We took some time to check in with Steve Peck, J.Lohr’s Director of Winemaking, to hear his take on everything from current trends in winemaking, to best food and wine pairings, top tunes in the cellar and J. Lohr’s sustainability efforts. Q: How did you get started in wine? What drew you into winemaking? I was inspired by my uncle, Bill Peck. He was a social studies teacher that intoxicated those around him with his love of life and his wide range of passions that included not just food and wine, but also collecting and trading marbles, pocketknives, comic books and so much more. He and his fellow schoolteachers gathered to produce home wines in the Garigiste tradition for decades and I was a welcome addition to the clan as a young 17-year-old who could be relied upon for manual labor.

Q: Harvest – can you give us an insider’s glimpse, what’s the hardest part about harvest every year? I have a hard time turning my brain off during harvest. It is all consuming and can keep you up at night as you focus all your energy on making the perfect picking decision and setting the stage for the perfect fermentation adapted to the uniqueness of the vintage. Fortunately, my birthday is in late September, and I take a bit of a break for celebration with family and friends for at least that one weekend. Q. What tunes are playing in the cellar during harvest? The college kids in the lab love Dua Lipa and that pop genre, while some of the Spanish speakers in the barrel room actually provide their own music and you can hear them singing as they fill and top barrels. The stacks of thousands of barrels make for great acoustics.

Q: How would you describe your winemaking style and philosophy? My best results have come from matching the winemaking style to the native potential of each vineyard and variety that we farm. That might mean saignee and a hot fermentation to produce a dense and dark mountain grown cabernet or perhaps cold soak and stem-inclusion for a lighter syrah grown on heavy clay soil. It rarely works to force a vineyard block into the pre-meditated wine style.

Q: Best advice you’ve ever received? Jerry Lohr helped me see that our winery thrives when everyone involved at every step benefits from our collective effort. The tractor driver who cultivates the vineyard can raise a family, similarly for the barrel room crew, the bottling line, tasting room staff, our sales team, distributors and especially our restaurant accounts, retailers, and consumers. If we do it right, we create a continuum of benefit and satisfaction.

Q: Who do you admire most in the world of wine? Who has inspired you? Here locally, Jason Haas from Tablas Creek has done a great job providing leadership in the sustainability space and telegraphing to the market that there is room for change in farming practices, winemaking and even packaging to adapt to climate change. And, their wines are great! Q: Favourite wine regions, grape varieties? I never get tired of Mediterranean island wines. Vermentino from Sardinia, Picpoul from Corsica, Nero D’Avola from Sicily. On the Spanish mainland the Jumilla region produces Monastrell that has a similar character to what we produce here in Paso Robles.

Q: Biggest myths surrounding wine today? It defies logic that the consumer has been trained to accept brand name over wine appellation as the primary driver for making a purchase decision in recent years. The unique, coastal appellations in California will always have higher quality in the bottle than wines from statewide sourcing graced by a photo of a celebrity or some other hook on the label that makes a connection. Q: Best part about your job as a winemaker? Meeting people that share stories of how our wines have brought joy to their homes and their lives.

Q: What is your favourite food and wine pairing? I love our Flume Crossing Sauvignon Blanc with briny oysters on the half shell. Q: What is the role of sustainability in winemaking today? We are trying to make sustainability the norm for all wineries in California. Advocating for permanent cover crops, solar powered facilities, measuring vine water stress prior to applying water to a vineyard. We have demonstrated that all of these steps can be adopted with a little effort. Q: “Desert Island” wine? Seven Oaks Cabernet for sure. Q: Top tips for those interested in learning more about wine? #sharethelohr. Q. Which J. Lohr wine do you personally open most on a regular basis? October Night Chardonnay. My wife and I both love this wine. Q: J. Lohr has been a huge ambassador for California’s Central Coast, what can you tell us about the Monterey and Paso Robles wines in the current portfolio? The 2021 vintage was stellar. Arguably the best in my career alongside 1997, 2007 and 2013. The whites are already in the market and are making a big splash. The red wines will be released soon and I expect the critics to fall in love. Q: What are the biggest challenges facing winemakers today? Climate change is happening, and strategies are underway to adapt including the expansion of our solar power initiative started at the winery in 2008 to include more of our power usage for farming activities each year. Q: J. Lohr recently won the Green Medal Sustainable Winegrowing Leadership Award. What initiatives are you using in the vineyard, cellar and beyond to continue to build a sustainable future? Top of the list is soil conservation through cover crops, the use of solar power in our vineyards and wineries, introduction of lighter weight glass bottles, water conservation at the winery and vineyard as well as providing sustainable wages and benefits to our employees and making positive contributions to the communities where we live and work.

