VISIT THE BEST PUB IN ENGLAND! The Three Daggers has been awarded the AA Pub Of The Year title for 2019/20

HARRY HUMPHRIES IS A RECORD BREAKER!

Harry was part of a world record breaking relay team

The Three Daggers in Edington, near Westbury, has recently been awarded the The AA Pub of the Year (England) for 2019/20 - which is selected with the help of AA inspectors. Winners of the prestigious award stand out for being great all-rounders, combining a convivial atmosphere, well-kept beers and ciders, excellent food, and of course, a warm welcome.

Bare tables, mismatched wooden chairs, exposed brick and heritage colours add to the informal country pub feel, as does the seasonal modern cooking. To help celebrate their win, The Three Daggers is hosting a party on Friday 1 November. There’ll be open fire cooking, live music and lots of tasty treats to enjoy. The fun starts at 7pm!

The Three Daggers has plenty to offer • threedaggers.co.uk locals as well as destination diners.

The preview takes place on Friday 22 November from 6–8pm – everyone is welcome to come along. Black Swan Arts is holding two free events alongside the exhibition: on Wednesday 4 December, 6–8pm there will be an artist’s talk and live demonstrations of the work, and on Saturday 7 December, 2–4pm there will be a children’s day with

Harry took home gold medals for the 200m freestyle relay with a world record for the race category! He also won two bronze medals in both the 100 and 50m freestyle relay. The college and supporters of Harry’s journey are incredibly proud of his achievements. This was recognised when he was awarded Young Individual Sportsperson at the 2019 Westbury Young People Awards earlier this year. In 2017 Harry was spotted at a gala specifically for people with Downs Syndrome in Southampton. Fast forward several years and he now competes in competitions around the world. XMAS LUNCH AT WOOLLEY GRANGE

T

here’s something rather magical about Woolley Grange in December. This Jacobean manor is dressed in its festive best and, along with the log fires and original wood panelling, evokes the spirit of Christmas past. This year, from 2-20 December, the hotel is offering a lovely festive lunch menu (available Monday-Fridays). Perfect for a get-together with colleagues, friends or family. Chef Jethro Lawrence has devised a mouthwatering menu. Much of the produce used is from the hotel’s own walled kitchen garden and Jethro’s clever flavour matching and kitchen skills really bring those fresh tastes to life. From a traditional Christmas lunch (with a twist) of Turkey and Pancetta Ballotine with Agen prune and pork

This month FRAN STEVENS, aka The Food Wife, offers three deliciously tasty one pot dishes for all the family to enjoy...

Serves 2

A traditional risotto can be a labour of love but a baked risotto requires little interference and still produces a satisfying dish for a weeknight meal. This combination uses spicy chorizo and naturally sweet peas to give a nice balance of flavours. I like to use bouillon vegetable stock and find I don’t need to add any extra salt as the stock and parmesan are salty enough. I also cut the chorizo up into different sized pieces, some finely diced, some half moons, some full slices, I find this gives a good dispersion from the small pieces and also you still get the odd big chunk!

Make sure the pan you use is hoband oven-safe and deep enough to

hold the cooked risotto. It does not need a lid. If you are feeding a larger group just scale up the proportions! Ingredients 1 tbsp oil or butter 1 onion or leek, finely chopped ½ bell pepper, cut into small dice 75g chorizo, chopped 110g arborio rice 320ml hot veg or chicken stock 50ml white wine or vermouth Pinch of white pepper 2 tbsp grated Parmesan 150g frozen petit pois Method Preheat your oven to 150°C. Heat the oil or butter on a medium heat in a deep oven proof pan. Add the

leek or onion and soften for five or so minutes before adding your red pepper and softening for another five minutes. Add your chorizo and stir to release its oils and then stir in the rice, coating it in the oils. Add the white pepper, stock and wine and bring to the boil, then transfer the pan (uncovered) to the preheated oven and leave for 25-30 minutes. After this time, remove from the oven and stir in the parmesan and frozen petit pois and then return to the oven for a further 15 minutes. Serve immediately with seasonal veg and an extra sprinkling of parmesan. THEWESTWILTSMAGAZINE 31

recipes on its own; but you could also try it with some white fish, green vegetables or a chunk of crusty bread.

