Letter from the Editor

The Time Has Come!

My editor’s letter was already done and sent to production when, on November 4th, 2008 at 08:00 Pm, he has won. It was the collective breath we’d been waiting for to exhale for the past 22 months. Finally it’s over. That day was the day our parents, our grandparents, all of us, thought we’d never live to see: An African American man has become president of the United States. A son of Africa has become president of the united States . Few weeks ago, while I was driving back to my home, I was involved in a car accident. It was an unfortunate event but after the initial shock, I realized how lucky I was to still be alive! I am thankful I lived to see that day. When he announced his candidacy for president early last year, it seemed like an impossible dream but now when we think “I can be anything” it’s true. On November 4th 2008, the Dream happened. Barak Hussein Obama changed something in us all. Be thankful for what you have. Live your life, believe and share the one gift every single person I know is looking to give and receive: LOVE. Most of all follow your dreams. This issue, Mwinda Magazine is honored to have Gage grace our front cover and for our interview with this successful artist, see our cover story where he reveals all about his life, projects and dreams. We introduce our first annual list of the most influential Canadians and on a more serious note; we pay homage to the Etibacko family who died in an arson fire in 2006. As always, this issue is brimming with fashions shoots, travel, beauty and articles that motivate. And you know I love to get your letters –I’m anticipating some great ones to come out of this issue. Let me know what you love at messia@ mwindamag.com and don’t forget to visit our new renovated website, mwindamag.com! Love and happy holidays.

Beauty lessons ear Mwinda Magazine, I picked up your magazine at X-cut salon and was thrilled when I saw your « Makeup Tips » beauty spread. Trust me, it’s not easy to find what you need in the cosmetics department but the tips you gave were great! Thanks! Angelina, Toronto, ON

D

I can see clearly now "The Absence of Color” story was fabulous. After reading your story, I have decided that from this day forward, I will have a more open mind. I am proud of the diversity of this world. Thank you! Vicky James, Montreal, QC Hi!

I

am glad to see Mwinda Magazine out here! Keep doing it. William, Burnaby, BC

From Outlawz to Islam The 2008 Muslim youth convention held in Surrey, BC on Saturday May the 10th, hosted a special guest: Mutah Beale a.k.a Napoleon of the Outlawz, the famous Tupac rap group. Outlawz is one of the pioneers of gangsta rap. The controversy of the song “hit ‘em up” has been a huge debate in the Tupac/Biggie murder case, in the east coast VS west coast war. Mwinda magazine met with Napoleon for a surprising interview. How will you describe your life since you became a Muslim? I think the main difference now is I have discipline in my life, order in my life. What have you done since you stopped rap music? Allah has come through and made a way for me, so I try to do different businesses. Most of the time that I do is motivation speaking, I travel around and do motivation speaking. That’s my main thing right now. What do you think of the youth who takes gansta rappers as role models? I think they should be careful of who they take as role models, because these rappers have role models themselves, and most of them have blinded and lost themselves. So I think as role models they should take the prophets of God who have been sent down as the best of mankind. Don’t take as role models the people with the same confusion as you, and searching for the same as you because it’s a circle.

What do you want to say to the people who think of religion as a holdback? The reality is that the people submit to the will of Allah willingly or not. If a person goes outside and gets in a car crash and die, he has no control of it, he has to submit to the decree of Allah. If you take a step to become a Muslim, you just don’t become a Muslim and think a person will has to stop giving up dressing, music… nothing happen overnight, the main thing is to submit to the will of the God who created the heaven and the earth, the God who sent his prophets, Jesus, Jacob, Adam, Isaac, Abraham, Ishmael, Jacob, Muhammad…etc. Everything else come later. Did you keep in touch with some celebrities you used to know such as Queen Latifah? I never hanged out with her like that, and I haven’t seen her in a while. The other celebrities, I’m not in the same places as them. I speak to the Outlwaz because 2 of them became Muslim,

Idi Amin and young Noble. I keep in touch with Freeway of Roca Fella who’s also a Muslim. Success in the western world is often financially or material oriented, what means a successful life to you today? Successful life is obeying Allah and his messengers, it’s the only way you gonna have success in this life and in the next life, because money is not the way of success. Money comes and go, many people that’s millionaires lose their money and the next thing they do is commit suicide because they don’t have no foundation. They don’t know who their lord is. People can ask themselves are they happy? You cannot fool yourself, no one is happy if you don’t know who your lord is, there’s no way you can be happy no matter how much money you have. So the only way people can be happy and feel success is obeying Allah and his messengers, it’s the only way.

