ROSEMARY WINE

Vino se dobiva tako što se otkinu mladice zelenog ružmarina te ih se prelije bijelim vinom. Nakon nekoliko dana smjesa se procijedi i spremna je za upotrebu. Ružmarinovo vino stimulira mozak i živčani sustav, poboljšava cirkulaciju i rad bubrega te je dobar lijek za glavobolju.

Wine is produced by tearing off branches of green rosemary which are then poured with white wine. Couple of days later, mixure is percolated and ready to use. Rosemary wine stimulates brain and nerve system, improves circulation and kidney function, and it’s a good medicine for headache.

Grčka predaja kaže da je lozu ljudima darovao nestašni bog Dioniz. Na jednom putovanju po Aziji svidjela mu se mala biljka, koju je poželio ponijeti sa sobom. Dok je tražio pogodan predmet za nošenje biljke ugleda šuplju ptičju kost u koju zasadi lozu i ponese. Loza je brzo rasla i u toku putovanja Dioniz je presadi u lavlju pa zatim u magareću kost. Najzad stigavši kući zasadi je zajedno sa svim kostima. Od te biljke izraste bujna loza koja je s godinama davala sve više ukusnog grožđa. S vremenom ljudi naučiše od grožđa spravljati opojni sok koji razbija brige i budi veselje.

Greek legend tells that Dionysus, Greek god of fertility, gave the vine to his people. He discovered a small plant while traveling through Asia, and he immediately wished to take this plant with him. While he was searching for something he would carry this plant on, he found a hollow bird bone in which he planted the vine. Vine was growing rapidly, so Dionysus replanted it in the lion bone and afterwards, in donkey bone. Finally, when he arrived home, he planted it together with all those bones. Vine gave more and more delicious grapes each year. Eventually, people learned to make a beverage that breaks worries and awakens joy.

Poštovani čitatelji! Dear readers! aš kao i prethodni broj časopisa i ovaj se svodi na bitnu rečenicu: VINAR JE U BOCI. I u ovom broju prepoznali smo kvalitetne, mlade i entuzijazma pune vinare. Pozitivan stav držimo i dalje, a pozitivnu energiju upotpunjujemo kušanjem vrhunskih vina poznatih hrvatskih vinara.

Vinska je scena sve bogatija ljudima koji sebe daju u proizvodnji vina pa lako možemo osjetiti karakter i osobnost nekog vinara kušajući njegova vina. Arome vina nisu upotpunjene ako ne spomenemo je li vino elegantno, karakterno, veselo ili možda sretno. Vinar je taj koji upotpunjuje te arome jer svoj stav i energiju prenosi na vino, a onda i na nas.

Wine scene is enriched by people who give themselves to wine production. Therefore, we can taste the character and personality of the winemaker while tasting his wines. Aromas aren’t complete if we don’t mention whether the wine is elegant, with character, cheerful, or perhaps happy. Winemaker is the one who completes those aromas transferring his attitude and energy to the wine, and then to us.

Čitati časopis o vinu nije lako ukoliko u ruci nemate čašu dobrog vina. Zato smo se potrudili pomoći vam u preporuci. Mi smo u ovom broju izdvojili vinare koji su nas osvojili svojim vinima i osobnošću, vinare o kojima je zadovoljstvo pisati. Sve su to vinari koji oblikuju hrvatsku vinsku scenu i idu pozitivnim smjerom. Spomenuli smo i vinske etikete koje nam lako mogu otkriti kakav je vinar i prije nego probamo samo vino.

Reading a magazine about wine is not easy unless you’re holding a glass of good wine. That’s why we did our best to help you in recommendation. In this issue, we selected winemakers who had won us with their wines and personalities. It’s a pleasure to write about them. All of these winemakers are shaping Croatian wine scene and they all go in positive directions. We have also mentioned wine labels, which show us the character of the winemaker even before we taste the wine.

Uz pozitivne kritike za prethodni broj časopisa smjelo i velikim koracima idemo naprijed, vjerujući da ćete uživati čitajući ono u što smo uložili puno truda i pokazali kakvog smo karaktera i osobnosti moji suradnici i ja. Kao što vinar prenosi svoj stav i energiju putem vina na nas, tako i mi želimo svoju pozitivnu energiju prenositi na vas. Tajne za uspješan časopis nema, samo ljubav prema vinu i odabir vinara u koje vjerujemo!

With the positive reviews for the previous issue of the magazine, we go forward boldly and with big steps, trusting that you will enjoy reading what we have put a lot of effort in, showing you our character and personality. In the same way winemakers transmit their attitude and energy trough the wine on us, we want to transmit our positive energy to you. There is no secret for successful magazine. Piše: / By: Dijana Grgić hardonney je definitivno klasik, vino o kojem svi ponešto znaju, pa čak i oni koji nisu veliki vinski znalci. Nema te osobe koja nije čula ili bar jednom probala dobri, stari Chardonnay. Neki čak kažu da je dosadan, već viđen i isproban stotinu puta. Ipak postoje i ljubitelji Chardonnaya koji mu daju prvo mjesto pri odabiru dobrog vina. Ma što god mi mislili o ovom vinu, teško ga je zaobići, zaboraviti i izostaviti.

Ruski klasici nezaobilazna su djela svjetske književnosti, tako je i Chardonnay nezaobilazan u svijetu vina. Dostojevski kaže: ”Tajna čovječjeg života nije u tome da samo živi, već u tome zašto živi.” Tako i tajna Chardonnaya nije u tome da ga samo pijemo, već u tome zašto ga pijemo. Chardonay vina su osvježavajuća, pitka, elegantna i aromatična vina mineralnog karaktera, sa cvjetnim i voćnim aromama. To treba osjetiti i prepozati i tek onda možemo zaista uživati u ovom vinu.

Russian classics are indispensable work of world literature. In the same way, Chardonnay is unavoidable in the world of wine. Dostoyevsky says: ”The secret of man’s being is not only to live but to have something to live for.” The secret of Chardonnay is not only to be drank, but also in asking ourselves why we drink it. Chardonnay is refreshing, drinkable, elegant and aromatic with mineral character and with both flower and fruit flavors.

hardonnay is definitely a classic. Everybody knows about this wine, even those who don’t have extensive wine knowledge. There isn’t a person who didn’t hear, or tasted at least once the good old Chardonnay. Some may say it’s boring, already seen and tasted hundreds of times. Even so, Chardonnay has many fans when it comes to wine choosing. Whatever we think, this wine is hard to bypass, forget, or leave out.


Za neke bi idealna večer bila uz dobru klasičnu glazbu i Chardonnay. Zvuci Mozarta, Beethovena ili Bacha uz čašu Chardonnaya savršen su spoj dva bezvremenska klasika. Klasična glazba priča univerzalnim jezikom nota. Ne moramo znati njemački jezik da bismo razumjeli djela njemačkih kompozitora. Isto tako i Chardonay priča univerzalnim jezikom osjetila.

For some people an ideal evening would be a glass of Chardonnay with the sounds of a good classical music such as Mozart, Beethoven, or Bach. This is a perfect combination of two timeless classics. Classical music speaks with the universal language of notes. We don’t have to know German language to understand the work of German composers. Likewise, Chardonnay speaks universal language of sense.

Chardonnay je kraljevska vinska sorta, od njega se proizvode najbolja vina na svijetu i osnovna je sorta koja se koristi u proizvodnji šampanjaca. Šampanjci sa etiketom blanc de blancs su načinjeni isključivo od chardonnaya. Često se upotrebljava i kod ostalih pjenušaca.

Chardonnay is royal wine sort from which the best wines in the world are being produced and it is the essential wine sort that is being used in the champagne production. Champagnes with the label blanc de blancs are made entirely from Chardonnay. It is often used in production of other champagnes.

Ime je dobio po francuskom selu Chardonnay, a navodno je nastao križanjem dvije sorte, Pinota i Gouais Blanca (Ranfol).

Chardonnay is village in France from which this wine sort got its name. This specific sort was created by crossing two sorts, Pinota and Gouais Blanca (Ranfol).

Ukoliko niste poznavalac vina a trebate se odlučiti za butelju dobrog bijelog vina, Chardonnay ne može biti loš izbor. Na Vama je samo da odlučite koji je proizvođač, cijena ili možda etiketa pravi izbor. Chardonnay kao klasik može biti sve, pa čak i dosadan, ali nikako loš izbor.

If you’re not wine connoisseur but you have to pick a bottle of good white wine, Chardonnay can’t be a bad choice. It’s up to you only to decide on a producer, price or maybe what label to choose. Chardonnay, classic as it is, can be everything, even boring, but never a bad choice.

jednoj od prekrasnih uvala, smješten je restoran, čija je tradicija od 4 generacije donijela brojna priznanja i diplome, od kojih su najdraži osmjesi zadovoljnih gostiju i njihov povratak. Davne 1936. doplivala je prvim danima proljeće i održala se do danas, gdje cijela obitelj Tudić doprinosi. U ekskluzivno opremljenom restoranu, nude bogat izbor jela, ribljih i mesnih specijaliteta, u čemu smo i sami uživali, uz odličan izbor školjki i rakova, kao i veliki izbor vina iz njihova vinogarada. Vinograd se nalazi u Donjem polju, u zaleđu Brodarice, sa probranim sortama vinove loze, gdje je sagrađen podrum, u kojem su idealni uvjeti za čuvanje domaćeg vina vrhunske kakvoće. Nastalo u kršnom polju, vino je punog okusa i mirisa. Osim vrhunskog vina, Tudići vam mogu ponuditi maslinovo ulje, prošek, rakiju, lozu, bademe i suhe smokve, sve iz svoje proizvodnje, prirodno i ekološki.

he restauran is situated in one of the beautiful coves. Its tradition of 4 generations has brought it many awards, but the smile and return of its guests is its favorite award. In 1936 it ”swam” with the first days of spring and is still holding on with the help of Tudić family. In exclusively equiped restaurant they offer wide selection of dishes, fish and meat specialties, along with an excellent choice of seashells and crabs, as well as wide choice of wines from their own vineyard. Vineyard is situated in Donje polje, in the hinterland of Brodarica. It has exquisite vine sorts, and an excellent wine cellar to keep the wines of high quality. This wine comes from limestone field which gives it full aroma and flavor. Besides wine, Tudić family can offer you olive oil, prosecco, schnapps, loza (alcoholic drink similar to schnapps), almonds and dry figs.


Za najbolja jela pripravljenih od domaćih proizvoda i namirnica, brinu se najbolji kuhari u restoranu. Sam restoran organizira razne domjenke, svadbene svečanosti, catering, gastro događanja tijekom cijele godine, dane bakalara, dane mlade paške janjetine kao i dane šparoga i liganja. Ponuda Zlatne ribice je proširena i na smještajne kapacitete. U maloj laguni nalazi se 18 dvokrevetnih soba, 8 apartmana i 3 bungalova. Opremljeni su s: SAT-TV, ADSL internet uređajem, mini-barom, klima uređajem i naravno prekrasnim pogledom na veličanstven otok Krapanj. Uljara, gdje se proizvodi poznato ulje, nalazi se na otočiću Krapnju, nedaleko od same Brodarice. Mali otok koji je poznat po spužvama diljem svijeta. Najmanji i najniži otok privukao je brojne posjetitelje. U malim obiteljskim restoranima, šetnje uskim kanalima ostavljaju nezaboravan doživljaj. Raznovrsna i bogata ponuda neće vas ostaviti radvnodušnim, a svakako ćete se poželjeti vratiti opet, a možda i baciti novčić u fontanu za brži povratak.

The best chefs are responsible for making the best dishes made of domestic products and foods. The restaurnat organizes all kinds of dinners, wedding ceremonies, catering, culinary events, the days of codfish, the days of the Pag’s lamb meat and the days of asparagus and squid. Offer of the restaurant Zlatna ribica (gold fish) is extended to accomodation capacities. Little lagoon has 18 double rooms, 8 apartments and 3 bungalows.They are equiped with: SAT-TV, ADSL internet modem, mini-bar, aircondition, and of course, beautiful view of magnificant island Krapanj. In oil mill, not far from Brodarica, on island Krapanj, well know oil is being produced. Island Krapanj is known all over the world for sponges. Smallest and lowest island attracts many visitors. Stroll through narrow canals leave unforgettable experience. Diverse and rich offer will not leave you neutral, and you’ll wish to return or even toss a coin in the fountain for sooner return.

cetru Omiša smještena je mala i lijepa vinoteka Dionis gdje obitelj Grgurević prodaje isključivo svoja vina, maslinovo ulje i likere. Obiteljska tradicija duga je više od 100 godina, a uspješna proizvodnja kvalitetnih i vrhunskih vina generacijama se prenosi. Sa Peljeških vinograda dolaze vino, maslinovo ulje i likeri. U ponudi vinoteke su i suveniri, prirodni sapuni na bazi maslinovog ulja sa dodatkom eteričnih ulja, vrećice lavande, lavandino ulje i domaći med.

his small and beautiful winery lies in the center of Omis. Grgurević family sells wine, olive oil and liqueurs. This family tradition spans more than 100 years, and successful production of premium wine has been passed from one generation to another. From Pelješac vineyards comes wine, olive oil and liqueurs. They also offer souvenirs, natural soaps based on olive oil with essential oil, lavender sachets, lavender oil and local honey.

Vina se prodaju refužo i flaširana, a u ponudi su i poklon paketi u škrinjama od maslinovog drveta, kao i poklon paketi otvarača za boce. Od refužo vina mogu se kušati i kupiti Plavac mali, Rukatac, Opolo i Plavac mali special. Flaširana imaju kvalitetna: Opolo, Plavac mali i Selekcija (Plavac mali nešto kasnije berbe) i vrhunska: Plavac mali barrique i Barr Lie (Rukatac) barique.

Wines are sold bottled and without packaging. They also offer gift packages in chests from olive wood, as well as gift packages of bottle openers. From wines without packaging, you can taste and purchase Plavac Mali, Opole and Plavac special. Bottled ones have quality wines like: Opole Plavac and Selection (Plavac mali from the later vintage), as well as the premium: Plavac Barrique and Barr Lie (Rukatac) barique.

Vinoteka Dionis nudi i odlične domaće likere na bazi rakije: višnjevicu, orahovicu, medicu i travaricu.

Dionis Wine Shop offers excellent homemade liqueurs based on brandy: cherry, walnut, mead and bitters.

Vinarija Režek Režek Winery Prvi diplomirani enolog u tom kraju koji je počeo transformirati svoje gospodarstvo u tržno, napunio je prve boce u podregiji uopće i poslao ih na tržište. amir Režek nasljednik je čuvenog oca Drage Režeka, vjerojatno najpoznatijeg imena s Plešivice. Prvi diplomirani enolog u tom kraju koji je počeo transformirati svoje gospodarstvo u tržno, napunio je prve boce u podregiji uopće i poslao ih na tržište. Drago je proslavio plešivički portugizac koji se i danas krajem kalendarske godine traži kao ultimativno osvježavajuće i veselo, crno vino voćna karaktera. Gospodarstvo se bavi vinogradarskovinarskom proizvodnjom kontinuirano već nekoliko naraštaja.

Drago gave fame to Portugizac Plešivica, which is in demand at the end of the year as the ultimate refreshing and cheerful red wine, with a fruity character. This economy is engaged in viticulture and wine production continuously for several generations.

Početkom devedesetih godina, gospodarstvo počinje s regeneracijom starih nasada vinograda i samostalnom tržnom proizvodnjom. Uz 5 hektara vinograda, koliko se danas obrađuje, Damir danas proizvodi i ostala vina od kojih treba istaknuti atraktivni portugizac (obiteljski ljubimac), silvanac zeleni, sauvignon blanc, koje je ujedno i prvo vrhunsko vino na Plešivici i chardonnay.

In the early nineties, the economy begins regeneration of old vineyards and independent market production. With five hectares of vineyards, Damir manufactures other wines as well. We should accentuate attractive portugizac (family pet), Silvaner, Sauvignon Blanc, which is also the first premium wine in Plešivica, and Chardonnay.

amir Režek is a successor to the famed father Drago Režek, probably the most famous name from Plešivica. The first graduate oenologist in the area that began to transform its economy into a market, he filled the first bottle in the sub-region and sent them on the market.

The grapes are processed in cellar not far from the vineyards. The cellar is equipped with high-quality grape processing equipment.


