During the chaos caused by the Covid pandemic, no one knew what the future held; how long this uncertainty would last and when, or even IF, we would ever return to a normal existence again.

When the 2 years of Covid were over, people found hope in different areas and innovation became the norm.

Jochen Schindler is one of the lucky Windhoek residents who acted on his passion after Covid. Once a successful Landscape architect, he also loves coking and baking. Dreaming of creating his own Gelato, this was the perfect moment to start!

In the Italian language, gelato is the generic word for ice cream, independent of the style, so every kind of ice cream is referred to as gelato in Italian. In the English language, however, the word gelato has come to be used to refer to a specific style of ice cream derived from the Italian artisanal tradition.

There are many differences between the usual ice cream and Italian gelato. From sugar and fat content to the temperature and tools it is served with. Jochen took the time to learn all there was to learn about Gelato and how it is made, attended classes in South Africa to ensure the knowledge he receives is true to form and then decided to take the plunge: On 1 December 2022 YOLATO opened its doors in the heart of Windhoek, in front of the Sanlam Centre.

Jochen is passionate about Namibia and what this country can offer. Wanting to share his passion for all things food, Yolato not only serves gelato, but also other baked goods and caters for lunch breaks and business meetings. The speciality however, remains the creamy, flavorful and delectable ice cream.

In an effort to stay on top of the latest developments in the industry, he is planning to attend a follow-up course in Italy in the near future.

The ingredients he utilises are of highest standard, as the machinery and ingredients are of utmost importance to preserve the quality and integrity of his product.

While Jochen and his team operate from their kitchen in the heart of Windhoek, the first deliveries have started to Maerua Superspar and Woermann, Brock & Co, packaged in 350ml containers for you to enjoy at home. He is looking at expanding further, and deliver to more shops and has many ideas to share the gelato experience throughout Windhoek, and can also cater for birthdays, corporate functions and other events.

Yolato is open from 07:00 to 18:00, Mondays to Fridays and over the weekend, the deli operates from 10:00 to 16:00.

Pannekoek

Deliciously addictive, these thin crepes, usually served with loads of cinnamon and sugar, is a firm favourite treat.

INGREDIENTS

• 2 large eggs

• 3 cups water

• 1/2 cup cooking oil

• 1 teaspoon lemon juice

• 2 cups flour

• 2 teaspoons baking powder

• pinch salt

• cinnamon sugar to serve

• fresh lemon to serve

DIRECTIONS

1. Add all the wet ingredients (water, eggs, lemon juice and oil) in a bowl with an electric hand mixer at the ready. Give it a quick beat with the mixer until all the wet ingredients are incorporated.

2. While beating, slowly add the flour and baking powder, and mix until smooth shiny batter. Add salt and mix through.

3. Keep a cup of water at your side once you start baking. You can add small amounts to the batter as you go. This just thins the batter out before you bake.

4. Heat a non stick pan on medium heat. The pan should be hot, but the heat must not be otherwise you can burn the bottom of your pancake before it's cooked through.

5. Scoop about a ladle full into a hot non stick pan.

6. Tilt the pan when you pour the batter in, to spread it out all over the pan. Place back on medium heat. Once the pancake batter starts pulling away from the sides, with bubbles in the batter on top, it's ready to flip and cook for a few more seconds on the other side.

7. Once cooked, transfer to a plate and generously sprinkle with cinnamon sugar. Roll the pancake from one side and cover until you have a stack.

8. Serve with fresh lemon juice.
