T

he Wylye Valley Art Trail is the largest visual arts event in Wiltshire. This year marks its tenth anniversary, and to celebrate it is expanding to run for 10 days from Saturday 18 May until Bank Holiday Monday 27 May. Visitors can enjoy a huge range of styles and mediums, from sculpture to digital art to installation to ceramics and everything in between. The event has over 390 exhibitors, ranging from award-winning artists with international reputations, to those just starting out on their creative journeys. It’s a real jewel in the artistic crown of Wiltshire and I implore all of you to head out and enjoy it. Read more about it on p14. Away from the arts, there is lots more to enjoy in our May edition, from some great local food hotspots (p21) to our annual spring interiors guide (this year running to some 20 pages - starting from p51). We’ve also put together a guide to getting out and about in our local woodlands to enjoy the stunning carpets of bluebells that this month offers up. We’ve all that and lots more too, so get reading!

CORSHAM WALKING FESTIVAL - 7-9 JUNE It is time again to start booking your places at the 6th Corsham Walking Festival and not to forget your evening of fun and entertainment at the Saturday evening quiz and buffet. There are 27 walks again this year ranging from 1.5 to 19 miles, from easy to moderate to challenging, so something for everyone. The festival has some new walks and has finetuned some favourites. The walk leaders and experts will ensure you have a great day out walking in the countryside.

FOLLOW WESTWOOD SCARECROW TRAIL THIS HALF TERM During the May half term holiday (from Saturday 25 May to Sunday 2 June) head over to Westwood and find over 30 scarecrows on a family friendly route around Westwood village. THE 10TH WYLYE VALLEY ART TRAIL

S

ince its founding in 2001, the biennial Wylye Valley Art Trail has established itself as the largest visual arts event in Wiltshire. This year, in May, is the 10th Wylye Valley Art Trail. The largest and most exciting yet, with 87 venues, scattered across southwest Wiltshire, set in some of the most beautiful countryside this county has to offer, covering Warminster, Westbury, Wylye, Maiden Bradley, Mere, Hindon, Tisbury and villages in between.

SELWOOD STEAM RALLY RETURNS

T

he Spring Bank Holiday weekend will see Southwick near Trowbridge alive with the sights and sounds of yesteryear as Selwood Steam and Vintage holds its annual steam and vintage rally.

The event is open from Saturday 25 to Monday 27 May, from 10am to 5pm each day, and aims to display an extensive range of nostalgic exhibits, most of which can be seen working. Entry prices are just £8 for Kids will love the Mini Movie Trucks

Attractions this year include steam engines, a children’s funfair, live entertainment, craft and trade stands, ring events, trailer rides, face painting and much more, including live entertainment in the beer tent. One of this year’s must see events is Mini Movie Trucks. Children and small adults can try their hand at being an HGV driver in a real mini iconic movie truck around a fully themed inflatable course. As well as that there’ll be craft displays, a 1940s style tea tent and much more. It should be a great day out for all the family. Because of the kinder weather this winter the local watercress has remained fantastic quality and nice and green with a stronger, more peppery taste than normal.

Our potato grower is Derek, in Corsham, which believe it or not is on the edge of the Cotswolds and has that typical type of soil which is extremely suitable for potatoes - even more than the Bromham sand. It allows him to grow our most popular variety which is Maris Piper. Chefs use them for chips and roasting potatoes. He has now finished planting and we are looking forward to September when he will start harvesting this new crop. On Folly Farm in Warminster, Joe our herb grower is now harvesting

Seasonal treats don’t get much better than English asparagus. Make the most of the short season with These recipes come courtesy of Tesco.

Chorizo, asparagus & manchego tarts

These savoury tarts are simple to make and packed full of flavour. Golden, light-as-air pastry topped with smoky chorizo, nutty asparagus and creamy Manchego – baking in the oven makes these beautiful bites, which are perfect for picnicking, gorgeously gooey. Serves 4

Ingredients 320g pack ready-rolled lighter puff pastry, at room temperature 2 tsp milk 100g chorizo, thickly sliced

125g asparagus tips, each cut into 3 4 tbsp soft cheese 75g Manchego cheese, grated 90g pack babyleaf and rocket salad, to serve Method Preheat the oven to fan 200°C. Unroll the pastry on its paper and cut out 4 x 11cm squares. Using a sharp knife, mark a border 1cm in from the edge and score the centre. Transfer to a baking tray lined with non-stick baking paper and brush the border with the milk. Bake for 10 mins, until puffed.

Meanwhile, heat a griddle pan over a high heat. Dry-fry the chorizo for 2-3 mins, until crisp. Remove from the pan and drain on kitchen paper. Put the asparagus in the pan and griddle for 1 min. Flatten the pastry centres, then fill each with 1 tbsp soft cheese. Divide the chorizo and asparagus between each, then scatter over the Manchego. Return to the oven for 10 mins, or until the cheese has melted and the pastry is golden. Serve with something light, like a babyleaf and rocket salad. THEWESTWILTSMAGAZINE

Place on the middle shelf of the oven and roast for 15 mins, stirring once, until lightly browned. Add the asparagus and peas, tossing well with the garlic, and return to the oven for 5 mins.