RIZVANAC: karakterizira ranije dozrijevanje uz visok sadržaj šečera i primjerenu kiselinu, te muškatno–cvjetne arome koje podsjećaju na akaciju. Vino je natprosječne kvalitete, svjetlozelenkaste do žute boje, nježne plemenite cvjetne arome i bukea gotovo savršenog sklada i laganih voćnih okusa. To je vino posebne otmjenosti i finoće kojeg cijene pravi vinski znalci. SILVANAC ZELENI: Ono je uobičajeno zelenkastožute boje, zelenkastog odsjaja, harmonično, pitko, fino oblikovanih voćnih aroma koje podsjećaju na zelenu jabuku. Kiseline su ugodno naglašene, u ustima djeluje svježe i lepršavo. U godinama sa dovoljno sunca i prilagođenom rodnošću (2008, 2009) daje na okusu puno, bogato vino, naglašenih aroma, vrhunske kvalitete. CHARDONNAY: najtrofejnije vino vinarije Režek sa dvadeset četiri Zlatne medalje, više puta proglašavan šampionom izložbi, bilo u klasičnoj ili sur lie varijanti. Vino je nešto viših alkohola, lijepe zelenkasto–žute do slamnato žute boje, izraženih voćnih aroma koje podsjećaju na oskorušu, krušku, marelicu, a posebnu uzbudljivost okusa daje mu aroma koja podsjeća na zrelu dinju CRNI PINOT: duboke rubinsko-crvene do granitne boje koje u izrazito vrućim godinama dobivaju cigleni ton. Arome primarno podsjećaju na zrelo grožđe i tamno voće (višnja, suha šljiva). PORTUGIZAC: Zaštitni znak i ljubimac familije Režek, crno vino osvježavajućeg, voćnog i veselog karatkera. On je najstarija komercijalna sorta koja se njegovala u familiji i prodavala na tržištu Slovenije te kao mlado vino u gradu Zagrebu. U podrumu je uređena kušaona vina koja može primiti do 50 gostiju. The wine has slightly higher alcohol percentage, beautiful greenish - yellow to strawyellow color, pronounced fruity aromas that remind of the rowan, pear, apricot, and ripe melon. PINOT NOIR: deep ruby - red in the granite color. In extremely hot years, it receives a brick tone. Aromas remind of ripe grapes and dark fruit (cherry, plum). PORTUGIZAC: Trademark and a family pet, red wine, with refreshing, fruity and cheerful character. It is the oldest commercial variety that is cultivated in the family and sold in Slovenian markets, as well as in Zagreb. The cellar has a room for wine tasting and can accommodate up to 50 guests. n the peaceful forest of Moslovačka hills from which you can enjoy the views of Lonjsko field, now 4th generation of Miklaužić family processes vineyards - 25 hectares of vineyards which are specific for their use of cropping system and ecological approach to protection and processing vine varities. Most of wine supply is made of small series of rare autochthonous sort Škrlet and classical french repertoire (chardonnay, white pinot, red pinot and muskati). The white wines of the new vintage are lighter, more fruitfull, while red wines, with delayed vintage and fermentation in wood and barriques, are made for more demanding customers. What really needs to be stressed out is the new offer, natural sparkling wine Glamour, made using classical method of secondary fermentation in the bottle and aging on lees for at least two years. Base wine is Chardonnay, Pinot white and red Škrlet. That’s what gives this wine its originality and complexity. Škrlet wine is the winner of International wine challenge in London. It draws attention with its specific aroma and clear bouquet. Wine is cristal light yellow turning into green.


”Ni u snu nismo očekivali medalju. Mislili smo, ako dobijemo pohvalu, to znači ispod brončane medalje da će biti za prvi put uspjeh. U konkurenciji od 9.000 vina koja dođu na to neslužbeno svjetsko prvenstvo gdje se dodijeli samo 30-ak zlatnih medalja i stotinjak srebrnih, to bi bilo nerealno očekivati za prvi put. Ali, kada smo vidjeli da je kvaliteta Škrleta i po ostalim ocjenama priznata u svjetskoj konkurenciji, onda to ima logiku” - zaključio je Miklaužić. Moslavina je inače znana i po voću dunji, stoga naziv grada Kutina i dolazi od latinskoga naziva za dunju. Vinarija Miklaužić jedno svoje vino, mješavinu bijelih sorata Muškat ottonel (80 posto) i Muškat žuti, nazvala je Dunja. Tipično žensko vino, blagog i punog okusa. Frankovka Sorta panonskog areala, usvojena gotovo kao autohtona u kontinentalnoj Hrvatskoj. Vino je intenzivne rubin crvene boje, srednje gustoće i osvježavajućeg voćnog okusa. Na miris odaje aromu višnje. Ako je odležano u barriqueu, obogaćeno je aromama hrastovine, vanilima, pomalo i dima... Bijeli pinot Vino je slamnato žute boje sa zelenkastim odsjajem. Laganog je okusa koji aromom podsjeća na jabuku i breskvu. Starenjem dobiva zlatnu boju. > Zagovaramo što prirodniji pristup vinogradu i podrumu što se itekako osjeti u našim vinima. But when we saw that quality of Škrlet was recognized in the world competition then it all made sence.” - Miklaužić stated. Moslavina is also known for quince. Therefore name of the city Kutina comes from latin word for quince. Winery Miklaužić named one of its wines (mixture of white wine sorts Muškat ottonel - 80% and Muškat yellow) after this fruit. It’s tipical wine for women, with gentle and full flavor. Frankovka Wine sort from Pannonian areal. Adopted as indigeneous wine sort in continental Croatia. Wine has intensive red colour, with medium density and refreshing fruit flavor. The smell reveals cherry aroma. If it aged in barrique it›s enriched with aromas of oakwood, vanilla and smoke in traces. Pinot blanc The wine is strawy yellow with green reflection. Its flavor is light and its aroma reminds of apple and peach. While aging it becomes golden. We advocate more natural approach to vineyard and wine cellar which can be felt in our wines. White and red wines are very aromatic and elegant. We are open to new, modern and more natural tehnologies and preparations in viticulture and enology, says Mr. Miklaužić from comfortable surroundings of his wine cellars.

ao i većina velikih stvari i ledeno vino je nastalo sasvim slučajno. Ono što bi mogla biti njegova povijest kaže da je prvi put nastalo u 18. stoljeću u Njemačkoj nakon jednog iznenadnog vala hladnog vremena, kada su se temperature strmoglavo spustile ispod nule prije same berbe grožđa. Rezultat je svima dobro poznat. Od grožđa branog na tako niskim temperaturama nastalo je sasvim slučajno, izvrsno ledeno vino. Tradicija proizvodnje ledenih vina održala se i još će se održavati. Najkvalitetnija, najcjenjenija i, dakako, najskuplja vina nastajala su, a i danas nastaju u zemljama sa stoljetnom tradicijom - Austriji i Njemačkoj, kojima u posljednje vrijeme, osobito zadnjih petnaestak godina, ozbiljno konkurira i pridošlica s američkog kontinenta - Kanada, zemlja s dugim i oštrim zimama. No, bez sumnje, kvalitetna ledena vina dolaze i iz Italije, Rumunjske, Mađarske, Slovačke i Slovenije. Ledena se vina proizvode i u Hrvatskoj, a posebno su cijenjena ona iz slavonskih i međimurskih vinograda. Ledena vina uvijek su slatka, a najčešće se proizvode od bijelog, mada postoje i neka od crnog grožđa. Ova su vina bogata jakim kiselinama, jer bez dovoljno kiseline ledena vina bi bila tupa i otužna. Kiselina ih čini živahnima i stvara balans strukture i teksture. I danas se ledeno vino dobiva na tradicionalan način koji podrazumijeva dugotrajan i vrlo

ike many other great things ice wines originated quite accidentally. History says it was produced in the 18th century in Germany after one cold weather period when the temperature dropped below zero just before vintage. The result is well known to everyone. Ice wine was produced accidentally due to grape harvesting at low temperatures. This tradition maintained to this day. Highest quality, most valued, and, of course, most expensive wines are produced in countries with long tradition-Austria and Germany, but for the last 15 years Canada, country with long and harsh winters, has become a serious competitor. Nevertheless, great ice wines come from Italy, Romania, Hungary, Slovakia. Croatia is also known for its porduction of the ice wine and most respected ones come from Slavonija and Međimurje. Ice wines are always sweet, and they are mostly produced from white grapes, but there are variants made with red grapes. These wines are full of strong acids, because without enough acid ice wines would be dull and depressing. Acid makes them vivacious, and it creates a balance between structure and texture. Ice wine is produced in a traditional way, which implies long and risky process in specific macro and micro weather conditions. Grapes stay on the vine until winter, so the berries can freeze. Of course, grapes need to be healthy and preserved before vintage. That is one of the essential preconditions for ice wine.

Bobice okovane ledom beru se vrlo obzirno, isključivo rukom, u ranu zoru, još po mraku jer sve mora završiti prije negoli grane sunce. Bobice se odmah nakon berbe prešaju vrlo polako i vrlo pažljivo još u zamrznutom stanju, pri čemu ledeni kristali zamrznute vode ostaju u krutom stanju u preši i ne ulaze u mošt, a polako, kap po kap, gust poput meda, prolazi samo jako koncentrirani, sladak sok koji sadrži velike količine šećera. LEDENA VINA I HRANA

Berries are picked only after the temperature had been lower than -7°C in the previous couple of days. Ice-fettered berries are picked very considerate, with hands, in the dawn, and it all needs to be finished before the sunrise. Berries are pressed carefully and slowly just after the vintage while they are still in a frozen condition. Ice that comes off the berries in pressing process stays out of the grape must, and juice, sweet as sugar and thick as honey, slowly drips through. ICE WINES AND FOOD Ice wine lovers usually don’t mix this wine with food because ice wine is best served like a desert. Only then, its aromas and structure can come to the fore. However, if you insist on drinking ice wine with food, choose desert that is less sweet than the wine itself. Season fruit with ice cream and dark chocolate with orange are just some of the examples of what you can mix with ice wine letting it show its best side.

Ljubitelji ledenog vina najčešće ga ne sljubljuju sa hranom, jer je ledno vino puno bolje kada se služi kao desert nego kada prati određeni desert, jer će njegove arome i struktura jedino tada potpuno doći do izražaja. No ako se ipak odlučite piti ledeno vino uz hranu, neka to bude neki desert koji ne smije biti slađi od samog vina. Sezonsko voće sa sladoledom, tamna čokolada sa narančon neki su deserti koji bi dopustili ledenom vinu da se pokaže u najboljem svijetlu.

Petar Matković, ing. strojarstva po struci, kao 15. generacija u obitelji, nakon 30 godina školovanja u Dubrovniku, završenog strojarskog fakulteta u Zagrebu, plovidbenog staža od 10 godina, vratio se na obiteljsko imanje i počeo s obnovom sadnje vinograda. Sada imaju 14.000 čokota plavca malog na položaju Dingač i 19.000 čokota plavca malog na položaju Pelješka župa.

Petar Matković, mechanical engineer, 15th generation of the family, after 30 years of studying in Dubrovnik, with a Mechanical Engineering degree, over 10 years of sailing experience, has returned to family estate and started with the vineyard planting renewal. Now they have 14 000 of Plavac Mali vines situated on Dingač and 19 000 on the parish of Pelješac. Parallel with the vineyard renewal, they worked on increasing the capacity of wine cellars. Now the wine cellar capacity is good for two whole vintages. They offer Dingač, Plavac, L’amour and Prosecco from white and red wine grapes exclusively from the place Dingač and are called Tesoro bianco and Tesoro nero. Prosecco is made in small quantities entirely in traditional way, with the sun drying of the grapes, manual removal of the berries from the petiole and grape stomp.

Usporedno sa obnovom vinograda, radilo se i na povećanju kapaciteta konobe, tako da je sadašnji kapacitet konobe za kompletne dvije berbe. U ponudi imaju Dingač, Plavac, L’amour i prošek od crnog i bijelog grožđa isključivo s položaja Dingač koji su nazvani Tesoro bianco i Tesoro nero. Prošek se radi u malim količinama isključivo na tradicionalan način, sušenjem grožđa na suncu, ručnim odvajanjem bobica od peteljke, mečenjem bobica ženskim nogama. Pošto se proizvodi u malim količinama svaka boca se označava serijskim brojem. Dingač se proizvodi na autohtonim kvascima uz dugu maceraciju, odležava u bačvama i kasnije odležava u bocama. L’amour je dobio naziv po istoimenoj ariji iz opere Carmen-Georgesa Bizeta, a proizvodi se od francuske sorte grožđa. Lepršavost, veselje i posebnost dobio je kroz etiketu koja prikazuje plesačicu flamenca iz omiljene opere.

Because of the small quantity production, every bottle is marked with a serial number. Dingač is made on indigenous yeast with the long maceration, aging in barrels and later aging in bottles. L’amour got its name from the homonymous aria from opera Carmen-Georges Bizet, and is made from French vine sort. It got its flaunting, joy and particularity from the label that shows flamenco dancer from the favorite opera.

Listed marks have to be on the main back label, except for the year of production which can be on the neck label. Labeling the special and sparkling wines is similarly, but not exactly the same as the labeling of the ”normal” wines.

ada je riječ o neobičnim etiketama i inovativnom dizajnu koji će krasiti butelje moramo spomenuti Vinariju Puhelek-Purek. Vrlo uspješno je predstavljena nova etiketa, dosta drugačija od svega što su nam dizajneri etiketa do sada nudili. Željka Županić i Vanja Cuculić iz studija ”Cuculić” napravili su iskorak i hrvatskoj vinskoj sceni ponudili nešto lijepo, zanimljivo, veselo i do sada neviđeno. Razbacane igraće karte i kraljice koje u ruci drže pticu, list ili cvijeće etikete su kojima će Vinarija Puhelek-Purek okruniti svoja vina. Etiketa je puna simbola. Prije svega, sestre Puhelek okrunjene su titulom Vinske kraljice koja je promicateljica vina, vinogradarstva i vinorodnih regija te širi kulturu pijenja vina, a karte su simbol lutrije jer je svaka godina u vinogradu igra na sreću. Karte razbacane na stolu predstavljaju neopterećenost vina, a rotacija karata odaje nam informaciju koja od sestara je radila na sorti i proizvodnji vina. Ivana ima dugu kosu, a Nataša kraću. Simbol dražesne ptičice predstavlja Grašicu kao nježno, osvježavajuće i razigrano vino. Na etiketi Kraljevine, vinske kraljice u ruci drže list kao simbol lepršavosti, a kraljevina je upravo takvo vino: lepršavo, lagano, pitko i osvježavajuće. I svakako etiketa Sauvignona na kojoj je istaknuto cvijeće kao simbol potvrđuje da je Sauvignon Puhelek-Purek vino koje već na nosu odaje svoje prepoznatljive karakteristike: aromatičnost i herbalnost. Osim simbola, etiketa Vinarije Puhelek-Purek prva je etiketa u Hrvatskoj koja ima Brailleovo pismo koje za cilj ima pokazati kako je vino dostupno svima. Ovo su etikete koje govore o vinima, pokazuju nam kakvog je karaktera vino i olakšavaju dilemu u kojoj se potrošač često nađe. Razigrano, veselo i hrabro. Odaju nam dojam da su im i vina tako lepršava, osvježavajuća i vesela. Definitivno etiketa koja potrošača zove da kuša vino.

hen it comes to unusual labels and innovative design, which will adorn the bottles, we have to mention winery Puhelek-Purek. The new label was introduced very successfully. It’s quite different from anything designers of labels have offered us so far. Zeljko Županić and Vanja Cuculić made a step forward from the studio ”Cuculić” and offered something beautiful to the Croatian wine scene, something interesting, fun, and unseen. Scattered playing cards, and queens holding a bird in their hand, leaf, or a flower, those are all labels of the winery Puhelek - Purek. The label is full of symbols. Firstly, sisters Puhelek were crowned with the title of Wine Queens, which is a promoter of wine, viticulture and wine-growing regions. It spreads the culture of wine drinking. The playing cards are a symbol of lottery, because every year in the vineyard is a game of chance. On the label of ”Kraljevina”, wine queens hold a leaf, which is a symbol of liveliness, because ”Kraljevina” wine is just like that, smooth and refreshing. And of course, the label of Sauvignon, which was highlighted with flowers, symbol which shows that the Sauvignon Puhelek - Purek wine reveals its distinctive characteristics by just smelling it: aroma and herbaceous. In addition to the symbol, the label of the Winery Puhelek–Purek is the first label in Croatia that has Braille, which shows that the wine is accessible to everyone. These labels represent wines, they show us the character of the wine, and facilitate the dilemma in which the consumer is often found. Labels could be playful, cheerful or brave, so they give us un impression that the wines are also lively, refreshing and cheerful. Definitely, this label calls to taste the wine.

