Ballad Brewing By Vickie Holt

For a hundred years, Danville Virginia was home to the biggest textile firm in the South. Union interference and the import of foreign products, however, began sending Dan River Mills into decline as early as the 1960’s. Eventually, in 2004, the company went into Chapter 11 bankruptcy and the unemployed workers began abandoning the residential areas. Danville itself fell into decline, becoming more and more deserted. Even the former tobacco industry buildings were left vacant. But thanks to property developers Garrett Shifflett, Ross Fickenscher, and their team, Danville is getting a new breath of life. Director and Ownership Team Member, Aly Fickenscher, tells us that many of the old tobacco warehouses were still in very good shape. They were structurally solid and ripe for renovation. The team’s first project was to convert a former tobacco storage building into the Pemberton Lofts. They also bought an historic tobacco-drying building and began converting it into another residential location; the Continental Lofts. With all these great new places to live in the heart of Danville, Shifflett and Fickenscher turned their thoughts toward community development. It was time to create commercial properties that would give people a reason to come back. Aly says the whole team have always appreciated craft beers, and they’d been fortunate enough to see how craft breweries had created family communities wherever they’d popped up. They all agreed it would be just the thing Danville needed to get back on its feet. The idea was to convert the bottom level of the Continental Lofts. Being property developers, however, none of the team had a background in brewing. The first thought was to create the space then find a brewing tenant to occupy it. Eventually, however, they decided to do it themselves. Unlike the genesis stories behind many other breweries, however, this story does not begin with Shifflett and Fickenscher leaving their careers behind to become brewers. With high-standard business savvy as their guide, the team launched a talent search that led them to Dr. John Andorfer. Dr. Andorfer holds a PhD in Plant Physiology with PostDoctoral work in Molecular Biology and Biochemistry. After his dream of an exciting career in science soured under a mountain of grant-writing and the search for funding, Dr. Andorfer turned to the curious alchemy of craft brewing.

“Brewing”, says Andorfer, “satisfies my scientific curiosity while at the same time allowing me to indulge in creativity. It’s a blend of science and art. Brewing beer can be both detailed and free-flowing. The background in science is really helpful in the process.” Andorfer has a small laboratory on premises where he creates the ever-evolving, delicious recipes along with Assistant Brewer, Chris Myers. They like to keep it fun with frequent variety…like the current most popular brew on tap, the Lime Ginger Sour! Another current favorite is Cash Crop; a full-bodied, citrusy-spicy-sweet Belgian farmhouse ale. Andorfer tells us that there are a few flagship beers that remain on tap, but they like to change things up with seasonal brews and special new recipes. Having worked previously in a large production house where he created the beers but never interacted with the customer, Andorfer finds it gratifying to be able to connect with people, talk about the beers, and get immediate feedback. He also spends a lot of time educating the staff about the beers and how they’re made. The team meets regularly to do mock tastings. They discuss and analyze each brew thoroughly so that every staff member in the tap room becomes and expert. This allows everyone to suggest beers tailored to the taste of the customer. Dr. John feels this discerning approach to be better than the “pick one” method, and more often results in customers getting something they like, every time. Once Shifflett and Fickenscher had Andorfer in place as their Head Brewer and Director of Brewery Operations, they needed to find an equally talented Business Operations Manager. Tim Meyers was working at a brewery in the Pocono Mountains of Pennsylvania when he saw the ad for the position in Danville. Already a Tap Room Manager, Tim replied and was welcomed into the fold. He’s very proud to be part of the Ballad team, and is a wealth of information regarding the beers, the brewery, the area, and its history. Tim told us about how Ballad Brewing is named after the old folk song, “Ballad of the Old 97”. It was first commercially recorded in Virginia in 1924 by musicians G. B. Grayson and

