With the cooler temps, there is so much to do outdoors - plant the gardens and go to outdoor festivals! There is something happening every weekend in October - are your social calendars synched up? The first date to put on your calendar is Saturday, October 24, Food Day Festival. Many of our favorite exhibitors and workshop leaders will be returning as well as introducing some new people in town, including the newly formed, Georgia Lowcountry American Herbalists Guild. With this an election year, we have invited local politicians to attend. For those of you who have been to Food Day Festival in the past, be sure to invite your friends and neighbors and for those who have not attended, get ready to have a great day in Daffin Park. Since I have your attention with your calendar, there are two more weekends to mark, October 15 - 17, Geekend. Non Geeks are encouraged to attend! The other date is the last Saturday which is Savannah Bazaar. This monthly event combines the elements of Food Day, Earth Day, Indie Arts Market with a dash of live entertainment, art, food trucks. Written by Brad Michael As Savannahians, we live in a region defined by our relationship with water. Even our historical nickname “Coastal Empire” evokes images of hardy seafaring pioneers, harvesting the bounty of the inlets and estuaries that surround us. But in today’s age of globalization, national food distribution services, big box supermarkets, and on-ship flash-freezing, how much of that historic heritage still rings true? How much of the seafood served in our restaurants and homes is truly “local”? I put on my waders and wandered into the surf to find out. Join me in a journey that starts on your plate, and traces our local seafood back to the water in which it was caught. My search for local seafood very quickly brought me to the Wyld Dock Bar, a newer establishment (on the site of the old Bonna Bella Yacht Club) with a reputation for priding itself in serving fresh-caught, local fare. I sat on the titular dock, over the gently lapping water of Country Club Creek, teeming with mud minnows and other tiny baitfish, and got an old-school lesson in sustainability and the art of keeping it local.

When I asked “Why don’t we see more Savannah restaurants focusing on local seafood?”, proprietors/ culinary captains Brad Syfan and Tony Seichrist laid it out for me as simply as possible. “It’s hard,” Seichrist told me. “There’s a lot of groundwork and legwork involved, and it’s too easy to order from a national distributor these days.” Our proximity to one of the busiest airports in the world in Atlanta’s Hartsfield-Jackson means that frozen seafood can arrive in Savannah from all over the world. Regular delivery service from national food distributors makes sure that you consistently have access to the products featured on your menu. There’s no fuss, the price is right, and you never have to worry about running out of product. The next question I ask myself: If it’s so much more difficult for a restaurant to feature locallycaught seafood, why bother? What is the appeal in local seafood at all? It sounds like a silly question; things that are local are inherently better, it’s almost a mantra at this point, but it’s worth asking.

The answer boils down to several factors, but at The Wyld, flavor is king. “Frozen-food can be eaten off-season,” Seichrist says. “But is it worth it? What does it taste like?” Imported fish lacks the signature flavors and textures of locally sourced seafood. Forging relationships with local providers lets a chef ensure he can consistently score “the good stuff”. There’s simply no replacement for the cream of the crop catch, served at its peak. Something that was swimming around the marsh this morning will simply taste more fresh than

given night. Moreover, restauranteurs would have to be willing to explore new options and roll with the tides, matching menus to the season (and sometimes more frequently than that). Following the seasons was once considered traditional eating, but it’s simply not a common practice in most US restaurants anymore. With luck, owners like Syfan and Seichrist can make it popular in Savannah again. Judging by the dishes coming out of their kitchen, they are on the right path.

The second factor that makes locallysourced seafood appealing is the sustainability it brings, in terms of both the environment and the economy. Keeping money around locally means there will be more dollars available for folks to spend locally; it’s the gift that keeps on giving. And as far as the environment goes, let me put it this way: The Wyld doesn’t even like to buy seafood that is harvested too far offshore from Savannah. Every mile away from their dock, “that’s someone’s gas bill you’re paying for, not the fish. That’s pollution in the air.” Now think of fish and shellfish harvested from southeast Asia, as a lot of the inexpensive, frozen seafood you’ll find at the grocer is. produce their food, that care about the consequences of doing it the wrong way, that have a stake in the local community. “Fifty years from now,” Seichrist tells me, “ I want to have fish in the ocean for my kids.” Sustainability also means getting everything you can out of your dollar. It means recycling shrimp shells for compost piles. It means using discarded fish-heads as bait for crab traps that you place and collect. The location of the Wyld affords the staff some unique opportunities. I don’t know of many other restaurants where the executive chefs have a commercial fishing license, but Seichrist and Syfan do. They can push off from their dock and catch what they can’t find elsewhere, at a lower cost, and under the sustainable conditions that they require. All in all, the Wyld Dock Bar is a seafood restaurant that begins and ends in the water, which if you ask me, is the right way to do it.