Q: What do you think is next on the horizon for the future of winemaking? I think the perception of lightweight glass will change, especially for expensive, luxury wines where the trend has been to select super heavy glass to communicate a luxury feel.

“The 2019 Carol’s Vineyard Cabernet Sauvignon displays pleasing aromas of black cherry, cassis, and raspberry elevated by powdered dark chocolate and sweet spice from the French oak barrels. The palate is concentrated and pure with focused, refined tannins owing to the inclusion of Petit Verdot. Tuscany is the heartbeat of Italy, centrally located and capturing scenic seaports, sun-drenched hillsides bursting with vineyards, olive groves and medieval monuments. Well-known for being the birthplace of the Renaissance, Tuscany’s creative and enlightened spirit applied to the region’s iconic wine scene has made it one of Italy’s most significant and celebrated wine producing regions. While Tuscany’s classic symbols remain the vine, Cyprus trees and olive groves, it’s been the region’s historic wine scene that has propelled Tuscany to the world stage. Tuscany’s Mediterranean climate with dry, hot summers and mild winters are key contributors to the region’s ongoing viticultural success.

Historic Tuscany As with most of Italy’s wine regions, Tuscany enjoys a long and storied history that can be easily traced back to at least the 7th century BC, thanks to pieces of amphora remnants, serving as valuable evidence from archaeological digs. These ancient Etruscans were the first to grow trellised vines in Tuscany before being taken over by the Romans. It’s no secret that wine was a key component of daily life throughout the Roman Empire during the Middle Ages, with Florence housing numerous wine merchants by the 12th century. The advent of the 13th and 14th centuries brought forth iconic producers of today’s fame who began planting and populating the Tuscan hillsides with vineyards, perhaps the most famous persisting family names being Frescobaldi and Antinori. However, it wasn’t until the early 1700s that the first recorded DOC was established for the production area of Chianti by the Grand Duke of Tuscany. Given its incredible history, varied terroir, and stunning beauty, Tuscany has been at the forefront of Italian viticulture for centuries and today is the prestigious home to Sangiovese, Chianti’s most notable grape, which accounts for over 80% of the red wine production and two thirds of the region’s plantings. But the press doesn’t stop there, ‘Super Tuscans’ have emerged to showcase Sangiovese alongside notable international varieties with incredible success.

Tuscany Today Situated in central Italy, spanning from the Tyrrhenian coast to the foot of the Apennine Mountain Range, Tuscany stretches along the Mediterranean Sea with deep pockets of inland hillsides, some reaching over 2,000 feet, bringing significant day to night temperature swings. As a region, the sheer diversity of soils, elevations, climate conditions and topography deliver remarkable opportunity for Tuscan viticulture. The gems of Florence, Siena and lesser-populated Pisa dot her regional countenance and serve as willing purveyors of her local wines. As one of the world’s most famous winegrowing regions coveted for dry red wines built on Sangiovese grapes, Tuscany’s superstars include Chianti, Brunello di Montalcino and Vino Nobile de Montepulciano. What sets Tuscan Sangiovese apart is its vibrant acidity, malleable tannins, midrange alcohol levels and intense affinity for oak. The resulting wines can range from easy-going, food-friendly Chianti that’s perfect for pizza and burgers, to complex, age worthy bottles of Brunello de Montalcino that need years to unfold. Organic and biodynamic vineyard practices are definitely on trend in Tuscany with ongoing sustainability measures prioritized in the vineyards, cellars and tasting rooms. In tandem with sustainability, a keen focus on promoting native grapes and terroir-driven wines continues to spark the interest of Tuscan winemakers and vineyard managers alike.

Navigating Tuscany’s Wine Scene Tuscany’s wine classification system is not for the faint of heart, but a 30,0000 ft view reveals the nuts and bolts of the system. The top tier wines are labeled under 41 DOC and 11 DOCG designations, with the everflexible, sometimes catchall IGT status covering almost a quarter of the total production. Keep in mind that Tuscany is Italy’s fifth largest wine producing region and ranks #3 in total DOC and DOCG appellation

designations. Overall, Tuscany has 58 different appellations with three tiers of quality designations: DOC, DOCG, IGT. Denominazione di Origine Controllata (DOC) – Established in 1963 and a classification that indicates a superior quality wine in Italy. DOC wines must maintain at least 70% Sangiovese. Currently, Tuscany boasts 41 DOCS.

