As we approach Mandela Day 2015, we look to his life and legacy for guidance on how to TAKE ACTION, INSPIRE CHANGE and MAKE EVERY DAY A MANDELA DAY. His words seem to resonate even more at this time of year, as we pay tribute to Madiba’s memory and his challenge to make a difference in the lives of those around us. This is no easy task, and it is all too easy to get swept away by the humdrum of our daily tasks and deadlines. This is why it is so important to have dedicated days, like Mandela Day, where we can take stock of what we are doing to promote action and where we can make a change. It is the sentiments communicated on Mandela Day that speak to the core of the Vital Foundation and what it stands for. For this reason, 18 July is one of the most important dates on the Vital Foundation calendar. All our messaging and efforts will be directed to the public to join the Foundation, so real transformation can be enacted on this day and

every following day. Many would argue that a real impact can’t be made on just one day; however, it can also be argued that it can take just a moment to change a person’s life. VITAL FOUNDATION CLOSE-UP: PUMPKIN MINISTRIES

L

ouise and Mark Wilkinson opened their home and hearts to abandoned, broken and orphaned children that no one else wanted. This couple embraced the challenge, and their home is now known as Pumpkin Ministries. As of January 2015, they were officially registered as a section 18A company with Public Benefit Organisation (PBO) status, which

means they rely on donations from all sectors of the community. “Our lives were turned upside down. We went from living comfortable, uncomplicated lives, to opening our hearts and lifestyle to ‘broken’ children with messy backgrounds that demanded our time, love, energy, resources and challenging our capacity,” says Mark.

“When you start out, you think you are going to change these kids’ lives, but then you soon realise you are the one who ends up being transformed.” An experience with one little boy particularly touched their hearts. Jeffrey* hardly spoke when he first arrived, as he no longer trusted adults. The scars on his body from the abuse he had endured moved *Not his real name.


Mark and Louise to tears whenever they smeared cream on it. When children have experienced trauma of this nature they often have no words to express the pain and the horror of what has happened to them. This was the case for Jeffrey. In situations like this, where children are unable to express what they are feeling, their bodies do it for them. This can manifest in panic attacks, bloody noses, vomiting, hiding or cowering in dark corners. Jeffrey cowered every time an arm was raised to embrace him. This slowly

began to change over time and eventually Jeffrey was able to talk, play and even laugh. A turning point for Louise and Mark was the day he came home with a picture he had drawn with the words “I love you Mom” written on it. That was a moment the couple will never forget. A VITAL PARTNERSHIP

FOR CHANGE V

ital Health Foods has been appointed developmental partner of the 2015 Sanlam Cape Town Marathon, taking place on 19 and 20 September 2015. Vital Health Foods’ role will be to assist with the development of the sport in South Africa, as well as to consciously raise awareness on the continued fight against abuse. The Vital Foundation will be one of the three beneficiaries to receive proceeds raised on the day.

After being awarded the coveted Silver Label status by the International Association of Athletics Federations (IAAF) – the first marathon on the continent to be awarded this classification – the Sanlam Cape Town Marathon organisers have set the challenge to reach the IAAF’s Gold Label status for the Sanlam Cape Town Marathon. A significant milestone has already been reached towards the achievement of the Gold Label status, as it is one of the first sporting events in South Africa to be declared carbon neutral. Sanlam has played a pivotal role in this process through the purchase of carbon

credits traded on a JSE platform using existing commercial and financial infrastructure. The platform and the carbon offset trading were showcased for market readiness at the JSE in January. Marathon brand ambassador Elana Meyer adds “The Silver Label status puts the Sanlam Cape Town Marathon on the race calendar for the top tier international runners in 2015. We are excited to be planning a spectator-oriented event over the Heritage Day weekend.” The Sanlam Cape Town Marathon brings together a range of runners, from social joggers to elite athletes, in a festival of running through the streets of the Mother City. The classic 42.2 km marathon (qualifier for Old Mutual Two Oceans and Comrades ultramarathons) takes centre stage, followed by a 10 km peace run, a 4.2 km community fun run, and a 22 km and 11 km peace trail run.

Merentia, Candice, Meg and I were collected from the Waterfront by Eddie of SA Forest Adventures and our first stop was Hout Bay for a sandboarding session. It was a perfect summer’s day in Cape Town with blue skies and not a breath of wind. I was thankful for the gentle slope and beginner’s lessons! Next stop was a visit to the penguin colony in Betty’s Bay, driving via the scenic and incredibly beautiful Clarence Drive.

After a lovely seaside lunch in Hermanus at Cafe Paradiso we headed to the SA Forest Adventures base camp in the Hemel en Aarde Valley. We got kitted up for ziplining which was definitely the highlight of the day for me. With safety harnesses and two experienced guides on hand, I felt safe at all times. We ziplined through the poplar trees and you get to choose your speed. Even though I’m scared of heights, I found myself flying from platform to platform. What an exhilarating experience! Our last adventure for the day was a guided quad bike tour through the vineyards and fynbos up into the Fernkloof Nature Reserve for a breathtaking view over Hermanus. I’m not a fan of quad bikes so this was my least favourite part of the day, but the scenery still made it worthwhile. A big thank you to VÖOST for organising an amazing day out!”