During the week it’s a godsend to be able to throw a few ingredients in a dish and then pop it in the oven and forget about it. This dish takes five or 10 minutes of prep and then about 50 minutes in the oven and it’s ready to serve.

Method Preheat the oven to 190°C. Mix the spices together and set to one side.

You can choose how much effort you put in to the spicing too. I made my own spice mix, but if there is a shop-bought one you like, by all means use that. I have suggested cooking this in two baking dishes, as I found cramming it into one made it overcrowded and would have resulted in it steaming rather than baking.

Score the top of each of the chicken thighs with a sharp knife three times and place on top of the potatoes.

Toss the potatoes, peppers and onions in the olive oil and a pinch of salt and divide between two baking trays.

Sprinkle the seasoning mix over the skin of the chicken and toss lightly with the vegetables, before nestling them, skin-side up amongst the potatoes and peppers. Place in the preheated oven and cook for 50 minutes.

Ingredients For the spice mix: 1 tsp (hot) paprika This is nice served with seasonal veg 1 tsp chipotle chilli flakes in winter or green salad in summer 1 tsp dried oregano with some feta cheese sprinkled over. 1 tsp sumac (or the grated zest of a lemon) 1 tsp caster sugar 1 tsp garlic powder (or two garlic cloves, crushed) Pinch of salt Serves 5-6 For the bake: Sometimes you just want a bowl of 2 peppers, cut into 1- inch pieces warmth you can eat with a spoon, 750g small new potatoes, quartered and this is just that. 2 red onions, peeled and cut into thin No oil is needed as the chorizo will wedges release its own, adding extra flavour. 2-3 tbsp olive oil Made in just one pot it is ready in Pinch of salt about half an hour, and can be eaten 1kg chicken thighs 32

THEWESTWILTSMAGAZINE

Ingredients 200g chorizo ring, peeled and sliced into slices 3-4mm thick 1 onion, medium dice 1 fat clove of garlic, peeled & minced 1 heaped tsp hot paprika 1 heaped tsp smoked paprika 1 red pepper, deseeded & dice 1 tin butterbeans, drained 350g sweet potato, peeled and cut into 2cm cubes 150g red lentils 500g passata 700ml vegetable stock Salt and pepper Method In a heavy bottomed sauce pan, over a medium heat, add the chorizo and let its oil come out. After a couple of minutes add the onion and stir, cooking for another five minutes. Next add the garlic, red pepper and paprika and stir, and cook for a minute. Add the beans, lentils and sweet potato, stir well and then add the passata and stock. Season with a big pinch of salt and pepper and bring to a simmer. Put a lid on the saucepan, lower the heat (it should still be simmering) and cook for about 20 minutes until the potatoes are cooked and the lentils are soft. Check the seasoning and serve. MEET THE CHEF

MATT BRIDDON, executive chef at Freshford FoodCo, talks Darcy Pies, sustainability, Christmas markets and cooking for family and friends. Can you tell us a little more about Darcy Pies? Freshford FoodCo founder Jack De Bruin and I have pushed the boundaries with a fresh take on a kitchen classic and elevated the traditional pie to new heights – literally! Standing proud and significantly higher (and heavier) than your average pie, Darcy Pies were born. Where can we buy your pies? Our pies are found on the Freshford FoodCo website in the Pie Box and are also sold in larger quantities for wholesale customers. We are attending many markets around the area, including the Bath Guildhall Christmas Market so you can find us there to try our sumptuous pies. Who are your favourite local suppliers? Sustainability is at the heart of our pies and we source our ingredients as local as possible. Our meat is locally reared and purchased from Larkhall Butchers in Bath. Another company we love is the Good Egg Company, wholesalers of Wiltshire’s finest free range and organic hens’ eggs. I can’t recommend them both enough!

Matt Briddon has been working to take the traditional pie to new heights!

