Wellness Ostrich Meatballs for your Festive Table 1 kg finely broken Ostrich Mince 2 diced onions 250g pitted calamata olives 300g crumbled feta cheese 2 eggs 5g cumin 5g ground coriander 20g fresh coriander 15g crushed garlic 15g mixed herbs 30ml balsamic vinegar 15ml honey

Method Mix all the above ingredients together well and form into round meatballs Bake in oven at 180 degrees for approximately 15 minutes

Sauce 10ml olive oil 1 onion diced 5g garlic crushed 2 tins chopped tomatoes or 200g chopped peeled tomatoes 20g apricot jam 5g oregano 5g mixed herbs Fry onion and garlic in olive oil, then add tomatoes. Simmer for 20 min then add apricot jam and dried herbs. Season with salt and pepper Pour the sauce over the meatballs, garnish with fresh coriander and serve with steamed couscous or brown rice.

Which are your favourite ingredients? Pomegranite Seed and Dried Mulberries, they are so delicious and you can use them in so many ways. I have learnt a lot by working with gluten free flour and realized there are many delicious dishes I can cook that are gluten free. I love using Agave sugar syrup as a sugar substitute, many sweet treats at Wellness Café use Agave instead of sugar.

What did your Granny cook that you still love? Nothing is nicer than my Granny’s Beef Cassoulet – slow cooked beef casserole with butter beans in a delicious gravy.
