Fukuoka produces incredibly fresh karashi mentaiko, (辛子 明太子, spicy marinated cod roe) which is frequently used to complement rice, pasta and even as seasonings in snacks. Packaged mentaiko products like mentaiko mayonnaise are good souvenirs.
Yatai Fukuoka’s food institution, Yatai refer to open-air food stands much like Singapore’s pasar malam. Nowadays, both tourists and locals gather in the big Yatai areas of Nakasu (中洲), Tenjin (天神) and Nagahama (長浜) to soak in the cheery atmosphere while slurping ramen and interacting with the owners.

Harazuru Onsen Fukuoka’s largest onsen region, Harazuru is well-known for the beautifying qualities of its slightly alkaline and sulphuric hot spring water. Most onsen face Chikugo River which hosts cormorant fishing in summer.
