hilst we don’t like to mention Covid much at WWM HQ - for heavens’ sake it gets enough press attention as it is - it is more than a little unfortunate that we begin another year under a cloud of uncertainty. We hope, therefore, to be a ray of sunshine peeking through that cloud providing some reasons to be cheerful for the arrival of 2022! A new year presents a wonderful opportunity to us all to turn over a new leaf! We’ve come up with a host of different ways in which you can try something new in 2022 - has rather a nice ring to it I think! See from p14 for inspiration! Getting fitter and eating better is a perennial new year’s resolution that we simply can’t ignore. With all that’s going on at the moment though we suggest the addition of good self care as a mantra this year too - our Take Time Out feature begins on p53.

THE MEN’S WALK TO SUPPORT 2022!

J

oin Dorothy House on Sunday 13 February 2022 for this year’s Men’s Walk To Support! This eight-mile walk is an opportunity for men aged 12+ to join together in solidarity and raise vital funds for end-of-life care in the local community. The walk starts at 12 noon from Dorothy House, Winsley. Participants will then set off on a route that follows along the canal and finishes at Bath Pavilion, in time to watch the Six Nations England v Italy match at 3pm. Celebrate your achievement with a well-earned complimentary pint and food at the Pavilion. They’ll have a bar there too and it’ll be open until 6.30pm for you to revel in your walking prowess!

However you choose to get involved, the Men’s Walk To Support is a great chance to chat and share experiences with fellow participants, all while supporting the vital work at Dorothy House. alisbury’s new contemporary art gallery, The Vanner Gallery, is mounting a celebration of contemporary book illustration. Running from 14 January to 9 April in the recently converted high street space, more than 50 original works will be on display in the ‘Imagine: Illustrating Stories’ exhibition.

Featuring many iconic characters from much-loved books, the show includes some of the most famous names in illustration such as Raymond Briggs, Eric Carle, Lauren Child, Shirley Hughes, Oliver Jeffers, Anita Jeram, David McKee, Jill Murphy, Helen Oxenbury, Axel Scheffler and Shaun Tan, among others. Artists who have built their reputations more recently will also be on show, for example Petr Horáček, Alice Lickens, Frann Preston12

WHERE COULD PHOTOGRAPHY TAKE YOU IN 2022? FIONA TURNBULL, co-owner and tutor at Lacock Photography, discusses her lifelong passion for photography and the spectacular places it can take you. A red deer on the Isle of Mull

I

have been in love with photography since my early teenage years growing up in Glasgow. I quite clearly remember my first camera, a Kodak Instamatic, purchased with my Saturday job savings, and how much fun I had documenting my school friends on our drizzly walking holidays in the Scottish countryside. Technology has certainly changed since the 1970s, as you can see from my telescopesized lens, but my enthusiasm for photography never has. On my most recent and perhaps most daring photography expedition yet, my ‘photography buddies’ (as we call each other) and I journeyed 10 hours to the Isle of Mull by car and ferry, in pursuit of otters in their natural habitat. Arriving on the mountainous island of the Inner Hebrides, located off the west coast of Scotland, we were astounded by the sheer abundance of wildlife - along the road we casually

encountered red deer, herons, golden eagles and highland cows and felt privileged to witness a thriving wild place, dominated by nature.

Fiona has been teaching the beginner’s course at the independent photography training school in Lacock, Wiltshire for a decade, and has helped thousands of students take the exciting first steps in their photography journeys.

t will be interesting and exciting to watch the rapid movement in farming practices this year with the rise in automation that is affecting the industry, with everything from robotic milking machines to automatic strawberry pickers. The move to automation has been accelerated by the general workforce shortage and the shock of empty supermarket shelves, prompting up and coming machinery companies to fast track the technology.

Indoor farming is also big news at the moment, even using shipping containers to grow micro greens and salad crops all year round. I’d like to get out and see some of these new machines and growing practices, and when I get the chance I’ll be sure to report back what I think of it all! Back on the local front we have some great veg to offer in Wiltshire, including a new grower producing pea shoots just for Lovejoys. We love to champion and support local producers and growers; we have just had our first successful year using a dairy supplier in Chew Valley. They are a co-operative of 12 small family run farms who are all red tractor certified. This means the milk is traceable and farmed with care. Other products from the local area, besides all of our wonderful vegetables, are bread from Hobbs House in the Cotswolds, rapeseed oil from Rode, quinoa from Corston near Bath and Lacock Dairy ice cream to name a few.

Now is a fun time to start planning what to grow in your garden or allotment, or even gro bags. This year maybe try something different. Make sure all your tools are clean and sharp and you have tidied up your plots ready for spring. Let’s hope we have a good growing season like last year; the weather was fairly kind with plenty of sunshine and rain coming at the right times. START ME UP!

This month FRAN STEVENS, aka The Food Wife, offers her method for creating your own sourdough starter and has some recipes to try too!