Henry Whitter, but has since been re-recorded by such greats as The Statler Brothers, Flatt and Scruggs, Woody Guthrie, Johnny Cash, Hank Williams III, Roy Acuff, and Boxcar Willie. The song rivaled “Casey Jones” as the number one railroad song of all time and was about a tragic train derailment that killed eleven men and injured seven others at the Stillhouse Trestle near Danville in 1903. It was a mail train officially known as the “Fast Mail”, and its legacy lives on in the awardwinning Fast Mail Mild Ale on tap at Ballad. Fast Mail won a Gold Medal in the category of British and Scottish Ales during the 2018 Virginia Craft Beer Cup event held by the Virginia Craft Brewers Guild this past June. Tim is also very proud of how everyone on his team is a vital and intrinsic component in the operations at Ballad. The bartenders – or “beer advocates” as they are called – are educated (thanks to Dr. John) and very enthusiastic. The tap room staff are trained to give tours that include information about the building, its design, and the history, as well as how the beer is made. They are all happy to be selling a product that they’re proud of and believe in. Tim also tells us that Ballad’s core belief is to be community focused and community oriented. They like to get together and host as many events as possible, including inviting area businesses to use the brewery for meetings. They hold events for charities every month for such causes as the National Fallen Firefighters Association. Whatever the charity, 10% of the day’s proceeds are donated. Though the Shifflett and Fickenscher team is in Richmond, Aly Fickenscher visits the brewery every two weeks for business operations planning and strategy. She says there was a lot of learning for everyone involved, and a massive bringing together of talents to launch Danville’s second brewery. Like Tim, Aly also expresses pride for her crew. She has a lot of trust and faith in John, Tim, and the whole team. Aly says the reception in Danville has been far better than expected. The next city is fortyfive minutes away and they were unsure of how well craft brewing would be accepted, but people have proven to be curious and eager to experiment. All the brewing education offered at Ballad has helped not only to build clientele, but it’s also changing the habits of the people in Danville. Located on the ground floor of 600 Craighead Street, Ballad Brewing feels like history with its brick walls and wooden floors. Visitors enjoy lots of seating and lots of space to mingle in the rustic-industrial tap room. In addition to sampling all of Dr. John’s fabulous inventions, folks can have a great time every Monday night for Open Mic! Monday nights are also when participants can compete in Ballad’s Dart League. On Wednesday nights, visitors can feed their spirits as well as their bodies with weekly yoga and pizza! Great Valley Farm By Vickie Holt Nestled amid one of Virginia’s most popular cluster of tourist attractions, Great Valley Farm Brewery is just one more reason to visit Natural Bridge. Seeing the Bridge, going to the zoo, visiting the Virginia Safari Park, walking around the caverns, and stopping at the half-dozen other attractions in the five-mile stretch of I-81 can make anyone want to chill out with good people, have some delicious cold brews, and enjoy some great entertainment! Great Valley Farm opened in October of 2016, and was a happy diversion, as well as an addition, to an original dream shared by Nathan and Irma Bailey – the dream of owning a vineyard and winery. Nathan began home brewing beer in 2008 but was by no means a novice when he started. He’d already been making wine at home for years. Eventually, the couple’s love of wine and craft beer began to spark their entrepreneurial spirit. They wanted to do something for themselves, and so they left their previous North Carolina careers behind. That dream, however, was several years in the making. In 2008, they purchased the land on which the brewery would later be located. But it wasn’t until 2012 that they moved to Virginia and planted four acres of the twenty-seven-acre farm with wine grapes. After relocating, they began to seriously consider adding a brewery to their dream. In 2015, plans were finalized, and construction began.

The Big Boss — Hefeweizen By Chaz Blevins

you are reading an article on beer, especially in a beer magazine, it might be safe to think that by now you have had the chance to try a Hefeweizen. If you haven’t, well let me introduce you to the Big Boss, hefeweizen; a beer that like the Bruce Lee movie of the same name, kicks butt from way back in the day. Though there are many interpretations of this beer brewed today by American brewers that may hold their place as great American wheat beers, many would ignore many of the traditions of the true german style. Similar to a rare white stallion, “white beer” or weissbier is simply, bottled tradition. This style historically brewed in Germany with 50% malted wheat in the grain bill, mostly unfiltered (unless you include the filtered kristallweizen style) and, unlike most of the famous beers birthed in the German incubator, it does not use the classic bottom fermenting Lager yeast. Instead, it uses top fermenting weizen yeast. This creates a very one of a kind special beer; all of the right nuances form combinations that align to make a beer of not only unique, but even royal stature. Though brewed mostly, and some would say perfected, in Bavaria, the true roots of weiss beer stretch so far back into the folds of history that they even entangle the cradle of civilization. Stretching back over 6000 years to the first wheat beers brewed by the Sumerians and the Egyptians (possibly even before), and the code of Hammurabi even includes specific instructions on how to brew and serve wheat beer! Though furthering the testament of this beer’s perfection in Bavaria in the the late 1500s, the weiss beer brewed by the royal Degenberg family was so great they were able to acquire the sole rights to brew wheat beer, generating such a craving and thirst for weiss beer that the profits rolling in attracted the attention of one Duke Albrecht V, who deemed the beer drink that only “encourages drunkenness” and instated a prohibition on all wheat beer in the entire realm. To his demise, a loophole in the proper rules of feudalism declared that the Denberge Clan exempt from such a ban, allowing them to continue to exclusively brew 02.03 August/September