Florence

Denominazione di Origne Controllata e Grantita (DOCG) – Established in 1980, the DOCG designation is Italy’s crème de la crème and guarantees the high quality, authenticity, and rigid requirements of the wine through lab testing and panel tasting. DOCG wines must contain at least 80% Sangiovese, a minimum of 12% alcohol, and may not be released until a year after harvest. There are 11 DOCG appellations in Tuscany. Indicazione Geografica Tipica (IGT) – Established in 1992, this designation quantifies a level of quality and regional character from a specific geographic area. The IGT requirements are less strict than DOC or DOCG. Currently, Tuscany has 6 IGT regions. Tuscany’s “SuperTuscan” wines are technically classified as IGT, mainly because they don’t typically carry high percentages of Sangiovese in the blend since they may be made from a variety of international grapes. Regional “SuperTuscans” lean heavily on Cabernet Sauvignon, Merlot, Cabernet Franc, and Syrah sometimes alongside Sangiovese to make the most notable blends. In the late 1960s, rogue winemakers began making wines outside of the Chianti DOC guidelines using many Bordeaux varieties. These wines were eventually dubbed “Super Tuscans” because they were high quality wines that fell outside of the Chianti’s strict standards of 70% Sangiovese. Today, they represent some of Tuscany’s most widely recognized labels: Sassicaia – Tenuta San Guido’s Cabernet SauvignonCabernet-Franc blend, Tignanello – Antinori’s Sangiovese-Cabernet Sauvignon blend, and Ornellaia’s flagship wine leans heavily on a classic Bordeaux blend built on Cabernet Sauvignon, Merlot, Cabernet Franc, and Petit Verdot. Tuscany is a hilly winegrowing region with the best vines thriving in the Chianti zone’s hillside vineyards between Siena and Florence and expanding out to include the famed Montalcino and Montepulciano growing regions. Tuscan soils are incredibly varied with clay and limestone soils near the foothills and understandably more sand and gravel towards the coastline. This heady mix of soils lends itself to incredibly expressive terroir in the wines themselves.

The Key Winegrowing Regions of Tuscany Chianti – Chianti is Tuscany’s largest winegrowing region and carries seven subzones: Colli Aretine, Colli Firoentini, Colle Senesi, Colline Pisane, Chianti Montalbano, Chianti Montespertoli, Chianti Rufina. Chianti Classico DOCG is a separate appellation with elevated standards. Chianti is confusing. So, the Chianti Classico Consortium has attempted to clarify quality designation with a newer category: Chianti Classico Gran Selezione (“Grand Selection”), meant to indicate the top tier wines from estate-grown grapes and extended aging requirements. In general, Chianti Classico is typically a step up in price and quality from Chianti, using grapes from hillsides of the better growing regions with a bit more body, concentration, and intensity. Chianti Riserva wines are also from the Chianti Classico region and have a minimum of 2 years of oak aging, bringing spicy nuances with more concentration and complexity. Montalcino – This growing region is just south of Chianti and is most famous for Brunello di Montalcino DOCG wines, which are one of the most powerful expressions of 100% Sangiovese requiring a minimum of four years of aging prior to release.

Sangiovese Nearly two-thirds of Tuscany’s vineyards are planted with Sangiovese. Q: What are your opening hours & busiest day? Opening hours are 11:30 am to 7:00 pm Tuesday to Saturday with a seating compacity of 70 people. Saturday is the busiest day as most people are not working and they often come with family and friends making it an all day affair to enjoy the food, drinks and the ambiance. Q: What have you learned so far as a restaurant owner that has been most impactful? What I’ve learned that was most impactful was teamwork, delegating and trusting more of my team members that has now increased to 10 persons and listening to have a better solution to the many obstacles that I have encountered so far. Q: What has been your proudest moment as a restaurant owner? My proudest moment as a restaurant owner is seeing the satisfied faces and empty plates of the customers after they have completed their meals and the overwhelming request I have received to provide catering services for private events. Now at age 26, Alexander can boast of 13 years in Hospitality having studied for an associate degree in culinary arts at The Barbados Community College, during which time he was employed at the Pommarine Catering Division. He took his education further by completing a BA in Hotel Management which required him to

Both my parents were born into winemaker families here in the Mosel region. My mother in the Saar valley and my father here in Leiwen near the Mosel river and I consider myself as a true son of the Mosel. Therefore, I am delighted to share what makes German Riesling, particularly Mosel Riesling, truly extraordinary. The Mosel Valley is a unique and remarkable place, known for producing some of the world’s finest Riesling wines. The combination of our region’s terroir, the interaction of climate and soil, and the classification system all contribute to the exceptional nature of Mosel Riesling. First and foremost, the terroir of the Mosel Valley plays a pivotal role in crafting exceptional Riesling wines. The steep slopes that characterize our vineyards are vital to the quality and distinctiveness of the grapes we grow. These slopes provide optimal sun exposure, allowing the Riesling grapes to ripen slowly, develop complex flavours, and maintain their vibrant acidity. The slate soils, with their unique mineral composition,