This place is situated 37 kilometers northeast of Zagreb, along the River Lonje’s valley, at the southeast of the slopes of Mt Medvednica. Particularly interesting is Zelinska wine road, which passes vineyards of Zelina region. Family farm Jarec-Kure is situated at the very beginning of St Ivan Zelina. All wine lovers can come to their cellar to taste good wine. Continuing the century long tradition, they produce high quality wines with controlled origin. Particular emphasis is on Pinot White and Chardonnay. By cultivating 10 Ha of vineyards, which contain vines Pinot white, chardonnay, kraljevina, graševina, moslavac and Pinot red, Winery Jarec-Kure produces elegant and sophisticated wines, fulfilled with the rich aromas of apricot, green pear, apple, honey and peach. PINOT WHITE In this vineyard, Pinot white provides high quality grapes. Therefore, this wine has extraordinary characteristics. It has a beautiful light yellow color with greenish glint, while the aroma is very intensive- fruit with domination of green apples and pears. The wine gives an impression of freshness. It is soft and fruity. Definitely the one to remember.


CHARDONNAY Lijepe je i zelenožute boje, trajne i fine arome s karakterističnim tropskim notama koje postepenim otvaranjem vina idu prema zrelom voću, mineralnim, pa i začinskim aromama. Okus je pun, jak, bogat i trajan, tako da dugo vremena nakon kušanja ostaje okus vrhunskog vina. KRALJEVINA ZELINA To je autohtono, lagano, pitko, bijelo vino, koje cijene i u kojem uživaju mnogi vinoljupci. Srednjih je alkohola i blago izražene kiselosti, te je izvrsno osvježavajuće vino, posebno ljeti. Ovo se vino od 1999. godine proizvodi na gospodarstvima organiziranim u Udrugu proizvođača marke vina Kraljevina Zelina. MANZONI BIJELI Ovo je vino križanac Chardonaya i Rajnskog Rizlinga. Pokazuje veliki potencijal i pobuđuje znatiželju mnogih vinskih stručnjaka, proizvođača i konzumenata. To je vino izrazite voćnosti i svježine, a istodobno vrlo strukturno i bogato, dugog okusa s aromama više tipičnim za razvijeni Rajnski Rizling.

Vina Kocijan Kocijan Wines Tijekom 80-tih godina obitelj Kocijan počela je saditi svoje prve vinograde. During the 80s, family Kocian began to plant their first vines in vineyards.

Vladimir Kocijan bio je glavni pokretač ove obiteljske vinarije smještene u pitoresknoj Štrigovi na samom njenom izlazu u smjeru Železne Gore. Završio je poljoprivrednu školu u Križevcima, te 13 godina rado u podrumu Agromeđimurja kao poslovođa. Sin Petar je nova snaga uključena u vođenje podruma i donošenja odluka. Danas obitelj Kocijan obrađuje 7 hektara vlastitih nasada, te još otkupljuju 2 hektara od kooperanata. Proizvodnji grožđa posvećuje se posebna pažnja, jer odatle sve počinje. Manjim opterećenjem rodnosti trsa i primjenom ekološki prihvatljivih agrotehničkih zahvata značajno se povećava kvaliteta grožđa, a onda kasnije i vina. Najbolji vinogradi nalaze se na mikrolokacijama Orehovčak i Banfi.

uring the 80s, family Kocian began to plant their first vines in vineyards. Vladimir Kocijan was the main promoter of this family winery situated in the picturesque Štrigova on its sole exit in direction to Železna Gora. He graduated from the agricultural school in city of Križevci, and worked for 13 years as manager in the Agromeđimurje’s cellar. His son Petar represents a new force and vigor involved in the cellars management and decisionmaking situations. Today, family Kocijan deals with seven acres of its own crops and plantations, furthermore, in addition, they are in purchased possession of two acres from cooperants. Special care is devoted to production of the grapes, because it all starts there. With less stress from the yielding of the vine and by applying environmentally friendly agrotechnical procedures the quality of grapes is significantly increased, and later the quality of wine itself. The best vineyards are situated in microlocations (small locations) of Orehovčak and Banfi.

There are sorts of especially promising Gewürtztraminer (Aromatic Traminac) of later harvest, then Chardonnay, Grashevina, Rheine Riesling, Sauvignon and of course Pušipel. Moreover, there are, from red varieties, Cabarnet Sauvignon and a blend of wines Štrigovska Bells that has become famous in restaurants by pairing with continental food. As part of the enterprise there is a cellar equipped with stainless steel (inox) containers for controlled fermentation of the grape must and for the wine storage. Noble oak barrels are placed in the second part of the cellar and are used for wine aging. Wood leaves a mark on the bouquet, increases expressiveness and varietal character of the wine.

Near Bordeaux there are numerous vineyards in which a large number of prestigious wines are being produced. All of these wines are known in the world as Bordeaux wines, or simply ”Bordeaux”. Bordeaux is one of the most famous terms in the world for professionals and people who might not know much about wines, but have heard of the ”Bordeaux”.

The term ”Bordeaux blend” is used for wines made from traditional Bordeaux varieties. These varieties may be from Bordeaux, but the style of the real Bordeaux and red wines of the New World can be quite different. In the past the term ”Bordeaux blend” has been used for marketing purposes, but today it’s used to describe the style of some wines, and not only to sell them.


Vina ”bordoške kupaže” napravljena su od crnih sorti grožđa, koje se tradicionalno koriste u francuskoj regiji Bordeaux. To su cabernet sauvignon, merlot, cabernet franc, petit verdot i carmenere. Samo ime Bordeaux je zaštićeno te se ne može koristiti na etiketama vina izvan istoimene regije, a pojam ”bordoška kupaža” koristi se žargonski u određenim krugovima trgovaca, vinara i poznavatelja vina.

”Bordeaux blend” wines are made from black grapes, which are traditionally used in French region of Bordeaux. These are Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot and Carmenere. The name Bordeaux is protected and can not be used on the labels of wines outside the Bordeaux region, and the term ”Bordeaux blend” is a slang used in certain circles of retailers, winemakers and wine connoisseurs.

Merlot mješavini daje arome crvenog voća, poput malina ili višanja, ali i arome crnog bobičastog voća, što sve ovisi od regije. Što je neko podneblje toplije, to su arome u vinima veće, poput marmelade i više podsjećaju na ukuhano crno bobičasto voće.

Merlot gives to the blend aromas of red fruits, such as raspberries or cherries, but also aromas of red berries. It all depends on the region. As the climate gets warmer, the more higher aromas are, they are like jam, and they remind of cooked black berries.

Elegantni i nježni tanini i zaokružen, mekan okus, ono su što čini kvalitetu merlota generalno. Cabernet sauvignon pak češće daje arome crnog ribiza, suhe šljive, eukaliptusa, kupine, duhana, ali i zelene paprike ako grožđe nije bilo dovoljno zrelo ili je iz hladnije regije, odnosno godine. Osim toga, cabernet sauvignon vinima daje snagu i bogatstvo okusa, kompleksnost, slojevitost, duboku boju i snažnu strukturu zahvaljujući jakim i vrlo postojanim taninima. Cabernet franc je karakterističan po aromama malina i jagoda, ljubičica, mente, čaja i začinskih aroma pa njega u kupažama najčešće opisuju kao začin. Malbec pojačava boju i čini je ozbiljnijom, dok petit verdot pojačava punoću i daje aromu crnog bobičastog voća i začina. Bordeaux, vinari i njihovo znanje i iskustvo desetljećima su inspiracija svim vinarima svijeta. Svatko želi doseći kvalitetu najboljeg Bordeauxa, ali mnogi žele pokazati da to rade i bolje. Neki su u tome više nego uspješni, dok će drugima, u koje ubrajamo i vinare iz Hrvatske, biti potrebno još malo vremena. U Hrvatskoj, regije poput Baranje ili Slavonije, mogu dati vina, koja dosta nalikuju onima iz Bordeauxa. Najčešće su to klasične mješavine cabernet sauvignona i merlota, koje su vješto oplemenjene komponentama iz hrastovih bačava.

Elegant and soft tannins and a rounded, soft taste, are what generally makes the quality of Merlot. Cabernet Sauvignon gives aromas of black currants, plums, eucalyptus, blackberries, tobacco, but it can also give aromas of green peppers if the grapes are not ripe enough, or they come from a colder region. In addition, Cabernet Sauvignon gives to the wines the power and richness of flavor, complexity, multiplicity, deep color and strong structure due to the strong and very persistent tannins. Cabernet franc is characterized by aromas of raspberry and strawberry, violet, mint, tea and spice aromas, so it is often described as a spice in the blend. Malbec intensifies the color and makes it more serious, and Petit Verdot boosts volume and gives a flavor of red berries and spice. Bordeaux, winemakers and their knowledge and experience have been an inspiration for decades to all winemakers in the world. Everyone wants to reach the quality of Bordeaux, but many want to show that they are doing better. Some are in fact more than successful, while others, including the winemakers from Croatia, require a little more time. In Croatia, regions like Baranja and Slavonia, can give wines which quite resemble those of Bordeaux. Most often these are classic blends of Cabernet Sauvignon and Merlot which are enriched with components from the oak barrels.

Since 1999, as a young family winemakers, they started to follow their own instinct and long tradition of Kutjevo. With subcontractors and their own crops, Tandara winery produces about 80,000 liters of wine each year. Their wines were placed on the whole Croatian market and part of Western Europe. Vinarija Kos & Jurišić Kos & Jurišić Winery Uz kušanje vina gosti mogu uživati i u tradicionalnim delikatesama zelinskoga kraja. In addition to wine tasting, guests can enjoy traditional delicacies of Zelina inogradi vinarije Kos & Jurišić smješteni su na najsunčanijim i strmim obroncima zelinskog vinogorja u mjestu Nespeš. Na 4ha samostalno zasađenih i kompletno obnovljenih vinograda, te 3 ha vinograda u zakupu, na preko 25.000 čokota uzgajaju se sorte poput Rajnskog rizlinga, Chardonnaya, Sivot pinota, Kraljevine, Graševine i Trollinger koji u kombinaciji sa Rajnskim rizlingom daje vino Kerner. U srcu vinograda nalazi se i kušaonica s dvije odvojene sale, kapaciteta do 120 osoba. Uređena je u rustikalnom stilu, a opuštajuću atmosferu dopunjuje mala etnološka zbirka starih predmeta i staro ognjište. Uz kušanje vina gosti mogu uživati i u tradicionalnim delikatesama zelinskoga kraja. PINOT SIVI ROSE Pinot sivi jedan je od najćudljivijih izdanaka vitis vinifere. Ne spada ni u bijele ni u crne sorte, zbog čega i nosi naziv sivi. Naime, izgled grozda govori da se radi o crnoj sorti, međutim količina antocijana odgovornih za boju u samoj bobici je toliko niska da se klasičnom tehnologijom proizvodnje crnih vina može najviše postići tek

ineyards of the Winery Kos&Jurišić are situated on the sunniest slopes and steep of Zelina vineyards in Nespeš. On 4 hectares of individually planted and completely restored vineyards, and on 3 ha of vineyards under lease, on over 25,000 vines are grown varieties such as Riesling, Chardonnay, Pinot Gris, Kraljevina, Graševina and Trollinger, which, in combination with a Rhine Riesling, gives Kerner wine. At the heart of the vineyards tasting room is situated, with the capacity up to 120 people. Decorated in a rustic style, and the relaxing atmosphere is complemented by a small ethnological collection of old things and the old fireplace. In addition to wine tasting, guests can enjoy traditional delicacies of Zelina. PINOT GRIS ROSE Pinot Gris is one of the whimsical shots of Vitis vinifera. It does not fall into the white or the black varieties, that’s why it carries the name gray. Specifically, the cluster shows that it is a red grape variety, however the amount of anthocyanins responsible for the color of the berry is so low that the

Zelinska vinarija Kos & Jurišić već se dugo bavi ovom zahtjevnom sortom, punom potencijala i rizika, a 2012. su napravili veliki iskorak u ispitivanju dometa ove sorte. Kratkom maceracijom najzrelijeg grožđa 6-7 sati uhvatili su nešto tanina i izgradili čvrstu kičmu na kojoj slatkasta voćnost nije kratkotrajna ni banalna već upravo veličanstvena. Uravnotežena, bogata i krepka. Vino je jako atraktivna i vrlo intenzivna mirisa. Kao da se radi o aromatičnoj sorti tipa traminac, ali s puno više svježine i voća. Superzavodljive i nevjerojatno bogate voćnosti na nosu. Pregršt šumskih jagoda, obilje banana, te ponešto marelica, malina, jabuka i bresaka. U ustima jednake raskoši i identična seduktivnosočna karaktera donekle učvršćenog blagim taninima i izvrsno doziranim kiselinama. Na finišu se osjeti doza slatke voćnosti, što se još dugo po ispijanju drži na nepcu i jeziku. Radi se o savršenom interpretu i regije i sorte, svježine i mirisa kojim oboje obiluju. CHARDONNAY Vino srednje jakog tijela i lagano izraženih cvjetnih aroma. Dobro strukturirano, vrlo svježe i uravnoteženo. KERNER Kerner je novija njemačka aromatična vinska sorta bijelog grožđa, križanac sorata Trollinger i Rizling rajnski. Obzirom na tu činjenicu, vina su vrlo slična rizlingu, ali i s nježnom muškatnom aromom. RAJNSKI RIZLING Vino je srednje alkoholno, izražajne, ali dobro uravnotežene kiselosti. Boja je svijetla zeleno-žuta, ima naglašenu sortnu aromu, vrlo skladno i zaobljeno.

It is very sensitive in the vineyard, and the variations in the quality are more the rule than the exception. Winery Kos&Jurišić has been engaged with this challenging variety for a long time. This variety is full of potential and risk, and in 2012 they have made a major breakthrough in the study range of this variety. With short maceration of the grapes, 6-7 hours, they caught some tannins and built a solid backbone on which sweet fruitiness is not fleeting or trivial but rather magnificent. It is balanced, rich and hearty. Wine is very attractive, with very intense aroma. Type of aromatic variety similar to Traminer, but with a lot more freshness and fruit. It is very seductive and with incredibly rich fruitiness. A handful of strawberries and bananas, and some apricots, raspberries, apples and peaches. In the mouth the same luxuries and identical seduktive-juicy character, with consolidated mild tannins and perfectly dosed acids. At the end you can feel a dose of sweet fruitiness, which holds on the palate and tongue long time after tasting. It is a perfect interpret of the region and the variety, freshness and aroma. CHARDONNAY Wine medium heavy body and gently expressed floral aroma. Well structured, very fresh and balanced. KERNER Kerner is a recent German wine, aromatic white grape variety, a cross between the varieties Trollinger and Riesling. Considering this fact, the wines are very similar to Riesling, but with a gentle aroma of nutmeg. RHINE RIESLING Wine is with an alcoholic medium, expressive, but well -balanced acidity. The color is bright green and yellow, has a strong aroma, very harmonious and rounded.

