Transform Holiday Leftovers

(Family Features) Once your holiday feast comes to pass, you’re almost certain to find your refrigerator stuffed with leftovers. However, that doesn’t mean you want to eat the same meal again and again in the days that follow.

The star of many seasonal celebrations, turkey can be reused in a variety of post-holiday dishes to cut down on food waste and create fresh new meals your whole family can enjoy. Gone are the days of simply reheating turkey and stuffing or making a turkey sandwich. Instead, reinvent your holiday extras through fresh takes on a classic dish like this comforting Leftover Holiday Biscuit Pot Pie.

Holiday Biscuit Pot Pie

Total time: 45 minutes Servings: 4

INGREDIENTS

Biscuits

1 1/2 cups all-purpose flour

2 teaspoons baking powder

2 1/2 teaspoons sugar

1/4 teaspoon salt

2 teaspoons cream of tartar

1/2 cup cold unsalted butter

2/3 cup buttermilk

1 tablespoon butter, melted Turkey Pot Pie Filling:

1/2 cup turkey fat

1 1/2 cups diced onion

1 1/2 cups diced carrots

1 1/2 cups diced celery

1 bay leaf

1 tablespoon minced garlic

1 tablespoon chopped thyme

1 tablespoon diamond crystal coarse salt

1 tablespoon coarse black pepper

1 cup all-purpose flour, divided

8 cups cold turkey stock

TajÌn Clasico Seasoning, to taste (about 1 tablespoon)

6 cups leftover cooked turkey, chopped

DIRECTIONS

1. To make biscuits: In mixing bowl, combine flour, baking powder, sugar, salt and cream of tartar.

2. Grate butter and mix with dry ingredients.

3. Carefully add buttermilk and mix until incorporated.

4. Fold over 5-6 times, roll out and cut into 10-12 rounds.

5. Place cut biscuits on floured surface.

6. Refrigerate 30 minutes.

7. To make turkey pot pie filling: Preheat oven to 375 F.

8. Heat large pot over high heat and add turkey fat.

9. Add onions, carrots, celery, bay leaf, garlic, thyme, salt and pepper; gently sweat.

10. Add 1/2 cup flour and cook 2-3 minutes.

11. Add turkey stock 2 cups at a time, allowing to thicken before adding more.

12. In bowl, mix remaining flour with turkey.

13. Add turkey pot, bring to simmer until thickened.

14. Add seasoning, to taste.

15. Add pot pie filling to casserole dish and gently place biscuits closely together on top.

16. Brush biscuits with melted butter and bake 25-30 minutes.

17. Remove from oven and cool 10-15 minutes before serving.

Turkey Spinach Orzo

2 cups leftover chopped turkey

1 1/2 cups frozen spinach

2 tablespoons butter

2 cups chicken stock

2 cups orzo

1/2 cup grated Parmesan cheese

1 tablespoon garlic powder

1 tablespoon onion powder salt, to taste pepper, to taste

DIRECTIONS

1. In large skillet over medium heat, brown turkey and spinach with butter. Add chicken stock and orzo; cover and cook 10 minutes.

2. Turn off heat and mix in Parmesan cheese, garlic powder and onion powder. Season with salt and pepper, to taste.

Welcome to the new gardening year. There’s lots to do for your garden, even in winter.

Winter came last month with 3 feet of snow, but it kept the frost out of the beds. By now, it has mostly melted away. If the traditional January thaw comes and the snow is almost gone, mound any remaining snow over roses and tender perennials.

Things to do in, or for your garden this month.

• Cut the branches off your Christmas tree and place them over tender plants to catch the snow, which is a good insulator. It’s the freeze/thaw cycle that kills the plants.

• Inspect house plants for white flies, spider mites and aphids. Apply insecticidal soap and spray with water.

• Inspect any spring bulbs you may have stored or forgotten about. Discard soft or mouldy ones.

• Plant any left over, not-yet-planted spring bulbs like daffs, tulips etc. in pots with good potting soil and a little bone meal. Water. Put the pots in an unheated garage or garden shed for 6 weeks. Take them inside in February or early March for spring blooms in less than a month.

• Expand your personal knowledge through on-line courses. Check out Master Gardener websites for lectures and seminars.

• Start looking on-line for seed and plant catalogues.

• Start planning your garden for next spring. I’m already making lists of plants to divide, and BUY.