Roasted asparagus, purple sprouting broccoli & feta salad Serves 2 (as main) Ingredients 100g asparagus, woody ends snapped off 100g purple sprouting broccoli, any woody ends cut off 2 tbsp vegetable oil 85g bag watercress For the dressing 1 lemon, juiced and zested 2 tbsp honey or sugar 2 tbsp olive oil 1 tsp Dijon mustard 50g feta, crumbled

and mustard. Pour the dressing over the warm vegetables, stir through the watercress, sprinkle over the feta and serve.

Crustless quiche with asparagus & peas Serves 4 Ingredients ½ garlic bulb, cloves peeled ½ tbsp olive oil 125g pack asparagus tips 100g frozen peas 4 eggs 200g natural cottage cheese 1 heaped tsp plain flour (or use

Remove the dish from the oven, discard the garlic, and spoon the egg mix evenly over the vegetables. Sprinkle over the sliced spring onions and crumble over the salad cheese. Bake for 20-25 mins until set. Set aside to rest for 5 mins then ease a knife around the edges to loosen and remove from the dish. Cut into quarters to serve. What was your first job in catering? I was trainee chef in a small hotel in Ayrshire called the Auchendolly Hotel.

It has to be breast of chicken with a creamy asparagus sauce. It’s a favourite of our customers too.

No, our prices are pretty good all year round and our ‘specials’ board changes every day.

What is the most memorable event you have cooked for? Probably when I cooked at a Microsoft convention over in Nice in the south of France many years ago. It was a big event and on a different scale to anything I had seen before.

What’s your favourite kitchen gadget? That would have to be our Rational, SelfCooking Centre, it really is a fantastic bit of kit and helps us turn out consistently delicious food even when the kitchen is really busy.

Which local pubs and restaurants do you like visiting on a day off? I like to keep it simple and often go to the Kings Arms in Trowbridge for lunch. It’s a nice pub with a good atmosphere and tasty food.

What is your guilty pleasure? A decent bottle of Australian red wine at night tends to tick that box!

When you cook for friends, what’s on the menu? I don’t really do a lot of cooking for friends but Its usually a roast dish, roast leg of lamb when I do.

South west of Marlborough, West Woods is a very extensive expanse of beech woodland and becomes very popular in late spring thanks to its fantastic displays of bluebells, which carpet the forest floor. In April and May you can enjoy a stunning display of native bluebells. Unfortunately the walk is not suitable for pushchairs or wheelchairs, but dogs on leads are welcome. Travel from the pretty village of Sandy Lane with its thatched cottages towards Lacock and you’ll be greeted with beautiful displays of bluebells in Wheelers Wood as you descend Bowden Hill towards Lacock. And obviously if you are in the National Trust village, the Abbey is always

Each year the public is encouraged not to miss out on discovering Bowood’s magnificent display of rhododendrons, magnolias and azaleas. West Woods in Wiltshire is the perfect place for a bluebell walk in the spring

Just a mile from Chippenham, Mortimores Wood is a small area of ancient woodland with a recorded history extending back over 800 years. It houses a diversity of plant and bird life only found in such old woodlands, including a large number of native species. It is now managed by a group of dedicated volunteers. Plenty of wildlife roam the ancient woods and the bluebells steal the show on the Bonham Wood estate walk (the walking route map can be purchased from the shop). While everyone flocks to the lake in autumn to drink in the blazing colours of the red oaks and maples, the glories of spring remain the garden’s best kept secret.The bright, fresh hues of spring give autumn a run for its money. As you wander the paths, rhododendron and azalea blossoms ruffle and frill, with jubilant tones of yellow, purple and every imaginable shade of pink. This year, as part of their Floralia festival, also look out for stunning floral arrangements, Roman symbols of fertility and stories of Flora in the temples. There are free tours every Tuesday and Thursday afternoon in May and June. Spaces are limited. Another part of the Floralia festival offers visitors the chance to make a spring wreath in a workshop led by professional florist Sarah Pettigrew. WHAT IS GOVERNMENT POLICY ON ELDERLY CARE REFORM? We asked ANDREW DOUGLAS, a partner at Awdry Bailey Douglas Solicitors who specialises in elderly care, for his views on this issue...

BLACKADDER TO LEAVE Bath’s Director of Rugby TODD BLACKADDER has been released a year early from his contract in order to take up a head coaching role in Japan.

odd Blackadder has announced that he will leave Bath Rugby at the end of the season. The Director of Rugby has been granted early release from his one-year contract extension in order to allow him to join Toshiba in Japan as Head Coach. “It’s been an honour and a privilege to lead the Blue, Black and White for the past three years and I’m incredibly proud of what we have achieved. It might not be silverware but together we have built strong foundations and I leave knowing that the best is absolutely yet to come.” “Bath is a very special club. I

am, unfortunately, writing this sat in my office, I say unfortunately because it is beautiful outside. Lovely and warm, although not too warm because, as regular readers will know, I have what can only be described as a ‘northern European’ complexion. This means I only have to think about going out in the sun and I start to get a pink tinge around my edges like Chinese roast pork!! If I decide to actually venture outside then I generally need a full body Hazmat suit for protection which then becomes a bit uncomfortable so I end up going back indoors anyway. Springtime though is usually okay, the sun is not too hot and it’s great to get out in the fresh air and the green after months of indoors and grey (apparently, though as you know dear readers, I love winter!)
