But today, vodka may be distilled from any variety of starch matter: corn, wheat, rye or sugar-rich plant matter. The popularity and explosion of vodka over the past few years has been overwhelming. Virtually every month, your favorite bar or local spirits shop will be featuring a new brand or flavor. In this issue, our editor sought to explain the vodka revolution. And, if you enjoy vodka, we encourage you to challenge your favorite bartender to pick a flavor and create a delicious new cocktail! erry Rotonda, Gary Jablonski, Howard Mintz and Mark Leinkram took a leap of faith and poured their love for and into Bum Rogers Crabhouse & Tavern, a restaurant that had been submerged in 20 inches of water after Hurricane Sandy, to breathe life back into the landmark seashore eatery that had served patrons of the Jersey Shore for over 40 years. Rotonda and Jablonski serve as the restaurant’s operating partners with Mintz and Leinkram as partners in the business. “I’ve always loved going to Bum Rogers,” Rotundo states eagerly. “My partners and I had wanted to buy it for years.” Jerry has been involved in the restaurant business since the 1970s, designing, building and managing a number of Jersey Shore eateries and night club businesses, including the Blue Grotto, Baby O, Temptations and Panache, all in Seaside Heights, and Polo Club in Neptune, among other venues. He also managed a series of chain restaurants in the area for 15 years. The deal to purchase Bum Rogers did not come to fruition however, until after Hurricane Sandy destroyed so many Jersey Shore properties. The partners bought the restaurant on March 8, 2013. They gutted it “down to the studs,” dried it out, treated it for mold and restored the decadesold business. The four friends came together to restore Bum Rogers to its former glory and in the process, did their part to restore the shore. “Bum Rogers has the same configuration, the same ambience and great food, of course,” Rotonda notes, adding that the restaurant had been in need of a “facelift” and all the upgrades the new owners gave it, including new walls and floors, a new kitchen, new bars and new bathrooms, among other improvements. They provided a fresh start to a long-time business that Jerry says had, “fallen into disrepair” over the years. Bum Rogers, now open all-year round, offers four seating areas for dining, including a main barroom with over 20 TVs for game viewing and cheering on your favorite sports team as you sit on bar stools or at high top tables or booths.

A full dining room with tables and chairs and booths is also available for a more intimate dining experience, while a back bar area with more TVs, booths and bar stool seating is also a choice. An outdoor patio and bar have been added where patrons may enjoy dining al fresco in the warmer months. The eatery, decked out in a nautical theme with wainscoting and “old time” photographs lining the walls, exudes a special summer “beach feel,” even in winter. And now, with the restaurant serving patrons all year long, folks will not have to wait until the warm weather to experience the scrumptious dishes prepared here. Bum Rogers Crabhouse, which specializes in a selection of crabs and seafood, among other menu selections, offers its “Jersey Shore Blue Claws” crabs prepared and served five different ways, including its famous and most popular selection, “Garlic Crabs.” The menu also features the “Mulberry Street Fried Combo,” deep fried crab balls, shrimp and calamari. Diners can also enjoy “Zuppa de Pesce” with scallops, shrimp, calamari, mussels and pan-seared fish. Or, treat yourself to the “Jersey Shore Thing,” which offers whole lobster, garlic crabs and Old-Bay shrimp with red potatoes and corn. And Bum Rogers always offers fresh and juicy eight-ounce Angus burgers served in a variety of ways, such as topped with mushrooms or fried onions. Enjoy an extended Happy Hour here which takes place every day from 11:00 a.m. to 6:00 p.m. and where drink specials are on tap. flourless chocolate torte or choose from a selection of homemade cheesecakes for a sweet delicious ending to your meal. Sunset Dinner specials are on tap for those 55 and over, every day from 3:00 p.m. to 5:00 p.m. with a 20 percent discount off the menu prices. Families are always welcome here at Bum Rogers and are best served during the early dinner hours, for after the lights go down, the music kicks up. Patrons can choose from a full drink menu, along with 32 beers on draft and a great section of the best craft beers and seasonal specialties. Also available are 30 various wines by the glass. ary Philips comes from a very musically inclined family, so it’s no surprise he has spent his life jamming for a living. His mother was in a band playing clarinet and saxophone in the 1940s and his father played the trombone. Other members of his family included a trumpet player, guitarist and opera singer; growing up, Saturday nights were spent around the TV watching “The Lawrence Welk Show” and “Sing Along With Mitch.”

and mandolin. He has also performed on the banjo, saxophone and trombone in the past. He’ll typically throw the ukulele into his act more when he’s playing a wedding or cocktail hour than at a bar, but you can still expect to see it on occasion regardless of the setting. Philips plays all over New Jersey including the various MJ’s, Buckalews Restaurant and Tavern in Beach Haven, Zachary’s Restaurant in Long Branch, Jack’s Tavern in Belmar and Klee’s Bar and Grill in Seaside Heights,