• Make detailed lists under different categories, like: BIG projects, regular maintenance, new plants to buy and also, plants to divide and donate to the St. George’s Plant Sale, Saturday May 24 2025. Call 519-599-3047 for more info, or if you need a digging crew to help you pot up your plants for the sale.

• Google “Seed Catalogue Websites” and see hundreds of seed sources.

• Order flower and vegetable seeds. Decide which seeds should be started inside.

• If you can find them, try forcing amaryllis and paperwhite narcissus now for indoor winter bloom that will cheer you up during a long winter.

• At the end of the month, start the slowest germinating seeds like begonias and geraniums, also seeds for early spring bloom e.g., pansy, verbena, alyssum and dianthus.

The Markdale CO-OP, now called Midwest Co-Op, (1-519-986-2031) will have a good supply of Triple-19 fertilizer in early March. This is the strong agricultural fertilizer to put on the soil in your flower beds in March right after the snow has melted. Put it around your plants, not on them, as it could possibly burn them. It will fertilize your gardens all summer long. It’s worth the drive to Markdale!

Slow-Cooker Bean and Vegetable Stew

Prep time: 15 minutes Cook time: 10 to 12 hours Makes: 6 servings

INGREDIENTS

3 carrots, thinly sliced

2 potatoes, diced

1 onion, diced

3 cloves garlic, minced

2 cans (540 ml each) kidney beans (white and red), drained and rinsed

1 tsp (5 ml) dried thyme leaves

1/4 tsp (1 ml) each salt and pepper

3 cups (750 ml) unsalted vegetable broth (approx.)

2 cups (500 ml) bite-size spinach leaves or baby spinach

3 tbsp (45 ml) chopped fresh parsley

Sour cream and grated cheddar cheese to taste

DIRECTIONS

1. In slow cooker, combine carrots, potatoes, onion, garlic, beans, thyme, salt and pepper. Add broth and push vegetables and beans under the liquid.

2. Cover and cook on low setting for 10 to 12 hours, or until vegetables are tender.

3. Stir in spinach, cover and cook on low until lightly wilted, about 10 minutes.

4. Ladle into bowls and sprinkle each serving with cheese, sour cream and parsley.

INGREDIENTS

Brownie Layer:

Floured baking spray

1 package 18.2 ounces dark chocolate fudge brownie mix

3/4 cup mashed sweetpotato cooled

1/4 cup vegetable oil

1/4 cup water

1 egg

Cheesecake Layer:

1 package 8 ounces reduced-fat cream cheese

3/4 cup mashed sweet potato cooled

1/2 cup granulated sugar

1 egg

1 teaspoon vanilla extract

1/4 cup miniature chocolate chips

DIRECTIONS

1. Preheat oven to 350 F. Spray 9-by-9-inch square pan with floured baking spray.

2. To prepare brownie layer: In medium bowl, stir brownie mix, sweet potato, oil, water and egg until blended. Spread batter in bottom of prepared pan.

3. To prepare cheesecake layer: Using electric mixer, beat cream cheese until smooth. Add mashed sweet potato, sugar, egg and vanilla; mix until well blended. Spread cheese mixture over brownie batter.

4. Bake 50-60 minutes, or until wooden pick inserted comes out almost clean. Remove from oven and cool 15 minutes. Sprinkle surface with chocolate chips. Cool completely. Remove from pan and serve.

Mashed Potatoes with Mushroom Gravy

INGREDIENTS

3 pounds potatoes salt to taste pepper to taste

Mushroom Gravy: 1/2 stick butter

4 tablespoons flour

1 can 8 ounces mushrooms, drained

1 1/2 cups chicken broth

1/2 cup heavy cream

1 tablespoon garlic powder salt to taste pepper to taste

DIRECTIONS

1. Peel and cut potatoes. Boil 20 minutes until fork tender. Mash with hand mixer. Add salt and pepper, to taste.

2. To make mushroom gravy: In saucepan over medium heat, brown butter and flour. Once butter is paste-like, add mushrooms. Whisk in chicken broth and heavy cream. Add garlic powder and season with salt and pepper, to taste, while whisking.

3. Remove from heat when mixture starts boiling. It should be thick.

4. Serve potatoes topped with mushroom gravy.

Cleaning your home properly takes a long time and can be very tiring. To save time, make a schedule to help you organize when you will clean each space or item in your home. From my experience the best way to clean is to work from top to bottom and tackle one room at a time. The kitchen and living room are the most used parts of the home; there are so many gadgets, appliances and surfaces to keep clean and in good working condition. But what are the most forgotten items to clean in your home? There are many but some you might want to take care of during your Spring or Fall cleaning.