SOURDOUGH STARTER

It was all the rage at the start of the first lockdown but if you didn’t try it then you can still give it a go now. If you fancy trying to make a sourdough starter, all you need is a largish jar, flour, water and a little time. Soon you’ll have a bubbly little friend that will help you to make the most delicious creations.

Leaving the jar on the side in your kitchen should be enough to get it going. Too much heat and you’ll have an explosive disaster; too little and very little will happen. Once you’ve got it going, keep your starter in the fridge between bakes and bring it out to feed and refresh as needed.

You can use normal white flour but in my experience the best, most active, results come from dark rye flour. It makes a thick paste that expands to make a very active mousse-like starter.

Ingredients 50g flour 50g lukewarm water

Use an elastic band on the outside of jar to mark the starting point of your mix and then you’ll easily be able to see how much it’s grown.

Method Start with your clean jar, 50g of flour and 50g of lukewarm water. Mix thoroughly (you don’t want any patches of dry flour) then pop the lid on and leave on the side.

The next day you’re going to feed it again. We don’t want too much in the jar, so discard half of the mix, then add another 50g each of the flour and water. Mix, cover and leave. Repeat each day, taking 50g of the starter, 50g fresh flour and the same of water, until your starter starts to grow! Once it’s nice and active (you should see it double in height from your elastic band) it’s good to start baking with! n.b. This is a 1:1:1 ratio of feeding, if you are struggling with a sluggish starter later on, try a 1:3:3 ratio for instance, 20g of starter, 60g flour and 60g water. THEWESTWILTSMAGAZINE 27


recipes 60g softened butter (or vegetable baking block if vegan/dairy-free) Olive oil Method Combine all the ingredients (excluding the olive oil) in a bowl. Use your hands to bring together to make a smooth dough. Divide in two and shape into two equal blocks. Wrap in cling film and chill in the fridge for half an hour. Preheat the oven to 180°C fan and line two baking sheets with grease proof paper.

Makes 15 approx As part of the feeding process, bakers discard some of their sourdough starter before adding fresh flour and water to the jar. This is done to refresh the starter and to manage its overall growth. If you have leftover sourdough discard you don’t have to throw it away! Instead you can try some dedicated sourdough recipes like this one for sourdough crackers. This is a versatile recipe, I’ve flavoured these with smoked paprika and nigella seeds, but you could use herbs or other spices as you like. If keeping these vegan or dairy-free, use a vegetable based baking block rather than butter. These will store for up to a week in an airtight container. Ingredients 100g strong white bread flour 30g strong wholewheat bread flour 4g salt 2 tsp smoked paprika 2 tsp nigella seeds 150g discarded sourdough starter 28 THEWESTWILTSMAGAZINE

Tip the dough out onto a floured surface. Knead the dough, adding small amounts of flour as necessary, until you have a soft, pliable dough. If using the nigella seeds, add a heaped teaspoon and fold into the dough. Divide the dough into three. Make a rough ball with each and then using the palm of your hand press the dough out into a flat disc, about 3mm thick.

Heat a non-stick frying or griddle pan until very hot. Makes 3 approx Having made sourdough crackers I next wanted to try making homemade naan breads. Soft, slightly chewy breads, with a sour tang. They’ll definitely be making an appearance on future curry nights. Ingredients 90ml warm milk 45ml plain yogurt 180g discarded sourdough starter 190g strong white bread flour Salt Nigella seeds (optional) Butter (melted)

Sourdough Crackers with Smoked Paprika & Nigella Seeds

Flour a work surface and roll each block of dough into a rectangle, about 1 or 2mm thick. Use a knife or the flat edge of a dough scraper to cut the rolled out dough into long strips about 2 inches wide.

Method Combine the warm milk, yogurt, starter, flour and a large pinch of salt in a bowl. The mix should be smooth but sticky. Cover and leave for 45-60 minutes.

Almost 20 years ago, whilst researching for a book, I discovered words that denote a feeling or sensation. IT’S PUZZLING...

n this issue of the magazine we have a feature on Later Life and it has made me think a bit about growing older and how it has happened that I have managed to become an almost 57 year old man when I am quite clearly a 30 year old person that has just emerged from my twenties. My 60s are looming and what, I think, made me decide to write on this subject was something that happened a few days ago… I received my - subscription copy - of Puzzler magazine through the post!! There are a couple of reasons why this seemingly innocent event made me think about my age. When I was younger I remember thinking that I’d like to grow old

I immediately ripped open the wrapping it came in and started making plans about how I was going to find ‘alone time’ to be able to have a nice cup of tea or coffee and concentrate on the myriad of options inside. I have always quite liked a puzzle but I cannot conceive of my 30 year old self ever

imagining that to be so. It’s one of lifes truisms that we age and, quite obviously, there is nothing we can do about it. I still like to think that I will, at some point, start to grow old disgracefully but until that day comes I must leave you and get back to my coffee and a particularly challenging Kross Filler.