bavarian wheat beer. At the time being the ultimate equalizer, eventually one of the Denberg clan did not leave an heir, allowing for the Wittelsbach Dukes to reclaim the exclusive rights to weiss beer. And, iron handedly, the greatly taxed weiss beer was poured by every tavern. Yet again, the razor of time would be a determining factor in the fate of the weiss beer. The beer’s popularity declined throughout history even as the dukes tried to offer up bids for the right to brew the delicious wheat beer, it seemed that weiss beer had met its extinction. Though stubborn brewers like George Schneider (who make still to this day makes some of the most complex beers in the world) kept the faith, it seemed the style was to be doomed. Now, with no regulations on the brewing of such style, the 1970s would see a huge swing in what people liked in a beer. The once almost forgotten style was rejuvenated with life and actually started to take off in the German and world markets. With its rich heritage the bottled conditioned hefeweizen is best with just a bit of the yeast and some wert layered in the bottom. First poured you get hazy sunrise orange in your glass. The high proteins in this beer creates a rich creamy head almost like a marange. With aromas of clove, banana and even faint bubble gum this makes the mousse like head even more inviting. At first sip you will notice how classic weizen yeast adds the complete complexity of clove phenol and banana esters dueling, mixing perfect with perhaps faint wisp of smoke or sweet spice. This is more of an experience then a drink. Especially when poured into a true hefeweizen glass (the tall open mouth glasses that are slim at the bottom. If you have ever ordered a “large beer” in a sports bar, you have probably drank it out of one of these) and kissed with the yeast sediment from the bottle (though most beers you would normally not want to disturb or imbibe this yeast, it is quite magnificent and tasty to see the end of a hefeweizen bottle rolled, swirled, then poured correctly into a proper glass. P.S. NO LEMON! The oil in the lemon peel destroys the froth and the lemon scent and acid completely overwhelm the delicacies of this style. We could end off with a list of classic German bottled Hefeweizen bier, but instead get into your local bottle shop. Ask them what classic styles of weiss beer they carry? Ask them what the local breweries take on the beer is. Or, better yet, stop into your local brewery, if they have on a hefe ask them how much wheat? If they used a weizen yeast? Or if they just have their own interpretation on the beer. Or even bree your very own Weiss beer. Creating an all new chapter. Each brewery’s beer has its own story. Though a classic style of beer, the true beauty behind the weiss beer is its dynamic evolution. 13

Cory Campbell is a singer, musician, and song writer who has spread his talents up and down the east coast since he was twenty. Influenced heavily by artists like Tom Petty, Elton John, Stevie Ray Vaughan, Jimmy Hendrix, and John Mayer, Cory’s style is a unique blend of blues, rock, and pop. His one-man, acoustic live shows are an eclectic mix from over the decades, drawing heavily from the artists that have influenced him. Always tailoring his selections to the crowd, his shows also include Cory Campbell originals. His first album, “West of Anywhere” can be found on iTunes, featuring pop songs seasoned with a hint of blues. But Cory tells us the best is yet to come. Having lightened his play schedule, he’s currently working on his next album. Focusing in a new direction, Cory has turned to the piano to write his newest music. He says it’s opened up a whole new creative world he couldn’t have accessed before. Though the songs are being written on piano, the performances will be on guitar, creating a unique sound and dynamic that he could not have achieved before. Cory says he wants to keep the pop, rock, and blues aspects of his music, but wants to also experiment with Americana. The songs are emerging and will have a unique sound born of those four styles. His vision of Southern American Pop will be the foundation from which to write songs and narratives about things people can relate to; reflecting on life and how to just get better. elivering a fusion of rock, jazz, and bluegrass, Circus Mutt chose their name well! They are a mixed breed, taking the best of several music genres and blending them to produce a one-of-akind, unique listening experience! On the road and touring the east coast full time since 2011, fans can expect everything from solo and two-man shows, to an all-out, six-piece band performance! And there’s no pinning these guys down on style. With so many influences, their shows are always a fresh and unique surprise. This ever-evolving group originated in a little place called

