COLOMBIAN CARAJILLO (“Car-a-hee-yo”)

Have you heard?! Coffee is not only one of Colombia’s leading industries: Colombian coffee is one that leads the world in terms of its famed, delicious and high-quality beans that are exported widely to the United States, Europe and Asia.

For its part, carajillo is perhaps the most representative alcoholic beverage in the country, and the liquor we use, Aguardiente, is the method

Colombian national drink but remains mysterious. This liquor is a distilled beverage made from sugar cane and anise. Thus, in the culture of Colombia, coffee and “aguardiente” have a quite important gastronomic importance.

The carajillo is a typical drink in Spain but also very popular in Colombia, where local ingredients such as coffee and aguardiente are paired for this luxurious, grownup cafe’ beverage.

INGREDIENTS:

2 Colombian coffee (double espresso)

1.5 oz Aguardiente (you can replace it with rum, brandy or whiskey)

Sugar to taste

Decoration: 3 coffee beans

(optional)

1. Heat the liquor together with the coffee beans, or flame them.

2. Prepare a double espresso coffee.

3. Add 1.5 oz / 24.5 ml (a jigger/shot) of the aguardiente for each cup.

4. Serve & decorate with coffee beans floated on top.

Optional decoration: Pl ace the sugar on a plate, then run the rim of the glass through the sugar to decorate.
