Letter to Our Readers

Erin Go Bragh. This is the month when there are only two kinds of people: those who are Irish and those who wish they were Irish! In line with that observance, our March issue provides a flavor of Irish traditions, foods, drink and music for your interest and enjoyment. As you read through the entire issue, our writers hope you get into the “spirit of the month.” In fact, with the parades and celebrations occurring almost daily throughout the month, you might refer to March as “St. Patrick’s Month”. Indeed, since a proclamation signed by the U.S. President in 1991, the month of March is officially designated IrishAmerican Heritage Month. The celebrations, parties and parades kick off this year with three St. Patrick’s Day events on March 5th (Hoboken, Mt. Holly & Nutley). The traditional Belmar Parade this year takes place on Sunday, March 6th. A complete listing nj be found in this njof all 25 NJ parades can ES U N E E N U E Sissue. Sticking with this issue’s theme, our writer’s introduce you to the Irish nj sounds of Greg & Liz an acoustic nj SRyan, E U N E duo whose traditional Irish folksongs S E ENU

On the comic side, our contributor Steve O continues with our theme and introduces you to Siobhan Fallon Hogan, an Irish comedian and actress from NJ, who has performed in virtually every type venue: TV, theater, movies and has even performed in a couple of one woman shows. You may remember her from the Seinfeld show or the movie Forrest Gump. Turn to this month’s Comic Relief for more. Irish Folksongs

To listen to live traditional Irish folksongs, you don’t have to search too far. Greg and Liz Ryan are a staple here in Monmouth County. This husband and wife duo performs monthly at St. Stephan’s Green Publick House in Spring Lake Heights. Greg sings and plays an acoustic 6-string, a 12-string guitar, and an Irish bouzouki, while Liz accompanies him on the bodhrán (Irish drum). This duo is guaranteed to perform all the Irish folksong favorites that you want to hear. Greg Ryan has been performing at the Jersey shore and around the state for more than 40 years. At the age of 19, Greg was hired by the Jersey Shore entertainer, Joe Finn and got his first performing job at the McCann’s Hotel/Silver Edge II Bar in Belmar. At that time, Greg sang Irish songs by The Clancy Brothers, The Dubliners, and The Fureys, plus a variety of other types of music ranging from Bob Dylan and the Beatles to Joni Mitchell and Peter, Paul & Mary. Later, Greg sang with the band Firewater, who were a popular local New Jersey country music band for more than 20 years. Now, Greg has returned to his musical roots by performing hundreds of well-loved Irish folk songs.

During a performance, Greg and Liz Ryan normally play for three hours, taking only a brief ten minute break at the end of the second hour. With an extensive repertoire of almost 400 Irish songs, everyone in the audience will hear their favorite traditional Irish song. Almost every performance will include “standards” such as The Black Velvet Band, The Fields of Athonry, The Town I Loved So Well, Ireland’s Thirty-Two and many more. The Ryans also perform songs that are not widely popular, however they are always aware of the audience as not to lose their attention or interest. There will always be a good mix of love songs, drinking songs and songs of rebellion and reconciliation, along with novelty songs such as “Whatever You Say, Say Nothing” or “Back on the Diet on Monday. Greg and Liz also encourage requests from the audience.

I Do Not Like Green Beer ! March has always been one of my favorite times of year. It’s when spring starts to come back, there are great sports on TV, and it has St. Patrick’s Day; one of my favorite holidays. Bagpipes, parades, corned beef and cabbage and Irish beer, what more could you ask for? My only issue is the fizzy, yellow, tasteless beer with food coloring. After all, Ireland is known for amazing stouts and red ales, not gimmicky green brews. Celebrating St. Patrick’s Day with inferior beer just seems so un-festive. I doubt St. Patrick would have approved either. A little known fact, St. Patrick had his own personal brewer, although the beers of that time have changed quite a bit from the beers of Ireland today. The older ales seemed to have been roughly the same reddish color, but it wasn’t until centuries after St. Patrick that brewers started using hops. In the Middle Ages, it was difficult to find clean drinking water. Couple that with the fact that Ireland has very hard water and it’s no wonder that the beer recipes that became popular are all full of flavor. This was the start of the modern day Irish Stout. A full flavored, heavily roasted beer masks the unpleasant flavor in the water. In comparison, the water in 14

Germany was more palatable and so the lighter Pilsner lager recipes became more popular. Around the 17th century most breweries in Ireland were local houses and inns. Most brewers were women, called Alewives. It was around this time that the use of hops became popular and about when Stout got its name. Originally the dark easy drinking beers of the day were called Porters, named after the porters who would carry the goods from local craftsmen to the ports of trade. These great tasting beers quickly became popular with the upper class, but were brewed to be even more robust and much stronger. The word stout meant brave, proud or strong. For a while you could order stout pale ale or any other stout beer style. However, the name Stout stuck for the stronger Porter style beer, so therefore, Stouts were born. Around this time a man named Arthur Guinness started brewing his famous Stout. Quickly he and his Stout became a huge success. At one point in time Guinness was the largest brewery in the world and is still the best selling Stout worldwide.