How Can You Support Local Sustainable Seafood? The best way to support the sustainable seafood movement is to give your business to restaurants that are focused on doing it right. The Wyld is one of many establishments in the area that cares about the impact of their food, and you can find others just by asking a few questions.The next time you sit down for shrimp cocktail at your favorite eatery, ask where the shrimp came from. Talk to your servers, engage the chef, question the clerk at the seafood counter; learn firsthand where your seafood is sourced, and if it was harvested in a sustainable way. Seafood is a business like any other, accountable to the nuance of supply and demand. If we the consumers show our local providers that we demand local, sustainable seafood, if they hear our voices in their restaurants and shops, they’ll have no choice but to supply it.

Written by Jessica Lynn Curtis iriditas (Latin, literally “greenness”) is a word that was frequently used by the abbess Hildegard von Bingen to refer to spiritual and physical health, and the healing power of green things. It’s not every day that your interviewee arrives bearing gifts. But today, Cassandra Nicholson, representing Georgia’s Lowcountry Chapter of the American Herbalists Guild with great viriditas, greeted me with a potted plant in hand – an herb known as American skullcap. From the moment we met, Cassandra exemplified the mission of the GA Lowcountry AHG: to connect plants and people.

I quickly found that skullcap tastes good on its own, as we both pinched off a leaf to eat—and immediately felt calmer. Viriditas. Cassandra attributes the birth of their group to Peter Brodhead and his wife, Janie, who founded Brighter Day Natural Foods in 1978. “The store has really been a hub of education for the community since they opened.” Through this hub, seven people with a mutual love for herbal medicine came together.

My new “connection” is a member of the mint family and comes from a class of plants called nervines. In the herbal medicine tradition, these tonics nourish the nervous system like food.

The group, who are also skilled in homesteading, permaculture, organic gardening and farming, natural building, and fermenting, began meeting on March 1, 2015, without a grand vision of becoming a part of the national guild. But they soon decided they could provide better services to the Savannah community by establishing themselves as a chapter.

“Any time we get frazzled or stressed out, we have this rich tradition of various plants that all actually taste really good in teas and tinctures,” Cassandra explained. Other nervines you may find familiar are mildly calming herbs like chamomile and catnip, and strongly sedative ones like valerian and hops.

The natural choice for chapter president was Peter Brodhead, who says, “Our goal is to create a wide body of people using herbs in their daily life through education and community: from gardening to medicine making, to research in scientific and traditional knowledge about medicinal plants.” The other founding members are Peter’s son and daughter, Ben and Claire Brodhead; Justin Law, MD; Sarah Tuck; Max Buckner; and professional member Patricia Kyritsi Howell. They hope to achieve their joint goal by hosting herb-related workshops and increasing their community outreach. On October 10, from 8 to 9:30 p.m., the GA Lowcountry AHG will partner with the Savannah Bee Company to present a mead-making workshop at the Savannah Bee Company’s 1 West River Street location. According to Cassandra, “Mead is honey wine that has an incredibly long and rich history. - Continued on Next Page WELLF EDSAVA NNA H. C OM | FEED 19

Mead used to be drunk by newly married couples for an entire moon cycle, so that’s why the period after marriage is called the honeymoon – because the couple drank honey wine for 30 days. And metheglins are a type of mead where one uses medicinal herbs and mixes them with the honey wine.” During the workshop, participants will be introduced to the botanicals that will be used in the mead (meadowsweet and lemon balm), and learn their medicinal qualities; they’ll be given the tools and knowledge to make mead in their own home; and they will each go home with two 750 ml wine bottles of their own mead. The cost is a required donation of $50 to $75.

