Inarguably one of the greatest Broadway productions of all time, “West Side Story” marches onto the stages of Sydney Opera House from mid-August (page 14), while the Capitol Theatre will play host to multi-award-winning “Chicago The Musical” later in the month (page 17). Q: Where do you go for a fail-proof, delicious brunch in Sydney?

A: My favourite brunch spot is Café Morso on Jones Bay Wharf in the waterfront, inner-city suburb of Pyrmont. The venue provides a great, laid-back atmosphere in a beautiful location by the water. Itʼs central but feels a world apart from the hustle and bustle of the CBD. Q: What is your favourite new opening in Sydney in 2019?

A: Bopp & Tone in the CBD pocket of Wynyard has been my favourite new opening in Sydney this

year. The bar and eatery embraces the nostalgia of past decades; it is an experience to remember and gives you an opportunity to reminisce about the old days. Q: What are some places you'd recommend for people who are looking for both kids' and adults' entertainment?

A: Wet ‛nʼ Wild Sydney (recently rebranded to Raging Waters Sydney), which opened in 2013 in Prospect, about a 40-minute drive west of Sydney. Last summer I had season passes and took my kids every weekend. The water park is spread across 25 hectares and contains 42 rides and attractions. Since it is located a fair way out of the city, plan to go for the whole day. Q: What is an underrated Sydney destination?

A: Koreatown, which runs along Pitt Street in the heart of the city. The food and drinking culture there is amazing.

IT’S NO SECRET that Sydney is a city that likes to drink. Stretched-out sunny days and endless water views have long underpinned Sydney’s reputation as a city primed for afternoons spent sipping cold brews, which accounts for the boon of small bars and gastropubs that provide ample settings for such leisurely undertakings. But while Australia has been on the front foot of the craft beer craze that has swept the world these past years, it is only recently that the same experimental spirit has gotten a firm hold on the country’s distilling scene. Small-batch distillers and experimental artisan makers have lately been cropping up all over the place, redefining how the country drinks its cocktails—not to mention pushing the limits of what we expect from staple liquors such as gin and whisky. From refined drops that rely on all-native ingredients, to take-home cocktails brewed and packaged by some of the country’s most revered bartenders, to an unexpectedly delicious hybrid of wine and gin, we round up some of the best liquors brewed locally. Best of all, they're available to purchase in most bottle shops around town.

FOUR PILLARS GIN As soon as Four Pillars can release a batch of its seasonal Bloody Shiraz Gin, it sells

out. An odd predicament considering the adventurous nature of such a combination— rich shiraz grapes and dry, spicy gin— but people have grown to trust whatever it is that the Melbourne-based distillery throws at them. Over the relatively short time that Four Pillars has been operating (the idea was spawned in 2013 during a road trip along the west coast of North America, and actuated when the three co-founders bought their first still 18 months later), the distillery has won multiple gold awards at international spirits competitions for all five of their mainstay gins. In addition to these staples, Four Pillars releases a number of limited-edition gin varieties that err towards the unusual—for instance, their annual Australian Christmas Gin, infused with Christmas pudding spices; their self-explanatory Spiced Negroni Gin; and gin-infused products such as the Four Pillars Breakfast Negroni marmalade. fourpillarsgin.com.au

ARCHIE ROSE DISTILLING CO. Another multi-trick pony, Sydney-based Archie Rose Distilling Co. specialises in gin, but spreads their expertise across a range of core and limited-release whiskies, vodkas and rums. Known for their Signature Dry Gin, in recent years the distillery has increasingly started

and gins, which lack the same alcohol burn you usually feel when drinking a spirit neat. Only two years old, Underground Spirits has already made significant innovations to the traditional distilling process. The Canberra-based distillery was founded by fertility specialist and robotic surgeon Toby Angstmann who, after a tour of a Scottish whisky distillery, decided to apply his medically trained brain to the process of spirit-making. Back at home, Angstmann began experimenting with distilling techniques that eliminate impurities in spirits earlier in the process. The result of this is the subzero, sub-micron cryofiltration process that Underground Spirits now uses to create its smooth whiskies, vodkas