We place around 25% of our products on domestic market, but we are unable to collect that. For manufacturing high-quality wooden barrels we need high-quality and dry wood that was naturally dried on sun and rain. ako je vinova loza stigla u Argentinu zajedno sa španjolskim kolonizatorima još u 16. stoljeću, prisutnost argentinskih vina na svjetskoj sceni poprilično je kratka. Sve do devedesetih godina dvadesetog stoljeća, ova je zemlja bila najveći proizvođač vina izvan Europe, no kvantiteta pritom nije podrazumijevala i kvalitetu. Gotovo sve količine konzumirale su se unutar granice države jer se nisu smatrale dovoljno dobrim za izvoz. Tek je želja za prodiranjem na strano tržište dovela do buđenja ”uspavanog diva” i poboljšanja kvalitete. Danas je ova zemlja najveći izvoznik vina u Južnoj Americi i šesti najveći proizvođač vina na svijetu. Argentinska vina postaju sve popularnija i priznatija i na globalnoj enološkoj sceni. Većina argentinskih vinskih regija nalazi se u zapadnom dijelu države podno Andi. Veličanstveni planinski lanac sprečava prodor vlage iz kišnih oblaka, stoga se vinorodna područja odlikuju suhom, polupustinjskom klimom. Argentinski komercijalni vinogradi među najvišima su na

lthough the vines arrived in Argentina together with the Spanish colonizers in the 16th century, the presence of Argentine wines on the world stage is quite short. Until the nineties of the twentieth century, this country was the largest producer of wine outside Europe, but the quantity didn’t imply the quality. Nearly all produced wine was consumed within the borders of the state, because it wasn’t considered good enough to export. The desire to penetrate the foreign market led to the awakening of the ”sleeping giant” and quality improvement. Today, the country is the largest wine exporter in South America and the sixth largest wine producer in the world. Argentine wines are becoming more popular and acknowledged on the global oenological scene. Most of Argentina’s wine region is located in the western part of the state, under the Andes. Magnificent mountain range prevents moisture from rain clouds, so the wine-growing areas are characterized by a dry, semi-desert climate. Argentina’s commercial vineyards are among the

Upravo te klimatološke osobitosti daju argentinskom vinu njegov specifičan karakter – jača izloženost grožđa UV zračenju rezultira plodovima deblje kože, pa je vino snažno, sočno i tamno s većom količinom tanina i izraženijom kiselošću. Uz to, zahvaljujući nadmorskoj visini i suhoći glavnih argentinskih vinskih regija, kukci, plijesan, bolesti loze i ostale neprilike koje pogađaju vinograde u ostalim državama rijetkost su u Argentini. Dok su u Argentini naširoko prisutni chardonnay, merlot, cabernet sauvignon i ostale ˝standardne˝ vrste grožđa, pravi dragulj u vinskoj kruni jest malbec. Iako je podrijetlom iz Francuske, ovo tamno, robusno grožđe sve se više poistovjećuje s Argentinom, a malbec vino prava je zvijezda u usponu – moćan eliksir tintasto crne boje koji obiluje karakterom. Najcjenjenija malbec vina u Argentini dolaze iz njezine najčuvenije vinske regije – provincije Mendoza, odnosno iz područja s nadmorskim visinama od 800 do 1500 metara kao što su Lujan de Cuyo i dolina Uco. No, iako je Mendoza zaslužna za proizvodnju čak osamdeset posto izvoza argentinskog vina, to ne znači da su ostale vinske regije ˝za baciti˝. Tu je i Salta na sjeveru države sa svojim kvalitetnim cabernet sauvignonima i torrontéima, Neuquen i Rio Negro u hladnijoj klimi sjevera Patagonije te San Juan i La Rioja, regije koje se tek nalaze u usponu. Uostalom, vinska kultura prožima čitavu Argentinu, i to do te mjere da je argentinska vlada 2010. godine proglasila vino službenim nacionalnim pićem!

These climatological characteristics give the Argentine wine its unique character - strong exposure to UV radiation results in thicker skin of the grapes, so the wine is powerful, juicy and dark with plenty of tannins and pronounced acidity. In addition, due to the altitude and dryness of the main Argentine wine regions, insects, mildew, vine diseases, and other troubles that affect vineyards of other countries, are uncommon in Argentina. While Chardonnay, Merlot, Cabernet Sauvignon and other ”standard” types of grapes are widely present in Argentina, a real jewel in the vine crown is the Malbec. Although, this grape variety comes from France, the dark, robust grapes are identified with Argentina, and Malbec wine is a true rising star - a powerful elixir with ink black color that has a rich character. The most appreciated Malbec wines in Argentina come from her most famous wine region - Province of Mendoza, i.e. from areas with altitudes from 800 to 1500 meters such as Lujan de Cuyo and Uco Valley. Although Mendoza is responsible for the production of eighty percent of Argentine wine for export, this does not mean that other wine regions are ”trash”. There is also Salta in the north of the country with its high quality Cabernet Sauvignon and Torronté, than there are Neuquén and Rio Negro in the colder climate of northern Patagonia, as well as San Juan and La Rioja, regions that are on the rise. After all, wine culture pervades the whole of Argentina to the extent that the Argentine government, in 2010, declared the wine as the official national drink!

ravilno posluživanje i serviranje vina je osobito važno, ali pritom treba znati koje temperature vina su najbolje i kako izgleda hlađenje vina. Pravi okus i miris vina osjetit ćete samo ako vino poslužite uz primjerenu temperaturu. Posluživanje vina ovisi i o godišnjem dobu. U ljetnim mjesecima vina koja poslužite mogu imati stupanj ili dva manje. Uglavnom se bijela vina i rose vina služe ohlađena u hladnjaku ili na ledu. Suha crvena vina služe se na temperaturi koja je nešto niža od sobne temperature. Šampanjac se služi jako ohlađen u hladnjaku ili na ledu. Idealna temperatura za posluživanje crnh vina kreće se između 15°C – 19°C, što naravno ovisi o vrsti, odnosno težini crnog vina. Lagana i voćna vina poput Borgonje, Portugizca ili Lambrusca najbolje je servirati na cca 13°C kako bi njihova delikatna voćnost i lepršavost ostala netaknuta. Crni Pinot, Sangiovese, Barbera, Teran i druga vina koja su lakšeg do srednjeg tijela traže i malo višu temperaturu, 17°C bi bilo idealno. Teškaši poput Cabernet sauvignona, Syraha, Plavca

roper wine serving is particularly important, but what one should know is what wine temperature is the best, and how wine cooling looks like. You will sense the real flavor and aroma of wine only if you serve it at the right temperature. Wine serving depends on the season. In the summer, you can serve wines degree or two lower. Mainly, white wines and rose wines are served after cooling in the refrigerator or on ice. Dry red wine is served at a temperature slightly lower than the room temperature. Sparkling wine is served very chilled. Ideal temperature for serving red wines ranges between 15°C - 19°C, which, of course, depends on the sort and weight of the red wine. A light and fruity wine such as Burgundy, Portugizac or Lambrusco is best served at about 13°C so their delicate fruitiness and liveliness remain intact. Pinot Noir, Sangiovese, Barbera, Teran and others that are easy to medium body weight are looking for a slightly higher temperatures. 17°C would be ideal. Heavyweights such as Cabernet Sauvignon, Sryah, Plavac Mali prefer a degree or two higher temperatures. Above 20°C red wine starts to ”brag” of its alcohol, which

Lakša bijela poput Rieslinga, Sauvignon Blanca i Malvazije pokazat će svoje najljepše karakteristike na nižim temperaturama, dok recimo Chardonnay preferira gornju granicu, 11°C - 13°C Predikatna vina - kasna, izborna i ledena berba, piju se i pri temperaturama nižim od 5 stupnjeva. Temperatura posluživanja nije ista za sve tipove pjenušca, jer ona ovisi o boji, sadržaju šećera, ukupnog ekstrakta, starosti ili svježini, aromatičnosti, ljupkosti, mekoći ili oštrini okusa, pa čak intenzitetu pjenušanja. Svaki tip pjenušca kao serija sorte ili kombinacija sorata određenog podrijetla zahtjeva specifičnu temperaturu posluživanja. Neka od pravila su: > Pjenušci koji nose oznaku ”brut” ili ”brut de brut” poslužuju se na temperaturi od 7 do 8°C > bijeli suhi (secchi) pjenušci poslužuju se na temperaturi od 7 do 9°C > bijeli ljupko-slatkasti pjenušci poslužuju se na temperaturi od 8 do 12°C > ružičasti rose pjenušci, mladi i svježi, poslužuju se na temperaturi od 12 do16°C > Pjenušci proizvedeni od crnih vina poslužuju se uvijek s temperaturom u ambijentu posluživanja (restoran, hotel, stan itd.) tj. od 18 do 21°C.

If you serve white wine that is too chilled (below 7°C), wine will lose many of its flavors and aromas. However, you still want to serve your white wines colder than red. Generally speaking, white wines are best served at a temperature between 7°C - 13°C, depending on the wine. Lighter white wines such as Riesling, Sauvignon Blanc and Malvasia will show their best features at lower temperatures, while Chardonnay, for instance, prefer upper limit, 11°C - 13°C. Predicate wine - late, selected and ice vintage, are drunk at temperatures below 5 degrees. Serving temperature is not the same for all types of sparkling wines because it depends on the color, sugar content, total extract, age of freshness, aroma, sweetness, softness or sharpness of taste, and even the intensity of foaming. Each type of sparkling wine requires specific temperature controls. Some of the rules are: > Sparkling wines that are labeled ”brut” or ”brut de brut” are served at a temperature of 7-8°C > White dry (Secchi) sparkling wines are served at 7-9°C > White charmingly - sweet sparkling wines are served at a temperature of 8 to 12°C > Rose-pink sparkling wine, young and fresh, served at a temperature of 12 to 16°C > Sparkling wines made from red wines are always served at a room temperature, that is 18 to 21°C.

he begginings of viticulture and winemaking of winery Florijanovic were in early 90s. It is located in continental Croatia in Popovača, 60 km southeast of Zagreb, on the slopes of Moslavačka gora, with a view of the Nature Park Lonjsko polje. Ivica Florijanović, owner of the winery, an economist to whom wine production was just a hobby and has grown into the life’s calling. The story about the wines, the quality and love begins with 1.5 hectares of vineyards, and now they have 5 Ha. Annual wine production of the winery is approximately 25,000 liters and the capacity of the cellar is 60,000 liters. Wine production takes place in controlled fermentation and in stainless steel tanks. One part of the wine is produced with surlie method, and wines with strong body and alcohol are produced in the barrique barrels. The winery produces three indigenous white wines of Moslavina: Škrlet, Dišeća ranina and Moslavac, as well as the other famous wines: Riesling, Chardonnay, Muscat Blanc, Pinot Gris. From red wines they produce Frankovka. Over the years, wine quality has received many gold and other medals at wine exhibitions in Kutina, Sisak, Ivanić Grad, Zelina, Daruvar and Virovitica,

U vinariji se proizvodi 3 autohtone bijele sorte vina Moslavine: Škrlet, Dišeću raninu i Moslavac, te ostale poznate sorte vina: Graševinu, Chardonnay, Muškat žuti, Pinot sivi. Od crvenih vina u proizvodnji je Frankovka. Kvaliteta vina tijekom godina nagrađivana je brojnim zlatnim i drugim odličjima na izložbama vina u Kutini, Sisku, Ivanić Gradu, Zelini, Daru-

varu, Virovitici, te međunarodnim izložbama u Mađarskoj i Sloveniji. MEDALJE I NAGRADE ZA KVALITETU > Šampion izložbe vina u Kutini 2009.godine - zlatna medalja Škrlet 2008. > Brončana medalja za vino Škrlet 2012.godine na IWC sajmu u Londonu. > Izložba vina u Kutini 2007. godine 1. nagrada za dizajn etikete u konkurenciji dvjestotinjak domaćih i stranih etiketa. > Tradicionalna manifestacija Voloderska jesen 2002. godine vlasnik vinarije je proglašen najboljim vinogradarom te dobio plaketu Večernjeg lista. Vinarija u kušaoni kapaciteta 50 osoba organizira vođene degustacije vina uz mogučnost sljubljivanja s autohtonim moslavačkim jelima. Manifestacija ”Kak su brali naši stari” je tradicionalna manifestcija koju vinarija upriličuje svake godine u rujnu već dugi niz godina povodom početka berbe grožđa u Moslavini, a tom prilikom se koriste stari arhivski alati za berbu i preradu grožđa koje vinarija posjeduje te tako čuva baštinu moslavačkog kraja. Škrlet Vino sorte Škrlet, kao prva sorta u Hrvatskoj na kojoj je započela klonska selekcija te je ista u završnoj fazi, je perjanica vinarije te se proizvodi kao suho i polusuho vino. Vino je nježne specifične sortne arome i vrlo ugodnog mirisa. Dominira voćnost u kojoj su naglašene jabuke s nježnim travnatim i herbalnim tonovima. Okus je u skladu s mirisom, nježan i lagan te izrazito pitak. Tijelo je vitko, kiseline su živahne i ugodno uklopljene. Vino je svijetlo žućkaste boje s nijansama zelene. Gastro preporuka - posluživati uz sve vrste ribe i morskih specijaliteta, jela od bijelog mesa i tjestenine, sir i pite od sira, sve vrste gustih i krem juha te uz pikantna jela. Gastro recommendation Serve as an aperitif, with warm appetizers, with sauces of butter and cheese, spreadable cheese, fried and melted cheese, roast pork and lamb. ilač winery is the fruit of the owner Ivica Mihaljević’s vision and love of wine and viticulture. Vrgorac vineyard has about 11.5 million grape vines which make it one of the largest vineyards in Croatia. With 25,000 of its plantations, along with plantations of its subcontractors, Winery Pilač wants to become a recognized producer of wine in the local and foreign market. The goal is to produce wines of indigenous Dalmatian varieties and to improve the production process as much as possible.

To je vino Pušipel, autohtona sorta vina proizvedena isključivo u Međimurju. Sorta grožđa pušipel ima jako interesantnu priču, jer se ona u originalu zove moslavac i porijeklom je iz Moslavine. Sorta je to koja se donedavno intenzivno sadila zbog svojeg velikog rodnog potencijala, a danas na odabranim položajima i s ograničenom rodnošću daje vina izuzetne kvalitete, od redovitih berbi pa do najviših predikata. U Sloveniji je jako popularna te se tamo zove šipon, ali najveću slavu ova sorta grožđa ima u mađarskoj regiji Tokai te se tamo zove furmint i služi kao najbitnija sorta za dobivanje nadaleko poznatog vina Tokai. Samo u četiri države na svijetu raste loza koja se u svakoj drugačije zove, ali daje isto vino. U Austriji je to mosler, u Sloveniji šipon, u Mađarskoj furmint, a u našoj zemlji moslavac. Četiristo godina stari dokumenti svjedoče da se ta sorta u Međimurju, puno prije novovjekog imena moslavac, zvala Pušipel.

ew star on the wine scene, wine that never leaves you indifferent, not you nor the biggest critics, wine that seduces with color, aroma and taste. That is Pušipel, autochthonic vine exclusively made in Međimurje. Grape sort Pušipel has an interesting story. This grape sort is originally called Moslavac and it comes from Moslavina. Until recently, this sort has been planted intensively because of its great fertility potential. Today, it’s planted in selected locations and with limited fertility giving high quality wines ranked from regular vintages to highest predicates. It’s very popular in Slovenia where they call it Šipon, but this sort is most famous in the Hungarian region Tokai where they call it Furmint and it’s used as the primary sort in the production of the well known wine Tokai. Only four countries in the world have this grape sort and in every one of those countries, it has a different name although it gives the same wine. In Austria it’s called Mosler, in Slovenia Šipon, Hungarians call it Furmint, and here in Croatia we call it Moslavac. Documents dated four hundred years ago testify that this sort was called Pušipel in Međimurje long before its modern age name Moslavac.


Međimurski pušipel je zaštićena robna marka Međimurske županije a vinari Međimurja, okupljeni su u vinarsko - vinogradarskoj udruzi Hortus Croatiae. To su mahom najpoznatija imena međimurskog vinarstva: Agromeđimurje, Zdravko Dvanajščak, Branimir Jakopić, Milan Židov, Zvonko Belović, Anton Kojter, Vladimi Horvat, Rajko Cmrećnjak, Bojan Štampar, Alojz Nova, Franjo Lovrec, Boris Novak Vlado Kocijan, Franjo Lebar i Alojz Tomšić. Na tržište izlaze sa zajedničkom etiketom i zajedničkom cijenom te se prva boca otvara na sajmu Urbanovo koji se dešava u svibnju. Pušipel na tržište izlazi u dvije varijante: Clasic koji je svježe jednogodišnje vino te Prestige koji označava predikatna vina. Diskretnog je sortnog mirisa, osvježavajućeg i lepršavog okusa, zbog čega odgovara uz tipična međimurska jela. Pušipeli najbolje pašu uz mrvicu masnija jela, kao što su purica s mlincima, pogačica od čvaraka, a posebice međimurska autohtona jela kao što su meso ‘z tiblice i sir turoš.

