For 10 days, from February 5th to 15th, Grand Velas Riviera Maya held its event “16 Mexico’s Denominations of Origin”, which masterfully presented the original 16 denominations from Mexico: Bacarona, charanda, tequila, sotol, mezcal, rice, cacao, Habanero chile, Yahualica chile, Veracruz coffee, Chiapas coffee, ataulfo mango, vanilla, talavera pottery, olinalá and amber; all of which are products that most characterize our country. It was an impressive celebration that included art, gastronomy, mixology and Spa treatments!

Mar del Cabo, the sixth Velas Resorts property, opened its doors December 5, 2018 with an unforgettable ribbon-cutting ceremony. In attendance was the president and founder of Velas Resorts, Eduardo Vela along with his wife, Adriana Espada; Gerardo Vela, General Director; Andreas Schmidt, Director of Grand Velas Los Cabos, and many other distinguished guests from the region. The inaugural event continued with a cocktail and entertainment provided by a saxophonist who guided the audience along the hotel’s main corridor, all the way to the beach, where guests enjoyed an exquisite dinner. e it at home Fettuccine al Tartufo Nero The Lucca restaurant of Grand Velas Los Cabos shares its winter recipe, a cultural collaboration of local ingredients combined with the traditional techniques of Italian cuisine: Fettuccine with fresh black truffles. Ingredients · · · ·
1 ½ cup of wheat flour 2/3 cup of semolina 5 whole eggs 1 pinch of salt
Truffle sauce: · · · · · ·
15 g of black truffle 1 clove of garlic 1 - 15 g of butter, divided into 2 portions 2 cups of extra virgin olive oil Fresh black pepper, to taste Reggiano Parmigiano cheese, to taste
Preparation: For the preparation of the pasta: in a bowl, form a mound with the flour and semolina. In the center, place the eggs, add a pinch of salt and beat with a fork. Incorporate the dry ingredients, stirring constantly. Once the mixture is creamy, knead for 10 to 15 minutes. The dough will become soft and elastic, test this by pressing it with one finger and see how quickly it recovers its shape. Wrap in foil and let stand in the refrigerator for at least 30 minutes. Sprinkle the work area with flour and flatten a quarter of the dough. Pass the dough through a rolling machine. Fold the dough and pass through a second time, closing and opening the machine a little with each turn, until reaching the desired thickness. Pass it again through the machine with the fettuccine cutter, cover and refrigerate. For the sauce: In a skillet over medium heat, add half of the butter, the oil and the garlic clove. Sauté, add the truffle and lightly cook. Add the fresh pasta to boiling water for a few minutes. Pour the pasta into the sauce and sauté with a little water and the remaining half of butter. Serve with a fresh grated truffle, Parmigiano Reggiano and fresh pepper. Although the resort prepares its own pasta, if you are cooking this at home, fresh pasta can be substituted with 450 g of dry fettuccine. Set the cooking time in boiling water as necessary.

Make it at home Botanical Cocktails Imagine growing and harvesting the freshest ingredients for your favorite cocktail. At Casa Velas, it’s possible! The on-site botanical garden has a variety of fruits and aromatic herbs to choose from. Pick your favorites to give to the hotel’s mixologist who will prepare a cocktail, tailor-made to your liking. If you can’t travel to Casa Velas, our mixologists have shared the following recipe from their ‘Mexican Garden’ that you can prepare at home. Ingredients: · · · · · · · ·
1 beet 1 ½ oz. white mezcal 3 tsp. chopped pineapple 2 tsp. chopped prickly pear 1 tbsp. chopped lemon (1/3 lemon) 3 sprigs fresh thyme 2 thin seedless slices Serrano chili ½ oz. pineapple juice
Preparation: Peel and thinly slice the beet. Place in a glass with the mezcal to prepare the infusion; the beet will give the mezcal a pink color. After 10 minutes, strain the mezcal and add the remaining ingredients. Shake and serve.