add a characteristic flinty and mineral-driven quality to our wines, enhancing their complexity and depth. One of the most remarkable aspects of Mosel Riesling is its ability to showcase a wide range of sweetness levels from very dry to very sweet while maintaining a perfect balance of acidity. The Trocken (dry) style offers a crisp and refreshing experience, with little to no residual sugar. For those seeking a touch of sweetness, the Halbtrocken/Feinherb (offdry) category provides a harmonious blend of sweetness and acidity. Sweet German Rieslings are classified in the Prädikate System according to their ripeness at the time of harvest. Understanding the sweetness levels helps winelovers choose Rieslings that suit their personal preferences. Kabinett wines offer delicate fruitiness and a touch more sweetness, while the Spätlese category delivers richness and complexity. As we progress to Auslese, Beerenauslese, and Trockenbeerenauslese, the wines become progressively sweeter and more concentrated, reflecting the exceptional ripeness of the grapes. An Easy Intro to the Prädikat System:

Spätlese: These wines can be dry to sweet. Drier Spätlese wines pair well with savoury foods while the sweeter Spätlese are excellent with spicy dishes. Auslese: Auslese shows the greatest range of Riesling style and is also the highest Prädikat category that can be made as a dry wine. Auslese wines can also be dry to sweet and are made from very ripe hand-picked clusters. Drier Auslese wines are generally better with food. Sweeter Auslese wines exhibit a richness, concentration and complexity often better savoured on their own. Beerenauslese: Rich, dessert-style wines crafted from individually selected berries (Beeren) usually affected by botrytis. These are concentrated wines with deep colour. At this level and above the wines must be distinctively sweet, dessert style. Trockenbeerenauslese: These dessert wines are made from grapes left on the vine very late into the season, harvested and pressed when frozen. They are some of the most rare and most expensive wines in the world. Very rich and sweet.

It’s not uncommon to hear winemakers, wine sommeliers and sales teams wax eloquent about “high elevation wines” – where the fruit is sourced from vineyards boasting increased altitude and elevation. But what real difference does altitude make in a wine? Why have “high altitude vineyards” become a key talking point in recent years? Let’s explore.

Got Altitude? Vineyard elevations are just one piece of the viticultural puzzle and it plays out differently in different climates and landscapes. Make no mistake, altitude is a key consideration in site selection and it impacts a wine’s style in dramatic ways. From increased levels of ripeness and acidity, to freshness and flavour development, it’s no secret that grapes grown at elevation tend to have a greater concentration of phenolics and structure. But why?

Elevation delivers Intense sunlight - which influences both temperature and concentrated sunshine on the growing grapes, helping grapes to reach full ripeness before harvest. In fact, for every 1,000 ft of elevation gain, the level of UV rays increase by 10%, happily encouraging the grapes to develop thicker skins which in turn increases both the colour concentration and tannin profile in the final wine. Increased ventilation: more air movement in the vineyards helps decrease disease and fungal pressure on the vines along with cooling grapes from excessive sun exposure. Improved soil drainage: it’s harder to hold water on a slope and it forces the vines’ roots to dig deep for water and nutrients. Significant diurnal shifts: increased elevation often goes hand in hand with dramatic differences between daytime and nighttime temperatures, which forces grapes to conserve their acidity, producing wines with freshness, elegance and increased aging potential.

“High Elevation” Defined There’s a bit of debate on what exactly defines a “high elevation wine.” Is it just a rise in a vineyard profile? Must there be a steep slope? Or is it just a matter of math – a specific number set arbitrarily above sea level strategically determines wines of altitude? Well the EU has helpfully taken a stab at it, and the European Centre for Research, Environmental Sustainability and Advancement (CERVIM) has decided that 1,640 ft (500m) and above sea level defines a high elevation vineyard. Naturally, in Europe 500m seems high, especially given that esteemed Bordeaux estates like Château Mouton Rothschild in the Médoc can max out at 100 ft (30m). While the Mosel’s Peter Lauer estate vineyards in the Saar Valley tops out at around 1,200 ft (370m). However, in Argentina’s Mendoza region, most vineyards are planted between 1,960-3,600 ft (600-1100m), and the highest vineyard in the world is biodynamically farmed Bodega Colome’s Altura Maxima vineyard preening over Argentina’s Calchaqui Valley at a stunning elevation of 10,200 ft - welcoming extreme altitude and intense sun to showcase one of the most robust Malbec’s on the planet. So, depending on the place, elevation can be construed as somewhat relative, and dependent on the estate’s determination of elevation variation within their own vineyard profile. To simplify, typically winemakers agree that when a vineyard’s elevated altitude affect the wine’s phenolic profile in significant ways, the wine is considered “high elevation.”