Međimurje Pušipel is registered trademark of Međimurje county, and Međimurje winemakers are gathered in wine association Hortus Croatiae. Those are most famous names of Međimurje viticulture: Agromeđimurje, Zdravko Dvanajščak, Branimir Jakopić, Milan Židov, Zvonko Belović, Anton Kojter, Vladimir Horvat, Rajko Cmrećnjak, Bojan Štampar, Alojz Nova, Franjo Lovrec, Boris Novak Vlado Kocijan, Franjo Lebar and Alojz Tomšić. They enter the market with the same label and price. The first bottle is opened at the Urbanovo fair in May. Pušipel enters the market in two variants: Classicfresh one year old wine, and Prestige- predicated wines. It has a discrete varietal aroma, freshly and swaying taste and it goes well with the typical Međimurje dish. Pušipel goes best with slightly fat food, for example, turkey with mlinci, flat bread with cracklings, and especially Međimurje autochthonous dishes such as meat from tiblica and Turoš cheese.

ko bi krenuli starim ”Napoleonovim putem” iz Stona prema Ponikvama uspinjući se prema vrhu očarao bi nas način izrade istog kao i prekrasni pogled na Stonske zidine. Samo malo dalje mnoštvo kamena složenog u suhozide kao da vas tjera da osjetite sav znoj i trud koji je bio potreban da bi se pripremili ovi zahtjevni tereni za sadnju njegovog veličanstva Plavca Malog. Veći dio vinograda u vlasništvu vinarije Vukas zasađen je između 1950. i 1980. godine i 100% je sorte Plavac Mali. Vođenje vinograda braća Vukas su preuzeli 2002. godine, a poslije berbe 2003. angažiraju pomoć struke kako bi na pravilan način pristupili radu u vinogradu i proizvodnji vina. Od tada sva pozornost posvećuje se izgradnji vinarije i drugačijem pristupu vinogradarstvu i vinarstvu. Rezultat dolazi 2006. godine kada proizvode i prvo vrhunsko vino (prvi Plerej). Izrazito povoljno vrijeme u berbi 2009. godine i grožđe u jako dobroj kondiciji dalo je mogućnost, da uz redovitu, jedan dio vinograda ostave i za kasniju berbu od koje dobijaju ”Plerej grand cru”.

f you take an old Napoleon road from Ston to Ponikve, climbing to top, you will be captivated by the way it has been made, as well as the view of the old walls of Ston. Just a little further, you can see multitude of stones piled up in dry stone walls making you feel all the effort and sweat that was necessary to built these demanding terrains for the purpose of growing his majesty Plavac Mali. Better part of the vineyard is property of Vukas winery. It was planted between 1950 and 1980 and it’s 100% of the Plavac Mali vine. Vukas brothers started to manage the vineyard in 2002, and after the 2003 vintage they engaged the profession in order to properly approach the work in vineyard and in wine production. From that moment focus is on the construction of winery and different approach to viticulture and enology. Results came in 2006 when they released their first wine- Plerej. Convenient time of 2009 vintage, and good grape condition, gave an opportunity that with regular, one part of the vineyard is left for the later vintage from which the Plerej grand cru is made.


Vjerujemo da je za svakog istinskog ljubitelja vina pravo zadovoljstvo, a još više i uzbuđenje kušati novu vinsku etiketu, pogotovo ako ne posjedujete nikakve prethodne informacije koje kušača često znaju navesti (i zavesti) po pitanju kvalitete sadržaja butelje. Tako je s Plavcem Malim (privlačna rubinsko-granatna boja) iz pelješkog vinogorja dobivenim iz vrlo dobre berbe za ovo područje. Politika proizvodnje je da se ima što manji prinos i što kasnija berba, kako bi se dobio što veći font prosušenih bobica i što bolju sirovinu za vrhunski plavac. Ne trudimo se proizvesti vina koja su posebno harmonična, lagana i prihvatljivija širem tržištu, već plavac koji ima svoj identitet i autohtonost, voćno vino, robusno sa aromama tipičnih za sortu - kaže nam Dubravko Vukas Uz sreću da posjedujemo vinograde na vrhunskim položajima sa prekrasnom sortom, vinariju koju smo sami uredili po svojim guštima, vrhunskog enologa koji je zaslužan za stručan nadzor prilikom proizvodnje vina, svakim danom imamo sve više zadovoljnih konzumenata naših vina. Ljubav prema proizvodnji vina raste onda kada shvatite o koliko kompleksnom proizvodu se radi i koliko novih izazova donosi svaka nova berba, a svaki zadovoljni konzument ulijeva nam nadu da sva ljubav i trud koji ulažemo nije uzaludan. U našoj vinariji uz vina možete degustirati i razne likere te ekološko maslinovo ulje koje proizvodimo od autohtone sorte Oblica. Kad zatrebaš dah mora i kamena, okus vrhunske kapljice vina, blagost masline pretočenu u zlato maslinovog ulja... Kad poželiš trenutke u kojima sva osjetila uživaju, na pravom ste mjestu..... We believe that tasting new wine is a great pleasure for every true wine lover, especially if they have no previous information about the content quality of the bottle. It’s the same with Plavac Mali (attractive ruby garnet color) from Pelješac vineyard. Production policy is to have as lower yield as possible and with late vintage so there can be more dry berries and better raw material for premium Plavac. We don’t bother making harmonic wines that are light and accepted on the market. Instead, we produce Plavac which has identity and autochthony, fruit wine, robust with aromas typical for this vine-Dubravko Vukas says. With luck of owning the best vineyards, winery that we decorated ourselves and best enologist, we are getting more and more satisfied wine consumers. Love for wine is growing the second you realize how complex the whole production process is, and how every new vintage brings new challenges, and every satisfied consumer gives us hope that all love and hard work isn’t wasted. Beside wine, in our winery you can taste all kinds of liqueurs, as well as ecological olive oil which we produce from the Oblica vine. When you’re in a need for sea breeze and rocks, the taste of top wine drop, mildness of the olive poured into gold of olive oil. Dražen Perković told us a bit more about the products and the plans of this very successful family business. You have years of experience and tradition. Particular emphasis is on ”Viljamovka”? Is this the product that you would highlight in your offer? ”Viljamovka” certainly has an important place in our offer, and we first started production with it, but now,


međutim sada nakon toliko godina proizvedene su i druge rakije i likeri koji stoje uz bok viljamovki. To su morlačka krv, medovača, šljivovica. Koliko je vremena potrebno da rakija dođe na tržište? Period koji je potreban da se likeri i rakije proizvedu i dođu na tržište zavisi o vrsti rakije ili likera. Likeri su proizvodi kod kojih nisu potrebni dugotrajni procesi fermentacije i destilacije, tako da je rok proizvodnje likera između 30-60 dana. Rok proizvodnje rakije je 60-12mj. zbog gore navedenih postupaka i odležavanja same rakije. Svi naši proizvodi su potpuno prirodni i rađeni su od voća jabuke, višnje, kruške, oraha, rogača, trave. Vaše su boce i etikete iznimno atraktivnog dizajna. Imate i program hrvatskih izumitelja. O čemu se točno radi? Mi smo kroz sve ove godine puno ulagali u dizajn naših proizvoda, sve naše proizvode (etikete, naljepnice) na našim bocama raznih veličina, dizajnirala je vrlo talentirana akademska slikarica s kojim surađujemo do danas. Ona nastoji provesti naše ideje, a mi poštujemo njezin talent i umijeće te puštamo da to napravi na svoj način i uvijek je rezultat izvanredan. To se najbolje vidi na serijalu Hrvatski izumitelji, našu ideju da napravimo seriju od 8 Hrvatskih izumitelja (svaki je na jednoj rakiji ili likeru), boce su 0,2L i na bocama i kutijama u kojima se boce nalaze piše tekst o rakiji i izumitelju koji joj pripada na tri jezika. Većinom se prodaju na aerodromima kao gastro suveniri, a za taj serijal dobili smo nagrade za dizajn i svugdje je izazvao divljenje. Paleta vaših proizvoda zaista je široka. Što sve nudite vašim kupcima i gdje oni mogu pronaći vaše proizvode? Naši proizvodi mogu se kupiti po cijeloj Hrvatskoj. Prisutni smo u svim velikim centrima, Kraševim prodavaonicama, po malim suvenirnicama, na svim našim aerodromima. U prodaji je 13 vrsta rakija i likera u raznim pakiranjima od 0,02 L do 1 L, a osim boca od 1 L koja se kupuje više konzumne svrhe (hoteli, restorani i ostalo ugostiteljstvo), postoje i pakiranja za poklone u raznim varijantama. Imate li u planu plasirati neku novu rakiju ili liker? Stalno se trudimo uvoditi nešto novo na tržište pa smo tako uveli pakiranje rakija u epruvetama sa lijepo dizajniranim naljepnicama, a također smo uveli i novi proizvod pelinkovac ”Perković” u kojeg je utkano 20 vrsta biljaka od kojih su uz pelinkovac, gorka naranča, iris i vrijesak. Imamo planove za pelinkovac pošto je novi na tržištu da se prodaje širom Hrvatske kao i ostali naši proizvodi, a na izvozu radimo već dugo i nadamo se unatoč velikim teškoćama da ćemo uspjeti više izvoziti u Europu i ostale zemlje.

How long does it take for brandy to come on the market? The period that is needed to produce liqueurs and brandies, and for them to come on the market, depends on the type of the brandy or liqueur. Liqueurs are products that do not require long-term processes of fermentation and distillation, so the period of production of liqueurs is between 30-60 days. Deadline for brandy production is 6 – 12months, due to the above procedures and the aging of brandy. All of our products are completely natural and are made from apples, cherries, pears, walnuts, carob and grass. Your bottles and labels have an extremely attractive design. You also have a program ”Croatian inventors”. What exactly is it about? Through all these years, we have invested a lot in the design of our products. All of our products (labels, stickers) had been designed by a very talented academic painter with whom we are working to this day. She seeks to implement our ideas, and we respect her talent and skill. We let her do it in her own way and the result is always outstanding. This is best seen in the series of ”Croatian inventors”. Our idea was to create a series of eight Croatian inventors (each one on a brandy or a liqueur), the bottles of 0.2 L and on those bottles, as well as on their boxes, are texts in three languages about brandy and its inventor. These are mainly sold at airports as culinary souvenirs. For this series we got awards for design which was admired everywhere. Your product range is really wide. What else do you offer to your customers, and where can they find your products? Our products can be purchased all over the country. We are present in all major centers, Kraš stores, the small souvenir shops, in all airports. 13 types of spirits and liqueurs are available on the market. uga je tradicija misnih vina Đakovačke nadbiskupije, a nadasve poznata vina postala su prepoznatljiv dio Đakova. Zadnjih 40tak godina jednom čovjeku možemo posebno zahvaliti kada uživamo u kapljicama prekrasnih misnih vina, jer upravo je mons. Stjepan Karalić osoba koja već godinama svojim predanim radom doprinosi razvoju vinogradarstva i vinarstva, a time i proizvodnji misnih vina.

Karalić prisutan je još od 1974. godine kada je na poziv tadašnjeg biskupa mons. Ćirila Kosa, došao ugašenu ekonomiju izvući iz takvog problematičnog stanja. Tada je već bio u službi kao svećenik 11 godina, a u Đakovo je došao i prepoznao šansu u obnavljanju vinograda i proizvodnji vina. Staviti na prave noge dugu tradiciju biskupije u

Stjepan KARALIĆ is a longtime economic diocese and restorer of the total economy of the diocese, especially viticulture and enology. He is stil serving as a syndic in Archdiocese. Mons. Đakovu, a sada nadbiskupije, u proizvodnji i njegovanju kvalitetnih sorti grožđa i veoma kvalitetnog vina nije bio nimalo jednostavan zadatak. Tadašnji zakon je ograničavao vinare na način da oni koji žele plasirati vino svoje vinarije moraju imati 10 ha vinograda, a u tom trenutku Đakovačka biskupija imala je 12 ha vinograda, što je donjelo olakšanje u pokretanju posla, te na osnovu toga mons. Karalić od ministarstva dobija dozvolu da vinograd registrira i plasira vino. Sljedeći korak je bilo stvaranje etikete, koja je povezana sa povješću vinograda i vinogradarstva biskupije. Na etiketi je istaknuta 1716. godina jer od tada u arhivu postoje pisani dokumenti o organiziranoj proizvodnji vina. Ono po čemu je etiketa ipak prepoznatljiva su četiri grba biskupa koji su najviše doprinjeli razvoju vinarstva i vinogradarstva biskupije. To su biskupi Bašić, Čolnić, Mandić i Strossmayer. Sam naziv misno vino garantira nam da je vino napravljeno isključivo od grožđa, bez ikakvih dodataka, kao i to da se vino može upotrijebiti prilikom mise u crkvi. Na površini od 29,5 ha vinograda koji su smješteni na obroncima Dilj gore u pitomom selu Trnava godišnje se bere između 15 i 18 vagona grožđa, od čega se plasira 150-180 tisuća litara vina. Svoje vino biskupija nastoji plasirati svećenicima, a osim u Hrvatskoj misna vina možemo pronaći i u Austriji, Poljskoj i Švicarskoj. Prilikom posjete Đakovačkoj biskupiji Papa Ivan Pavao II kušajući njihov poznati Traminac pokazao je izrazito zadovoljstvo i uživanje u ispijanju tog vrhunskog vina. Tadašnji nadbiskup obećao mu je poslati vagon vina na poklon, što je i učinio ubrzo nakon Papinog posjeta, pa je tako Traminac dospjeo u Vatikan. Papa je zadnje kardinale prilikom imenovanja, počastio misnim vinom iz Đakova. > Vrlo je važno da čovjek kada se prihvati nekog posla ne odustaje i ostaje ustrajan do kraja - kaže mons. Karalić kao osvrt na sve što je učinio kroz 40 godina u razvoju vinarstva i vinogradarstva Đakovačke biskupije. > Onaj tko želi imati dobro vino mora slušati struku! Struka i enolozi su temelj razvitka. To je recept uspjeha uz rad i upornost. Mons. Karalić tako već 20-tak godina u tom dijelu posla ima vrhunskog enologa i stručnjaka Miroslava Bošnjaka, koji svojim znanjem upotpunjuje priču o nastanku misnih vina. Kako sam mons. Karalić kaže - Vino treba zapamtiti, a misna vina iz Đakova definitivno su vina koja se pamte, to su vina koja imaju izvrsno izbalansirane kiseline, jakost i ugodu prilikom kušanja. Biskupija plasira uglavnom vrhunska vina, a imaju i sve berbe. Najpoznatiji je njihov Traminac ledene berbe 2009. a mons Karalić za njega kaže da je to vino koncentrat ljepote. Na čuvenom londonskom natjecanju ”Decanter World Wine Awards 2012’’, ovaj je Traminac postao šampion kontinentalne Hrvatske! Enolozi tvrde da je ova titula za nadbiskupijska vina značajnije priznanje čak od zlatne medalje. Od bijelih vina biskupija ima još Traminac i Chardonnay kao vrhunska i Graševinu kao kvalitetno vino. Od crnih proizvode Cabernet Sauvignon i Cabernet Franck, dok Merlot imaju u Trnavi u nasadima.