Books: Our stories Tears of the Desert Halima Bashir

Halima Bashir was born in the remote desert of Darfur, Sudan, and was raised in a loving family that was part of the black African Zaghawa tribe. After attending school in a nearby town, Bashir went on to study medicine, becoming her tribe’s first qualified doctor, much to the pride of her father. Tears of the Desert is Halima’s tale, told in her own words and framed by her love for her new son. It is a wrenching portrait of a young girl’s innocence lost, of a family and a people destroyed, of the endemic discrimination against black African Sudanese by their Arab compatriots, and of the senseless violence that erupted and continues unabated today. It is Dr. Bashir’s belief that these words should be shared with readers so that the world will know about the conflict in Darfur and about the horrific violence that is occurring between fellow Muslims. This is Halima Bashir’s story, but it is also the story of a nation that is ripping itself to pieces. ($18.77 at Chapters.indigo.ca)

What We All Long For Dionne Brand

What We All Long For follows the overlapping stories of a close circle of second-generation twenty-somethings living in downtown Toronto. There’s Tuyen, a lesbian avantgarde artist and the daughter of Vietnamese parents who’ve never recovered from losing one of their children in the crush to board a boat out of Vietnam in the 1970s. Tuyen defines herself in opposition to just about everything her family believes in and strives for. She’s in love with her best friend Carla, a biracial bicycle courier, who’s still reeling from the loss of her mother to suicide eighteen years earlier and who must now deal with her brother Jamal’s latest acts of delinquency. Oku is a jazz-loving poet who, unbeknownst to his Jamaican-born parents, has dropped out of university. He is in constant conflict with his narrow-minded and verbally abusive father and tormented by his unrequited love for Jackie, a gorgeous black woman who dates only white men. The four characters try to make a life for themselves in the city, supporting one another through their family struggles. What We All Long For is a gripping and, at times, heart-rending story about identity, longing and loss in a cosmopolitan city. ($12.58 at Amazon.ca) 18

»the Etibako story

WHEN TRAGEDY CONFRONTS REALITY

On May 15th 2006, the city of Vancouver was rocked by an arson fire at a Vancouver housing project. The fire killed a mother-Adela Etibako-, her three children-Edita ,12, Benedicta, 9,Stephane,8- and another person-Ashley Singh, 17. Bolingo Etibako, Ashley Singh’s boyfriend was the only survivor of the fire. He jumped out the second-story kitchen window. Adela’s oldest children: Ornella (19) and Yanick(22) were not in the family’s home at the time of the fire. Amid the shock and destroyed lives the crime left in wakes, questions arose concerning exactly how the tragedy occurred and who, really was involved. Mwinda Magazine looks at another side of the story: with the escalating rate of teenage crimes in our communities, many parents fear for the safety of their children.

Mwinda | Fall 2008

E

Everyone loved Adela Etibako. She fled from the Democratic Republic of Congo to Vancouver hoping to live a better life with her children. Raising them on her own while the husband lived in Congo, she encountered the difficulties of a single mom in Canada. She received a lot of support from the small Congolese Community of BC especially Alain Musende and his family. Eventually, she became also an active member of the community. She worked as a cleaner at night, and her house was a daycare during the day. Working relentlessly to take care of her family, she was also a” movie extra” and found these moments “very relaxing” Adela Etibako loved her children. She was always smiling, ready to help anyone who needed it. A close family member, Didier Lokombo recalls:” She was a good mother, that’s why I fought for the bodies to be repatriated to Congo. Few years before, I was living in the street, nobody to help me except her. She let me stay at her home with all of her children. I will never forget that.” Adela Etibako was a member of the Calvary church in New Westminster, BC. She firmly believed that a family that prays together stays together. Her oldest daughter, Yannick says that her mother’s dream was to become a Canadian citizen.

The Etibako tragedy has been described by the Vancouver police as “one of the city’s worst crimes” But is it only a “horrible” crime or does it reflect a growing trend toward group violence among young people?

