LACKHAM LAMBING WEEKENDS: COMING SOON!

Preparations are well underway at Wiltshire College & University Centre’s Lackham campus for lambing – one of the highlights in the spring calendar!

This year’s Lambing Weekends take place on 23 and 24 and 30 and 31 March, where visitors can enjoy a great day out seeing newborn lambs, sheep pigs, goats, donkeys and feeding the deer. You can also take the opportunity to meet some smaller animals including rabbits, guinea pigs and goats.

There is also a chance to meet Hereford cows and calves and see the dairy cows being milked – the milk from which goes to Cadbury!

Those visiting Lackham can enjoy free tractor and trailer rides between the farms, and there is a variety of entertainment for children, a mini farmer’s market selling Lackham meat and eggs, refreshments and stalls selling a variety of produce and gifts. Throughout the lambing period

agricultural students work on rotas day and night ensuring the safe arrival of the lambs. Students from other curriculum areas also support the event, including running the tea shop. Tickets bought in advance from the online shop cost £6 per adult (over the age of 16), £4 per child aged over four and £20 per car. AVON VALE RACES

The much loved annual Avon Vale Races take place this year on Saturday 30 March.

T

he horse sits foursquare at the centre of Wiltshire country life and the county's sporting and social scene. Several thousand horses are trained for racing and eventing within the county boundary, ranging from top trainers Alan King at Barbury, Neil Mulholland outside Bath, and eventer Mark Todd near Marlborough. It's no coincidence then that the county has white horses etched into the chalk downland from Westbury to Swindon. Horse sports dominate in a way our ball sport teams have not been able to. Spring is a time when jump racing takes centre stage at every level. The big festivals at Cheltenham and Aintree rely on a strong grass roots interest from country folk who love their racing. And there's nowhere that typifies the unbridled enthusiasm and optimism of racing folk better than the annual Avon Vale Races at Larkhill, scheduled this year for Saturday 30 March.

HOPE NATURE CENTRE FUN DAY

H

ope Nature Centre at Southwick, near Trowbridge has received a Masonic grant to refurbish its kitchen and café. Works began in January and are expected to take around 4 weeks. The Animal Park remains open and

guests can enjoy a limited menu and refreshments from their mobile food wagon on site. The new kitchen and café will enable a larger working environment for the centre’s trainees who will be able to

gain more skills from working in the redesigned kitchen and serving area. This will enable the centre to support more adults with learning difficulties to access work opportunities. The centre is holding a re-opening fun day at Hope Nature Centre on Saturday 16 February from 11am to 3pm so the community can join the team and celebrate the newly refurbished kitchen and café. There will be face painting, glitter tattoos, Tropical Discovery workshops, an Active Trowbridge sports roadshow, hot food and refreshments and plenty of fun for all the family. • hopenaturecentre.org.uk

unny old weather! As I write we are just finishing an unusually mild spell for the first two weeks of the year. Two weeks of the year with even some carrot seed sown for May harvest, obviously subject to weather between now and then! The next few weeks are completely unpredictable with everything including snow being thrown at us. By the time you read this you may well be having a ‘snow day’. At Lovejoys we don’t get them; we try to get to all of our customers (unless they’re not desperate) and usually manage to do so in our 4-wheeled drive vehicles. You might think village pubs would be quiet when it has snowed heavily, but actually they are really busy with families coming in to warm up from sledging and snowman-making! March will soon be here though, the days will seem longer and we can look forward to the summer. The mild weather has enabled the purple sprouting to continue growing and we have just received the first deliveries of Yorkshire rhubarb. The season is January through to March. It was used as a medicine in ancient China and was

Feel the Heat Warm up this winter with some fantastically spiced dishes. Recipes courtesy of Waitrose.