"We are attending many markets around the area, including the Bath Guildhall Christmas Market so find us and try our sumptuous pies!" What’s your favourite flavour? As hard as it is to pick a favourite, I think it’s the chicken and ham hock as it's rich and comforting, perfect for this time of year. Kids love it too! Do you cater for those with intolerances and allergies? Yes certainly, we believe in catering for everyone. If you are interested in a Darcy Pie and have an intolerance or allergy contact us and we will be more than happy to help. Are there GF/vegan/veggie options? Yes, we have a delicious range of vegetarian pies that are filled to the brim with seasonal, locally grown vegetables. Each of our veggie pies have a luxurious little twist in the recipe – think hidden dumplings or a crispy filo topping.

Darcy Pies are created with locally reared meats

Which local pubs and restaurants do you like visiting? My wife and I often visit The Circus

Restaurant in Bath, the fish of the day is great! When you cook for friends, what’s on the menu? All my friends and family absolutely love my barbecues. I am known for not doing things by half, so when sitting around my kitchen table you need to prepare yourself for a feast. Will there be special seasonal pies to look forward to as we approach the festive season? We have a Turkey, Stuffing & Cranberry Pie, a Festive Pork Pie and more – we can’t wait for everyone to try them! Favourite kitchen gadget? As simple as it sounds, a knife. It is the one utensil I need throughout the pie making process. Guilty pleasure? Whisky, for sure! • freshfordfoodco.com

LIGHTS SWITCH ON & MARKET

Corsham On Friday 6 December, the Christmas Lights go on in Corsham in the town’s traditional, familyfriendly way with a Christmas market, entertainment, live music – including the foot-stomping Ushti Baba who’ll start proceedings off just after 5pm - fairground rides for younger children and lots, lots more. Plus, of course, Father Christmas will be there, along with his reindeer. The Lights go on at 6pm, and the fun continues until around 7.15pm. The week before, on Saturday 30 November, you can get your Christmas wish in early at the town’s Wishing Tree event, from 10am-1pm in the High Street. Come along, write your wish and it’ll be popped into a Christmas bauble and hung on the Christmas tree. Wishes are free (and every wish made gets a chocolate too!) but donations to Doorway or Wiltshire Mind will be gratefully received. PHOTOGRAPHS OF CHRISTMAS PAST With the festive season on its way, Lacock Photography's FIONA TURNBULL takes a look back at the miraculous moments in times gone by where Christmas and history collide. Christmas on the front in WWI

T

hese photographs were taken in periods of warfare and reveal how Christmas has the power to bring people together against all the odds. If you’re feeling a tad cheerless about Christmas this year, these poignant photographs remind us all what Christmas is really about.

THE CHRISTMAS TRUCE

Christmas in a divided Berlin

One of the most iconic moments of World War I, the Christmas truce saw British and German soldiers put down their weapons and venture across ‘No Man’s Land’ to meet each other. In the midst of bombs and bloodshed, enemy soldiers shared cigarettes, sang Christmas carols and enjoyed a few games of football.

BERLIN BROTHERS Taken over the Christmas period of 1963, this photograph shows two brothers temporarily reuniting after several years separated by the Berlin Wall. 730,000 West Berliners took the chance to cross through the Iron Curtain and see their loved ones again, many of who waited 10 hours in the cold to receive the necessary visa stamp. CHRISTMAS IN A BOMB SHELTER Picturing a crowded bomb shelter on Christmas Day during the Blitz. In 1940, many Londoners celebrated the festive holiday in underground bunkers after the city endured relentless night-time bombings from September to November. 10 YEARS OF SOFACO!

This November sees Warminster retailer SofaCo Plus celebrate 10 years in business. Owner TOM O'HARE reflects on a decade of independent trading. 2008's credit crunch had passed and my friends and I thought that after a tough 12 months I'd be flying! As it turns out, a rollercoaster ride would be a better desription of how the next decade would unfold. I'd spent 30 years working for others though; stepping into the unkown and becoming self-employed was nervy but exciting. I can honestly say that the quality of life, and the lovely people I have met on my journey far outweigh the financial challenges. The support from the wonderful people of Warminster, its surrounding villages and further afield has been amazing. Warminster Independent Traders have also been very supportive. When I need an extra pair of hands there is always help from the neighbouring shops.