In 2006, the national crime rate was down 3% over the previous year and was the lowest it had been in more than 25 years. The teachers and students can’t stop praises about Edita, However, the young people crime rate was up 3% from a year Benedicta and Stephane. At the funeral, Stephane’s teacher earlier. A report on youth crime released by the Canadian Centre delivered a poignant speech “Stephane’s smile was wonderful” for Justice Statistics in May 2008 stated that while overall crime she said, tears in her voice. So, why? While hypothesis and rumors were flying, the Vancouver police started an undercover operation in various cities including Montreal, Nanaimo and Edmonton which led to the arrest of a 19 years old man, Nathan Fry on June 2007. The investigation revealed that Nathan Fry and Adela Etibako’son, Bolingo Etibako had a relationship. Bolingo Etibako is an intelligent young man but even when his mother was alive, he was involved with the wrong crowd. “We told his mom to be careful, that one day Bolingo’s doings will kill them all” says a close family member. “It breaks my heart to realize that it’s a reality now.” Bolingo was involved in gangs and criminal activities. The arrest of Nathan Fry showed that Fry and Bolingo were both involved in a stabbing case on March 2005. Bolingo gave a statement to the police about the stabbing and was not charged. Nathan was ultimately acquitted but angry at Bolingo for collaborating with the police, he decides to retaliate. With the help of an unidentified person, Nathan put gasoline in the Etibako family room and set the house on fire. His target: Bolingo Etibako. Ironically, Bolingo was the sole survivor of the fire which killed 5 people that night. On September 2008, 20 years old Nathan Fry was found guilty of five counts of firstdegree murder and sentenced to life in prison. A reality check The Etibako trial was emotionally charged and “almost unbearable” says Yanick Etibako, Adela’s oldest daughter. “You

rates have dropped, youth violent crimes have increased 30 per cent since 1991. Violent crime has risen 12 per cent in the last ten years among youths, while the overall violent crime rate in Canada declined 4 per cent in the same time period. With the media dominated by reports of youth crime Police across Canada echo these concerns and ask for better response to the violence. In the Etibako tragedy, the government promised a better security for housing projects: better outdoor lighting and surveillance cameras. Mp Libby Davis acknowledged the importance of the security in the tragedy during a conference organized by the Congolese Community at the Integration Center for African Immigrants. She declared that “The Parliament would have to examine this situation and take measures. This tragedy can’t happen again” In Newfoundland, officers go to schools and inform the students of the consequences of fighting and of violent activities. While being a victim here, Bolingo Etibako is also another number in the percentage of youth crime rate. He was jailed on April 2008 for his involvement in a bank robbery. Whether tougher sentences or shock tactics are the solutions to this appalling crisis, it is evident that Youth violence is spiraling out of control in Canada. But what if you found out that the perpetrator of the violence was your own child? What will you do? www.mwindamag.com

For Soul Rebel singer Gage, music was not a detour but his true calling. Coming from humble beginnings and becoming a force to be reckoned with as an artist, he sets an example for so many who strive to follow in his path. Gage’s first album Soul Rebel, of which most of the songs were written, composed, and produced by Corneille, was an immense success in Montreal and in Europe. Now, preparing to take to the stage to present his second album Changer le monde, don’t expect him to be silent. He chats with Editor, Messia Ditshimba about his mission to change the world and why despite his considerable success overseas, he still dreams to be recognized as a true Canadian singer. From Haitian and Jamaican roots, Gage was raised in StMichel, Montreal, Quebec by his mother, a single mom who worked hard to provide for Gage and his two sisters. Gage says that when growing up life was hard but living in Montreal helped him learn different cultures at the early age of six. “I am strong because of that” As driven as he is, Gage says his career as a singer had always been his goal “I was your normal kid in front of the mirror, singing and imitating my idols of the moment: Edith Piaf, Stevie Wonder, Nana Mouskouri, Marvin Gaye, Joe Dassin, The Beatles.” In 1997, he met Canada’s famous African singer, Corneille and Martin Gardy with whom he started the group R’n’B, O.N.E. O.N.E.’s single “Zoukin” reached number one on the Canadian radio airplay chart. The group then went on tour, opening for acts such as Canadian French singer Isabelle Boulay and R’N’B singer Kelis. “We faced many obstacles; the most difficult was to not listen to negatives things about us. I wanted to make a difference in people’s lives, I knew we could do it, I knew I could do it” In 2001, three years after the formation of O.N.E, Corneille left the group to pursue a solo career. Gage followed the same path, at first concentrating on acting and theatre. In 2003, Corneille asked Gage to do the opening during his 2003 tour. That signed the return of Gage to music and in 2005, the release of his first single “Trop Fresh” in France, which attracted a significant fan base. “The Freshcrew, I just love them! I am so addicted! I owe them so much!” He says. “I fell in love with France, the public is just amazing!” Gage’s first album Soul Rebel followed in July 2005. Most of the songs were written, composed, and produced by Corneille. Now, Gage is adding a new notch to his belt. After a 3 years silence and after the release in June 30th 2008 of his second album “Changer le monde”, Gage is now preparing his own solo tour and a series of concerts across France. Of course, Gage’s success hasn’t come without sacrifices. “The music scene is very hard in Canada” he says. “I would love to spend more time here in Canada, [to] see my family more. I still dream of being officially part of the Canadian music scene” His angst may soon be old news: Gage says that his Canadian fan base is growing impatient of him “They want me to come back to Montreal.” The video clip of “Pardonne-moi” the title phare of his new album “Changer le monde” was filmed in Montreal. Now Gage is on a roll. “I worked hard on that album (Changer le monde) I just want people to appreciate it” he says. “We chose to release Pardonne moi first because it’s a powerful song. The message of that song is universal. Forgiveness. I believe that we can change the world. My goal is to show people that Yes, we can” With all the songs Gage is about to serve up, he just might change the world-one song at the time. Woman in Business:

