SRIRACHA GRILLED CHEESE
INSIDE OUT CHICKEN AVOCADO & SRIRACHA GRILLED CHEESE
PREP TIME 7 MIN. | COOK TIME 8 MIN. | MAKES 1 SANDWICH
Ingredients
• 2 tbsp - butter, room temperature • 2 slices of sourdough bread • 1/3 cup - cooked chicken, rotisserie picked and shredded • 1 tbsp - sriracha hot sauce • 1 tbsp - ranch dressing, prepared • 1/2 small avocado, diced in large portions • 1 tbsp - cilantro, fresh chopped • 1/3 cup - Roth Grand Cru® Original

Directions
1. Shred rotisserie chicken.
2. Combine ranch dressing, Sriracha hot sauce, cilantro and avocado and mix well with the shredded chicken until fully coated. 3. Place a skillet over medium low heat.
4. Butter lightly one side of each piece of bread. 5. Directly on the skillet sprinkle 1-2 teaspoons of Roth Grand Cru®
Original Shred to approximately the size of your bread. 6. Place bread directly over the melting cheese on the skillet butter side to the heat, top with about half of remaining Roth Grand
Cru® Original Shred (inside of sandwich). 7. Evenly spread spicy chicken mixture, and top with all but 1-2 tsp of Roth Grand Cru® Original Shred top with remaining bread slice.
8. When ready to flip over, lift sandwich from skillet, sprinkle Roth
Grand Cru® Original Shred the same as before and turn sandwich over to cook the second side.
9. Cook approximately 4 minutes each side until golden on the outside and hot and steaming inside. 10. Can dip into sriracha ranch dressing for extra punch.
COOKING TIPS

RHAPSODY IN BLUE - SALTY SWEET BLUE CHEESE PIZZA

Ingredients
• 3 oz - Real California Mascarpone • One 10-inch extra-thin pizza crust (tart dough or cracker crust preferred) • 3 oz - caramelized onions
• 2 tbsp - diced Medjool dates • 3 oz - shredded Real California Part-
Skim Mozzarella
• 3 oz - crumbled Real California Creamy
Blue
• 1 tbsp - diced smoked almonds
Directions
1. Spread Mascarpone evenly over crust; sprinkle with onions and dates.
2. Blend Mozzarella and Blue cheese; sprinkle over crust. 3. Bake at 475°F until crust has golden edge and crisp bottom (approximately 8 min.) and cheese is slightly browned. Sprinkle with almonds.