W

ow, we made it…. 10 years in business. A lot of you will know my story, but for those who don’t, it started by going to auction in Devizes in July 2009 and buying 15 George Street in Warminster. At the auction they were filming for BBC’s “Homes Under the Hammer”, and once my winning bid went

down, I was persuaded to make my TV debut. During the recording presenter Martin Roberts asked me why I thought I could run a successful business from this end of town, after so many before me had tried and failed. My answer was….”Low overheads”. It seemed ideal to me. The building was paid for, business rates were low, I had no rent to pay and living above the shop would help keep my costs down.

The shop is constantly evolving… Some years ago, I used to let local artists display their work, but I found it was not always in keeping with the feel I was trying to create within the store. Now I have carefully selected artwork, sculptures and lighting which are fun and give the shop a brighter look. We've also updated the outside of the shop, changing about a year ago from our original cream and grey to a new livery of charcoal and burnt orange (the paint supplied by our good friends at A Touch of Tradition just a few doors down). And how can we talk about the last 10 years without a mention of the shop cats...?! Both arrived within the first year. Poor Mr Darcy passed away about a year ago, but they

house & home were always around to greet clients, and many local people popped in just to see them. Tosca is doing well, and loves testing out the new sofas that come on display…. For non cat lovers, Tosca is always willing to rest upstairs too!

Fashions change, and SofaCo Plus adapts to these changes...

Furniture-wise, fashions change, and we must adapt to those changes. Leather used to be very popular, but the vibrant colours of fabrics - and their textures - have seen a growth in this market. By visiting the international shows during the year, we keep abreast of those ever-changing fashion trends. Most clients prefer to be subtle with their choice of fabrics on a large sofa, but we have a fabulous range of contemporary seating in a choice of “loud” fabrics to make a statement. We buy from the UK, Europe, South Africa etc and are always searching for new exciting suppliers. You need

So, if you're on the lookout for some new furnishings try local first before you scour the internet… remember we have to be competitive to be here, and we offer a much more personal service than a big out of town chain ever can. SEPARATING PARENTS ANNETTE TAYLOR, an Associate Solicitor at BLB Solicitors in Trowbridge, discusses caring, contact and financial arrangements for children.

W

hen parents separate it is often possible to reach an agreement regarding the caring and contact arrangements for children without seeking professional advice. However, it is possible that there are options you are not aware of and it is always a good idea to come and see a solicitor. At first you should each see your own solicitor; this does not mean that you are going to start a dispute with the other parent but, when fully informed, you may find it easier to avoid future confrontations. If you are then unable to resolve matters between you, your solicitor will usually suggest mediation. Mediation is a way for parents to discuss arrangements for children face to face with a trained mediator helping to facilitate a constructive dialogue. Resolving differences through mediation is usually less costly than negotiations through solicitors or issuing court proceedings. It can also be far less stressful for both parents and children. In some cases, if considered appropriate by both parents, the mediator will be able to speak with the children to obtain their views.

a judge will have regard to a host of factors, including their age, physical and emotional health and the ability of each parent to meet the children’s physical and emotional needs. The court has the power to make shared care orders whereby children are cared for equally by both parents. It also has the power to make an order that children live with one parent and see the other parent at regular, defined intervals. Financial support for children is also a fundamental consideration on relationship breakdown. Again, parents are encouraged to attempt to agree between themselves the level of child support to be paid by

the non-caring parent. If agreement is possible, that will not be interfered with by the court. Failing agreement, an application will need to be made to the Child Maintenance Service, formerly the Child Support Agency, who will then undertake an assessment. The calculations of child support are largely based upon the number of children and the level of the non-caring parent’s gross income, with deductions applicable in certain situations. If you would like advice about the future arrangements and financial support for your children then please contact Annette Taylor, Family Law Solicitor at BLB Solicitors, Rodney House, 5 Roundstone Street, Trowbridge, BA14 8DH; telephone 01225 755656 or email: annette. taylor@blbsolicitors.co.uk • blbsolicitors.co.uk

While mediation is very often successful in helping parents to resolve their differences, if the process fails then it is open for either parent to make an application to the court. A judge will then determine the caring and/or contact arrangements for the children. In reaching a decision as to what is in the best interest of the children, THEWESTWILTSMAGAZINE 63