Od samog osnutka tvrtke postizali su uspjeh na raznim natjecanjima, kako domaćim tako i stranim sajmovima: Vinovita Zagreb, GAST Split, VINO Ljubljana, Zurich, Bordeux, Decanter, Sabatine, Nürnberg, Pariz itd. Više od sto nagrada, medalja i priznanja, te uz to i oko 20 nagrada šampiona krasi njihove prostorije. Time potvrđuju svoja nastojanja i postizanja trajne izvrsnosti te šampionske tradicije. Vinarija godišnje proizvodi oko 900 000 boca. Vinogradi su na vinorodnim položajima južnih padina otoka Hvara i Makarskom vinogorju ispod Biokova, a vinograd u šibenskom vinogorju je u vlasništvu druge obiteljske tvrtke, Vinoline. Since the founding of the company, they have achieved various successes, both at the national and foreign contests and fairs: Vinovita Zagreb, Split GAST, WINE Ljubljana, Zurich, Bordeux, Decanter, Sabatini Nuremberg, Paris, etc. They have more then 100 awards, medals and acknowledgments, as well as around 20 champion awards. This validates their efforts to achieve lasting excellence of the championship tradition. The winery produces about 900,000 bottles. Vineyards are located on the southern slopes of the island Hvar, extending from Milna - Sv. Nedjelja – Zavala, slopes of 40-60%. Variety ”Plavac mali” prevails. From autohthonic sorts bogdanuša, prč, mekuja and cetinka dominate. Before bottling, wine ages in stainless steel containers. It has golden yellow color, green apple and lemon aroma with pronounced acidity. Iz Makarskih vinograda dolazi i Pošip 2010 vino je blistave, slamnato–zlatnožute boje, punog i osebujnog okusa sa svojstvenom aromom suhih marelica, regionalni šampion Decanter World Wine Awards 2010., Srebrena medalja 2011., zlatna medalja 2008. Vinograd u šibenskom vinogorju oko 65 ha vinograda je u vlasništvu druge obiteljske tvrtke Vinoline. To je dodatna proizvodnja oko 400 000 boca vina. Površina vinograda 65 ha sa oko 500 000 loza. Sorte: plavac mali vino koje odležava u velikim drvenim bačvama, babićrubin crvene boje, užitnog okusa te izrazitog mirisa trešnje i bobičastog voća, crljenak ili pošip.

It is the champion of Decanter World Wine Awards 2010, Silver medal in 2011, Gold medal in 2008. Around 65 Ha of Vineyards in Šibenik are owned by their other family business Vinoline. That’s additional production of 400,000 bottles of wine. Vineyard area is 65 Ha and it contains 500,000 vines. Varieties: Plavac Mali - this wine aged in large wooden barrels; Babić - ruby red color, distincitive cherry and berry fruit aroma; Crljenak and Pošip. Great attention was given to the old and authentic Dalmatian varieties. One part of the wine aged in a unique cellar, which is located 70 m below ground at a constant temperature of 11-12°C. We recommend wine tasting, a tour around the cellar, lunch or just a walk in the surrounding area. It will not leave you indifferent.

Tu dugu tradiciju šibenskog kraja nastavlja Vinarija ”Vinoplod” osnovana 28. 10. 1959. godine pod nazivom ”Vinoplod” Poljoprivredno poduzeće, što je proizašlo iz dotadašnjeg Vinalka, kao organizacije koja bi sjedinila vinogradarsku i vinarsku proizvodnju na ovom području. It is said that life without wine is unthinkable. In Dalmatia, people have always lived with the wine, from the wine and for the wine. The wine is the part of the meal. It is there in joy and glory, warming you in the winter and cooling you in the summer. It is just the part of the life. History of Šibenik region is inextricably linked to the cultivation of the vine. For centuries, Enology and Viticulture were the only economic activities meritorious for the survival of the population of this region. This long tradition of Sibenik region was continued by Winery ”Vinoplod” founded in October 28 1959 called ”Vinoplod” Agricultural company, which emerged from the former Vinalka, as an organization that has united the wine production in this area. Since 1993 the compan operates under the name ”Vinoplod - WINERY” Inc. Šibenik.

Na putu prema vinskom podrumu ”Vinoplod Vinarija” d.d. u Bratskom Docu uživajte u panorami Primoštena i razgledajte u svijetu poznate čuvene vinograde Bucavac i Kremik. Primoštenski vinogradi vrhunskog Babića su nešto posebno, specifično i gotovo jedinstveno u svijetu. Način na koji ljudi ovog kraja formiraju i stvaraju vinograde fascinirao je cijeli svijet pa nije neobično da se slika istih nalazi u UN u Genevi. Ovi vinogradi predstavljaju simbol ljudskog rada i želju ovog čovjeka da od prirode uzme i stvori gotovo nemoguće i to samo sa svojim rukama. Naime ovi vinogradi se i formiraju samo rukama. U škrtoj zemlji koja se sastoji gotovo samo od kamena, golim rukama se vadi kamenje od kojeg se formiraju ”kazete” kao šahovska ploča koje trebaju čuvati i zaštititi ono malo zemlje što je skupljeno. U tu zemlju se stavlja, sadi autohtona sorta loze koja rađa nadaleko poznati vrhunski Babić. Škrta zemlja odnosno loza daje malo uroda – svega oko 500 g po lozi, trsu – ali je taj urod poseban. Šećer u grožđu je preko 22%, sitno zrno čuva najkvalitetnije sastojke koje grožđe može dati. Važno je napomenuti da je kompletna proizvodnja ekološka. Naime, kako je vidljivo i po položaju vinograda nemoguće je bilo kakvim prijevoznim sredstvom doći do njih. Kamen se prilikom slaganja stavlja na način da gornja strana bude bijela kako bi ljeti odbijala vrućinu i štitila lozu od velikog zagrijavanja i isušivanja, a donja strana je tamna – siva i ona čuva vlagu potrebnu lozi. Lagani vjetrovi koji dolaze sa mora donose vlagu i solimizacijom štite lozu koju stoga nije potrebno tretirati sa kemijskim sredstvima. Zaštitni znak ”Vinoploda” je zapravo znak sa šibenske katedrale (katedrala Sv. Jakova - J. Dalmatinac). Na njemu se nalaze dvije golubice koje jedu grožđe. U narodnim pričama kaže se da golubovi ne jedu grožđe, ali je ono na ovom području toliko slatko i kvalitetno da ga i golubovi jedu što je vjerojatno i motiviralo J. Dalmatinca da takav simboličan znak stavi i na šibensku katedralu.

On the way to the wine cellar ”Vinoplod Winery ” Inc. in Bratov Dolac, enjoy the panorama of Primošten and visit the world famous vineyards Bucavac and Kremik. Primošten vineyards of premium Babić are something special, specific and almost unique in the world. The way people of this region form and create vineyards fascinate the entire world. Therefore, it is not unusual that the picture of these vineyards is in the United Nations in Geneva. These vineyards are a symbol of human labor and the desire of this man to take from the nature to create impossible. In fact, these vineyards are formed with bare hands. Poor soil consists almost exclusively of stone. Stones are than being formed into ”tapes”, like chessboard, which should keep and protect the soil that was collected. The indigenous grape variety is being planted in this soil, which finally gives rise to the well -known premium Babić. Poor soil and vines don’t give much yield - only about 500 g per vine - but the yield is special. Sugar in the grapes is over 22%, fine grain preserves the highest quality ingredients of grapes. It is important to note that the entire production is organic. Specifically, as shown by the position of vineyards, it is impossible to reach them by any means of transport. The stone is stacked in a way that upper side is white, so it protects the vines from overheating and drying out, while the bottom side is dark – gray, to keep the moisture needed for the vine. Light winds, that come from the sea, bring moisture and protect vines, therefore, the vines don’t have to be treated with chemicals. The trademark of ”Vinoplod” is actually a sign of Šibenik’s Cathedral (Cathedral of St. Jacob - J. Dalmatinac). It shows two doves eatting grapes. The story says that pigeons do not eat grapes, but grapes of this area are so sweet and of good quality that pigeons eat it as well. This probably motivated J. Dalmatinac to put such symbolic sign on the Cathedral.

FAUST is a quality dry red wine made from grape varieties Plavina and Vranac, a wine that contains characteristics of southern and continental red wine, it has bright ruby color, it is refreshing and easy to drink. It’s a lighter red wines, which allows you to consume it at any time of the day. It’s served exclusively at room temperature and it goes well with meat dishes, roasts and fish.

MERLOT is a quality dry red wine made from the grape variety with limited locations of Vrgorac fields, harvested in vineyards raised (80s) on calcareous soils. Merlot has a deep ruby color, varietal aroma, and harmonious taste. It goes well with all foods, moderately chilled.

MARAŠTINA je kvalitetno vino istoimene autohtone sorte grožđa proizvedeno sur lie tehnologijom. Fermentacija se odvija u barique bačvicama u kojima vino dozrijeva na kvascima i time iskazuje svoje najbolje karakteristike. MARAŠTINA quality wine of the homonymous indigenous grape variety produced with sur lie technology. Fermentation takes place in barrique barrels in which the wine is matured on the yeast, and thus shows its best characteristics.

BABIĆ je crno suho vino proizvedeno od istoimene autohtone sorte grožđa sa Skradinsko-Bribirskog, PirovačkoVodičkog i Primoštenskog vinogorja. Odlikuje se tamnom rubin bojom, ugodnim mirisom, punim okusom i izrazitim bukéom. BABIĆ dry red wine made from the indigenous grape variety of the vineyards of Skradin - Bribir, Pirovac - Vodice and Primošten. It is characterized by dark ruby color, pleasant aroma, full flavor and a sharp bouquet.

PROŠEK je prirodno desertno vino proizvedeno fermentacijom koncentriranog mošta od najkvalitetnijih sorti grožđa iz Šibenskog vinogorja (Maraština, Debit, Trbljan). Odlikuje se ugodnom aromom, izrazitim bukéom i harmoničnim okusom. Visoka koncentracija grožđanih komponenata sa nepromjenjenim svojstvima daje mu izuzetno mjesto u grupi desertnih pića. ajbolja vina obitelji Dvanajščak–Kozol nastaju u vinogradima koji pokrivaju gotovo 8ha osunčanih i povišenih položaja u okolici naselja Dragoslavec pred nazivima Grofovo, Okrugli vrh i Mohokos. Obitelj Dvanajščak–Kozol jedna je od mlađih obitelji vinogradara i vinara u Međimurju. Nastavljajući obiteljsku tradiciju Rajka i Zdravko od 1990. do 1992. zasađuju svoje prve nasade.

Kakav je Vaš put stvaranja tako uspješne vinarije? Od samih početaka do danas? Sami počeci su uvijek maleni. Nastavljajući tradiciju supruginih roditelja počinjemo saditi prve vinograde. Iz početka smo krenuli samo iz hobija u proširenje vinograda, jer vinograd ne traži nikada gazdu nego samo slugu. Krenuli smo sa postepenim razvojem vinarija sa 1 hektarom, a danas već imamo 10 hektara (6 svojih i 4 u najmu). Isto tako i u podrumskim kapacitetima smo se širili postepeno i još uvijek se širimo. Zemljopisno porijeklo dobivamo 1996. kada i počinjemo ozbiljno sa proizvodnjom vina. Rano smo shvatili da uz odlična vina trebamo i adekvatan prostor za prezentaciju i degustaciju vina pa otvaramo kušaonicu vina gdje razvijamo vinski turizam na način tako da vodimo stručne degustacije uz koje nudimo domaće prepoznatljive međimurske specijalitete. Danas nam je posebno drago kada možemo ugostiti ljubitelje naših vina iz cijele hrvatske pa i šire.

he best wines of Dvanajščak-Kozol family occur in vineyards covering nearly 8 ha of sunny and elevated positions near the village Dragoslavec in front of Grofovo, Okrugli Vrh and Mohokos. Family Dvanajščak-Kozol is one of the younger family growers and winemakers in Međimurje. Continuing the tradition of their parents, from 1990 to 1992 Rajka and Zdravko planted their first crops. Your winery has been successful from the start? What is your secret? The beginnings are always small. We wanted to continue the tradition of my wife’s parents, so we begun to plant the first vineyards. In the beginning, expansion of the vineyard was just a hobby, because the vineyard does not require a boss, but servants. We started with the gradual development of wineries with 1 Ha, and today, we already have 10 Ha (6 of ours and 4 in the lease). Also, we had gradually expanded cellars, which are still expanding. We got the geographic origin in 1996 and that’s when we begun with the serious wine production. Early on, we realized that beside having great wines, we would be needing adequate space for presentations and wine tastings. So, we opened the wine tasting room and we developed wine tourism. Today, we are delighted when we can accommodate our wine lovers from all over Croatia and beyond.


Da li se nešto bitno promjenilo u vinskom svijetu gledano unazad nekoliko godina? Svjetska vinska scena se okreće laganim, svježim i aromatičnim vinima a to su sve odlike našeg vinogorja. Međimursko vinogorje je nekad glasilo kao vinogorje sa takozvanim ”kiselišima”, vinima visoke količine kiseline. Danas nam baš ta svježina u vinima otvara vrata prema europskom tržištu jer su nam vina lagana i vrlo pitka te 100% odgovaraju novom europskom vinoljupcu. Prije 12 godine smo bili prvi u našem kraju koji smo zasadili crvenu sortu vina – Pinot crni. Taj zahvat nam je bio neki izazov nismo znali kako će se ta sorta ponašati u našem vinogorju kako će roditi, ali nismo odustali. Pinot crni nam je vodeće sorta kuće i ponosimo se voćnošču i pitkosi vina.

Kako izgleda proces planiranja i plasiranja novog vina iz Vaše vinarije i imate li u planu neko novo vino? Svaka vinska godina je nešto novo. Naši kupci i gosti nekad stvaraju nove vinske smjerove, a da to ni ne znaju. Posebna sorta koja nam je u Međimurju uz Pušipel posebno draga je sauvignom. Ove godine prvi put iz našeg podruma izlazi sauvignon. Sauvignon u Međimurju daje posebne arome. Kod nas će uvijek biti novih vina jer nam ni jedna godine nije ista pa tako ni vino. Raste zanimanje za pjenušavim vinima pa će vina 2013 biti temelj za novi smjer proizvodnje vina u Međimurju - Pjenušava vina. Bilo je već uspješnih pokušaja proizvodnje pjenušaca u našem vinogorju pa ćemo i mi krenuti tim smjerom.

Kakav dojam vino mora ostaviti na vas? Vino nije samo dojam koji ostavlja, vino te mora potaknuti na razmišljanje. Sa kim bi bilo najbolje popit to vino? U kakvome ambijentu? Za kakvu prigodu? Uz kakvo raspoloženje? Naravno da vino mora biti skladno, mirisom primamljivo te mora oduševit okusom.

Iza Vas su mnoge dobre godine, što biste savjetovali mlađim kolegama vinarima? Moj savjet mlađim vinarima je da budu strpljivi i uporni u traženju svojeg puta u svijetu vina. Temeljna stvar koju trebaju poštivati je ustrajnost u vrhunskoj kvaliteti svojih vina.

Koja je za Vas najbolja i Vama najdraža sorta? To je DK Grofovo cuvee - cuvee sorata: chardonnay, pinot bijeli, graševina i pušipel. Posebnost toga cuvee je što nije rađen u podrumu nego je prirodno zasađen u vinogradu. Prezrele note sorata chardonnay i pinot bijeli nadopunjuju sviježu i lepršavu graševinu te pušipel.

Što biste posebno istaknuli kao zanimljivost koja će privući goste u Vinsku kuću Dvanajščak-Kozol? U našoj vinskoj kući nema neispunjenih želja naših gostiju i kupaca. Uvijek nam je gost na prvome mjestu i to potvrđuje ponovi dolazak gostiju. Volimo provoditi vrijeme sa svakim gostom individualno. Posebne želje gostiju su nam uvijek izazov. Jer naš slogan sve govori o nama: STVARANJE VINA JE NAŠ ŽIVOT. Ne proizvodimo vino samo zbog zarade, proizvodimo vino jer mi živimo vino.

