GOURMET SUMMER LOVING Cupcakes, like other classic desserts, can be pretty simple to make. If you have the ingredients, and an hour to spare, it would seem you are pretty well equipped for the job. Thanks to the help of some baking gurus, Caramel has gathered some great recipes to make your cupcakes the best you’ve ever baked!

Red Velvet CUPCAKES

Serving: 4-5 people Time 30-35min Ingredients: a box of white cake mix 1/3 cup of melted chocolate red food coloring

Frosting: 85g of cream cheese 1/4 cup of butter 450g of powdered sugar 2 tablespoons of sour cream 2 teaspoons vanilla extract

Follow the directions on the box, Mix together all of the different ingredients, adding the melted chocolate at the end. Start adding red food coloring. Just keep adding coloring until you get the color you desire. Scoop batter into cupcake tin, for 15-20 minutes.

After baking, let cupcakes cool completely. Beat cream cheese,

vanilla cream cheese frosting. Gradually add the powdered sugar until smooth and creamy, later freeze it to get soft peaks. Frost the cupcakes! To do this, either use a spatula or a Ziploc bag to pipe on frosting.

Chocolate Cupcakes Serving: 4-5 people Time 30-35min Ingredients: 100g butter 2/3 cup caster sugar 2 eggs, lightly beaten

1/2 teaspoon soda 1 tsp vanilla essence 125ml (1/2 cup) milk Buttercream frosting 60g unsalted butter 1 1/4 cups icing sugar 1 tbsp cocoa, sifted 1 tbsp milk

Preheat oven to 180°C conventional or 160°C fan-forced. Line cupcake tins with cases to start the preparation. Using a mixer, cream butter, sugar and vanilla until creamy and until just combined.

Spoon mixture into liners until each case is one third full. Bake for 15-20 minutes. Cool it out completely before frosting. To make the chocolate butter cream. Beat butter until light and and combine well.