LASTING POWERS OF ATTORNEYS – MAKE A LPA TO PLAN FOR THE FUTURE

Whilst few of us want to think of a future where we can’t make decisions ourselves, having a LPA will ensure your loved ones can easily protect your best interests without the additional stress of going to court. Most people assume their spouse or family members can automatically make decisions for them when they become unable to do so themselves. Unfortunately this isn’t the case, only a LPA gives the necessary legal authority to your loved ones to manage your affairs on your behalf. Planning ahead sooner rather than later can save time, money and worry for those trying to manage your affairs if you lose the capacity to manage these yourself.

would like to make these important decisions, should you ever lose the capacity to make them yourself. It’s also possible to add in guidance and preferences so that your attorneys are conscious of any issues or beliefs which are important to you.

THERE ARE TWO SPECIFIC TYPES OF LPA: • HEALTH & WELFARE LPA Allows your attorneys to make decisions about any medical issues, your care, life sustaining treatment and even your daily diet.

• PROPERTY AND FINANCIAL AFFAIRS LPA Allows your attorneys to make decisions about your money, bank accounts, and even buying and selling property on your behalf. Although it is difficult to think about the possibility of losing capacity, and how we might cope without managing our financial affairs, it is important to plan for the future. Our Private Client team can protect you and your family and provide certainty for the future.

WHAT IS A LPA?

A Lasting Power of Attorney is a legal document which allows you to appoint one or more persons (‘Attorneys’) to act on your behalf in a variety of situations, ranging from managing financial affairs to refusing medical treatment. It allows you to choose in advance who you 74 THEWESTWILTSMAGAZINE

legal & financial Perhaps you are concerned about how you are going to fund your later life, or about the ever increasing cost of care and how this might affect what you leave behind for your loved ones.

“Having a LPA will ensure your loved ones can easily protect your best interests without the additional stress of going to court.”

WHEN IS THE RIGHT TIME TO MAKE A LPA?

LPA’s are relevant to all adults of any age; for instance a person who loses capacity at a young age could have many years when having someone to make decisions in their best interests is a crucial part of their lives. It’s important to have a LPA drawn up whilst you still have the mental capacity. Otherwise it may be left to the courts to decide who should be given this responsibility and this may not be the individual(s) you would have chosen yourself. Don’t wait for signs of physical or mental decline before setting up a LPA as it may be too late. Many people wrongly assume that because they have set up a LPA, they have lost control. However, you can specify whether it can be used either before, or only when, you lose mental capacity. The hope is that the document will never need to be used, however you will have peace of mind that it’s in place should it ever be required. At Goughs we can provide a full range of future life planning services including Wills, Trusts, LPA’s and Inheritance Tax Planning to help protect both you and your family’s future. TALKING TOM

TOM ELLIS has risen through the ranks at Bath Rugby and Lisa Rockliffe spoke to him about his game, improvements, and helping new guys coming through. having Francois Louw, Underhill and others around must be helpful to you as you learn and try to improve…

“Everyone wants to play every week, but realistically we know we can’t play every week, and certainly can’t play 80 minutes every week.” You started out Did you have as a lock, how did to change your you end up in the physicality? back row?

Well I played a bit on the wing when I was about 10, before ending up in the second row when I was in Bath’s academy. I sat down with Toby Booth at the end of my third year here and he said, “There is no world class second row under 6’5’’ who isn’t a genuinely remarkably athlete, and, with all due respect, you aren’t that remarkable an athlete. I think if you want to achieve good things in the game, and perhaps go on to become world class, you should move to the back row.” He felt that the lineout was a strong part of my game but I wasn’t competitive enough in other areas to make it as a second row. By moving to the back row though my lineout ability became a real strength and I’ve enjoyed it. And I’m pleased I made the switch as it’s suited me. 76 THEWESTWILTSMAGAZINE

Yeah, I had to lose some weight, which was good. As a youngster there is a big focus on reaching a weight just to be trusted. As a premiership second row you have to be 120kg or coaches just won’t pick you. I didn’t feel good at that weight, I didn’t feel athletic, my legs were heavy. When I went into the backrow I was able to come down to a weight where I could feel springy and better able to get around the field.