Dishwasher - Remove all the build-up of grease and water residue. TIP: Add 1 cup of baking soda and 1 cup of white vinegar into the dispenser and run the regular washing cycle.

Sink + Drain - Grease can build up in the pipes and cause clogging. TIP: A slow moving drain is the warning sign of taking action! Pour 1 cup of salt into the drain followed by 1 cup of baking soda. Pour a full kettle of boiling water down the drain to flush out any build-up.

Shower Curtain Liner TIP: It can be washed in the washing machine.

Shower Door Seal Strip - This little item plays a very important roll! It stops the running water leaking out of the shower area. TIP: Soap scum, hair, etc. can get stuck here and cause discolouration and nasty odours. To prevent this, clean it regularly with an old toothbrush and a cleaning agent. If it is removable, give it a good scrub on every side. Then dry it before sliding it back into its track.

OUR WINTER IS THEIR SUMMER Australia is located in the southern hemisphere, which means as our fall turns into winter, they are transitioning from spring to summer. But the Australian climate is much more temperate than ours, so it doesn’t matter what time of year you visit – it’ll always feel like summer to a Canadian.

Fun Facts About Ontario’s Greenhouses

(NC) During the short, grey and cold days of a Canadian winter, greenhouses are one of our main sources of fresh, local, healthy produce. That includes vegetables like cucumbers, peppers and tomatoes and, increasingly, fruit like strawberries. Here are some fun facts you may not know about greenhouses and the fresh produce on your plate.

Fact #1

Ontario is North America’s largest grower of greenhouse produce.

That’s right, Ontario is home to the largest cluster of greenhouse growers in North America and the southwestern Ontario town of Leamington is known as the greenhouse capital of Canada because of the many greenhouses in the area.

Fact #2

We produce more than 520 million kilos of greenhouse veggies a year.

Last year, Ontario’s greenhouses produced 213 million kilograms of tomatoes, 202 million kilograms of cucumbers and 106 million kilograms of peppers. These fresh veggies are enjoyed by consumers across Canada and in many regions of the United States.

It’s more than just veggies.

Ontario’s greenhouses are also starting to grow more than vegetable crops. Greenhouse strawberries are a delicious, local option all year long. Lettuce, microgreens and herbs are also grown under glass – and research is underway into crops like blackberries, raspberries, spinach, okra, and even papaya and peaches to see if they can be grown in Ontario greenhouses.

Greenhouses are international, multi-cultural workplaces.

Ontario’s greenhouse workers come from many different countries, such as Jamaica, Mexico, Thailand, Ukraine and the Philippines. Some are here for a few months through the Seasonal Agricultural Worker Program or stay year-round as part of the federal Temporary Foreign Worker (TFW) program. All have the same goal of earning money they aren’t able to at home.

Once here, they’re paid the same wages as Canadians doing the same work, and year-round greenhouse jobs provide valuable Canadian work-experience for those looking to apply for permanent residency here. Nataliia Buina and her family came to Canada in 2017 from Ukraine through the TFW program. She got a job as a packer in a tomato greenhouse. Today, she’s responsible for quality control before produce shipments leave the farm, and her family has gained permanent residency in Canada. (NC) When people struggle to pay off their debt, it can add a lot of stress to their lives. Financial stress can even lead to health problems, including everything from insomnia to more serious issues like high blood pressure and depression. If paying down your debt is becoming a challenge, small actions can make a difference.

ASSESS YOUR DEBT LOAD AND SET A TIME FRAME FOR ALL YOUR DEBTS Start by making a list of all your debts. Then, set goals for paying down your debts and track your debt-repayment progress. Prioritize paying down high-interest debts first. That way, you’ll pay less interest over the term of your loan. If you have multiple high-interest debts, consider consolidating them into a single loan with a lower interest rate. Consolidating your debts means you’ll only have to make one monthly payment rather than pay each one individually.

REVIEW YOUR BUDGET Review your budget carefully to see where you can cut costs to rebalance your spending to debt-repayment ratio. If you don’t have a budget, take some time to make one. Having a budget that lays out your income and expenses is an effective way to manage your day-to-day finances. To help you get started, try the Financial Consumer Agency’s online budget planner tool. It will help you identify areas where you can cut expenses to put more money towards paying down your debt.