My sister recently volunteered at one of South Africa’s big cycling races. To do this, she went through a rigorous application process, paid an amount of money that could have bought her a relaxing week’s holiday, and worked long hours doing a very physical job for seven days. “And you paid to do this?” I asked when I saw her exhausted but exhilarated face on day six.

It turns out that doing good nourishes the giver. Research shows that people who serve others as volunteers report greater happiness and better health. These volunteers often experience what has been termed ‘the helper’s high’ – the warm glow that seems to accompany giving, which results in feelings of calm and mild euphoria, an endorphin-fuelled state similar to the ‘runner’s high’.

We recently experienced the devastating effects of a tragic fire in Cape Town. Firefighters, of whom many were volunteers, worked tirelessly around the clock, placing themselves on the line to protect people, animals and vegetation. The conditions were harsh: long hours, extremely hot conditions (one of the days being officially the hottest day in 100 years, peaking at 42 °C) and dangerous circumstances as the loss of vegetation caused boulders to dislodge and roll down the mountain. Volunteering is often hard, thankless and unglamorous work. So why is volunteering so popular?

Donate blood or your hair. (Foundations use the latter to make wigs for cancer patients.) Leave a co-worker his/her favourite treat on his/her desk. Never tell him/her that you did it. Leave your change in the vending machine for the next person. Visit someone who is sick. Post a handmade card to someone and tell them how you appreciate them.

Giving reduces your risk of depression because it elicits feelings of gratitude that is integral to happiness, health and social bonds. It helps to shift your focus outwards onto others’ problems instead of inwards onto your own.

Donate old sports equipment or books to the local school or library.

There is also compelling evidence that giving lowers rates of heart disease, lowers blood pressure, reduces excessive stomach acid and boosts the immune system.

Praise or thank your boss or your child’s teacher.

So, it is indeed better to give than to receive. Become involved in your local community. Together, we can change the world, one healthy step at a time.

When you’re on a crowded train or bus, offer your seat to an elderly or disabled person or a pregnant woman. Let a fellow driver merge into your lane. 011

DEBUNKED Since the advent of the Internet and social media platforms, the world of nutrition has exploded into a complex jungle of information. Along with being exposed to the latest research, the opportunity for misinformation is also very real.

very day new research reveals the latest super-food or ingredient. Trying to sift fact from fiction, however, is a challenge as nutrition myths abound. Let’s debunk a few of these.

wholegrain over refined carbohydrates is the aim. The amount and what you select to put on it will also determine whether they are going to be fattening.

MYTH Toasted bread is less fattening than untoasted bread. MYTH Eggs are bad for your heart. MYTH Hot water and lemon in the morning helps you to lose weight. FACT There is no scientific evidence to show that this combination helps you to lose the weight or ‘melt’ the fat. Drinking this in the morning will definitely help start your bowel movements, and studies have demonstrated that drinking water may help weight loss attempts. The lemon juice will provide valuable antioxidants but has no fatfighting properties.

FACT Recent studies have shown eggs to be heart-protective. The fats we should be concerned about are trans and saturated fats which lead to elevated LDL (bad) cholesterol levels. Eggs, in fact, have no trans fats and are low in saturated fats. The cholesterol they contain does not impact on blood cholesterol levels. However, if you do have a heart condition and elevated levels, ensure you do not eat more than one egg daily.

MYTH Fruits are high in sugar and therefore fattening. FACT MYTH Carbohydrates are fattening. FACT When carbohydrates form part of a balanced eating plan they can also aid in weight loss. The type of carbohydrates being consumed is important; selecting

Depending on the ripeness of the fruit, sugar content can vary. However, the natural fruit sugar called fructose found in fruit does not have the negative effects that sucrose has on the body. Also, they do not contain fat and therefore are easier to burn off when eaten. Fruit can be fattening if eaten in large quantities so portion control is important.

FACT Toasting bread cannot change its kilojoule content. When you pop bread into a toaster, it merely causes the Maillard reaction – a chemical reaction that turns the top layer of your bread brown – but kilojoule content will remain the same.

MYTH Brown sugar is healthier than white sugar. FACT Most people assume that like other brown carbohydrates (bread, pasta, flour), brown sugar is healthier. The only difference between the two is that to get brown sugar, the molasses extracted from the sugar when being refined, is added back to make the sugar brown. Molasses does contain a few minerals, but the quantity is so small the benefits are not significant. 013

FACT Frozen fruit and vegetables are often more nutritious due to the fact that they are harvested and flashfrozen as soon as possible, thereby locking in the freshness and nutrients. Fresh produce is usually harvested, stored, then transported and then stored again for purchase. The storage and transport can often diminish the nutritional content of produce before it reaches you. It then can be further diminished depending on how long and where you store it and how you prepare it.

