Corn Pudding SERVES 6

IN G R E D IE N T S • 3 Tbs Butter • 2 1/2 cups fresh corn • 1/3 cup sugar • 1 tsp salt • 2 cups heavy cream • 1/2 tsp grated nutmeg • 2 eggs

INSTRUCTIONS • Preheat oven to 350 • Butter 1 and a half qt baking dish. • Shuck corn, remove any silk remaining on corn. Hold the ear of corn upright and remove kernels with the tip of a chef knife. about 3/4s of the way. • Add melted butter, salt and sugar in a bowl along with the corn. • Gently beat eggs,add heavy cream and nutmeg, add corn to the cream and egg mixture. • Pour in baking dish place in oven for about 45 min or until mixture is set. (when it jiggles it is done) • We garnish ours with Andouille Sausage

What should I wear to work? —Mystified in Madison Business casual is a movement to make the work environment more comfortable and less stuffy, but you shouldn’t sacrifice great style to accomplish that. Instead of khakis and polo shirts—the go-to look for many men—try a well-fitted sportcoat (especially if you might see clients), an open collar sport shirt and the right tailored trousers. THE LEVY’S GUIDE ARMANI: A NAME YOU CAN TRUST

If you’ve browsed Levy’s recently, you may have noticed that Armani Collezioni garments are gone. The reason? Giorgio Armani, the name most associated with luxury fashion, has consolidated the brands under the Armani umbrella and now sells suits, sportcoats and trousers under the Emporio Armani label. Emporio Armani is manufactured in the same models and fabrics as the former Collezioni, and every line of jackets, shirts, pants and more is carefully curated by Mr. Armani and his team.

KEEP YOUR SHIRT ON The Gambert name has been synonymous with fine shirtmaking since 1933 when first generation family patriarch, Joseph Gambert, opened a shop in Newark, N.J. More than 80 years later, the family continues to make Mel Gambert shirts in the Ironbound section of New Jersey. Third generation owner Mitch Gambert, who joined the business in 2001, was the first shirt manufacturer to serve as president of the industry trade association, the Custom Tailors and Design Association, serving from 2016-2018. Never afraid to try new ideas and challenges, he has merged old-school artisanship with modern technology and design. Mitch sat down with David Levy and talked about the family’s success, respect and, of course, shirts. David Levy: What are your most important mills for the Mel Gambert line and why? Why so many fabrics? Mitch Gambert: They are all important on different levels. Some offer us the ability to afford the “everyman” an opportunity to buy custom shirts, others provide the full luxury experience and others offer the ability for customers to let a playful side of themselves really shine. The Thomas Mason line by the Albini Group out of Italy is all high-end, beautifully milled woven cottons. Another of our mill partners is Mileta, a hidden gem out of the Czech Republic. They offer the most comprehensive line, and we have a personal relationship with the owner so working with them is personal, not just business. The reason for the sheer amount of fabrics is variety. We offer the most robust line in the industry, covering the basics to the fancies and keeping every customer’s price-point in check. DL: Why are the fabric-buying process, locations of your fabric suppliers and mills important? MG: We look at fabrics on a year-round basis. Our mills send us everything that is up and coming. We buy with an eye on industry trends but we also buy with a gut reaction to some fabrics, because sometimes you just can’t quantify a hunch. The geographic locations of mills are super critical to the process of making woven cotton. Just like with dough used in baking, water is the key ingredient in the finishing process of woven cotton and woolen goods. The technical aspect of weaving can be replicated anywhere with proper research and hard work, but the quality of the water used to finish the goods cannot be replicated, therefore the region of the world where fabric is made makes all the difference. DL: What are the different weaves and qualities of cotton shirt fabrics? MG: To simplify, there are basically four types of weaves: broadcloth, oxford, twill and jacquard. A broadcloth is a

typically flat/smooth very clean finished hand. Oxfords tend to be a bit grainier and have body; they don’t always have the best drape, but they do soften up over time. Twills tend to have the most drape, have the softest touch and in many circles are regarded as the best type of weave. Jacquards, named after Joseph Jacquard, are typically referred to as complex weaves and usually incorporate a few fabric elements, such as combining oxfords and broadcloths in the weave pattern. DL: Explain the process to make a no-iron shirt and why Mel Gambert does not offer these fabrics? MG: Most no-iron shirts are treated with chemicals that are “cooked” into the fabrics after the shirt is made, ensuring every component of the shirt is “no-iron.” This is an easier process to do with ready-made garments because you have huge batches of shirts that are processed together, unlike custom shirts which are cut individually. In addition, we do not have the facility to do the no-iron process, and doing it tends to take away the luxuriousness of woven cotton. There are processed 100 percent cottons that do offer an easy-care iron process, which is different than no-iron. No-iron generally gives the illusion you can stuff a shirt in your travel bag, pull it out when at your destination and throw it on and look perfect. Easy-care means a quick iron is still necessary, meaning a 20-second press versus a 60-second press. DL: A client is building a new wardrobe of dress and sport casual shirts. What should he purchase? MG: I always recommend a few staples: whites, solid blues, basic blue checks, maybe a few purple/lavender or pinks—things that can be worn repeatedly without your peers saying, “You’re wearing that bold check shirt again.” You also should get a couple fancies or fun shirts because nothing in your closet will appeal to you again once you have your fit and style preferences down pat. Once your stable is built, you should experiment with more playful/ bold patterns. And, of course, I suggest made-to-measure shirts as they are absolutely an expression of the wearer. DL: Tell us about the women’s cut/sewn shirt business. MG: Women tend to buy a little differently. They are more inclined to buy one shirt for a particular outfit, but fit to them is as, or more, important than it is to a man. Some women may want to accentuate every shape and curve; others may want to hide them. All sorts of things come into play—shirts being worn with high-rise pants or low-rise pants, what sort of undergarment is going to be worn and more. But these can all be considered and accommodated.