One of Philips’ first big musical influences besides his family was the folk trio Peter, Paul and Mary, and as he grew older he became a huge fan of The Beatles, Harry Chapin, John Denver and Jimmy Buffett. He now plays around New Jersey, passing out feel-good vibes with his popular style of “trop rock”, a mixture of beach music and country with a good amount of Jimmy Buffett thrown in. It’s easy going, comforting and perfect for those relaxing summer nights at the shore. “The real essence of it is the lyrics and just that kind of easy laid-back feeling,” Philips describes. “Sitting by the beach having a cold drink and the palm trees and the ocean so that’s really what trop rock is all about, it’s a state of mind.” Primarily an acoustic guitarist, Philips also throws in the ukulele from time to time and is also learning the steel drum 12

four-hour show and not hit the same artist twice. Philips has been recognized for his work in recent years as his song, “No More Everyday Blues,” was nominated for song of the year in 2012 for the Jersey Acoustic Music Awards, as was Philips himself for male vocalist of the year. Additionally, his song, “Living The Life Of A Beach Bum,” was nominated for song of the year on BeachfrontRadio.com. He regards those nominations as an honor and one of his career highlights. Other highlights include performing with some of his favorite musicians, including Harry Chapin, Don McLean and Doyle Grisham.

Although a beach-themed performer such as Philips does take a slight hit during the winter, he still manages to play two to three shows a week. But in the summer, Philips performs nearly every day. Between Memorial Day and Labor Day this past summer he performed over 100 times, routinely playing seven nights a week. And his catalogue is huge as he can easily play a

hilips’ career has been all about entertaining people and making them feel good, but he goes even further than just his music. He is a big believer in giving back to the community and works diligently to raise money for charity. He works with Holiday Express in the winter and had given a lot of time and effort to Sandy Relief. He’s even a member of the Coastal Jersey Parrot Head Club, an organization that follows Jimmy Buffett and whose mantra is party with a purpose. “Anytime we do anything, it’s to raise money,” he emphasizes. “We had a meeting the other night that I played at and we raised money for one of the local food pantries. Next month we’re doing toys for tots,” Philips said. “Everything we do with the organization is to help people out and that’s really what it’s all about. I enjoy helping people out; I do as much as I possibly can. Amanda Feehan sees herself working in the medical field of sonography but for now, working as bartender at MJ’s at Buttonwood in Matawan, provides her with a good living, work she enjoys and is paving the way for her future. Feehan says that even once she secures employment in the medical field she will “never” retire her bartending skills. “It’s a great job,” Feehan emphasizes. “It allows me to work with people. You work hard and the day goes faster as you move. I’ve never been one to sit at a desk.” She likes the pace of bartending and loves the regular interaction with her customers. Feehan adds that bartending provides the environment and the atmosphere she needs, which involves

Vodka Drinks & Holiday Recipes

INGREDIENTS: 1 (12 fluid ounce) can frozen raspberry lemonade concentrate 12 fluid ounces vodka 1 lime

INGREDIENTS: 3 fluid ounces vodka 1 fluid ounce dry vermouth 1 cup ice cubes 3 olive

PREPARATION: 1. Combine vodka and dry vermouth in a cocktail mixing glass. Fill with ice and stir until chilled. Strain into a chilled martini glass. 2. Garnish with three olives on a toothpick.

Vodka Collins INGREDIENTS: 1/2 fluid ounces vodka 3 fluid ounces sweet and sour mix 1 cup carbonated water 1 slice orange, garnish 1 maraschino cherry, ice 2. On a cocktail sword, PREPARATION: 1. In a cocktail shaker spear cherry first, then filled with ice, combine spear orange slice through the peel. Hang vodka and sweet and sword from the rim of the sour. INGREDIENTS: 2 cups white sugar 7 cups water 2 tablespoons instant tea powder 1 (12 fluid ounce) can frozen orange juice concentrate 1 (12 fluid ounce) can frozen lemonade concentrate 2 cups cold water 2 cups vodka 1 liter lemon-lime flavored carbonated beverage PREPARATION: 1. In a 6 quart pot combine sugar and 7 cups water. Bring to boil and stir until sugar dissolves. Remove from heat. Stir in tea powder while hot. Add orange juice concentrate, lemonade concentrate and 2 cups cold water. Chill in refrigerator.

2. When cold mix in vodka. Pour into a plastic container leaving room on top for expansion. Freeze or 24 hours. 3. To serve, scoop about 1 cup into a tall glass and quickly stir in 1/3 cup lemonlime soda.