MYTH Skim, low-fat and full-cream milk is all the same. FACT People often say that it’s just a marketing ploy and all milk contains the same amount of fat. The dairy industry is regulated and the label claims are strictly enforced. Each variant does offer a different amount of fat.

OSTEOARTHRITIS Also known as degenerative joint disease or degenerative arthritis, osteoarthritis is the most common chronic joint condition. It is a result of overusing the joints and most commonly affects people when ageing. It can also be a result of demanding sports, where joints can get injured, or obesity, where the added weight puts pressure on the joints. Osteoarthritis is most common in the knees, hips, feet and spine – the joints that bear weight – as the cartilage gradually wears away. When the joint is moved it becomes painful, and in some cases you can even hear a grating sound of the roughened cartilage rubbing together.

RHEUMATOID ARTHRITIS This, the most common type of inflammatory arthritis, is an autoimmune disease. This means that the immune system attacks parts of the body, and for unknown reasons the joints are the main areas that are affected by this. Symptoms can come on gradually or suddenly and are often more severe than osteoarthritis, causing pain, fatigue, loss of appetite and stiffness. It is also common to experience swelling in the hands, wrists, elbows, shoulders, knees, ankles, feet, jaw and neck. Rheumatoid arthritis pain mostly occurs in combinations of several joints, like the hands, knees and feet, although sometimes the pain occurs only in one body part.

air loss as well as dry and brittle hair may be the result of many factors, including stress, hormonal changes and nutrient deficiencies. Female pattern hair loss (FPHL) is characterised by the decrease in hair density and is commonly found in women after puberty. FPHL is believed to affect up to 50% of women over 50 and most commonly involves the crown and the frontal scalp. The reasons for FPHL are not completely

understood; there seems to be genetic factors but hormones, circulation and inflammation seem to play a role in this condition. FPHL is often accelerated or exacerbated by acute stress, weight loss and pregnancy. Because there are so many contributing factors, there is no simple single treatment for FPHL. However, nutrition undoubtedly plays a key role, as malnutrition is known to compromise hair growth and condition.

SUPPLEMENTATION CAN REDUCE HAIR LOSS

Recent research made a breakthrough in showing how supplementation can reduce hair loss. A study published in the Journal of Cosmetic Dermatology reviewed the effects of supplementation on hair growth, hair density and hair thickness after six months. A group of 120 women aged 18 to 65, who suffered with stage 1 hair loss, received omega-3 supplements from fish oil, omega-6 from seed oil, Vitamin C, Vitamin E and antioxidants for six months.

CHICKEN KEBABS IN CHUTNEY CHECKLIST KEBABS

500 g chicken mince 1 medium onion, finely chopped ½ punnet mint leaves, finely chopped ½ punnet coriander leaves, finely chopped 3 sprigs of fresh thyme 1 teaspoon ginger and garlic paste 3 finely sliced green chillies 1 teaspoon curry powder ½ teaspoon jeera (cumin) powder 1 egg, beaten 1 slice of bread (optional) salt to taste 2 tablespoons oil

1 tablespoon cooking oil ½ teaspoon black mustard seeds 1 medium onion, finely chopped A sprig of curry leaves ½ teaspoon ginger and garlic paste ¼ teaspoon turmeric powder 2 teaspoons hot curry powder 4 large tomatoes, pureed with skins on 1 teaspoon rough salt Coriander for garnish

METHOD

Place all the kebab ingredients into a mixing bowl and mix together to combine ingredients. • Using a tablespoon, form ball-like shapes out of the mixture. If it is too soft, then the slice of bread can be dipped in water and mashed into the kebab mix. Continue until all the kebabs have been formed. • Heat a non-stick frying pan, add oil and brown the kebabs. Once you have browned them, remove from heat and set aside. • In the same pan, add the

mustard seeds. When the seeds start popping, add the onion and curry leaves. Once the onion has browned, add ginger and garlic, turmeric and curry powder. Fry for a few seconds. Add the tomatoes and allow to cook on medium heat for 20 minutes. Add the kebabs to the chutney and allow to cook for a further 10 minutes to allow the kebabs to cook through. Season with salt, garnish with coriander and serve with whole-wheat rotis. 021

CHICKEN PARMIGIANA CHECKLIST • • • • • • •

4 chicken breasts Salt Pepper 1 tablespoon olive oil ½ cup grated parmesan ½ cup grated mozzarella 2 cups of readymade tomato pasta sauce

METHOD • Flatten chicken breasts to ½ cm thick, by placing them between cling film and bashing out with a rolling pin. Once they are the required thickness, rub in salt, pepper and olive oil. • Sauté and seal the chicken breasts in a medium to hot pan. Once browned, remove and set aside. • Layer an oven-proof dish with chicken breast pieces, pour over the sauce and sprinkle the grated cheeses over it. • Place in a pre-heated oven at 180 °C and bake for 30 minutes. • Serve over a bed of whole wheat pasta or enjoy on its own with a side salad.
