ong Hey Fat Choi! In keeping with our annual tradition, this month we honour Chinese New Year with a feature on the lucky foods and rich customs surrounding this special occasion. To capture the flavours of the season which commences February 19, Bonnie Black and Suzanne Hartmann have gathered recipes from (and stories about) local establishments that will celebrate this symbolic start of spring – vegetarian style. What yummy fun. In her column this month, Kim Elkington predicts that this year will bring us the inspiration and power needed to manifest our hearts’ desires in the world as we evolve into more compassionate and conscious beings. She advises: “While you explore dreaming and conjuring... why not also practise being the person you want to be – unplugged and outside more often, more generous, non-judgmental, helpful, caring, grateful, and loving.” Hopefully this year’s astrological influences will also give us courage to take responsibility for the role that we’ve played in the widespread pollution of our air, water, and food. For years we have bought into the idea that squeaky clean dishes, lemon scented towels, and minty fresh underarms are the best recipe for a happy home. But behind this illusion lurks the reality that chemical detergents and toxic household products are not only making us very sick,

they’re also poisoning everything in our ecosystem. This month Michael Downey brings us news of a new study showing that Triclosan, a common ingredient in personal care and household products, has been linked to development of liver tumours and cancer. Yikes!! And then there’s the sickly sweet laundry detergents that are loaded with carcinogens yet widely used by unsuspecting consumers because manufacturers are not required to list ingredients or health warnings on the labels. (Sometimes when I go out on my porch, I’m just about knocked over by the fumes coming from my neighbour’s dryer vent.) In fact, “Researchers have found that dryer vents can emit more than 25 volatile organic compounds (VOCs) when scented laundry detergent and dryer sheets are used, including seven VOCs classified as hazardous air pollutants,” according to Mother Earth Living (http://tinyurl.com/l2ql475) For those of us who are becoming ever more conscious consumers, these toxic products are no longer acceptable. Regardless of the price tag on the box, the cost of using these products is expensive to our health, and we cannot afford it anymore. Indeed, a critical part of disease recovery and optimal wellness must be the detoxing of our homes and office environments. This month, some of our star writers are back in action: Helke Ferrie keeps the spotlight on the vaccine industry, and Dr. Zoltan Rona shares his top 20 favourite longevity supplements for 2015. A sharp rise in autism cases was recorded in 1981 when the MMR vaccine began to contain the human fetal cell line WI-38, and other retroviral materials, in addition to mercury. The National Childhood Vaccine Injury Act was subsequently passed – not to protect children, but to protect vaccine manufacturers from liability if injuries and deaths were reported. Simultaneously, the Centers for Disease Control was put in charge of the job of promoting and mandating the use of vaccines as well as deciding whether the products were safe and effective – all without independent oversight or verification. When additional MMR and other vaccines were added to the schedule in 1988, increasing the original 11 to today’s 60+, another sharp rise in autism cases was recorded. Now the U.S. government’s Vaccine Court was established, entirely funded by taxes (not by the manufacturers whose products are taken to court). By 2009, compensations were awarded in 1,322 cases of vaccine-injured children, adding up to approximately $1.8 billion. Making sure the industry did not take the hit, in 1986 the U.S. Congress passed the Omnibus Health Bill (S. 1744) which exempted the pharmaceutical industry from all liability for current and future vaccines. The fallout from this medical foreign policy can be observed in China where autism was unknown until 1999 when U.S. vaccines were introduced. Now China has close to two million diagnosed autistics. North American vaccines still contain aluminum, chemicals like polysorbate 50, and other known neurotoxic substances. By 2005, the statistics showed that half a million U.S. children were diagnosed as autistic (the Thimerosal Generation: 1989-2003) with 40,000 new cases then being reported annually. And scientists like Laura Hewitson were reportedly reproducing autism in non-human primates by using Thimerosal in the same quantities that were present in vaccines. In 2007 the first case, alleging that MMR had initiated autism in a specific child, was won in the U.S. Vaccine Court. The ruling stated: “The MMR vaccine at issue actually caused the condition,” concluding that the child “would not have developed this type of brain damage if he had not been given the MMR vaccine.” As of 2009, about two out of five such ASD cases claiming a causal relationship to the MMR vaccine have been won; that is 40% of the cases heard. Close to 5,000 additional cases are yet to be heard. In addition, autism spectrum disorders have now also been observed with the Hepatitis B vaccine, given at birth, and some of those cases are also going to court. In 2014, the Italian Supreme Court ruled on two separate cases (one on MMR vaccine, the other on DPT and Hep B), confirming that autism was initiated by those vaccines. The court relied especially on a secret 2011 report compiled by GlaxoSmithKlein for regulators but not available to researchers and the public. The Italian Supreme Court took a dim view of this collusion between a pharmaceutical company and regulatory authorities. The Supreme Court 12