INGREDIENTS: • 1 teaspoon of sugar • Dash of Angostura bitters • 1.5 ounces of Irish whiskey • 1 lemon peel twist • 1 slice of orange • 1 maraschino cherry DIRECTIONS: 1. Pour all the liquid ingredients into a highball glass. 2. Stir the liquids together. 3. Garnish with the fruit and serve.

Irish Coffee

INGREDIENTS: • 3 ounces of Irish whiskey • 2 teaspoons of sugar • 12 ounces of any strong coffee • Whipped cream for garnish DIRECTIONS: 1. Heat a goblet glass in boiling water. Dry the glass and pour in the whiskey and sugar. 2. Pour in the hot coffee and stir the drink to dissolve the sugar. 3. Top the coffee mixture with a generous dollop of whipped cream and serve.

Irish Car Bomb

This drink is a favorite of barflies everywhere. It tastes something like a chocolate milk shake. Note that it is not for the faint of heart because you have to chug the entire half pint of Guinness in one gulp. If you don’t, the cream will curdle.

INGREDIENTS: • Half ounce of Bailey’s Irish Cream • Half ounce of Irish whiskey, such as Jameson • Half pint of Guinness beer

DIRECTIONS: 1. Pour the Guinness into a highball glass. 2. Fill a one ounce shot glass with the Bailey’s and whiskey. 3. Drop the shot into the Guinness, and chug the whole glass immediately.

Blarney Stone

Bailey’s Chocolate Martini

INGREDIENTS: • 2 ounces Irish whiskey • 1 ounce freshly squeezed lime juice, from about two limes • Ginger beer, chilled • Garnish: lime twist

INGREDIENTS: • Two ounces Bailey’s Irish cream • One quarter ounce vodka • One half ounce chocolate liqueur • Sprinkle of cocoa powder

DIRECTIONS: Add whiskey and lime juice to a cocktail shaker and fill with ice. Shake until well chilled, about 15 seconds. Strain into an ice-filled highball glass. Top with ginger beer and garnish with lime twist.

Traditional & Authentic… Corned Beef & Cabbage

TRADITIONAL

Ingredients 2 to 2 1/2 pound Corned-Beef Brisket*, recipe follows 1 tablespoon coarsely ground black pepper 1 teaspoon ground allspice 2 bay leaves 2 teaspoons kosher salt 1/2 pound diced carrots, approximately 4 small 1/2 pound diced onions, approximately 2 small 1 pound potatoes, peeled and chopped, approximately 3 medium 1/4 pound diced celery, approximately 2 stalks 1 small head cabbage, chopped, approximately 2 pounds Corned Beef: 2 quarts water 1 cup kosher salt 1/2 cup brown sugar 2 tablespoons saltpeter 1 cinnamon stick, broken into several pieces 1 teaspoon mustard seeds 1 teaspoon black peppercorns 8 whole cloves 8 whole allspice berries 12 whole juniper berries 2 bay leaves, crumbled 1/2 teaspoon ground ginger 2 pounds ice 1 (4 to 5 pound) beef brisket, trimmed 1 small onion, quartered 1 large carrot, coarsely chopped 1 stalk celery, coarsely chopped

Directions Place the corned beef, pepper, allspice, bay leaves and salt into a large 8-quart pot along with 3-quarts of water. Cover and set over high heat. Bring to a boil, decrease the heat to low and cook, at a low simmer for 2 1/2 hours.

After 2 1/2 hours add the carrots, onions, potatoes and celery. Return to a simmer and cook uncovered for 15 minutes. After 15 minutes, add the cabbage and cook for an additional 15 to 20 minutes until the potatoes and cabbage are tender. Remove the bay leaves and serve immediately. Yield: 6 to 8 servings Prep Time: 20 minutes Cook Time: approximately 3 hours

Shepherd’s Pie

Ingredients For the Potatoes: 1 1/2 pounds russet potatoes 1/4 cup half-and-half 2 ounces unsalted butter 3/4 teaspoon kosher salt 1/4 teaspoon freshly ground black pepper 1 egg yolk For the Meat: 2 tablespoons canola oil 1 cup chopped onion 2 carrots, peeled and diced small 2 cloves garlic, minced 1 1/2 pounds ground lamb 1 teaspoon kosher salt 1/2 teaspoon freshly ground black pepper