SEEK ADVICE If you’re struggling to keep up with payments, be proactive and contact your bank or creditor immediately. There could be options available to you. Banks are expected to help individuals who are struggling to pay their mortgages due to exceptional circumstances such as high household debt, increased cost of living and rapid increases in interest rates. For example, they could offer you a lower interest rate on your debt, extend your payments over a longer period and reduce your minimum monthly payment amount.

You may also consider consulting a financial advisor or credit counsellor for guidance. If you are considering that option, make sure that the agency is in good standing with a provincial or national association. And remember that no reputable credit counselling agency will charge you for the first meeting.

HOW FREE TAX CLINICS CAN BOOST YOUR RETURN AND BENEFITS

(NC) Tax season doesn’t have to be confusing. Keep it simple by getting free tax help in your community. Getting your taxes done can actually improve your financial situation. You could be eligible for benefits like the Canada child benefit or the GST/ HST credit.

If you earn less than $35,000 and have a simple tax situation (for example, if you don’t have a business or rental income), you could get free tax help.

The Canada Revenue Agency works with community organizations and volunteers to provide free clinics through the Community Volunteer Income Tax Program and, in Quebec, the Income Tax Assistance – Volunteer Program.

You may be able to find a clinic at your local library, shelter, senior’s centre, band office or place of worship.

It’s a Snow Day!

(BPT) - Winter weather brings with it numerous activities that inspire curiosity in adults and children alike. In fact, many snow day activities can even help with child development. As snowflakes begin to fall in several states across the country, parents can use this time as an opportunity to ignite their child’s curious mind and engage their imaginations.

“The winter season is a time when we see children’s curiosity soar, especially when snow is involved,” said Joy Turner, vice president of education at Kiddie Academy® Educational Child Care. “Snow days are an excellent opportunity for children to engage in play that isn’t always available to them. Not only can parents encourage their child to experience and appreciate nature, but they can also take time to teach them about snowflakes, the different seasons, how snow is formed and more.”

Kiddie Academy encourages parents to make the most of their child’s next snow day. Here are a few activities to consider:

1. TAKE A NATURE WALK. Observe and discuss the quiet that descends over newly fallen snow, look for animal tracks and try to identify what animal left them, or count the number of icicles hanging from roofs. Let your child’s curiosity guide your outdoor exploration.

2. CREATE WINTER BIRD FEEDERS. Cover pine cones in nut or seed butter and roll them in birdseed. String the pine cones on pieces of yarn and then hang them on a tree outside near a window with a good view. Together with your child, watch as birds of many sizes and colours enjoy the treat, taking time to call out observations about each bird that stops by.

3. MAKE A HEARTWARMING SOUP. Talk about the origins of the recipe and explain how all the flavours and ingredients mix to create a tasty meal. Let your child ask questions about the cooking process and encourage them to help with tasks like washing veggies, and measuring and combining ingredients.

4. ENGAGE IN PRETEND PLAY. Act out different arctic animals like polar bears, penguins and seals. This is an opportunity to introduce different animals to your child and teach them about various habitats. Wherever this play goes, leave it unstructured and let your child’s imagination lead them.

5. INVENT A SNOWFLAKE MATCHING GAME. Together with your child, clip symmetrical snowflakes out of paper and cut them in half. Explore how every snowflake is different, just like each person. Depending on the age and ability of your child, help them cut shapes out of paper

4 THINGS TO KNOW ABOUT ZERO-EMISSION VEHICLES

(NC) Did you know that electric vehicles (EVs) were cruising around for decades before the first cars powered by internal combustion engines hit the road? EVs, also known as zero-emission vehicles, or ZEVs, have come a long way since the first ones were invented nearly a century ago. If you’re curious about buying one, here are four things you should know.

COST TO OWN Electricity isn’t free, but the cost to charge an EV battery is far lower than the price of gas. And beyond the savings at the pump, EVs can be cheaper to maintain than standard vehicles. For one, there’s no need for regular oil changes and tune-ups. There are also very few moving parts in an EV compared to a gas or diesel vehicle, meaning fewer things to wear out and break down, like transmission and exhaust systems.

RANGE PER CHARGE One of the main concerns people have about EVs is their range. Most EVs on the market have a driving range of at least 200 to 300 km, with the top-performing ones being able to travel 600 km or more on a single charge. If you need a mix of long and shorter trips, you might consider a plugin hybrid vehicle that runs on battery power and then switches over to a combustion engine when the battery is depleted.