AUTISM: A MULTI-FACETED DISEASE

Understanding the initiating causes for ASD is not simple because additional triggers have emerged, mercury being the first. The article failed to report the finding showing that African-American boys have a 340% higher incidence of autism than white boys. One of the reasons may be the relatively low levels of Vitamin D3 in black boys. To date, there are several known triggers of autism. One of them is Lyme Disease in pregnant women. ccording to Chinese astrologers, the 2015 Chinese New Year will herald a new era of heightened public awareness about protecting our fragile environment and embracing a cleaner and greener lifestyle. Commencing on February 19, the Year of the Goat will also bring a renewed personal commitment to healthy living and optimal nutrition, which will influence significant growth in the organic and natural foods industry. According to Neil Somerville’s latest book, Your Chinese Horoscope 2015 (HarperCollins Publishers), the Goat year also favours relationships and family, so he predicts that many will find love or friendship, improve relationships, marry, or start a family. Overall, Goat years offer hope, and the underlying trend will be one of growth and a sense of moving forward with agreements of historic proportion being reached, and solutions found to some of the world’s greatest concerns. Individually, we can all look forward to greater balance in our lives and realization of our inner potential.

Lucky Foods and Symbolism Chinese culture is rich with symbolism. The name of a dish being served and/or its ingredients will sound similar to words or phrases that refer to wishes expressed during Chinese New Year. Certain dishes are eaten for their symbolic meaning and ‘lucky’ food, served during the 16-day festival season, especially on New Year’s Eve, is believed to bring good luck for the coming year. 16

Not only do the dishes themselves matter, but the preparation, ways of serving, and eating them also mean a lot. The most common Chinese New Year foods include dumplings, fish, spring rolls, and niangao (glutinous rice cake). Here’s a small sampling of foods and their symbolic meaning: Bamboo shoots – wealth, new start; bean sprouts – positive start to the new year; Chinese cabbage (bok choy) – prosperity, luck; duck – fertility; egg rolls – wealth, gold; fish (whole) – an increase in prosperity; glass noodles (Chinese vermicelli) – long life; jujube dates – prosperity, fertility; oranges – good fortune, gold; oyster – good fortune in business; sticky rice – family coherence; seaweed – good luck, exceeding wealth; rice symbolizes a link between heaven and earth.

Symbolic Dishes Chinese New Year is the most important festival in the Chinese calendar and comes with traditions originally initiated as harvest celebrations to give gratitude for the year’s crops. Food is the focus and the main preoccupation of CNY. Below are some of the symbolic and auspicious dishes and foods that are served in the hope of starting the new year right:

• Nian gao (year cake): This glutinous rice-based cake is eaten for good luck. Nian gao is also a homonym for ‘higher year’ – meaning to rise in status in the coming year. • Yu (fish): Yu, the Chinese word for ‘abundance’ makes fish the inevitable star of any CNY meal. A whole freshwater fish with the head and tail on symbolizes the year from beginning to end. However, tradition also recommends deliberately leaving some of the fish uneaten to represent the ‘surpluses’ sure to appear in the coming year. • Iao zi (Dumplings): Representing ingots, or money, dumplings eaten at midnight will usher in wealth, it is believed. In Northern China they are made with a soy-ginger cabbage and either a pork or a root vegetable filling. A gold coin may be hidden in one of the dumplings to bring extra luck to the eater. • Fatt choy ho see (black moss with dried oysters): This vegetable dish is studded with black moss (fatt choy – which means ‘strike it rich’) and braised dried oysters (ho see – signifying ‘good things’). full name of this dish sounds like ‘prosperous in business’, and is served casserole-style with lettuce (sang choy – ‘rising fortune’). • Chang shou mian (longevity noodles): The longer the noodles (‘silvery threads of longevity’), the stronger the wish for a long, healthy life. Adding mustard greens to the noodles invites a long life for parents. Local Traditions In Toronto, we found numerous examples of healthy and vegetarian celebrations planned for Chinese New Year, and offer them here to inspire you to join the celebration. On a recent visit to taste the food and find out what’s being planned for their Chinese New Year menu, we feasted on flavourful meals and then begged the proprietor for recipes. 6 small pieces dry black moss 6 pieces bok choy 8 leaves nappa cabbage, chopped 10 snow peas, fresh or canned Seasonings: 3 Tbsp sunflower oil 3 Tbsp light soya sauce 3 Tbsp dark soya sauce 2 Tbsp soy paste 2 Tbsp sesame seed oil Pinch of coconut sugar 2 cups vegetable stock 1 Tbsp ginger, minced

