Happy Valentines Day

On Saturday, 11 January, we reached the 1st birthday!.

What an awesome year it has been. THANK YOU to everyone for your support. Subscribers, readers, advertisers, family and friends. This would not be possible without YOU!

For about the first 4 months after the release of every issue, I often asked myself if it was worth it. IT WAS! And still is.

In the very first issue of the Windhoek Connection, the opening message indicated that Windhoek has many hidden gems. Little did we know just how many are out there.

From local author Carmelita Dentlinger or the new Gelateria, Yolato, which opened in December right in front of the Sanlam Centre; Windhoek is filled with many awesome people and locally owned businesses who all deserve our support.

So while the Windhoek Connection is taking shape, one of the ideas we were toying with was to offer local writers a chance to earn some money. And with that, this is call for articles. The WANDA Fundraiser has done exceptionally well!!

The target of EUR 70,000 was reached within a week. The fundraising team then pushed for an additional EUR7,000 to also cover the travel and accommodation costs already incurred. This was successfully reached within a

few days.

When it seemed that the much needed funds to cover the medical expenses would be reached, the WANDA Fundraiser team started looking for charities to support with the surplus. After much consideration, it was agreed to donate the surplus to the Okanti Foundation.

We will continue to donate the 25% pledged for February, March and April. This will then be passed on to the Okanti Foundation by the WANDA Fundraiser.

Pangolin Conservation in Namibia, Tuesday, 14 Feb · 7 – 9 PM

Kelsey Prediger has lived in Namibia since 2016, and pangolin conservation, research and protection is her mission. She is actively involved with local projects to raise awareness and to learn more about the ecology of these nocturnal and elusive creatures. Her work as founder and director of the Pangolin Conservation and Research Foundation is helping to develop a base of scientific knowledge and guidelines to save this species from the horrendous wildlife trafficking trade. Join us at the FNCC for a night of Love Songs with Voices of Windhoek. Voices of Windhoek launched to high acclaim in June 2022. Voices of Windhoek is a choir that has its roots in COTA Youth Choir Namibia and also Windhoek Chamber Choir, their conductor, Mr Fanie Dorfling.

This choir offers music of the highest standard and sings most genres of music, during the Valentines Concert you will be treated to uplifting love songs in the Barber shop style, as well as African love songs.

Double Chocolate Mocha Mousse

This recipe, from August 1963, was described as a "company dessert." With 1 cup sugar as well as semisweet chocolate, it was far too sweet for today's tastes. This version swaps in bittersweet chocolate, uses less than 1/3 cup sugar, and adds a dash of coffee. And it's still great for company!

INGREDIENTS

• 4 oz. semisweet chocolate

• 2 oz. bittersweet chocolate

• 2 large egg yolks

• 1 1/2 tsp. instant espresso powder

• 5 tbsp. granulated sugar

• 1 1/2 c. heavy cream

DIRECTIONS

• Place the semisweet and bittersweet chocolates in a microwave-safe bowl. Melt according to package directions. Let cool slightly.

• Meanwhile, in a small saucepan, whisk together the egg yolks, espresso powder, 4 tablespoons granulated sugar, and 1/2 cup cream. Cook over medium heat, stirring constantly, until the mixture lightly coats the back of a spatula (do not let the mixture simmer or boil), 2 to 3 minutes.

• Scrape the egg mixture into the cooled chocolate and whisk to combine. Refrigerate until cooled, about 25 minutes.

• Using an electric mixer, beat together the remaining cup cream and tablespoon sugar in a medium bowl until stiff peaks form. In two additions, fold the whipped cream into the chocolate mixture. Divide among serving dishes and refrigerate for at least 20 minutes before serving.

• Sprinkle with shaved chocolate before serving, if desired.
