From In’s Wiener to Mieke’s Kitchen. When I was a child, we would travel to Windhoek once, maybe twice a year. It was often a family trip and when my Gran accompanied us, we would always take a break at In’s Wiener and enjoy some authentic german cuisine.

To me, In’s Wiener formed part of the Windhoek experience and the wholesome food prepared by Mieke Kaaijk brings back many memories. Mieke is an excellent cook! She cooks with passion and The Windhoek on this can be tasted with the first bite. Her passion for i t c e n Con cooking was developed at a young age. She grew up with her mother, a farmers wife, raising a big family. From an early age, all the children had to help out where they were needed. This included preparing meals for a big group of family and friends. It was here where Mieke learned everything she could, while growing up. Fast forward to a few years later, she took on a job which did not fully fill her passion. One day she was asked by a friend, what she would like to do. With no hesitation, she responded that she would love to own a coffee shop. And with that, her mind was set! Get the latest issue here!

She worked hard and finally in early 2000, Mieke became synonymous with In’s Wiener. She successfully owned and managed In’s Wiener until, in late 2016, her location appeared to be more suitable for a multinational fast food eatery. But Mieke was not giving up. She quickly realised that where there is a will, there is a way. And in next to no time, she secured the coffee shop at the Medi Clinic Hospital in Eros. In’s Wiener carried on in full swing for 4 years, until Covid came along.

Just like many other enterprises, In’s Wiener was also hit hard. Hospital patients were not allowed visitors and with the restrictions on the amount of people permitted to get together, having a cup of coffee was a thing of the past.

During 2021, Mieke bid a sad goodbye to In’s Wiener. But she wasn’t done yet.

Cooking weekly lunches at N$100 per plate, catering for meetings and functions; she bakes biskuit - ideal for camping trips and chill weekends at home - or cakes for any occasion! She sends her weekly menu to her frequent clients on the preceding Sunday and bookings can be made one day in advance.

Lemon Bars
Eat Eat up! up!
Ingredients • 3 cups all-purpose flour 360g, divided 2 1/2 cups for crust and 1/2 cup for filling • 2/3 cups powdered sugar 66g, for the shortbread, plus more for dusting • 1/2 tsp salt • 12 tbsp unsalted butter melted, 170g • 3 tbsp lemon zest zest of three lemons • 3 cups sugar 600g • 8 eggs large, room temperature • 1 cup lemon juice fresh, 240mL

Instructions • Heat oven to 350F and line a 9x13 baking dish with parchment paper. • Whisk together 2 1/2 cups of flour (300g) with the powdered sugar and salt, then pour in the melted butter and mix until combined. You can also do this using a stand mixer with a paddle attachment. If you'd like a dash of vanilla can be added in with the butter at this step. • Sprinkle the dough into your lined pan and press down into a flat layer. Bake at 350F for about 20 minutes or until a light golden color. • While the crust is baking add the sugar to a food processor and add the zest of three lemons. Pulse until the zest is fully incorporated and sugar is a light yellow color. If you don't have a processor just mince the zest and mix with the sugar in a bag or bowl. • Add the sugar and remaining half cup of flour to a large bowl and mix well. You can sift together however and zesty sugar bits will need to get dumped out of the sifter as they might clog things up and not go through. • Pour in the lemon juice and add the eggs then mix very well until completely combined. • Pour the filling onto the warm crust then transfer to oven and bake for about 25 minutes, turning halfway through the bake. Remove from oven and allow to cool for an hour before chilling in the refrigerator for two hours.
• Dust with powdered
sugar and cut into bars using a clean, sharp, damp knife. Clean and re-wet the knife after each cut.