Absolutely, I’m always trying to make improvements and having those guys around is really helpful. What Francois does is quite unique. He’s able almost to absorb the collision and then get onto the ball. That’s difficult for me to do as I’m not that good at jackalling. What Sam does is quite different. He comes in as a second man, which potentially suits me a little better. If you look at someone like Matt Garvey, who’s a tall man that jackals, that again is more applicable to me. Everyone has different strengths though, and as long as you are able to slow the ball down, the net gain for the team is still there.

Was rugby always on your radar? No, not at all. There are some guys here who always wanted to be a professional rugby player. I kind of just kept getting picked. I always wanted to be really successful at something but didn’t know what it was going to be. I sat down with my Dad at around 16 and he was very serious, and he asked me what I wanted to do and

and then think “I am so far off the pace” as it’s a totally different game. The lineout and scrum is different, winning collisions is different, there is a lot of strength and conditioning you need to do. I was lucky to nurtured by the likes of Dave Attwood, Matt Garvey and Francois Louw and now I’m enjoying playing my part in feeding some of that knowledge down to the next generation for sure.

INTERESTING FACTS

Atishoo! In Japan one sneeze signifies praise (ichi home); two sneezes, criticism (ni-kusashi); three sneezes, disparagement (san-kenashi) while four or more sneezes is taken to mean, quite reasonably, that a cold is on its way (yottsu-ijo wa kaze no moto). Meanwhile, in Mexico, one

sneeze is answered with the word salud (health); two sneezes with dinero (money); three sneezes with amor (love); four or more sneezes with alergías (allergies); laughter often accompanies four sneezes, because health, money and love are obviously more desirable than allergies. In response to someone sneezing, the Germans say Gesundheit, ‘health to you’, and the French à tes souhaits, literally ‘to your wishes’. In Sierre Leone, Mende speakers say biseh, or ‘thank you’; in Malagasy, the language of Madagascar, they say velona, ‘alive’, while the Bembe speakers of the Congo say kuma, ‘be well’. In Tonga a sneeze is often taken to be a sign that your loved one is missing you. ANSWERS 1B, 2B, 3C, 4A

O

CRISIS? WHAT CRISIS?!

ne of the things I guess I have to be aware of, being the age I am, 54, is a mid-life crisis. It’s one of those things that seems to happen to men of a certain age. It apparently doesn’t happen to women, but the difference between men and women? That’s a topic that may have to wait until another time… perhaps when I have a spare three years to write it!!! One of the more traditional, if you can describe it that way, events in an M-LC is ditching the wife and trading her in ‘for a younger model’. The fact that my lovely wife

rather besides the point. Truth be known I’ve never been interested in ‘motors’ like many of my mates were back in the day were. Until said mates realized I had little or no knowledge - and even less interest - in cars I used to have to spend many a dank, wet, drizzly afternoon at Westbury Car Auctions kicking tyres and pretending to know the pros and cons of a Mini Metro Turbo or an XR3i.

Phil Rockliffe Another more modern thing that M-LCers seem to embrace is the MAMIL (Middle Aged Men In Lycra). This is the relatively recent phenomena affecting of men of a certain age. It sees all different

I’m letting the side down again here too I’ve written about the fact I have embraced my MAMIL status before - I’ve absolutely no interest in cars, and, as my wife’s Tuesday morning motorbikes or any other form of motorized transport. I guess I could coffee buddies can testify (ladies you know who you are!!!), I think get a bit interested in a pimped up I look rather fetching in my lycra Winnebago at a push but then I’d two-piece….in fact I believe on one want my wife and family to come with me to enjoy it which I guess is occasion it was even requested?!! of 8 years, and mother of my two children, is already 18 years younger than me sort of knocks that one on the head so I’ll have to think of something else.

82 THEWESTWILTSMAGAZINE

I think if I am going to do the whole M-LC thing then I may have to think of something else, although I’m not sure what that might be. I think the very fact I can’t think of anything probably precludes me from being able to have an M-LC but that’s OK as I don’t feel as though I am in a very ‘crisis’ place at the moment anyway. I’m very happy with my young wife thank you!!