Rehydrate all dry ingredients (bean curd stick, shiitake mushroom, red date, mung bean noodles, wood ear, cloud fungus, lily flower, black moss) in water until soft (approx. 30 minutes). Cut shiitake mushrooms and red dates into halves, and glass noodles and bean curd sticks into 2 inch strips. Sauté minced ginger and shiitake mushrooms on medium heat for 2 minutes. Add remaining ingredients (except for glass noodles and snow peas) and cook for another minute. Add vegetable stock and all seasoning into the wok/ pot, cover and simmer. Stirring occasionally, cook until sauce thickens. Toss in pre-soaked glass noodles (they will dissolve if added too early). Add snow peas last in order to retain their bright green colour and crunchy texture.

Gluten-Free Ginger-Sesame Vinaigrette This simple salad dressing can be whipped up easily with a few ingredients and can be kept refrigerated for a week or two – a refreshing and aromatic dressing for any salad.

hen I was a kid growing up in the rural woods of Muskoka, my grandma had a cure for almost every common ailment. Folks would come from miles around to seek her advice for treating their health complaints. Sometimes a quick inspiring read is all I need to pick me up. Other times, I’ll take her advice and prepare a cup of herbal tea or a special tonic. In my book, preparing one of her old prescriptions is the next best thing to having grandma care for me in person. Of course, she would always recommend that folks who were feeling poorly due to unknown causes seek the advice of a medical practitioner; that sound advice should still be followed today! But for the common upsets of daily living, nothing beats these natural old world cures. Next time you’re under the weather, try one of the remedies below and see if you don’t immediately feel better. HOMEMADE HERBAL COUGH SYRUP

Grandma has recorded many recipes for homemade cough syrup; this one is my favourite. It seems to ease the cough soon as it is taken. To make, add 3 cups fresh mixed herbs or 1/2 cup dried herbs into 2 cups of water. Herbs to choose from are sage, thyme, rosemary, parsley, lavender, oregano, 24

borage and mint. You can also add dried plantain leaf, crushed dried clover blossom, chamomile flowers, dried raspberry leaves, ground wild ginger rhizomes or fresh grated or dried commercial ginger root to the herb measure. Bring mixture to a boil, simmer about 20 minutes or until reduced to half. Remove from heat, cover and steep until cold. Strain liquid into clean pan. Put back on stove and add 1 cup of creamed clover honey. Heat until blended. Cool. Pour into sterilized bottle and cap. Take 1 tsp as needed. Store the cough syrup in a cool place and it will save indefinitely. HERBAL TEAS AND INFUSIONS

Chamomile Tea for Aiding Digestion and Warding off Heartburn – This fragrant tea is reputed to aid digestion and should be served before mealtime. To make, put 3 Tbsp fresh chamomile flowers or 1 Tbsp dried flowers into a warmed teapot, cover with boiling water and steep for 5 minutes. Strain into a teacup. It also alleviates mild nausea, so is good for easing morning sickness in pregnant women as well as seasickness in travellers. Sage Tea for Sore Throat, Upset Stomach and Gas – To make sage tea from the fresh plant, put 2 Tbsp fresh sage leaf or 1 tsp dried plant in a heated teapot and cover with 1 cup of boiling water. Steep 5 minutes. Add lemon if using as treatment for sore throat. Sweeten with honey if you

wish. In China, sage tea is recommended for many ailments including bad nerves, ulcers, liver, kidney troubles and to reduce fever. Grandma notes that cold sage tea can be used as a cleansing wash for cuts, sores and wounds. It can also be used as a hair rinse, in which case I usually Peppermint tea is a brew it up a little stronger. It refreshing beverage for adds shine, helps prevent cold sufferers in winter split ends, and leaves hair smelling naturally clean with no trace of the heavy fragrance often found in commercial rinses. Thyme Tea for Cough and Bronchitis, and Oregano Tea for Sinus – Thyme makes a comforting cup of tea that is useful for breaking up coughs associated with bronchitis. It can be made by steeping 2 Tbsp fresh plant or 1 tsp dried plant per cup of boiling water for 15 minutes. Oregano tea is a good treatment for sinus congestion. Make it the same as you would thyme tea. A blend of the two herbs makes a potent tea for fighting any cold or influenza virus.