Altitude and Vineyard Variation The direct effects of altitude in a vineyard are significant but they work in tandem with other topographical influences such as landscape, aspect, and latitude. While the diurnal temperature swings increase significantly as elevation increases, this same factor has allowed warmer growing regions to accommodate vines that were previously labelled “too hot” for growing healthy vineyards. Locations in Spain, Portugal, and parts of Greece are all key examples of hot growing regions producing top notch fruit thanks to the cooling effects of altitude and elevation on vineyard sites.

Vintage Matters By Stacy Slinkard

A wine’s vintage is simply the calendar year that the grapes were grown and harvested. Neatly tagged on bottle labels, the vintage year represents one clue, among many, as to what is going on inside of a bottle. Think of a wine’s vintage year as its birth year, and while we may associate certain events from a given year personally, producers tend to recall tricky weather patterns from a demanding year first and foremost. A wine’s vintage is a collective mirror of the weather patterns, vineyard management and state of the vine in each growing season, with climate conditions typically playing the biggest role in determining what kind of crop rolls through the cellar doors at harvest.

Location, Location, Location - Where Geography and Climate Collides If vintage reflects a region’s weather patterns in a given year, then what makes a vintage good or bad? It typically comes down to sunshine. Similar to “good” or “bad” vacation weather, the best vintages have plenty of dry, warm, sunny days with cooler, sweater-themed evenings. It’s these sunny, happy weather days that give grapes the best chance of reaching full maturity and optimum ripeness levels. These cheery growing seasons carrying warm sunny days and crisp cool nights are the vintage years that typically garner the best ratings. If a region is bogged down by constant clouds and rain in a growing season, then the grapes are less likely to fully ripen, may be more prone to rot and disease, and tend to deliver lower quality with skewed sugar and acidity levels if soggy conditions persist through harvest. These are the years where winemakers must work their magic in the cellar to keep the final wines intact. Keep in mind, certain grape varieties crave specific climates. Riesling prefers the cooler climes of Germany’s more northerly latitudes where acidity levels remain quite high. While, Cabernet Sauvignon’s roots dig deep in sunny, warm soils, and these thick-skinned grapes tend to thrive in California’s long, historically warm growing season.

Goldilocks and the Three Grapes Under ripe grapes: Typically coming from cooler climates, these under ripened grapes lean towards lighter styles of wine and vinify into lower levels of alcohol while carrying less pronounced fruit character. Over ripe grapes: It’s possible that a vine may suffer from too much sun, too much heat and the dire result is a cluster of grapes that become raisined in color, character and taste. Excessive summer heat can stunt growth and development significantly reducing quality levels and yields Well-ripened, mature grapes: These grapes are perfectly poised to produce wines that show balance in terms of sugar, acid, tannins and carry their fruit and aromatic character particularly well.

When Vintage Matters Most 1. Crazy Climates: Vintage matters most in winegrowing regions with the least consistent weather patterns. In general, many of Europe’s more northerly winegrowing regions (France, Germany, Austria, Northern Italy, Northwest Spain) are subject to more meteorology madness than the New World’s sun-drenched surroundings. From late spring frost, where entire vineyards can be taken out before bud break begins to severe hail knocking buds off the vine before they have a chance to set fruit, to excessive rainfall near harvest, which dilutes innate sugar and acidity levels, wicked weather can quickly take its toll on the vine. Ironically, France the iconic birthplace of modern wine is home to some of the least predictable runs of weather. Bordeaux, located 30 miles southeast from the harried Atlantic coastline, is notorious for battling all sorts of weather-induced mayhem, especially as the fall harvest draws near. Likewise, Burgundy’s bud break is often the target of regional spring hailstorms that wipe out flowers before the fruit ever has a chance to set.

2. Collecting Wine: Vintage matters most when collectors are buying wine to age. The best vintages create wines that carry high levels of tannin and acidity, both are must-have preservatives when considering the age-worthiness of a wine. That’s why high-end reds from Bordeaux, Burgundy, Tuscany, Piedmont, Rioja, the Douro and New World regions like California, Washington, Australia, Argentina and Chile from the best vintage years have the greatest aging potential. In the case of white wines, Germany’s high end Rieslings, Champagne’s vintage bubbly, along with premium white wines from the likes of the Loire Valley, Alsace, Alto Adige and Burgundy all pin their aging potential on the quality of the vintage.

2. Budget Bottles: High volume, commercial wines shoot for consistency year in and year out. Vintage variation is significantly reduced by the careful management of a wine’s key structural components like pH levels, alcohol, total acidity, and levels of residual sugar.

A Word on Non-Vintage Wines Non-vintage (N.V.) wines are essentially a blend of various vintages and won’t carry a specific vintage year on the bottle label. Examples include many Champagne bottles, several fortified wines like Ruby Port, Sherry and Madeira along with some inexpensive high volume still wines.