Our goal is to create a wide body of people using herbs in their daily life through education and community: from gardening to medicine making, to research in scientific and traditional knowledge about medicinal plants. The GA Lowcountry AHG will also participate in Savannah’s Food Day on Saturday, October 24, from 11 a.m. to 5 p.m. at Daffin Park. Peter will host a tea workshop to introduce and allow people to taste different teas; and the group will give demonstrations on how to make Fire Cider. ™ A blend of herbs that is highly supportive to the body’s immune system, Fire Cider is an integral part of the herbal tradition. The recipe for Fire Cider was first recorded and popularized in the 1980s by Rosemary Gladstar, the “godmother of herbal medicine.” It is a blend of unpasteurized apple cider vinegar, ginger root, horseradish, onion, garlic, cayenne pepper, lemon, and raw, local honey. And as is the case with all your recipes, it is important to use high quality, organic ingredients. In keeping with a movement known as “Tradition Not Trademark,” the American Herbalists Guild, Rosemary Gladstar, and the herbalist community want people to know they can make this powerful remedy in their own kitchens. “We really want to stick together as a tradition, and the most important thing is not individual profit – it’s carrying the tradition of herbal medicine forward. And everyone is an herbalist – if you’ve boiled water and poured it over tea, you’re practicing herbal medicine. It’s part of our birthright.” -Cassandra Nicholson. 20

Everything You Need to Know About and Why You Need to Be There Written by Alicia Scott As autumn ushers in cooler temps the geek tribe returns to Savannah. In mid-October, 37 speakers, 24 talks, 2.5 days and 300+ attendees will converge at the Guild Hall for the 6th iteration of Geekend. Are you ready Savannah? The annual Geekend interactive conference kicks-off on October 15th and runs through Saturday, October 17th. The sole mission of the conference is to stimulate your mind. And it’s just in time for you to recover from a summer of marathon bar crawling and have a little buffer before the fall food and wine events get started around Savannah. Geared towards connecting entrepreneurs, technology champions and everybody in between, Geekend is easily one of the nation’s most forwardthinking interactive conferences. In a nutshell, “Geekend is the intersection where entrepreneurs, designers, developers, marketers and other creatives meet to share and discuss cutting edge developments and exciting solutions.” You need to be there.

> Who is a Geek anyway? I was inquisitive about what it actually meant to be coined a “geek” so I visited the Geekend Headquarters to conduct a formal inquiry of sorts. According to Emily McCleod, Programs Manager at the Creative Coast, “A geek is anyone who is curious and creative. It’s not just for techies, it’s especially valuable for the people who are non-techies and we want those people to attend,” McCleod promulgated about the reasons why Geekend’s programming is tailored to a broad audience. I played devil’s advocate and asked,“How can a small business owner who wants to make lingerie benefit from Geekend?” “We have a speaker conducting a session on how to land your first 100 customers; an interactive session on social media marketing and a session on how to fail forward,” McCleod noted. Fail forward. Yes, you read it correctly. So if you’re a 24

soap-maker, programmer, or inventor of the newest concept in underwear, you need to be there. The team at The Creative Coast took the helm of Geekend in 2014. Their chief aim for the conference is to create an intentionally interdisciplinary platform that will help entrepreneurs make meaningful connections that will lead to visible success. To facilitate these connections, McCleod and the rest of the Creative Coasters’ have curated a roster of speakers from all over the world who are not only experts in their fields, but most notably work in industries that are on the leading-edge of technology and business. Most importantly, Geekend is specifically targeted to that person who may not be an entrepreneur just yet, but may be dabbling with the idea of starting a business or they may simply have an entrepreneurial spirit. Geekend is a venue where they can take in content specifically pertaining to everything you need to know to take a business from thought to finish.

> More Than Just Another Interactive Conference From venture capitalists to virtual reality, Geekend will deliver on the brain-titillating content. A combination of keynote speakers and panels will offer attendees a smorgasbord of sessions to attend.Though, the most exciting night of the conference is sure to be the opening night, where Geekend’s signature event Pitch Circus will get the 3-day party started. I’m game for anything with the name circus in it. Here’s the skinny. Pitch Circus is a live interactive audience-participating version of Shark Tank.Through a formal process of elimination, a small group of startup hopefuls will have an opportunity to present their business concepts to a group of venture capitalists who have been invited to Geekend.This is one session no entrepreneur should miss. Post Pitch Circus, the opening night ends with music and mixing.