Yellow Thai curry with prawns

Serves 2 Ingredients ½ x 385g pack butternut squash slices ½ tbsp sunflower oil 1 pack Cooks’ Ingredients Yellow Thai Curry Recipe Kit (yellow curry paste, coconut milk, baby corn and spices) 150g pack pre-cooked king prawns 100g green beans, trimmed and cut into 4cm pieces 1 tbsp light brown soft sugar 1 tsp fish sauce Small handful coriander, roughly chopped 1 lime, cut into wedges

Method Preheat the oven to 220˚C. Arrange the squash in a parchment-lined roasting tin, drizzle with oil and roast for 25 minutes, turning halfway through. Meanwhile, from the recipe kit, empty the container of coconut milk into a large saucepan, add 140ml water and the dried chilli, lemongrass and lime leaf. Simmer for 2 minutes; stir in the curry paste and the drained pack of baby corn. Stir in the prawns, green beans, sugar

and fish sauce. Check the seasoning, adding more fish sauce if liked, and simmer for 4 minutes. Take off the heat, then stir in the roasted squash and scatter with the coriander. Serve with lime wedges and, if you like, some jasmine rice. Cook’s tip Yellow curry is medium-spiced and traditionally considered to be in between a red (hot) and green (mild) Thai curry. Ground turmeric gives it its colour. THEWESTWILTSMAGAZINE

Cumin & lemon chicken with spiced rice keralan fish curry Serves 4

Ingredients 700g haddock fillets, skinned and cubed 2 tsp ground turmeric Vegetable oil spray 2 onions, thinly sliced 1 tsp cumin or black mustard seeds (or ½ tsp of each) 400ml can half fat coconut milk 1 tbsp tamarind paste 5cm piece fresh ginger, shredded 225g trimmed mangetout, halved lengthways 2 salad onions, thinly sliced 2 red chillies, seeded and thinly sliced Method Sprinkle the fish with the turmeric and set aside.

Ingredients 400g chicken mini breast fillets 1 tbsp sunflower oil 1½ tsp ground cumin 2 garlic cloves, crushed 1 lemon, zest and juice ½ x 375g pack Tilda Basmati & Wild Rice 1 large onion, finely sliced 15g unsalted butter 1 leek, halved and sliced 2 carrots, grated 1 tsp ground cinnamon 50g dried cranberries 25g pack flat leaf parsley, roughly chopped 4 tbsp natural yogurt Method Preheat the grill to high. Toss the chicken in a bowl with ½ tbsp oil, ½ tsp cumin, the garlic and the juice of ½ lemon; season and set aside. Put the rice in a large saucepan and cover with

plenty of cold water. Bring to the boil, then simmer for 20 minutes; drain. Meanwhile, heat the remaining ½ tbsp oil in a large frying pan over a medium-high heat. Add the onion and a pinch of salt; fry for 10 minutes, stirring, until just golden. Add the butter, leek and carrots and fry for another 3-4 minutes. Stir in the remaining 1 tsp cumin, the cinnamon and cranberries; fry for another 2-3 minutes. Stir through the drained rice and the remaining juice of ½ lemon; check the seasoning.

Add the fish and mangetout to the pan, cover and simmer gently for 3–4 minutes until the fish is cooked. Scatter with sliced salad onions and chillies and serve with brown basmati rice.

Arrange the chicken fillets in a foillined shallow baking tray and grill for 5-6 minutes on each side, until the juices run clear and there is no pink meat. Toss the parsley through the rice, then stir most of the lemon zest through the yogurt, with the remainder sprinkled on top. Serve the chicken with the rice and the lemon yogurt alongside.

Serves 4

Spray a large pan with oil and cook the onions with the seeds for 5–10 minutes until golden. Add the coconut milk, tamarind paste and shredded ginger and bring to a simmer.

orto airport is a short way from the city centre. Uber operates here and the fare is about 16€. Our base was the beautiful Infante Sagres, a hotel with all the mod cons you could need and oodles of historic charm. It’s also an integral part of Porto’s history and worth a visit even if you aren’t a resident.