experimenting with new flavours and collaborations, such as their ArchieMite Buttered Toast Spirit, infused with toast, butter and umami breakfast spread flavours; and their now sold-out Behemoth Aged Spirit, an unspecified dark spirit aged in ex-Bourbon casks that featured Double India Black Ale from Victorian craft beer company, KAIJU! Essentially, what the launch of The Everleigh Bottling Co. means is that you can take one of the country’s bars with you wherever you go. The brainchild of bartenders at The Everleigh—a pocket-rocket of a bar in Melbourne’s inner-north—the initiative consists of tiny, pre-bottled cocktail mixes that can be bought at bottleshops throughout the country. So good are they that other hotels and bars—such as The Dolphin Hotel in Surry Hills—have started adding them to their menus. Australian opal is not only the world’s most fascinating and colourful gemstone, it can also be a sound long-term investment.

Fire from the Outback CALLED ‘THE RAINBOW STONE’ by Australia’s Aboriginal people, opal is without doubt one of nature’s most remarkable gifts. It is now recognised as one of the five precious gemstones in the world, along with diamonds, emeralds, rubies and sapphires, and is an excellent investment. While small amounts of opals may be found in other countries such as Ethiopia, Mexico and the USA, Australia produces more than 90 per cent of the world’s supply. The romance of the opal is in the gem’s incredible ability to expose an infinite number of colours, forever moving with the light. Mined in the outback of Australia across three states, it is as much the call of the outback that lures the opal miner

and keeps them going. Scorched landscapes and blazing red sunsets, the night stars from horizon to horizon, this is a hauntingly beautiful country that penetrates one’s soul. The elusive opal was formed millions of years ago when liquid silica filtered down into the faults and fissures of sedimentary rock. When the water content evaporated, tiny spheres of silica remained and over time were solidified. The intensity and combination of colour occur with such variety that each gem has an individual character. In 1964 the CSIRO (Australia’s national research laboratories) unlocked the riddle of why opals have such colours. Opal is composed of minute particles of silica in closely packed

spherical aggregates. It is the varying arrangement of these particles (and, of course, cavities) that causes the reflected light to be split into the full range of colours of the spectrum. There are three main production areas in Australia for mining opals. There’s the bright and beautiful Queensland boulder opal which is mined around the Quilpie area in Western Queensland. Lightning Ridge in New South Wales is the home of the famous black opal which derives its name from the colour of the nobbies or pieces of rough opal in which the gems are usually found. The third area is Coober Pedy and Mintabie in South Australia. Coober Pedy is an Aboriginal name, meaning ‘white man in a hole’, which describes

exactly what miners still do today— live underground to escape the fierce heat of summer. This is where the white or milk opals are mined. The value of an opal depends on the amount and brilliance of the colour, preferably being evenly distributed across the face of the polished gem. The greater the spectrum of colours from red to violet, the better, with crimson, reds and orange being rarer than the greens and blues. Milkiness, cloudiness or greyness detracts from the value. Ideally, the greater the number of colours, the more prized the gem,

and if these are arranged in a block pattern, more value is added. The extremes are pin-sized dots of colour (pinfire) to one large sheet of colour (broadflash) covering the whole stone. The elusive ‘harlequin’ is the ultimate in this form but is very rare. Shapes of the finished opal vary according to the characteristics of each stone. Boulder opal is usually cut in baroque or free form, whereas seam opal is at its best presented in cabochon (domed) form. If you are buying an unset opal, it is important to consider the way it will eventually be worn. For example, some opals will offer a better play of

colour when worn vertically, as in a brooch or pendant, whereas others are best flat, as in a ring setting. There is a great deal to consider when investing in your opal, but expert advice is available for your complete pleasure and pride in an ever-inspiring piece of jewellery. Above all, buy the opal colour that appeals to you. Enjoy your purchase, knowing it’s geologically millions of years old, but will give you pleasure every day of the year.