2 tablespoons all-purpose flour 2 teaspoons tomato paste 1 cup chicken broth 1 teaspoon Worcestershire sauce 2 teaspoons freshly chopped rosemary leaves 1 teaspoon freshly chopped thyme leaves 1/2 cup fresh or frozen corn kernels 1/2 cup fresh or frozen English peas Directions Peel the potatoes and cut into 1/2-inch dice. Place in a medium saucepan and cover with cold water. Set over high heat, cover and bring to a boil. Once boiling, uncover, decrease the heat to maintain a simmer and cook until tender and easily crushed with tongs, approximately 10 to 15 minutes. Place the half-and-half and butter into a microwave-safe container and heat in the microwave until warmed through, about 35 seconds. Drain the potatoes in a colander and then return to the saucepan. Mash the potatoes and then add the half and half, butter, salt and pepper and continue to mash until smooth. Stir in the yolk until well combined.

Add the corn and peas to the lamb mixture and spread evenly into an 11 by 7-inch glass baking dish. Top with the mashed potatoes, starting around the edges to create a seal to prevent the mixture from bubbling up and smooth with a rubber spatula. Place on a parchment lined half sheet pan on the middle rack of the oven and bake for 25 minutes or just until the potatoes begin to brown. Remove to a cooling rack for at least 15 minutes before serving. Yield: 8 servings Prep: 45 min • Cook: 45 min

While the potatoes are cooking, prepare the filling. Place the canola oil into a 12-inch sauté pan and set over medium high heat. 1/4 cup shredded carrot 1/2 teaspoon garlic salt 6 slices rustic, grainy bread Olive oil cooking spray 1 1/2 cups arugula 1 1/2 teaspoons olive oil 1 1/2 teaspoons white balsamic vinegar Salt and freshly ground pepper to taste Directions: In a large bowl coarsely mash beans. Almond Cake with Apricot Brandy Sauce

The cake owes its moist, spongy texture to the same thing that gives the sauce its luscious consistency: Kerrygold Irish Butter made with grass-fed cow’s milk. The soft, creamy butter does double duty in this

dessert, and the result is a dish that’s twice as hard to forget. Ingredients: 3/4 cup Kerrygold Pure Irish Butter 1 cup sugar 2 eggs plus 1 egg yolk 1/3 cup each: apricot preserves and sour cream 1 teaspoon vanilla extract 1 3/4 cups flour, divided 3/4 teaspoon baking powder 1/4 teaspoon salt 1 (7 oz) tube pure almond paste, crumbled 1/2 cup sliced almonds Apricot Brandy Sauce: 1/4 cup Kerrygold Pure Irish Butter 1 cup brown sugar 1/3 cup heavy cream 1/4 cup peach brandy 1/4 cup apricot preserves Directions: Preheat oven to 350° F. Lightly butter a 9-inch round cake pan; set aside. With a mixer, cream together the Kerrygold Pure Irish Butter and sugar until light and fluffy – about 3 to 4 minutes. Add the eggs one at a time, including yolk, beating well after each addition. Add the preserves, sour cream and extract and beat for 1 minute more. Stir together the flour, baking powder and salt; lightly fold into the batter with almond paste. Spread evenly in prepared pan and sprinkle with almonds. Bake for 35 to 40 minutes or until the center of the cake is firm when the pan is lightly tapped. To prepare sauce, in a medium saucepan melt the Kerrygold Pure Irish Butter. Stir in brown sugar and cook for 2 minutes. Stir in remaining ingredients and simmer over low heat for a few minutes more. Drizzle over cake slices. Makes 10 servings.

ESTORE… HELP WA In the United States, many people with Scot-Irish heritage like to celebrate it by sprinkling Gaelic words into their celebrations and events. There are numerous circumstances in which slainte may be used. In pubs, slainte is commonly said before drinking or when someone purchases a drink for someone else.

Whether you’re Irish, Scottish or “Irish for a day” (St. Patrick’s Day), the meaning behind the word slainte is worth contemplating. As we each go through our daily chores (personal and business), the ability to have and express to others the true values of slainte can brighten the day and “lighten the load.”

About Victory For Victoria: Victoria Dane Russomanno was born on January 13, 2014 at only 25 weeks gestation and weighing only 1lb 10oz. She was doing amazingly well and beating all odds when, at two months old, she was diagnosed with an abscess in her brain caused by a staph infection. Subsequently, Victoria has had a total of seven surgeries including five brain surgeries to drain her abscess and help control the hydrocephalus that she acquired due to her infection. After 134 days in the NICU at Monmouth Medical Center, Victoria finally came home to be with her family. Her parents were told not to expect much from their baby girl, that she would never roll over, sit up, crawl or walk. Now at two years old, Victoria is running! She is starting to talk and is having fun playing with her brother and sister and friends at daycare. • PT / FT