The medieval old town of Porto is compact, making it perfect for exploring on foot. The Bolhão market, Lello bookshop, Praça da Liberdade and Rua das Flores are all within 5 minutes walk from the hotel. For lunch try one of Porto’s signature dishes, the Francesinha. Francesinha means little French woman or simply ‘frenchie' in Portuguese. It is so named, legend has it, because Portuguese migrants to France tasted the Croque Monsieur and decided to make it bigger and tastier, with the addition of roasted beef, linguiça (a Portuguese sausage), wet-cured ham and topped with a piquant sauce made from tomato and beer. It may look heart-attack inducing (and it probably is), but it’s a must have in the city. The best places to grab them are the informal cafés. Top picks include O Golfinho and Café Santiago F. Work off that cheesy goodness with a walk to The Jardins do Palácio de Cristal. They offer some perfect views of the Douro, framed by agapanthus and offering welcome dappled shade. The park is extensive and easy to traverse, with lots of interesting levels. On the walk back to the hotel, look out for the beautiful Capela das Almas, a tile-clad 18th century building featuring the classic azulejo blue and white tiles Porto is famed for.

place to rest awhile. Before venturing out again, freshen up and head downstairs for a slice of sophistication at the Vogue Café - it's a great place to sip on a cocktail and watch the beautiful people drift by. Dinner makes the most of the great produce and no one does it better than Taberna do Largo, serving up the most delicious boards of local charcuterie and cheeses, artisanal breads and salty bacalhau cod. These are washed down beautifully with glasses of local red from the Douro Valley, followed by digestifs of aged white port, served cold. A bellybusting dinner for two with drinks won’t set you back more than 40€. You can then waddle back to the hotel, grabbing a sweet crêpe or ice cream from one of the many vendors if the sweet tooth takes you. Make the most of the decadent breakfast at the hotel - it is served in a beautiful restored ballroom and you’ll need all the energy for a busy day ahead.

Porto offers unparalleled river views. Make for the Dom Luís I Bridge for Back at the hotel enjoy a dip in the some of those beautiful postcard plunge pool - very few city hotels in views. On the north bank you’ll find Porto have pools and with its views a pretty bricolage of houses and over the historic centre, it’s the perfect restaurants and on the south you can

visit the port wine cellars that make the city famous. Graham’s, Taylor’s and Cockburn’s are all here, but if you only have time to visit one, make it Caves Ferreira. It is the only big house of Port Wine that has remained in Portuguese hands since its foundation in 1751. Eat at one of the many lovely restaurants that line the river - most will be serving up the freshest fish and guzzle it down with a glass of vino verde. Take a ten minute taxi from Infante Sagres to the train station and board the train to Lisbon. The journey is a gentle three hours and is very easy no changes and allocated seats.

rrive in Lisbon and get a taxi over to the hotel about 20 minutes. On the journey you’ll be driven past some of the major sights like the Praça do Comercio - use it to help you get your bearings and remember, when in doubt, you can follow the coastline! A perfect base for Lisbon is the Olissippo Lapa Palace Hotel - a five star sanctuary overlooking the Tagus River. When you think city break, it’s rare that you think of relaxation, but the Lapa Palace is an oasis away from the hustle and bustle. Tucked

Ease into the day with a visit to Lisbon Oceanarium - unknown to many, this is actually Europe’s largest indoor aquarium. Located in Parque das Nações, it is yet another beautiful building in this unique part of the city, and is home to a large number of marine species form across the world. Take the train there to the Estação do Oriente to save time as it’s a fair way out. If an aquatic adventure isn’t your thing Lisbon is home to some wonderful art collections - the Calouste Gulbenkian Museum blends amazing collections of ancient and contemporary art whilst The National Museum of Ancient Art holds the most valuable art collection in Portugal. Wind your way back towards the centre and visit Praça do Comercio and take the its immense scale. It was once home to the Royal Ribeira Palace until it was destroyed by the great 1755 Lisbon earthquake. From there, head west for ten minutes until you reach food heaven… Lisbon is a great city for foodies and the Time Out Market blends classic Lisboet restaurants with Michelin contenders. Vendors can stay in the market for anywhere between