> What’s On Tap? After you recover from the nail-biting excitement of Pitch Circus, an epic Friday awaits. Sessions on building a solid customer base and cutting edge marketing are on tap. Panels and demonstrations on social media and video marketing are sure-fire ways to keep the crowds in awe. And of course at the end of each day there will be plenty of networking, indulging and imbibing. On Saturday Geekend opens up to the general public from 10am-1pm for two workshops specifically geared to include children. The Little Bits Workshop in the Geekend Arcade are both free and parents are invited to bring their children and attend these interactive sessions with them. And kids from the local STEM Academy will be presenting video games they’ve designed. How awesome is that? For attendees sans kids, there are concurrent sessions to choose from that delve deep into the nitty-gritty side of tech for the non-techies. A lunch and learn with some of the big-brained speakers. And then Saturday afternoon slides the conference into home with interactive sessions on everything from virtual reality to healthcare technology. But before all the newly initiated geeks pack their fatigued cerebral cortexes up for the winter, a challenge to get one’s dancing shoes ready, can be found on the final page of the Geekend schedule. What? You didn’t think geeks had after parties?

All geeking aside, Geekend’s true impact is undoubtedly in the infinite number of meaningful connections that will certainly be made during its three-day run.The culmination of talent, innovation, and expertise represented in the line-up is nothing short of phenomenal. Outside the insulated communities of the Silicon Valley, Boston, Charlotte or the like, programming like Geekend is infrequent and sparse across Southeast. The Savannah community has a rare gift in Geekend and this is the reason you need to be there.

From the Farm to the Lunch Room Written by Rhonda L. Barlow, MPH, RD, LD, CLC Chilly October days always bring traditional celebrations of the year’s harvest. This celebration of food also includes a celebration of the educational value of eating the school’s lunch. During the week of October 12 – 16, lunchrooms across Chatham County will hold week long events, activities, and contests that celebrate the National School Lunch Program. The purpose of this week-long school lunch fest is to celebrate all that is tasty and nutritious in the school lunch meal. Thus far this year, the Chatham County School Nutrition Program has served over 8,500 lunch meals to students. This lunch time celebration was officially named the National School Lunch Week Campaign in 1962 by President John K. Kennedy. This began a positive effort to celebrate the benefits of providing lowcost nutritious meals to the nation’s children during the school day. This year’s theme is “School Lunch Snapshot”. The theme encourages students to share positive images of their school lunch on social media. During this week of festivities, look for your child to participate in art contests, Farm to School, taste testing events, essay contests, kitchen tours, school garden carrot planting activities, and student/teacher recipe contests. Planned events, contests, and activities will vary with the school site, so check with your child’s School Nutrition Manager for a list of happenings during this week. Other school celebrations occurring during October include Farm to School Month celebration activities featuring the Rooting for Carrots! resources, Chefs Move to School activities planned on Chef and Child Day (October 14th), and Food Day (October 24th) activities. It’s like an Earth Day - for Food! Food Day is a nationwide celebration of healthy, affordable, and sustainably produced food and a grassroots campaign for better food policies.

Food Day aims to help people Eat Real. The need to reduce food waste and educate consumers about the power they have in solving this problem will be the focus of this workshop. Grow.Eat.Repeat. will discuss ways to reduce waste at home, at work, and at school. Methods for diverting food waste will be discussed as well as methods for creating compost, understanding resource management and material sourcing will also be discussed.

3pm • How to Build a Pallet Garden Join Oxform Studios in this step by step class on how to build your very own container garden, using a pallet, inexpensive materials, and simple tools. Every attendee will also receive a voucher for a free pallet and coupon for other building materials!

Learn how to choose the best approach to get desired results in both indoor and outdoor settings, how to select the optimal mushroom types for growing in the Savannah area. techniques for log cultivation, and other applications of mushroom culture, including mycoremediation, mushroom composting, and lowtech spawn expansion techniques.

The Coastal Empire BeeKeepers Association and The Oatland Island Wildlife Center deliver an overview to keeping bees. Honey bees are fundamental to a successful garden as well as providing the bounty we all find in the grocery store. Recent news headlines regarding the disappearance of honey bees have brought this facinating creature to front and center. This workshop will discuss honey bee biology basics, and an overview of a year in the life of a beekeeper.

The Chatham County Health Department presents a workshop that will focus on promoting the consumption of green vegetables, such as leafy greens that are rich in iron and folic acid. The workshop will include a food demonstration of three healthy snacks featuring green vegetables that kids and parents can make together. By eating green you will build strong bodies and a strong community through local products.

The process of fermentation not only can increase the bioavailability of the nutrients inherent in certain foods but also can improve the digestability of the food material itself by both introducing beneficial bacteria AND kickstarting the process of digestion. The Gerogia Lowcountry Chapter of the American Herbalists Guild will teach participants how to make fire cider, a traditional herbal remedy and antimicrobial drink perfect for the fall, to protect against colds, flus, viruses, and to promote overall immune help.