Dandelion Tea to Boost the Immune System – Grandma writes that this tea is good for warding off cold and flu. It is also noted as being a good cleanser for the intestines and helps prevent bloating from overindulgence in rich foods (good to remember at holiday time). To make the tea from fresh plant, simply put a handful of fresh picked, washed flowers in the teapot, cover with boiling water and steep for 5 minutes. To make it out of dried plant, use about 2 Tbsp dried flowers per cup of water. The tea can be sweetened with honey and served hot to ward off cold and ‘flu in winter, or served cold with a bit of lemon to cool down the body in summertime.

are made. Clover flowers can be steeped fresh but the tea is more fragrant when made from dried flowers. Clover flowers can be dried by spreading them on a sheet of clean cloth or waxed paper and drying them in a warm sunny place until the moisture is gone, about 2 to 3 weeks. To make, use 1 Tbsp dried crushed flowers per cup of boiling water. Sweeten the tea with clover honey if you like. Mint Tea for Bloating, Gas, Colds and ‘Flu – Garden and wild mints make delightful teas that are very good for treating bloating and gas caused by gas-producing foods such as dried beans and lentils. They are also wonderful for the sheer pleasure of drinking, and exert a cooling effect on the inflammatory effects of colds and ‘flus. Wild mint or garden mint, peppermint, spearmint, and lemon balm are all delightful in the teapot. Use a small handful of fresh plant per cup of boiling water or 1 Tbsp dried plant. Lavender Tea for Depression, Insomnia, Headaches – Nothing is more uplifting than catching a whiff of lavender in the summer breeze. The good news is, you can grow lavender in your indoor herb garden all year round to fill your room with the calming scent. Of course, you can also dry the excess bounty from your summer herb patch to use as a picker-upper whenever you’re feeling down and out, can’t sleep, or are suffering from headaches caused by stress. To make lavender tea, use 2 Tbsp fresh lavender or 1 tsp dried plant per cup of boiling water. Steep 15 minutes. For headache, inhale the steam before drinking the tea. If you are prone to getting travel or motion sickness, or are nervous about getting stomach and bowel infections while traveling and eating away from home, a teaspoon of unpasteurized organic apple cider vinegar stirred into a glass of water and drunk half an hour before mealtimes helps ward off bacteria that causes upset Chamomile tea is a stomach and diarrhea. To soothing digestive aid, make the drink more palat- but not recommended for able, especially for children, ragweed allergy sufferers it can be sweetened with honey. It’s an easy regimen to follow and it works. Brandy Posset for Sleeplessness – Grandma warns that this relaxing posset should not be given to children but works very well at helping to induce sleep in fretting adults. The posset should be sipped slowly before bedtime. It calls for 3/4 cup of milk to be scalded. Add 1/4 tsp grated lemon rind, 1 Tbsp honey, and simmer until honey is dissolved. Stir in 1/4 cup brandy and heat through. Strain into cup and take upon retiring to bed. Rose Hip Cold Prevention Medicine – “Drink a cup of rosehip tea everyday all winter long and you'll never catch a cold.” This is preventive medicine that’s easy to swallow and since rose hips are so plentiful and easy to gather, it’s old advice that I live by. Rose hips are at their best for gathering in the autumn after they have been nipped by frost. Gather the hips, thumb out the seeds and discard as they contain tiny bristles that can irritate the mouth and stomach if eaten. Spread on cloth and let dry in warm place until they are shriveled. Or you can dry the whole hips and strain the tea, if you’d rather. Or buy dried rose hips at health food stores. Rose hips contain more vitamin C than oranges and are a rich source of iron, calcium, and phosphorous. They make a very nourishing cup of tea. Put about 3 Tbsp dried hips in the teapot and cover with boiling water. Steep 15 minutes, and drink. When the teapot is empty, I always sweeten the hips with honey and eat them for good measure!
