with the country’s economic prowess. There were a total of CNY130 billion renminbi deposits in Hong Kong at the end of August and CNY3 billion in Macau at the end of May, according to government statistics. “I’m not much of a risk-taker. Sitting on a bunch of renminbi right now is just perfect for me,’’ says Lee, who spends on average four days in Guangzhou every week before returning to his family in Hong Kong at

But despite the endorsement of highproﬁle ﬁgures like Li and Yam, some observers believe it is still premature to conclude that a full liberalisation of renminbi investment products is imminent. “To think that the Chinese government would just lift the hurdle overnight and allow more renminbi products to become available to investors outside the country is just wishful thinking,’’ said Francis Lun, general manager at Hong Kong-based brokerage Fulbright Securities Ltd. “There are still many things they need to consider. But we, of course, want to see that happening soon as this will mean more business opportunities for us.’’

健康和安全是飛行時最重要的事，澳門航空遵守澳門民用航空局規定，始終奉行對「國際衛生條例」和「世界健康組織」的嚴格承諾。

Health and safety are of utmost importance while in the air and Air Macau abides by the rules of the Civil Aviation Authority of Macau (CAAM), which ensures strict compliance with the provisions of the International Health Regulations published by the World Health Organization. For reasons of safety, health, security and trade control, all passengers are forbidden to take the following articles on to an aircraft: • Drugs, chemical and pharmaceutical products (except those prescribed by a doctor); • Gunpowder and explosives, pyrotechnic articles and flammable materials; • Pointed or bladed items made or adapted to cause injury; • Firearms and ammunition; • Endangered species of animals and plants; • Gas containers and aerosols with a capacity of more than 500 millilitres and/or total net quantity exceeding two litres, carbon dioxide cartridges, fire extinguishers, oxygen tanks (except those approved for medical purposes); • Corrosive, toxic and infectious substances, caustic materials, insecticides, paint, tear gas; • Magnetised materials.

登機安全措施起飛前：請詳閱在您前方的安全卡，救生衣位於您的座位底下。請確認最接近您座位的前後兩個緊急出口的位置。登機行李：起飛及降落時，請將易鬆動的物品如手提行李或手提包放置於您座位下方，或是您頭頂上方之行李艙。電子設備：禁止使用藍牙或遙控設備，以免干擾飛機的飛航與通訊設備。起飛後15分鐘即可使用筆記型電腦、PDA和視聽儀器，但一旦「繫起安全帶」的燈亮起，就必須予以關閉。禁止吸煙：澳門航空的所有班機皆禁止吸煙，在機艙內任何地方吸煙皆屬違法行為。

飛行健康小百科為了保證您飛行途中的舒適，並為了幫助您在抵達目的地時能感到輕鬆愉快、精神奕奕，澳門航空提供以下建議給乘客：進食與飲料：不論是飛行前或是飛行途中，最好能選用清淡、富營養的食物，儘量避免讓腸胃負擔過重。另外，亦應避免攝取含酒精及咖啡因的飲品，以免引發頭痛和暈機；這類飲料也具有利尿的作用，會增加身體的脫水速度，因此宜儘量避免。艙壓：機艙內的特殊壓力能為乘客提供健康的環境，但若您正感冒或感染鼻竇炎，可能會因艙壓感到不適，您可多使用吞嚥、吃糖果或是打哈欠的動作以減輕不適。若您正受鼻塞或過敏症狀所苦，可在飛機降落前30分鐘使用通鼻噴劑、抗鼻塞藥品和抗組織胺劑，以舒緩上耳道及靜脈竇通道的不適。低濕度：機艙內的低濕度也許會讓您覺得體內水份流失較快，而略感不適，建議您在登機前及飛行途中多喝水或果汁，並改戴眼鏡而非隱形眼鏡，以免引起乾眼之困擾。空中舒緩運動：在椅子上坐直一段時間會影響血液循環，進而引起肌肉緊張和水份滯留（水腫）。為了在飛行途中增加血液循環，別忘了做一些簡單的伸展操，例如經常上下動動腳趾、將膝蓋輕輕向胸前的方向舉起等。另一個很好的動作是將大腿向胸前抬高，再以固定的方向旋轉腳踝；轉動脖子和聳聳肩膀也是很好的舒緩操。建議您在飛行途中，每隔一小時就做這樣一套完整動作3到4分鐘。

ONBOARD SAFETY MEASURES BEFORE TAKE-OFF: Please study the safety card in front of you. Your life jacket is under your seat. Check where your nearest two exits are, in front and behind you. Before takeoff, count the seat rows to your nearest two exits.

CABIN BAGGAGE: Place loose items such as hand luggage or handbags under your seat or in the overhead locker during take-off and landing. In addition, passengers in bulkhead seats should keep the floor areas in front of them clear during take-off and landing.

ELECTRONIC DEVICES: The use of Bluetooth or remote-controlled devices is prohibited as such devices may interfere with the aircraft’s navigation and communication systems. Laptops, PDAs and audio/video equipment can be used 15 minutes after take-off but must be switched off once the fasten seatbelt sign has been illuminated.

NO SMOKING: All Air Macau flights are non smoking and it is an offence to smoke in any part of the aircraft at any time.

EATING AND DRINKING: Try to eat a light meal before and during your ﬂight and avoid heavy foods which prove difﬁcult to digest when inactive. Avoid excessive intake of alcohol and caffeine to prevent headaches and bloating; alcohol and caffeine act as diuretics, which increase the body’s dehydration.

CABIN PRESSURE: The aircraft is pressurised to maintain a healthy environment, but if you have a cold or sinus infection, the cabin pressure may cause discomfort. You can combat this by swallowing, sucking on a sweet or yawning. If you’re suffering from nasal congestion or allergies, use nasal sprays, decongestants and antihistamines 30 minutes prior to descent to help open up ear and sinus passages.

LOW HUMIDITY: To beat the low humidity in the cabin, which may leave you feeling dehydrated, drink plenty of water or fruit juice both before you board the plane and during your flight. Apply moisturiser and lip balm to prevent your skin from drying out and wear glasses instead of contact lenses to avoid eye irritation.

INFLIGHT EXERCISES: Sitting upright in a chair for a sustained period of time can affect blood circulation, which can cause muscle tension as well as fluid retention. To boost circulation during the flight, don’t forget to do some simple stretching exercises, such as flexing your toes up and down and raising your knees gently towards your chest. Another good exercise involves lifting your thighs toward your chest then rotating your ankles individually in a circular motion; neck rolls and shoulder shrugs are also good. It is recommended that you do this for three to four minutes for every hour that you are in the air. Walking around the plane every hour is also a good idea. Breathing exercises are also recommended in order to increase bloodflow and aid relaxation.

JET-LAG BUSTER: Get plenty of sleep before your trip. Don’t drink alcohol. Eat small, well-balanced meals. Don’t overeat! Exercise as much as you can on your trip. Use sleeping tablets for only a few days. If possible, give yourself a day or two to adjust to the new time zone after arrival. Eat and sleep at the same times the locals do.