The Bottom Line Keep in mind, vintage years serve as an initial indicator, a happy, helpful guideline when scouting for wines. Debates rage as to who has more influence on a wine, the vintner, or the vintage? Producer reputation, vineyard vigilance, and high-tech winemaker interventions (think specific yeast, reverse osmosis, and additives) can often balance and redeem rough weather conditions.

Step Into My Kitchen

I’m Tory, a British mother of three boys who have called Barbados home for over 15 years. Indian Pond in St. Joseph, has been a cherished sanctury for us and our menagerie of dogs, horses, birds, and goats. Beyond the kitchen, I teach yoga and organise retreats, both here in Barbados and abroad. But when I’m not on the mat, you’ll find me in the kitchen, where I try to blend traditional British/French cooking with my love for Caribbean flavours. I also open Indian Pond in the style of a French chambre d’hôtes where guest can stay and unwind in the peace and tranquility of the Bajan countryside. We are so lucky in Barbados to have such a thriving restaurant scene but there is something special about inviting people into your home and cooking for them. It’s an act of generosity and hospitality that can make people feel truly special. For me, it is about much more than just feeding folk, it’s about creating intimacy and warmth, having great conversations and making memories. in my home. Key to that is being relaxed myself, which as any host will say is not always easy. I’m a self taught, enthusiastic but fairly chaotic home cook so I tend to stay away from anything that requires too much skill or “finicky faffing”. Someone said “Life is too short to stuff an olive” and I thoroughly embrace this philosophy!! Also I dont want to be stuck in the kitchen getting a cooks facial while my guests are tucking in to the excellent wine I’m serving. So over the years I’ve whittled my repertoire down to a few reliable and sufficiently impressive dishes that I can prepare mostly in advance. This is my fail safe dinner for 6 (there’s definitely enough for 8, but I think 6 is the perfect number for a kitchen supper)

To Start: Build your own Blinis So these aren’t the elegant little pancakes that get past around at cocktail parties - these are big and fat and really should be eaten with a knife and fork but actually its much more fun to still use your hands. The batter can be made in the morning, it needs to rest for a couple of hours anyway


and I cook them about an hour before people arrive - cover with a pastry cloth and put them to one side so they will still have some warmth to them when served. Then it’s really whatever you want to serve with them, I generally go for a pile of good smoked salmon, horseradish sour cream (that sour cream with a big dollop of horseradish mixed in) capers, chives, red onions - you could even add caviar if your feeling extra extra!! I just them all in little dishes and let everyone “build their own”.

the recipe I’ve shared here, it’s actually Gorden Ramsey’s, I have used over a dozen times and it’s never let me down - promise!! Beef Wellington doesn’t need a tonne of accompaniments, I mean it’s practically a meal in itself but who doesn’t feel love when offered potatoes cooked in cream!! You can make the potato gratin in advance - even a day or two before, just make sure it’s fully covered and in the fridge and allow extra time for the chill when warming though.

Hang on a second, I thought I said no finicky faffing right? - Well yes that’s true but actually it’s more about following the steps, (do not step off the path do not get creative!) and they are pretty simple. Plus you can do it all the day before and pop it in for its final roast just before you guests arrive and bring it out to rest as you serve your blinis. And it definitely ticks the “sufficiently impressive” box. I promise

Full disclosure - I’m not a dessert person I’m much more likely to throw a few bars of chocolate on the table than pull out an apple pie. Even at a restaurant I’d much rather have desert wine than dessert. I have three desserts really that I rotate - this is by far the easiest and can again be made in advance and forgotten about until you are ready to serve. It is also a yummy mix of creaminess, tart and sweet. CONTINUED ON PAGE 55

Blinis

Recipe

The morning of...

100 g wholemeal strong bread flour

For the topping:

70 g plain white flour

Smoked salmon

1 tsp fast action yeast

100 g crème fraiche

¼ tsp of salt

1 tbsp of creamed horseradish

1 medium egg

2/3 lemons cut in to squeezing wedges

250 ml lukewarm milk

Red onion thinly sliced

Vegetable oil

Red wine vinegar Jar of capers Chopped chives Black pepper

The day before... Prepare all your toppings - slice the onion and put to soak in the red wine vinegar, cut your lemons into mini wedges, unwrap the smoked salmon and cut in to inch by inch squares (ish) that can easily piled on top of your pancakes. Chop your chives, mix your creme fraise and horseradish together, and drain your capers. Plate and cover everything and place it in the fridge - its these fiddly things that left to the last minute eat into time with your guests.