Have there been any important changes in the world of wine in the last few years? World wine scene is turning to light, fresh and aromatic wines, and those are all characteristics of this region. Međimurje vineyards were so-called ”acid-ash” wines due to the high amount of acid. Today, this wine freshness is openning the door to the European market, because our wines are light and very drinkable. They correspond to the new European wine lovers. We were the first ones in our area to have planted red variety - Pinot Noir. The procedure was a big challenge because we did not know how it will behave in our vineyards, but we never gave up. Pinot Noir is our leading variety and we are proud of the wine’s fruitiness and potability. How does the planning and placement of the new wine from your winery look like, and are you planning to produce a new wine? Each wine year is something new. Our customers and guests are creating new wine routes without even knowing it. Beside Pušipel, here in Međimurje we also like Sauvignon. We will be making Sauvignon for the first time this year. In Međimurje, Sauvignon has a special flavor. We will always have new wines, because our every year is different just like our wines. Interest in sparkling wines is growing, so wines of 2013 will be the foundation for a new way of producing wine in Međimurje - sparkling wine. There had already been successful attempts in producing sparkling wines in our vineyards, therefore, we will also move in that direction. What kind of impression should wine leave on you? Wine is not just an impression it leaves, wine must inspire you to think. With whom to drink wine? In what surroundings? For what occasion? With what kind of mood? Of course, the wine must be harmonious, tempting to smell and delight taste. You have many good years behind you, what would you advise young fellow winemakers? My advice to young winemakers is to be patient and persistent in finding their way in the world of wine. The basic thing that you need to respect is the perseverance in the quality of your wines. Which is your favorite variety? It’s DK Grofovo cuvee – of cuvee varieties: Chardonnay, Pinot Blanc, Graševina and Pušipel. The particularity of this cuvee is that it’s not made in the cellar but it is naturally planted in the vineyard. Overripe varieties of Chardonnay and Pinot Blanc complement a fresh and airy Graševina and Pušipel. What would you highlight as particularly interesting that will attract guests to the Wine House Dvanajščak-Kozol ? In our wine house there is no unfulfilled wishes of our guests and customers. They are always in the first place which is why they always return. We love to spend time with each guest individually. Special wishes of our guests are always a challenge. Our slogan says it all: MAKING WINE IS OUR LIFE. We do not make wine just to make money, we produce wine because we enjoy it.

edno od najstarijih naselja na Korčuli je mjesto Čara (Villa di Kzara) smješteno po sredini otoka gdje je poljoprivredna zadruga ”Pošip” Čara pronašla svoje gospodarsko utočište i odatle svoja kvalitetna i vrhunska vina, vrlo uspješno plasira domaćem i svjetskom tržištu. Gusto nasađeni vinogradi, nagnuti i terasasti tereni prisiljavaju da se većina radova još uvijek obavlja ručno, na tradicionalan način. Od sorti su zastupljeni pošip bijeli i rukatac (maraština). Pošip bijeli domorodna je izvorna sorta otoka Korčule gdje se i najviše uzgaja, a nastala je spontanim križanjem Zlatarice bijele i Bratkovine bijele. Rukatac, odnosno Maraština bijela smatra se autohtonom dalmatinskom sortom. Najrasprostranjenija je na otocima Korčuli, Lastovu i poluotoku Pelješcu. Posjeduje otpornost prema peronospori ali je osjetljiva na pepelnicu. Često ju koriste za popravak kakvoće bijelih vina. Pošip – vrhunsko vino, dobiva se od grožđa proizvedenog na povoljnijim položajima čarskog okruženja. Zlatno je žute boje sa zelenkastim nijansama, dovoljno izraženim mirisom ugođenih sortnih značajki po rascvjetalom bajamu i makijskom raslinju, finog bukea (Bouqueta)

ara (Villa di Kzara) is one of the oldest places on Island Korčula. It is situated in the middle of this Island and it is a shelter for agricultural cooperative ”Pošip” Čara from where high quality wines are being successfully offered to local and global market. Most of the work is done by hand, in traditional way, due to densely planted vineyards, tilt and terraced fields. Sorts Pošip white and Rukatac are the two most popular. Pošip white is local sort of Island Korčula, and it was created by mixing Zlatarica white and Bratkovina white. Rukatac white is autochthonous Dalmatian sort. It is most widespread on Island Korčula, Lastovo and peninsula Pelješac. It has downy mildew resistance, but it is sensitive to powdery mildew. It is often used for white wine quality repair.

Pošip - premium wine, made from grapes that grew on vantage grounds of Čara. It has golden yellow color with greenish shades, and aromas of blossomed almond and maquis vegetation, fine bouquet, candied orange peel and red soil, full, smooth and content taste.

Rukatac - kvalitetno je vino dobiveno od istoimene starovijeke sorte grožđa (istoznačnice Maraština bijela) rasprostranjena jadranskim vinogorjima. U pojedinim ekološki povoljnim godinama na Čarskom polju može postići vrhunsku kakvoću. Vino je žuto zelenkaste boje, svježih diskretnih ali pikantnih sortnih mirisa koji u čarskom terroiru podsjećaju na svježe zdrobljenu rutu i mirisnu mediteransku livadu, finog je bukea, suhog i treperavo osvježavajućeg okusa.

Marko Polo - it is premium wine made from grapes of wine Pošip white that grows on selected sunny locations, which are characterized by warm, gritty grounds shaped on crushed limestone. These conditions give this wine recognizable character. It has golden yellow color, with aromas of almond, maquis odors and bitter orange, with pronounced bouquet of dry fig, roasted almonds and heather honey. Rukatac - high quality wine made from homonymous grape sort widespread throughout Adriatic vineyards. In ecologically favorable years in Cara fields, it can achieve premium quality. This wine has yellow greenish color, with discretely fresh aromas that remind of freshly crushed routes and fragrant Mediterranean meadows. It has nice bouquet, dry and refreshing taste.

Obje se namirnice mogu probati dok su svježe, jednostavne i mlade, ali i u složenijim fazama kada su zrele. Iako ne postoje čvrsta pravila pri sljubljivanju vina i sira, o jednoj stvari ipak trebali voditi računa: a to je ravnoteža okusa. Osnovni je cilj naime postići ravnotežu i sklad okusa između vina i sira kako jedan od tih namirnica ne bi jačinom okusa nadvladala drugu. Neke od smjernica koje trebamo slijediti su:

1) odnos kiselina i masnoće. Kiseline režu masnoću, odnosno, čine masnoću manje teškom, lakše probavljivom i podatnijom za uživanje. Sirevi su jako masni što znači da uz sireve bolje idu bijela vina koja imaju više kiseline. To osobito vrijedi za kremaste sireve koji se nikako ne slažu s crnim vinima.

The main goal is to achieve balance and harmony between the flavors of wine and cheese, so they don’t overpower one another. Some of the guidelines we need to follow are:

virče je mjesto na prekrasnom otoku Hvaru, u mjestu Jelsa. Nalazi se usred Starogradskog polja na središnjem, nizinskom dijelu otoka Hvara, gdje je otok najširi (u pravcu sjever-jug). U ovom mirnom mjestu priroda osvaja svojom ljepotom, a baš tu u prekrasnom krajoliku smještena je Poljoprivredna zadruga Svirče. PZ Svirče od 1997. godine počinje sa otkupom grožđa za Badel 1862, a od 1999. godine počinje sa proizvodnjom i punjenjem vina. Planirani otkup grožđa, kao i proizvodnja vina raste godišnje po stopi od 10%. Od samog početka zadruga je svoju misiju definirala u proizvodnji vrhunskih vina specifične kvalitete. Tako su čuveni po proizvodnji vrhunskog vina ”Ivan Dolac”, jednog od najboljih hrvatskih vina, a također proizvode i prvo ekološko vino u Hrvatskoj, kao i kasnu berbu vina istog naziva. Ulaskom u sustav ocjenjivanja sukladnosti sa zahtjevima ekološke proizvodnje 2002. godine PZ Svirče započinje put ka dobivanju prvih hrvatskih vrhunskih ekoloških vina. U ekološkoj proizvodnji zabranjeno je koristiti GMO-e. Oni su velika prijetnja bioraznolikosti, jer transgene biljke mogu kontaminirati uzgajane vrste, ali i njihove divlje srodnike, čime se gubi genetska zaliha, važna za sigurnost prehrane ljudi i funkcioniranje prirodnih ekosustava. virče is a place on the beautiful island of Hvar, in Jelsa. It’s located in the middle of the Starogradsko polje, at the central, low-lying part of the island, where the island is widest (in north-south direction). In this quiet place nature overwhelmes with its beauty, and right here, in the beautiful landscape, lies Agricultural Cooperative Svirče. In 1997 AC Svirče begins with the purchase of grapes for Badel 1862 and the 1999 it starts with the production and bottling of the wine. The planned purchase of grapes and wine production is growing annually at a rate of 10%. From the beginning, the cooperativ has defined its mission in the production of premium wines with specific quality. The most famous one is ”Ivan Dolac”, one of the best Croatian wine. They also produced the first ecological wine in Croatia, as well as a homonymous late vintage wine. In 2002 AC Svirče entered the evaluation system of compliance with the requirements of organic production, and thus opened the road to getting the first Croatian top organic wine. The organic production is prohibited to use GMO. GMO is a major threat to biodiversity, because transgenic plants can contaminate grown cultivated varieties, and their wild relatives, thus losing the genetic supply, which is important for the security of people’s nutrition and the functioning of natural

olaskom u Kutjevo obitelj kupuje vinograde na tri lokacije: Mačevo brdo-Vidim, Zaječovac i Pod križem. Vina s južnih obronaka Krndije, uzgojena na tlu Zlatne doline iznimno su kvalitetna. Plodonosno kutjevačko vinogorje daje obilje bijelog grožđa koja marljivim radom vinara postaju bijela vina. Među njima se ističu: Graševina, Traminac, Rajnski rizling, Pinot sivi, Chardonay i Sauvignon. Osim bijelog, tu uspijevaju i crne sorte grožđa. Trenutno gospodare sa 4,5 ha vinograda gdje su zastupljene sljedeće sorte grožđa: Graševina, Portugizac, Rajnski rizling, Traminac, Cabernet Sauvignon i muškat ruža. Vina Mihalj od 1994. dobivaju prestižne nagrade na poznatim festivalima vina. Produkt dugogodišnjeg rada i iskustva je Vrhunska graševina, koja je u više navrata ocijenjena zlatnim medaljama. Osim Vrhunske graševine, obitelj Mihalj vrlo uspješno proizvodi i Traminac te Rajnski rizling od bijelih vina, a Cabernet sauvignon, Cabernet franc i Portugizac od crnih vina. Jedna od brojnih nagrada, na koju je obitelj Mihalj posebno ponosna, jest zlatna medalja za arhivsko vino Rajnski rizling iz 1997. god., osvojena na našem najprestižnijem sajmu vina 2006. godine.

hen they arrived to Kutjevo, they bought vineyards at three locations: Mačevo hillVidim, Zaječovac and Pod križem. Wines from the southern hills of Krndija, grown in the soils of Zlatna dolina are extremely high quality. Fertile Kutjevo hills give abundance of white grapes, which, through the hard work of the winemakers, become white wine. Among them, distinguished ones are: Graševina, Traminac, Rajnski Riesling, Pinot gray, Chardonnay and Sauvignon. Apart the white, the red sorts of grapes succeed there as well: Graševina, Portugizac, Rajnski rizling, Traminac, Cabernet Sauvignon and Muskat Ruža. Mihalj wines have gotten awards at major wine festivals since 1994. A product of labor and long-standing experience is premium Graševina, on several occasions rated with gold awards. Except for the premium Graševina, Mihalj family successfully produces white wines Traminac and Rajnski rizling, as well as the red wines Cabernet Sauvignon, Cabernet franc and Portugizac. One of the numerous awards and one of which the Mihalj family is especially proud of is the gold award for arhive wine Rajnski rizling from 1997. Which was rated on Croatian most prestigious wine fair from 2006.


Portugizac u desetogodišnjem prosjeku portugizca Mihalj karakterističan je po nešto izraženijoj kiselosti i specifičan je po mirisu na višnju kontinentalnog tipa. Graševina uz poznate karakteristike kutjevačke graševine ima nešto povišenu kiselost od njenog standarda, nešto povišeni voćni okus i posebno izražen miris vinogradske breskve. Rajnski rizling ima izraženu aromu sa normalnom kiselinom te specifičan miris koji se može usporediti sa mirisom oskoruše. Za Traminac su zbog posebnih uvjeta ovogodišnje berbe uspjeli obaviti berbu izbora grozdova sa visokim ostatkom šećera. Traminac je specifičan po mirisu bagrema. Cabernet sauvignon je intezivne rubinske boje koja prelazi u ljubičastu. Na nosu je intezivno aromatično sa svježim notama tamnog bobičastog voća. Sadrži čvrsto struktuirane tanine i moćno tijelo. Vino je toplo, profinjeno i ima potencijala za dozrijevanje samo ako mu uspijete odoljeti. Svojim radom obitelj Mihalj se pokazala kao jedan od najkvalitetnijih proizvođača vina ne samo u Kutjevu već i u Zlatnoj dolini, a time se dokazala i u cijeloj Hrvatskoj.

Portugizac - The main characteristic of this wine is its expressed acidity, and its specific continental cherry aroma. Graševina - this wine is a bit different from the famous Kutjevačka Graševina because of its higher acidity, higher fruit taste and especially expressed vineyard peach aroma. Rajnski rizling - this wine has expressed aroma with normal acidity, and specific scent that can be compared with rowan. Traminac - due to specific conditions of this year’s vintage they managed to harvest grapes with high percentage of sugar. Traminac is specific for its acacia aroma. Cabernet Sauvignon - this wine has an intense Rubin color that fades to purple. Its aroma contains fresh notes of berries. It has structured tannins and powerful body. This wine is warm, sofisticated and it has potential for maturation, but only if you manage to resist it. Mihalj family turned out to be one of the best quality wine producers not only in Kutjevo, but also in Zlatna Dolina thus proved to be one of the best in the rest of Croatia.

inogradi tvrtke Kronos d.o.o. u kojoj se proizvode vina Kalazić nalaze se na Banovom brdu (Banskoj kosi), na samom sjeveroistoku Baranje, na tromeđi u neposrednoj blizini moćnog Dunava koji značajno utiče na mikroklimu stvarajući s pjeskovitim tlom idealne uvjete za proizvodnju zdravog i kvalitetnog grožđa koje je potom temelj za dobivanje vrhunskih vina. Ovo su prepoznali još stari rimljani i na ovom su području prije dva milenija proizvodili vino o čemu postoje brojni arheološki nalazi. Oni su to područje s pravom nazivali Mons Aureus, odnosno, Zlatno brdo. Zanimljivo je i da je naziv Baranja u izravnoj vezi s vinom. U prijevodu s mađarskog to znači: vinska majka. Ovo je jedinstven slučaj da je regija dobila naziv po vinu, a ne obrnuto. Kronos d.o.o. na pomenutom području ima 102 tisuće trsova vinove loze sađenih 2004. i 2005. godine koji su sada u punom rodu. Proizvodnja je unazad četiri godine isključivo ekološka, što prirodnijih, točnije ekološko-bioloških vina na svim

he vineyards of Kronos d.o.o. company which produces wines Kalazić are located on Banovo brdo, Banska Kosa on the very northeast of Baranja, on the joint border in the immediate vicinity of the mighty Danube River which significantly affects the microclimate creating ideal conditions, with sandy soil for production of healthy and high quality grapes which is a basis for making supreme quality wines. This was recognized by the old Romans and two millennia ago in this area they produced wine of which there are numerous archeological findings. They called this place Mons Aureus, which means a Golden hill. It is most interesting that name of Baranja is in direct link with the wine itself. In translation from the Hungarian language it means wine mother. This is a unique case that the region was named after the wine and not the other way around. In the mentioned area Kronos d.o.o. has 102 thousand grapevines planted 2004th and 2005th which are now in full growth. In the last four years production is solely ecological, more natural, more precisely ecological biological wines in all areas, from a total of 16.5 Ha. Responsible and friendly

Posađeno je ukupno 10 kontinentalnih sorti vinove loze (7 bijelih i 3 crne). Vina se proizvode pod čak 14 etiketa obzirom da se od pojedinih sorti rade i kupaže. Najbolja kupaža je bijelo vino Batina, bogato, raskošno i slojevito vino koje je istinski predstavnik Baranje jer u sebi sadrži sve najbolje što Baranja u vinu može dati. Prva berba je bila 2007. Vina Kalazić na tržištu se nalaze od 2008. godine, a danas su prisutna u svim dijelovima naše zemlje kao i u Belgiji, Nizozemskoj i Rusiji. O kvalitetu vina govori preko 50 osvojenih zlatnih medalja kako u zemlji tako i u inozemstvu. Na Međunarodnom sajmu vina i jakih alkoholnih pića Beo Wine Fair 2011, od stotinu ocjenjivanih vina nagrađeno je čak 28 hrvatskih. Šampion natjecanja su vina Kalazić s tramincem, koje je puno i snažno vino sa slatkastim primjesama u okusu i retrookusu, te slasnog i dugotrajnog završetka.

A total of 10 continental grape varieties was planted (7 white and 3 red). Wines are produced under as many as 14 labels considering that from the certain varieties blends are made. The best blend is Batina white wine, rich, lavish and layered wine which is truly representative of Baranja since it contains all the best that Baranja can give to the wine. 2007 was the year of the first harvest. Kalazić wines are on the market since 2008. and today they are present in every part of our country as well as in Belgium, Netherlands and Russia. Over 50 wines had won gold medals, both at home and abroad, which speaks of the wine quality. On the Beo Wine Fair 2011, an international wine and spirits (strong alcoholic beverages) fair, from one hundred assessed wines as much as 28 rewarded ones were Croatian origins. The Champion of the competition was wine Kalazić with Traminac, full and strong wine with a touch of sweetness in taste and aftertaste, also with delicious and long completion.

