Everyone loves cakes, and making cakes is what I absolutely love doing, so doing a bake sale was the perfect idea to raise money. I thought about charities that were really important to me and I chose the Beatson Hospice. They looked after someone in my family, so I wanted to help give them money to buy what they need to help other people. I had made pancakes loads of times, so I knew I wanted to make them and my staff member helped me pick more things to make. We chose méringue nests, caramel shortbread, scones and empire biscuits. Then I went out and bought all the ingredients and the decorations for the table, like table clothes, cake boxes and plates, and cups for tea and coffee. I started baking on Thursday night and had everything ready for Friday afternoon. It went really well. I enjoyed it and everyone who came gave some money, everyone in the house took part and people from outside even came too. Everyone said I did really well with all my baking and decorating. I was worried that everyone would come at the same time and it would be too busy, but I managed to serve everyone and keep everyone happy. People were still giving me money a few days later on Monday. I raised £100 from the bake sale and £80 from the Million Steps Challenge, so in total that’s £180 for the Hospice! I really enjoyed baking for other people and thought some of you might like to try. Grab a grown up to help and try this fun and easy recipe!

Custard Custard Creams Creams

Make sure you have a grown up to help you with the oven! Instructions:
For the Biscuits
• 170g Butter at room temperature • 55g Icing Sugar • 170g Self-raising Flour • 55g Custard Powder
Ingredients:
For the Filling
• 50g Butter at room temperature • 100g Icing Sugar
1. Ask your grown up to pre-heat your oven to 180°c (160°c for fan assisted ovens or Gas Mark 4) 2. Grease a couple of baking trays with a little butter. 3. In a large bowl cream the butter & icing sugar until light and fluffy. 4. Gradually add the flour & custard powder a little at a time until the mixture forms a paste. 5. Divide into small balls (about a teaspoon per biscuit) and place onto your pre-greased baking tray with a bit of space between.
Flatten each ball lightly with a fork. 6. Bake for 12-15 minutes until the appear dry on top and then ask your grown up to take them out of the oven. 7. Once they have cooled on a wire rack. Mix the butter and icing sugar to form the butter cream and once the biscuits are completely cool, pipe or spread a little butter cream onto half the biscuits and sandwich together with the other halves. 8. Tuck in and enjoy!