The success story of Sonia Meggie, Harmony Productions.

O

ne major reason why the world economy is more colourful than you may think. Have you ever dreamed of quitting the boring 9-to-5 to pursue your dreams? Meet Sonia Meggie, 33, Director of Harmony Productions. Sonia Meggie launched Harmony Productions in 2001 and is one of the UK’s leading global arts and events companies, showcasing theatrical performances in the UK, the Caribbean and Stateside. Acts include Bill Bellamy, Gina Yashere and Richard Blackwood. Sonia co-ordinates performances, secures sponsorship and maintains partnerships. Get to know more about Sonia in her interview. Mwinda Magazine: What is your vision with Harmony Productions? Sonia Meggie: It was originally a concept by Kenneth Drysdale, my business partner, and together we became one of the most established black-owned production companies in the UK. We organize events from youth programmes and comedy shows to drama productions, charity dinners and excursions. Harmony Productions manages urban events and distributes media productions that reflect life in a multicultural society in the 21st century. We also have a foundation whereby we contribute a percentage of our takings to promote community events and support youth-led initiatives. We are driven by opening doors for others and recruiting new talent into the organization as we know how difficult this industry can be. MM: In interviewing women who are involved in the business industry, some women have expressed that they are not taken seriously. Do you relate at all to those experiences? SM: There is still a stigma attached to women and black entertainment. You’re trying to persuade clients to recognize you as a professional outfit. When we’re getting our shows to cross over, sometimes people think that their audiences won’t understand this. But I believe humour is humour, and it doesn’t come with race or gender. Once they see that we can deliver, it opens up many doors. It’s a very time-consuming and demanding job, so I always 34

make sure I get a work/life balance. As a small team, we have a lot of casual staff working with us, so recruiting reliable staff can be challenging. We have to ensure that the shows go smoothly as we sometimes worry that an artist may not be available. Fortunately we have not had any disasters! MM: What is the most enjoyable aspect of your job? SM: The most enjoyable aspect of my job is seeing the vast number of people who turn up at our shows. Everyone is taken aback, and there is real positive energy in the audience. We’re blown away by the response of the audience. The venues are filled with laughter. When you peek at the crowds from backstage, you can see tears of laughter rolling down their faces. Seeing people smile, getting feedback from people who say they had a good time or it was one of their best nights out, is just the best feeling! We also ran a summer project where we thought we’d attract about 30 young people, but we actually attracted 150. That felt rewarding.

Ways To Keep You Going When The Going Gets Tough

It’s not looking good, is it? There is talk of recession, a downturn in the economy, a gloomy outlook, rising unemployment and a housing-market crash. It seems like we are talking ourselves into a depression. The statistics show that the downturn is upon us. So what can you do to ensure you don’t go bankrupt with the rest of the country?

