LEMON BUTTER SAUCE

PAN SEARED CHILEAN SEA BASS WITH LEMON BUTTER SAUCE

Ingredients

• 2 x 6 oz fillets of As Good As Fresh

Chilean Seabass

• 1 tbsp - olive oil • 2 tbsp - fresh lemon juice • 2 tbsp - unsalted butter • 1 tbsp - capers • salt & pepper

Directions

1. Preheat the oven to 375ºF. Pat the fillets dry with paper towels and season with salt and pepper. 2. In a medium skillet, heat the oil over medium-high heat until nice and hot.

3. Gently add the sea bass fillets to the skillet. Sauté the fillets for 3 minutes on each side.

4. Transfer the skillet into the oven and bake for 4 minutes, or until fish is opaque and the internal temperature is 145ºF.

5. Remove the skillet from oven and set the fillet aside on a serving plate. Cover the plate loosely with foil. 6. Place the skillet back on medium-high heat. Add butter to the skillet along with the lemon juice and capers and cook over moderate heat just until butter melts, about 45 seconds. Season with a little salt and pepper.

7. Pour sauce over fillets. Serve with your favorite vegetable.