Stolichnaya, or “Stoli” to its fans, is the numberone Russian vodka -- and is keeping up with the exotic flavor trends as it is now available in Honey, Chocolate Coconut, Salted Caramel and Jalapeno, in addition to fruit flavors. Ten years ago, who would have thought of asking the bartender for a “pomegranate vodka on the rocks?” Flash-forward to the availability of a flavor to suit nearly every palate. It’s the millennials, says Butkus, who are largely responsible for this world market of vodka varieties. “Millennial consumers grew up with access to global ingredients and flavors, and expect high quality, authentic taste experiences,” he says. “With SKYY Infusions, we strive to

Well, according to the article, “Consumer Trends: Design Important in Vodka Industry,” (9/9/13) on Foodmanufacturing.com, it’s all about gaining market share. The article reviewed Waltham, MAbased Affinnova, Inc.’s first Package Design Audit, which focused on the importance of package design specifically for the vodka industry. “Results showed that up and coming brands Belvedere and Pinnacle are leveraging bold and unique package designs to gain market share, while attracting more consumer attention than older brands Smirnoff and Stolichnaya,” the article explains. Note that Belvedere has an almost Ansel Adamslike etched bottle, and Pinnacle has bold graphics printed on an alluringly shaped sapphire blue bottle, while the veterans Stoli and Smirnoff still retain paper labels. According to the article, “newer brands are winning on shelf: With unique bottle designs, including bold elements and colors, younger brands like Svedka and Pinnacle are most effective at grabbing and holding consumer attention on shelf, dramatically outperforming the industry average. By contrast Smirnoff and Stolichmaya – brands with decades of brand equity – are more likely to be overlooked by consumers on the shelf.”

And now, a show about sex that you can take the whole family to: the kids, the grandparents, even your sister the nun. That idea may sound kind of creepy. But I assure you that the jubilant revival of “On the Town,” which opened in late October at the Lyric Theater, is anything but. On the contrary, this merry mating dance of a musical feels as fresh as first sunlight as it considers the urgent quest of three sailors to find girls and get, uh, lucky before their 24-hour shore leave is over. If there’s a leer hovering over “On the Town,” a seemingly limp 1944 artifact coaxed into pulsing new life by the director John Rando and the choreographer Joshua Bergasse, it’s the leer of an angel. The best-known song from this show — which has music by Leonard Bernstein, describes its setting as “a helluva town.” But the town in question — “New York, New York,” if you didn’t know — feels closer to

heaven here. The show felt irresistibly young and sassy when it opened during the entertainmenthungry World War II years, with its talented team of newcomers. In addition to Comden, Green and Bernstein, there was the rising choreographer Jerome Robbins, and they were all still in their 20s when they put the show together. Few things age faster, though, than the blatantly youthful. (Try watching a Taylor Swift video in a decade or so.). Yet Mr. Rando’s “On the Town” has grown up quite nicely, thank you, with much of its original cast not only intact but also improved. Every element has been heightened in just the right way, a delicate achievement when you consider the heightening that’s aspired to. Some of the shows numbers, in which comic archetypes cozy up or collide, could be placed directly into the cell of an animated Looney Tunes short. Others could slide seamlessly

onto the stage of the Paris Opera. This “On the Town” makes you forget that such contrasting sensibilities could ever be considered irreconcilable What’s surprising is how fluent the entire cast is in both the high and low languages they are required to speak. Start with Mr. Yazbeck as Gabey, the most unworldly of the three shipmates who invade New York. He’s a greener-than-alfalfa farm boy, so clumsy that he can’t say hello to a stranger without muffing it. But when he looks inward, to his lovelorn heart, he becomes a supremely eloquent dancer, a fusion of Astaire’s elegance and Kelly’s bounce. And he has a yearning voice to match, plied to swoony effect in ballads like the great “Lonely Town.” Throughout the show, which includes the dreamiest dream ballets I’ve seen in years, Mr. Bergasse maintains a rare feeling of idiosyncrasy in harmony. Similarly,

he’s captured the Robbins spirit, but stamped it with his own vivid signature. Women found themselves newly in charge of the home front during World War II, so it feels appropriate that the soul mates of Chip and Ozzie should be such exuberantly take-charge gals. As Hildy, the forthright taxi driver who hijacks Chip to her place, Alysha Umphress is a red-hot mama who sings double entendres with a prurience-proof, bebop gusto. As for Ms. Fairchild, whom Gabey falls for when he sees her picture as this month’s Miss Turnstiles, she looks and talks like the sugar-sweet girl next door that all-American servicemen once dreamed of. When she dances, though, she’s a goddess. The large supporting cast embraces both virtuoso comic shtick artists and a corps de ballet that seems to be dancing on air, even in dirty old Times Square. That’s partly because there’s always that music — ah, that music.