Don’t panic Stay calm. If you take control of your finances and make smart choices, you’ll probably be fine. It’s difficult not to be alarmed when you see headlines like “House prices doomed for next three years” or “Worldwide stock markets to fall for the foreseeable future” or “Economy on brink of recession”. Your instinct may be to panic and “get out” of any investments as soon as possible, hoping to cut your losses. That is, however, one of the worst things you can do. Selling your buy-tolet property or your stockmarket investment portfolio when the market is depressed will simply ensure that you have no chance of getting your money back when things improve. Better to batten down the hatches and wait for the storm to pass. Keep your head down Your employers may be looking to tighten their belts, and one of the best ways to do that is by shedding staff. Make sure you aren’t one of the casualties. At a time like this, you don’t want to quit your job and figure out how to get another one later. You really cannot afford to lose your job. Make sure your employers are getting value for money as far as you are concerned. This is not a time to be slapdash or lazy, but a time to be enthusiastic about what you do for a living and to give that little extra to make certain that your job is safe.

Tighten your own belt The spending spree of the past five years is over. If you’re still out there, credit card in hand, spending like mad, good luck to you. The sensible thing to do now is to take stock of your financial affairs with the assistance of a financial adviser. Have a look at your income and expenditure. Is there evidence of frivolous spending? Are you overcommitted? How much interest are you paying on your debts? A little attention to the small details could make a big difference. Save money on Car and Gas When everything doesn’t seem to work out for you, go for the last resort: try reducing your lifestyle dramatically. Sell that luxury car, run errands once a week and use the most efficient route, walk as much as you can.

An opportunity exists, so take advantage of it! Two questions: When is the best time to buy property- when house prices are at record highs or when prices are falling? When is the best time to buy stocks and shares – when prices are at record highs or when the market has fallen? The answers may be obvious, but it is very easy to jump on to the bandwagon when property or stock markets are booming. It takes great strength of character to take advantage of opportunities when times are gloomy. If you are a property purchaser, don’t hesitate. If you have money to invest, do it now. Cash is king during recession. It is only in your best financial interest to acquire assets (stocks, real estate) during a recession. www.mwindamag.com

At the age of 21, François is just like any youth of the Ivory Coast. During all his childhood and his adolescence all he knew was peace. Now, with the unsteady political situation of his country, only his love of the alloco (dish of the Ivory Coast) seems to be able to slow down his next departure for the country of the Uncle Sam. “I had my high school diploma, one year ago and I am waiting for my visa to go to the US. I think I’ll have more opportunities there than in Ivory Coast where the instructive system is a little faulty. But I will come back to work here in my country, after my studies and a work experience “. Many young Ivoirians would love to be in François’s shoes. After getting their diploma, many young people stay in Abidjan and go to University. Between overheated class rooms and strikes, studying is not an easy task. It’s easy to lose your enthusiasm. Of course, François knows it. When asked about his privileged status, he answers a bit naively: “my parents are very strict about my education. That does not mean that they have tons of money, but they are doing anything they can to allow me to have a better education “His father is an engineer and his mother, an executive assistant. He is the only boy in the family and he has three sisters. Last year, François achieved his grade twelve at the secon-

dary school Jean Mermoz, a French establishment broadly frequented only by the best of the Ivoirian youth. Why finishing so late? François smiles and shamelessly says that he was not paying attention to his studies. “I was neglectful. But now, at 21, I want to be in charge of my life and be more responsible. I also want to take care of my parents.” François feels alone now that his girlfriend left to finish her studies in the States. What about the Aids? “I am scared of it, I am very careful” he says. The uninterrupted campaigns of sensitization have it seems attained their objectives. AIDS is not however the only curse which mines the Ivorian youth. There is also Alcoholism and drug dependency. “I am not into drugs and alcohol “this 6.2 basketball player is more into rap music and soul. sex and

relationships:

Living Together (before tying the knot)