REBATE ELIGIBILITY Across Canada, the federal government’s Incentives for Zero-Emission Vehicles Program offers rebates of up to $5,000 for the purchase or lease of EVs for personal use.

There’s also a PROGRAM FOR BUSINESSES looking to buy or lease medium- or heavy-duty work vehicles. It’s called the Incentives for Medium- and Heavy-Duty Zero-Emission Vehicles Program, with incentives of up to $200,000 per eligible vehicle.

Georgian Triangle...The Game

is part of George’s life adventures!

Life’s an adventure and my latest is “Collingwood...The Game!”, a locallyfocused board game which includes 110 question-and-answer cards.

As an author who has never made it to the big-time, or the Big City media, I’m a firm believer that everybody should have a project, of sorts, to challenge one’s mind and body. In other words, I think having a project (it doesn’t have to be big or expensive) can be important to one’s mental health and physical health.

Of course, a project has to be tailored to one’s lifestyle, availability of time and financial resources. In my case, I am retired, have a bit of time available each day, and have to watch my expenditures closely. The point I make here is that one doesn’t have to have a lot of free time, nor a lot of money to do a project. A project can be as simple as getting involved with the community somehow through a service club, or on your own with a hobby, or making something you think might be of interest to others.

It’s with the latter that “Collingwood...The Game!” came to life along with almost two years of part-time effort.

It took about two years because not all of my focus was on “Collingwood... The Game!” Having written a travel guide called “George’s Georgian Bay” about 20 years ago, I set out to create a game “Georgian Bay... The Game!” I worked on this project along with my wife Nancy and in between household duties, cooking, shopping and walking our granddog (that’s another story, someday!).

Last summer, I realized that with many parts of “Georgian Bay...The Game!” falling into place, I could create a “Collingwood...The Game!” and, perhaps, a “Georgian Triangle...The Game!” We opted for “Collingwood... The Game!” and it became a reality in early December 2024. Then came the challenge of selling it!

What’s Georgian Triangle? For those who might not recall, the name” Georgian Triangle” was once used extensively to promote the vacation area that includes Meaford in the west, Wasaga Beach in the east and includes Blue Mountains, Collingwood and, to the south, Stayner and Creemore. Based on the aforementioned geographic area, I have been developing questions and answers, as well as taking photographs to use in my next board-game creation.

Baked Spaghetti

INGREDIENTS

1 pound ground beef

1 pound spaghetti noodles

1 jar alfredo sauce 16 ounces

1 jar marinara sauce 16 ounces

2 tbsp garlic powder

2 tbsp onion powder

2 cups shredded cheese French breadsticks for serving

DIRECTIONS

1. Heat oven to 350 F

2. Brown and drain ground beef. Cook noodles according to package instructions. Drain noodles; add alfredo sauce and mix well

3. Add marinara sauce, garlic powder and onion powder to ground beef. Season with salt and pepper, to taste

4. Place noodles in 9-by-13-inch baking dish. Spoon beef mixture on top but do not mix in. Cover with shredded cheese then cover with foil and bake 30-40 minutes

5. Serve with French bread or breadsticks.

Baked Broccoli Mac

When you’re looking for recipe inspiration, don’t be afraid to take things back to your childhood with a little home cooking. Even better, now you can enjoy those kid favourites as the main course (with an adult touch, to boot) in this Baked Broccoli Mac.

It’s a warm, cozy solution that pairs with bread and a salad for dinner or can be halved and served as a side.

Servings 5

INGREDIENTS

1 box pasta noodles, such as cellentani, elbow or penne 1 pound

2 cups chopped broccoli

2 cups chicken broth

1 cup heavy whipping cream or half-and-half 2 cups mozzarella

1/2 block pasteurized cheese product cubed

1 tablespoon garlic powder

1 tablespoon onion powder

salt to taste pepper to taste

Topping

2 cups breadcrumbs

1/2 stick butter

1/2 cup grated Parmesan cheese

DIRECTIONS

1. In large pot, cook pasta according to package instructions. Drain well then add broccoli, chicken broth, cream, mozzarella, pasteurized cheese product, garlic powder and onion powder. Season with salt and pepper, to taste. Mix well.

2. To make topping: In bowl, mix breadcrumbs, butter and Parmesan cheese.

3. Pour macaroni mixture into large baking dish then sprinkle with breadcrumb mixture. Bake 30 minutes.