Mix 100 g wholemeal strong bread flour, 70 g plain white flour, 1 tsp fast action yeast and ¼ tsp salt in a large bowl. Make a well in the centre and pour 1 lightly beaten medium egg and 250 ml lukewarm milk. Whisk the egg and milk together gradually drawing in the flour until all of it is incorporated and there is a smooth batter. Cover the bowl with cling film and leave to stand on the counter - after an hour it will have risen and thickened slightly

Before you get ready... I use my big roti tawa but any skillet or iron pan will work, heat with a small amount of vegetable oil. Stir the batter a little, but make sure it’s still nice and gooey then use a table spoon to drop generous spoonfuls of the mixture onto the pan - they don’t have to be perfect rounds, you don’t want your guest thinking they are shop bought!! Flip them as the top side starts to look like its setting, the bottom should just be turning golden brown. The yeast helps keep them fluffy and creates the little “bubbles”. When they are ready place them on your serving disband cover with a pastry cloth. They should stay slightly warm and moist until ready to serve. When you’re ready to serve take all the toppings out of the fridge arrange around the blinis and let everyone build their own.

Beef Wellington

Recipe - 400 g flat cap/button mushrooms, roughly chopped: - we do have some amazing local grown mushrooms but they are a bit “meaty” for a duxelle so I tend to go for the imported ones that can look a little “tired” - but are perfect for this if you give them a wash and pat dry

- 1-2 tbsp English mustard - Colmans!

- 750 g piece of prime beef fillet: I like to get a full tenderloin and trim of the best middle section myself and then cut the ends in to minute steaks for my “meat mouth” boys

- 2 egg yolks, beaten

- 6-8 slices of Parma ham - 500 g ready-made puff pastry - in the frozen section of Massey - Sea salt and freshly ground black pepper - Olive oil, for cooking - Flour, to dust

The night before the day before… Trim your fillet and wrap tightly in clingfilm and put it in the fridge overnight - you don’t have to include this step but I find it helps the fillet keep shape when you are manhandling later on.

The day before… Put the mushrooms into a food processor with some seasoning and pulse to a rough paste. Scrape the paste into a pan and cook over high heat for about 10 mins, tossing frequently, to cook out the moisture from the mushrooms. Spread out on a plate to cool.

Heat in a frying pan and add a little olive oil. Season the beef and sear in the hot pan for 30 secs only on each side. (You don’t want to cook it at this stage, just colour it). Remove the beef from the pan and leave to cool, then brush all over with the mustard. Lay another sheet of cling film on a work surface and arrange the Parma ham slices on it, in slightly overlapping rows. With a spatular spread the mushroom paste over the ham, then place the seared beef fillet in the middle. Keeping a tight hold of the cling film from the edge, neatly roll the Parma ham and mushrooms around the beef to form a tight barrel shape. Twist the ends of the cling film to secure. pop it back in the fridge to chill and again set.

The morning of… Roll out the puff pastry on a floured surface to a large rectangle. Remove the cling film from the beef, then lay it in the centre. Brush the surrounding pastry with egg yolk. Fold the ends over, then wrap the pastry around the beef, cutting off any excess. Turn over, so the seam is underneath, and place on a baking sheet. Brush over all the pastry with egg and put back in the fridge until your guests are almost due to arrive.

Just before arrival… Heat the oven to 200°C/400°F/Gas 6. Take out your beef wellington and lightly score the pastry at 1cm intervals and glaze again with beaten egg yolk. Bake for 20 minutes, then lower the oven setting to 180°C, 350°F, gas 4 and cook for another 15 mins. Take it out and allow it to rest for 10-15 mins before slicing and serving with the side dishes of your choice. The beef should still be pink in the centre when you serve it. If you are a meat thermometer type I think the perfect temp is 32° but double check because I’ve never used one for this dish.

Potato Gratin

Lemon Pots

Recipe

Recipe - 2 kg English potatoes (although usually come from the US) - I actually never weigh how many potatoes I use in this - I would say 8 large ones. - Litre double cream or cooking cream which is sometimes easier to get - you might not use it all but it

needs to almost cover the potatoes in the pan so better a bit left over than not enough. Some recipes do 50/50 cream and milk and I find this can leave the final -1 onion (peeled) -2 cloves garlic (minced)

5 unwaxed lemons 1 ltr double cream 400 g caster sugar Shortbread biscuits 12 raspberries 12 mint leaves

-1 tbsp Maldon sea salt flakes

The day before… Peel the potatoes and cut them into slices, about 1 cm /¼ inch thick and put them into a large saucepan with the cream, onion, minced garlic and salt. The liquid should almost cover the potatoes but not drown them. Bring to the boil, and watch it because that cream will very quickly boil over - turn it off and leave to cook the slices in the cream until they are slight tender but still holding their shape well - about 10 minutes. Transfer to an oven proof dish - one that you are happy to serve them in as this is their final resting place. Pre heat the oven nice and hot 240/220 or such and give it a good blast for about 20 minutes. Watch for the bubbling and browning on the top. Then take it out and when it has cooled sufficiently cover well with wrap and place in the fridge.