Kava Coffee Naziv ”kava” potječe od arapskog naziva ”qahwa” koji se odnosi na napitak spravljen od prženog i samljevenog zrnja. Name ”coffee” comes from Arabic name ”qahwa” which refers to a beverage made of roasted and ground beans.

jelovanje kave poznato je već više od 3.000 godina. Počeci su joj vezani uz etiopsko pleme Galla. Talijani su prvi donijeli kavu u Europu početkom 17. stoljeća.

Naziv ”kava” potječe od arapskog naziva ”qahwa” koji se odnosi na napitak spravljen od prženog i samljevenog zrnja. Etimolozi smatraju da riječ ”qahwa” u arapskom jeziku vuče korijen iz riječi koja pojmovno znači ”umanjiti želju za nečim”. Ovako se, naime, nazivalo piće koje smanjuje apetit za hranom, a zapravo se radilo o vinu. Pripadnici mističkoga asketskog islamskoga reda Sufi jednostavno su uzeli staru riječ kojom se nazivalo vino. Kako im je bilo zabranjeno piti vino, ”qahwa” im je služila kao idealno piće za održavanje strogog duhovnog i isposničkog života u pustinji.

ffect of coffee is known for more then 3000 years. Its begginings are bouded for the Ethiopian Galla tribe. Italians were the first ones to bring coffee to Europe back in 17th century. Name ”coffee” comes from Arabic name ”qahwa” which refers to a beverage made of roasted and ground beans. Etymologistis claim that Arabic word ”qahwa” has its roots in the word that conceptually means ”reduce the desire for something”. This is how they named the drink that reduces appetite but it was actually wine they were talking about. Forbidden to consume wine, ”qahwa” became ideal drink for maintaining strict spiritual and ascetic desert life.


Irska kava je napitak s toplom kavom, viskijem i šećerom, koji su pomiješani, a na vrhu se doda šlag. Espresso je koncentriran napitak od kave koja se pripravlja na način korištenja vodne pare. Takav način pripreme kave pokrenut je u Milanu početkom 20. stoljeća. Za razliku od drugih metoda pripreme kave, espresso često sadrži veću koncentraciju otopljenih tvari. Macchiato je napitak spravljen od espresso kave sa vrlo malo zagrijanog mlijeka ili pjene od mlijeka dodane na vrh Latte je napitak spravljen od espresso kave i šalice zagrijanog mlijeka. Omjer koji se koristi je 1/3 espressa i 2/3 zagrijanog mlijeka. Cappuccino je napitak spravljen od espresso kave i jednakih količina zagrijanog i zapjenjenog mlijeka. Vruće mlijeko se miješa sa espresso kavom, a pjena od mlijeka se stavi na vrh.

Rimokatolička crkva se u početku strogo protivi ispijanju kave, jer je smatraju sotonističkim pićem, te traže od Pape da zabrani korištenje kave. Papa Clement VIII zahtjevao je da, prije zabrane, isproba novi napitak. Nakon što je kušao kavu, oduševljen njezinom aromom, odustao je od zabrane.

Irish coffee is a beverage mixed with warm coffee, wiskey, sugar and whipped cream on top. Espresso is coffee concetrated drink made with the use of steam. Such coffee preparation was launched in Milan in early 20th century. Unlike the other methodes of coffee preparation, espresso often contains more concentration of solutes. Macchiato is espresso coffee drink prepared with a small amount of foamed milk added on top. Latte is coffee drink prepared with espresso coffee and steamed milk. The proportion is 1/3 of espresso and 2/3 of steamed milk. Cappucino is coffee drink which is prepared with espresso, hot milk, and steamed-milk foam. Hot milk is mixed with espresso coffee, and milk foam is put on top.

In the beginning, Roman Catholic Church was against coffee consumption because they thought it was satanic drink so they made an apel to the pope to forbid its use. Before forbidding it, Pope Clement VIII had demanded to taste it. Being delighted with its aroma he gave up on its ban.

Osim pojedinih svećenika, protiv kave su ustale i engleske žene. U poznatoj ženskoj peticiji iz 1674. godine, one zamjeraju svojim muževima što ih zanemaruju zbog kave. Svoj prezir prema novome napitku Engleskinje su iskazale slijedećim riječima: ”Kava vodi muškarce da trate svoje vrijeme i troše svoj novac sve zbog malo crne, gorke i smrdljive vode”.

Apart from certain priests, English women rose against coffee as well. In the famous women’s petition from 1974 it is stated that they resent their husbands for neglecting them due to coffee. Their contempt for the new beverage can be read from these lines: ”Coffee leads men to trifle away their time, scald their chops, and spend their money, all for a little base, black, thick, nasty, bitter, stinking nauseous puddle water.”

ith a century-old tradition in viticulture and production of high quality wines, at the known positions of the hills Klikun and Starac, above Pleternica, family generation Markota renewed viticulture and winemaking tradition. They want to restore the wine luster of this area which historically deserves it. Their wish is not only to preserve this gift of heaven, tear of the earth and drip of life, wine and vine sort that gives it, and their wealth, but also to improve it for the benefit of all those who come after.


Prve spoznaje o lozi još 1957.g. dao im je otac, djed i pradjed Jozo Markota. Njegov potpis i krasopis dominira danas elegantnim dizajnom butelje i ukrasnog pakiranja kojim vina osvajaju nagrade i na dizajnerskim natjecanjima.

Father, grandfather and great-grandfather Jozo Markota gave them the first insights on the vine back in 1957. His signature and calligraphy dominates the elegant design of bottles and decorative packaging, so the wines win awards in design competitions as well.

Postali su misionari u ovom poslu i već prvi rezultati s natjecanja i medalje daju im za pravo da su na pravnom putu. Raduje ih školovanje dva mlada enologa, stručnjaka Marka i Franje iz obitelji. Oni su zalog i bogatstvo za budućnost. Već sada su pokazali da mogu proizvesti vino koje osvaja ljude i medalje.

They became missionaries in this business, and the results of the competitions and medals tell them that they are on the right path. They are pleased with the training of two young oenologist, family’s experts Marko and Franjo. They are pledge and wealth for the future. They have already shown that they can produce a wine that wins people and medals.

CABERNET SAUVIGNON, barrique 2009. Položaj brda Starac nedaleko Pleternice rađa moćni cabernet sauvignon. Duboka crvena boja, markantih ljubičastih odsjaja najavljuje vrhunski vinski doživljaj. Nižu se bogate voćne i začinske arome kojima dominiraju zrele višnje. Dug i trajan okus ključne su značajke ovog vina. Živahne kiseline se sjajno slažu sa umjerenim taninima i ekstraktom te je vino istovremeno mekano i elegantno a opet bogato što daje zavodljiv voćno-sočni efekt. VINSKA CESTA ”RUŽA I VINA” Sadnjom vinove loze na početku svakoga reda također su zasađene i ruže (ukupno 1000 ruža) što stvara jedan prekrasan i atraktivan vizualni efekt. Ruže i vinova loza su glazba prirode. Osim vizualnog efekta, ruže su i indikator bolesti, jer obole 3 dana prije loze i ukazuju na problem. Krajem svibnja ili početkom lipnja u isto vrijeme cvate i graševina i ruže i taj dan je obilježen jedinstvenim događajem nazvanim ”DANI CVATNJE GRAŠEVINE I RUŽA”. PINOT SIVI 2010. Atraktivan i vrlo izražen miris s cvjetnim aromama bagrema, kruške te blage primjese jabuke. Okus je zreo i pun, doslovno klizi preko jezika. Izvrsno odmjerene i dozirane kiseline daju konačnu slasnost vinu. Retrookus traje još po ispijanju. Zavodljivo i nježno na prvi dojam, a posjeduje sav potreban karakter i postojanost ozbiljnog vina. GRAŠEVINA STARAC 2010. Graševina je prelijepih aroma. Miris je svjež i obiluje atraktivnim voćnim aromama. Okus je istovremeno snažan i blag, za neophodnu svježinu odlično odmjerenih kiselina, fine punoće te zaobljen i pitak. Naglasak na svježini i voćnosti, ali nije zanemarena struktura kompleksnosti vina. Odličan primjer kako bi trebala izgledati graševina ”Zlatne doline” i pleterničkog vinogorja lokaliteta Starca i Klikuna. ”Nema većeg zadovoljstva ako tu radost gospodara užitka možemo podijeliti s Vama, jer uz vino se ljudi mogu družiti, prijateljevati, zapjevati, zaljubiti se i rastati. Ali što je karakteristično i najljepše u tome da se vino uvijek s nekim dijeli i uživa u njemu. Vino je ljubav života.”

CABERNET SAUVIGNON BARRIQUE 2009th The position of the hill Starac, not far from Pleternica, give birth to powerful Cabernet Sauvignon. Deep red color with distinctive violet hues announces premium wine experience. Rich fruit and spice aromas are lining up and they are dominated by ripe cherries. Long and lasting tastes are the key features of this wine. Lively acids get along with moderate tannins and extract, so the wine simultaneously soft and elegant, yet rich, which gives it seductive fruity juicy effect. WINE ROAD ”ROSE AND WINE” At the beginning of each vine row, they planted roses as well (a total of 1000 roses) which creates a wonderful and attractive visual effect. Roses and vines are the music of the nature. In addition to the visual effect, roses are an indicator of the disease, because they catch disease three days before vines so they indicate a problem. In late May or early June, Graševina and roses blossom at the same time, therefore, this day was marked by a unique event called ”BLOSSOM DAYS OF GRAŠEVINA AND ROSES”. PINOT GRIS 2010th Attractive and very strong scent with floral aromas of acacia, pear and slight tinge of apple. The taste is mellow and full, literally glides across the tongue. Well measured and dosed acids give final deliciousness to this wine. The aftertaste lasts even after drinking. Nova berba, novi izazov, nova malvazija i novi Bruno Trapan. U suradnji s poznatim istarskim dizajnerom Željkom Burićem pripremljeno je novo lice malvazije Ponente i ”face lifting” Rubi rosea. Rose dobiva navojni zatvarač i za sad ne mijenja etiketu, a malvazija Ponente je zalajala! Novom etiketom dominira silueta zelenog psa sa sedefasto bisernom ogrlicom i diskretno naznačenom ružom vjetrova, kao poveznicom sa zaštitnim znakom vinarije Trapan. Oba su vina ”funky”, pitka, svježa i razumljiva, a istovremeno nisu banalna. Sortna su.

Together with his wife Andrea, responsible for marketing, this young wine engineer produces new wines and takes a significant place in the world of wines. New vintage, new challenge, new malvasia and new Bruno Trapan. In cooperation with well known Istrian designer Zeljko Burić, new face of Malvasia Ponente has been prepared, as well as the facelift of Rubi rosea. Rosea has a screw cap and it will not change its label for now. Meanwhile, Malvasia Ponente is barking! A new label has an image of a green dog, as well as the discrete image of the wind rose representing their trade mark. Both wines are ”funky”, drinkable, fresh and understood. At the same time they aren’t banal. They are varietal.

Rosea is dominated by terrano and its fruitness of fresh red fruit, as well as the flowerness of violet and cyclamen. Malvasia is dominated by vegetal and flowery touch, with concealed fruitness of green apple and citrus fruit, but also with a strong varietal aftertaste of noble almond bitterness.

GLASS IS IMPORTANT

Svako vino ima vrstu čaše sa kojom pokazuje svoje najbolje osobine. Čaša oblika tulipana na vitkoj stapci koristi se za bijela ukusna vina. Istog tipa i eventualno malo većeg formata čaša koristi se za nova ili mlada crna vina, ili za izvrsna crna vina koja su posredno starila. Za reska bijela, hladna vina bolje je koristitičašu više zaobljenu, produženiju i s lagano zaobljenim rubom. Velike i trbušaste čaše koriste se za starija crna vina, koja su dugo starila. Čaše malog formata posebno su prikladne za desertna vina. One moraju biti sužene pri vrhu s ciljem da bolje sačuvaju aromu. Pjenušava vina serviraju se u tzv. ”flauta” čašu (franc. la flute). ”Flauta” je temeljna čaša modernog stola, naziva se još i ”anđeoskom čašom”. Ima oblik prilično izduženog tulipana ili naopako okrenutog trokuta. Namijenjena je suhim i plemenitim pjenušcima. Ovaj vitki i uski oblik čaše primaknutih stjenki omogučuje dulje zadržavanje mjehurića CO2 koji se dižu s dna prema površini vina.

Every wine should be served in the proper glass to show its best characteristics. Tulip glass is used for white wines. Same, or a bit bigger tulip glass is used for young red wines, as well as for an excellent red wines that aged indirectly. For white, cold wines, it’s better to use more rounded glass with extended stem and round edge. Big and paunchy glasses are used for older red wines. Small size glasses are appropriate for dessert wines. These glasses need to be narrowed at the top to keep the aroma. Sparkling wines are served in ”flute” glass. ”Flute” is the basic glass of modern table. It’s also called ”angel glass”. It has a shape of extended tulip, or reversed triangle. It’s intended for dry and noble sparkling wines. This slender and narrow shape of glass allows the bubbles of CO2 to stay longer in the glass while they rise to the surface of the wine.

MARSALA WINE

Marsala je vrsta desertnog vina iz istoimenog sicilijanskog grada Marsale, koje se proizvodi po kontinentalnom dijelu Pokrajine Trapani, ali i po otocima Pantelleria i Favignana. Marsala je vino visokog postotka alkohola, kojeg mora biti najmanje 17% a po mnogočemu je slična dalmatinskom prošeku. Danas se proizvodi tako da se na kraju vrenja dodaje alkohol, ali ne više od 20 - 35%, da se zaustavi daljnje vrenje i tako osigura trajnost. Postoje tri vrste Marsale, prema bojama (odnosno grožđu od kojih se proizvode), to su jantarna (ambra), zlatna (oro) i rubinska (rubino) marsala.

Marsala is a dessert wine from homonymus Sicilian town Marseille. It is produced in the continental part of Trapani province, as well as on Islands Pantelleria and Favignana. It has a high alcohol percentage that must not be less than 17%. This wine has a lot of similarities to Dalmatian Prosseco. Today, it’s made with alcohol added at the end of fermentation, but not more than 20-35%, so it can stop further fermentation and in that way endure durability.

ROSEMARY WINE

Vino se dobiva tako što se otkinu mladice zelenog ružmarina te ih se prelije bijelim vinom. Nakon nekoliko dana smjesa se procijedi i spremna je za upotrebu. Ružmarinovo vino stimulira mozak i živčani sustav, poboljšava cirkulaciju i rad bubrega te je dobar lijek za glavobolju.

Wine is produced by tearing off branches of green rosemary which are then poured with white wine. Couple of days later, mixure is percolated and ready to use. Rosemary wine stimulates brain and nerve system, improves circulation and kidney function, and it’s a good medicine for headache.

Grčka predaja kaže da je lozu ljudima darovao nestašni bog Dioniz. Na jednom putovanju po Aziji svidjela mu se mala biljka, koju je poželio ponijeti sa sobom. Dok je tražio pogodan predmet za nošenje biljke ugleda šuplju ptičju kost u koju zasadi lozu i ponese. Loza je brzo rasla i u toku putovanja Dioniz je presadi u lavlju pa zatim u magareću kost. Najzad stigavši kući zasadi je zajedno sa svim kostima. Od te biljke izraste bujna loza koja je s godinama davala sve više ukusnog grožđa. S vremenom ljudi naučiše od grožđa spravljati opojni sok koji razbija brige i budi veselje.

Greek legend tells that Dionysus, Greek god of fertility, gave the vine to his people. He discovered a small plant while traveling through Asia, and he immediately wished to take this plant with him. While he was searching for something he would carry this plant on, he found a hollow bird bone in which he planted the vine. Vine was growing rapidly, so Dionysus replanted it in the lion bone and afterwards, in donkey bone. Finally, when he arrived home, he planted it together with all those bones. Vine gave more and more delicious grapes each year. Eventually, people learned to make a beverage that breaks worries and awakens joy.