Fairview, just outside Ashville, NC. A couple of the guys bought an old farmhouse with a two-car garage and almost immediately fitted it with a permanent stage, speakers and a sound board. They loved how they could come home each day then go right out to the garage and jam together every night. But word got around and they began to draw attention. Neighbors started coming to watch and listen. The nightly crowd began to grow. Eventually, other musicians caught wind of it and began dropping by to join in. As time went on, the nightly jam sessions turned into full blown parties. With musicians, friends, family, neighbors, and a motley

assortment of dogs enjoying the music so much, the main group decided to call themselves a band. Because of all the dogs, they knew they wanted their name to be something about dogs. But it wasn’t until one of the guys said “let’s get this circus on the road” that Circus Mutt was born. “And it definitely has been a travelling circus,” says band spokesperson, Dan. When touring, he describes how all the different kinds of cars and people from all walks of life – some with their families – can often be seen on the road in a line like a circus caravan. In addition to touring full time, the band also puts on LiveStock; an annual music festival held near their place in Fairview, NC. In its ninth installment, the festival will take place this year on September 21 and 22. There will be an estimated thirteen bands playing an eclectic mix that will range from funk to folk, from bluegrass to reggae, and everything in between! Breweries are also an important part of the festival, and this year’s event will feature at least two breweries local to

onathan Barker and his music-minded friends just can’t decide what they like doing best! But like anybody faced with a choice between candy, ice-cream, or cake, he’s opted to do all three! Bands, that is. Among his projects is a Pink Floyd cover band called The Dark Side Experience. Runaway Jones is a five-man band that delivers soul, rock, and rhythm & blues tunes from the 1970’s to today. Just last year, a group of musically-inclined friends started

jamming together. Two of them – Josh Marlowe and Brandon Dickerson – found they really clicked on musical style. “We should do something about this”, they thought, and so they recruited Brandon’s brother, Brent, and two more friends. After playing for just a short while, they knew they had something special. Josh, Brandon, and Brent – along with Aaron Blankenship and Andrew Nicely – are The New Habit. This country and bluegrass group decided right from the beginning they wanted to do things right. Most of the guys had multiple band backgrounds, and for most of them, The New Habit represented the “last hoorah” attempt at a big-as-it-can-go musical career. With intelligent composition, exacting vocals, and meticulous performance, the band are unanimously approaching the project with determination and discipline. Even down to the flair of their matching stage attire, these guys have one thing on their collective minds…show business. And they’ve already come a long way! In just twelve short months, The New Habit has been signed to Railroad Town Records, and their single, “Dashboard of Dreams” has achieved national radio air play! Their debut album is still in the works, but Josh tells us it should be done and ready for purchase by the end of 2018. In the meantime, however, you can find the crisp

Just last year, Alex Glenn was inspired by all the food trucks he saw visiting the growing number of craft breweries that seemed to be popping up everywhere. He had previously worked as a cook and had spent the last few years in a full-time sales job. But it just wasn’t satisfying, and he felt it was time for a change. He liked working with food but didn’t see much of a future in just being a cook in other restaurants. He wanted to venture out on his own yet didn’t like the odds that came with opening a traditional restaurant. Both the investment and the risk were too high. But a food truck…now that seemed to be the way to go. Alex drew up a business plan, and with minimal investment, The Saucy Bird took flight in March of 2017. Just two months later, Alex left the sales job behind and has been making a fulltime career of his food truck, ever since! When deciding on the kind of food he would serve, Alex noticed how few chicken restaurants there were in Staunton.

IshPop Based out of Lynchburg, IshPop is the latest craze when it comes to snack food. Elizabeth, inspired by her love for quality popcorn, has created a delectable version of an all-American favorite. Using only the best ingredients and her own personal blends of spices, Elizabeth has conjured flavors such as Spicy Bacon and Margarita. Even for the most traditional popcorn fans, she has a simple pink Himalayan salt popcorn. 02.03 August/September

He’s a big fan of fried chicken, and wanted his food to be simple and home-made delicious. With a variety of hand-made sauces and rubs, along with hand-cut selections of chicken and fries, Alex created a chicken-tender sandwich menu that has won the hearts and taste-buds of many customers. Alex tells us “The Original” is his most popular menu sandwich. It has fried chicken tenders, cheddar cheese, pickles, jalapenos, and buffalo sauce on a Martin’s Potato Roll. Fans can also order chicken tenders without the roll, as well as Alex’s fantastic Portobello Mushrooms for those who prefer vegetarian! For the full menu, visit The Saucy Bird on Facebook! Having recently celebrated his one-year anniversary, Alex reflects on how even though starting a food truck is easier than starting a restaurant, he has still seen food trucks come and go in the business. But he is here to stay. He hopes to soon get a bigger truck. Or maybe a brick and mortar. He’s open to any opportunity for growth that might present itself. Classic caramel and toffee flavored popcorn pairs well with anything from a brown ale to an imperial stout, enhancing the roasted malt, caramel and coffee. Elizabeth is looking to expand regionally.