one week and three years - all on an invitation only basis. Inside you’ll find 24 restaurants, 8 bars, a dozen shops and a high-end music venue, all offering the reported best - best burger, best steak, best croquette etc. The key is to go hungry and spend a few hours here - don’t dive in head first, but instead sample some smaller dishes across the board and soak up the convivial atmosphere. After a filling lunch, you can opt to hop on the train for a couple of euros or make the 1 hour walk along the coast to the trendy Belém. On your must-see list is the Padrão dos Descobrimentos, an imposing monument to celebrate the Portuguese Age of Discovery, the breathtaking 16th-century Jerónimos Monastery, the Belém Tower and the 25 de Abril Bridge - a rival to San Francisco’s Golden Gate. No trip to the city would be complete without a pilgrimage to Lisbon’s most famous bakery. Pastéis de Belém serve up the classic Portguese Pastel de Nata - those unctuous and delicately sweet custard tarts - by the thousands every day. Stop in for a coffee and a Nata at a table - the queue for the takeout option always tends to be longer. It’s worth the wait. And definitely grab a couple to go - you can nibble them on the aeroplane! Hop in a taxi back to the hotel to save your legs and make the most of the hotel’s beautiful gardens. Lapa Palace really is an oasis and such a large pool in such a central hotel really is a boon. If you’re feeling really indulgent, you could opt for a massage in the hotel’s dedicated spa - be quick though, you’ve got a plane to catch! After a quick dunk, there’s just time to sample some tasty dishes from the many restaurants neighbouring the hotel. Only a three minute walk away

is the charming and very local Marias de Vinho Tinto. Get there in good time and make a reservation if you can - this place is popular with locals and tourists alike. It’s known for its seafood, but you can also enjoy some classic Portguese dishes. All that's left after dinner is to grab your bags and head to the airport your evening flight back.

ith so many us battling with the stresses of modern living, it’s no wonder that mindfulness has become a hot topic over the last few years. If you haven’t heard of the well-being trend, which has actually been around since the 1960s, it is the practice of focusing on what we’re doing, thinking and feeling, and giving our minds a much needed break from everyday anxieties. The photographic community have made many connections between the act of taking photographs and this meditative technique, exploring how photography helps to increase awareness of one’s surroundings, appreciate beauty in the mundane and view the world from a different perspective. If you have an interest in well-being, but perhaps find the idea of meditating a little too New Age, the photography and mindfulness combo (aptly named ‘mindful photography’) could be a great activity to take up in 2019.

This year’s Bath Rugby Walk - raising funds for the Bath Rugby Foundation and Dorothy House Hospice Care - takes place on Saturday 23 February.

oin the Bath Rugby Walk (formerly the Bath Men’s Walk) on Saturday 23 February for a pie, a pint and top Six Nations action at the Bath Recreation Ground, the home of Bath Rugby. This year the Bath Rugby Walk is open to everyone for the first time so men, women, husbands, wives, daughters, sons, friends, loved ones and rugby teams are all welcome! Men and women aged 12 years and over are invited to take part and help raise vital funds for the Bath Rugby Foundation and Dorothy House Hospice Care.

Entry for the eight mile walk is £29.95 for walkers (aged 12+). THE ICEMAN COMETH...

ver the years I have come to know something about myself which apparently is a little bit different from most people…I am not a big fan of summer, or spring for that matter. I much prefer autumn and, especially, winter. I know we are supposed to look forward to longer, lighter, warmer days but I really like shorter, darker, colder ones. I’m fairly certain I suffer from Seasonal Affective Disorder (SAD) but in reverse. Pretty much everything about the autumn and winter is preferable to me. I hate being too hot and find it really uncomfortable sleeping. At least if it’s freezing outside you can get extra covers or turn to your significant other for a cuddle so you can stay nice and snuggly warm! I absolutely dread having to put sun-cream on and, because I am of Irish stock and my skin tone is basically a shade of blue, I have to slap so much on I feel like

Consequently, I have developed something of a reputation among the parents in the school playground for my hardiness; I am often to be seen rocking up to school pick up in temperatures of -1°C in just a t-shirt (nb I do also have jeans on as well!) We are lucky in the developed world that we have central heating in our houses and, as far as I can gather, it was invented so we could centrally heat a house. So, let’s put the heating on and heat the house…that’s what it’s there for! I was going to put the last bit in capitals so it looked a bit like I was shouting but then I realized my wife will be reading this and because of my total lack of technical knowledge I should qualify my love of autumn/ she controls the heating and she winter though by saying I really don’t might turn it down even more just like the grey, nothing sort of weather. to get even!