Live-in relationships maybe in the news these days thanks to recent movies but, there are still many questions about it. According to Statistics Canada, the number of unmarried couples living together has increased tremendously over the past few years, and this trend will likely continue for many more years. After all, living together before marriage helps couples better understand each other, and allows them to experience all of their compatibility issues before the real marriage happens, right? Not necessarily. What about the societal and parental pressures? What if it doesn’t work out? Here’s what Mwinda Magzine found out… Why Living Together… Couples who live together before marriage often believe that by living together they get a chance to know a person’s day-to-day routine, see the highs and lows, and discover things about them that they won’t necessarily

learn from merely dating. They get to make sure they’re truly compatible in all ways. Most would never commit to spending their lives with someone else without living with them first. Besides testing the waters, other couples say the benefits include sharing expenses and the reassuring thought that breaking up is easier than getting divorced. In most cases, the parents of the couple are not told about it. That is because, though such relations are acceptable to the younger generation, it is still far from being accepted among the older generation, which continues to believe in the institution of marriage. Remarks marketing manager Sonja, 26, “My parents have no clue about this relationship because they will never accept it. I will tell them about us only when I am ready to marry my boyfriend.” …Might Not Be That Smart! The most compelling and widespread argument against living together before

marriage is that several researchers say it increases the risk of breaking up. Virtually all studies of this topic have shown that the chance of divorce is significantly greater for married couples who lived together first. When it comes to living together, more research suggests that the quality of life for unmarried couples is far lower than for married couples. Cohabiting couples report lower levels of happiness, lower levels of sexual exclusivity and sexual satisfaction, and poorer relationships with their parents. Also, annual rates of depression are more than three times higher. And, finally, cohabiting women are more likely than married women to suffer physical and sexual abuse. Living together doesn’t necessarily lead to marriage. After five to seven years, 21 percent of most cohabitating couples are still doing just that -- cohabitating, without getting married. After all , why getting married when you can simply live with your significant other and enjoy the same benefits?

Tips for living together: 1. Do not “just live with someone” more than once. Studies show that people who live with more than one partner in their lifetimes have a greater chance of getting a divorce. 2. Put a time limit on how long the living together phase will last. When you live with someone you are not married to, your level of commitment to the relationship is not at its full potential. 3. Do not live with a partner if children are involved: cohabiting parents break up at a much higher rate than married parents. www.mwindamag.com

A Moroccan meal is an experience that appeals to the senses: sitting on benches around a round table, guests help themselves with their right hand from a single shared dish. It is a world of warmth, textures and dexterity combined with tastes and aromas. Each region has its own specialties, traditions and sense of hospitality. You will of course taste world famous dishes such as couscous, or rather couscous(es) in the plural, as there are so many depending on the season, region and cooks’ whims. oroccan culture is beautifully complex, with influences that are as old as recorded human history, and as new as the latest technology. The product of these forces is a culture as rich as any on the planet, a mixture of Islam and Berber-influenced conservatives and postmodern Western “liberalism”. While in many people’s minds, Morocco elicits images of the exotic desert and mysterious Kasbahs; in reality it’s so much more. Located in North Africa, Morocco is different, unique, and timeless. “Tangier, Casablanca, Marrakesh… just the names of these cities stir a hint of exotic spices in the nostrils.” Cities to visit: The imperial city of Marrakesh where the locals are friendly and the visitors come in search of the winter sun. Called “the pink city” for the ochre color of its walls, it stands among lush gardens and palm groves. The Jardin Majorelle, a famous 40

two acres botanical garden created in the 1920s by the French artist Jacques Majorelle, is now owned by Yves Saint Laurent, whose private villa is near the garden. Casablanca, further up along the coast, is Africa’s second largest city and Morocco’s economic capital. Modern high-risers and office towers define the skyline. The most refined designer shops and exclusive boutiques will please the discriminating buyer. Morocco, the land of festivals: A land of hospitality and encounters, Morocco is a major international festival venue. The major towns organize original events – in music, film, popular culture - often taking the theme of dialogue between the west and the east. Take advantage of a stay in Morocco to discover the unique atmosphere of these events. Several concerts and film projections take place in historic locations, often outdoors. Subtle and flavoursome cuisine:

soy sauce, vinegar, orange juice, and lime juice. Add hot pepper sauce to taste. Add the onion and mix well. At this stage you may wish to reserve a small amount of this sauce for dipping. Marinade the turkey breasts overnight, or for at least a couple of hours. Grill or barbecue for 6 minutes on each side, basting with the sauce, or alternatively bake turkey in sauce at 220 C for about 25 minutes. No oil is needed. Rice and Peas: Proper Caribbean rice and peas is made adding coconut milk to the water when boiling the rice, but you can make a lower fat variety just using American Rice, and adding some cooked red kidney beans towards the end. Add some fresh Thyme to the water while cooking too, and when finished add a dash of hot pepper sauce and stir through. Serve the Jerk Turkey surrounded by a bed of rice.