An hour before your guest arrive…

The day before… Grate the zest off the lemons and put to one side, then juice them. Put the cream into a pan with the lemon zest and stir over a low heat until the mixture starts to steam. Add all the sugar and stir until dissolved. Turn the heat off and stir in the lemon juice, then leave to cool for 10 minutes. Pour into dessert wine glasses or little ramekins or even express cups are nice. Cool to room temperature, then put them into the fridge to set overnight.

As you’re ready to serve… Garnish with mint leaves and raspberries and add shortbread biscuits to act as a spoon!

Take out of the fridge and allow the dish to come to room temperature. When you turn down your beef wellington to 180 for its final 15 put the potatoes as well to warm through again until piping hot and bubbling again. You do have to watch the top browning in the first and second blast and if you feel it’s getting more burnt than crispy cover it with baking paper. STEP INTO MY KITCHEN

Wine World had the pleasure of meeting Tao in our Warrens store for a fun and creative lesson in mixing cocktails. Q: Tell us about yourself. How did you get into mixology? I got into mixology originally because I needed to pay for design school and was looking for a student job that pays well enough. At that time the cocktail scene was just starting in Canada, so I was there at the right time! Once I started, I realized that this is actually what I wanted to do as I found myself fascinated by the field and developed a passion for it. Q: Do you work at a particular bar? Or do you have your own business? I have my own consulting business where I help people open bars and create beverage programs.

Q: What is your typical day like? Starts by watching last night’s basketball games recap while sipping coffee, answer emails, go about buying ingredients and tools and such, get food and then work on recipes or play basketball when I have no recipes to work on. All of this while thinking about where to travel next. Q: How did you get into the Netflix Drinkmasters Show? Did you enjoy the experience? It was an ad for the casting of the show that I stumbled upon and I hesitantly applied as i wasn’t into competitions anymore, I’m glad that i did apply though. As much as it was challenging physically and emotionally, I am so lucky and grateful to have been part of the first season of Drink Masters as there is nothing like being part of such a show on such a platform like Netflix.

Q: Do you have a particular style or ingredients that you enjoy working with? I do have a style that I like to call “ art of deception”, I like to play with unusual, less used ingredients, play around with funky concepts and I love making clear clean abstract drinks. Q: What is trending in the world of mixology? Without focusing on the world trend, I think consumers now want more out of what they are drinking, more experiential outings, mezcal and milk punches are now finding room in people’s home bars. Q: What is the most rewarding thing about what you do? And what is the most challenging? Most rewarding is having people discover new taste experiences through your creations and also discovering new products and techniques that keep making you work harder on your craft.

Most challenging is managing to stay consistent especially while expanding. Q: How do you see your career and lifestyle evolving? What are you most looking forward to? The goal is to always stay genuine and true to who you are for yourself first the rest will come. I’m definitely looking forward to travelling more, creating and also working more on my own projects and approach the industry and bar business from different and new angles. I’m also looking forward to have my own show one day where I get to experience culinary adventures around the world and share my stories and creations with a wider audience. Q: What advice would you give to someone that wants to get into mixology? Stay curious, humble and don’t be afraid of failing as long as you try again.

We offer free delivery for orders over $250. Orders under $250 can be collected or we can deliver for a fee of $25. We normally require 48 hours within which to make delivery. Please specify the date you would like your order delivered. Deliveries are made Monday to Friday between 10 am and 5 pm and on Saturdays until 2 pm. Due to the nature of the products we sell, we require that deliveries are signed for by an adult upon receipt. We will not accept instructions to leave the goods at a specific location, however secure, without a signature.

Gift Giving

We offer a free gift wrapping service for orders $500 and over. For orders under $500 there is a fee of $1 per bottle. Gift wrapped orders require 72 hours advance notice.

Not sure which wine to purchase for a friend? Why not give a Wine World gift card? Gift cards (minimum value $25) along with catalogues are available from all of our stores.

Wine by the Glass Cards

At Rockley & Warrens the Wine by the Glass systems give you an opportunity to sample a wide range of wines. These cards can be used at either store, do not expire and can be topped us as required.

Pricing Policy

Prices are quoted in Barbados Dollars VAT inclusive, and are subject to change without notice. Our single bottle price is our standard retail price, However, if you purchase 12 bottles assorted alcoholic beverages 70 cl and greater in size, a 20% discount will apply and 6 bottles, a 10% discount. Note, this discount cannot be combined with other promotional offers.
