C O N T EDITORIAL 2012 just started – did you also start with New Year´s resolutions? Karrierebibel.de a German website for high-potentials, published a survey done by Forsa about New Year´s resolutions of business people for 2012. Following discoveries were made:

1. Reducing or avoid stress 60% 2. Spend more time with family & friends 56%

3. Doing more sports 55% 4. Having more time for my own 51% 5. Eating healthier 45% Striking is that it becomes more and more important to the participants to do sports and to eat healthier. Means that it probably was not that important to them before! However, eating and living in an healthy way is very important in every persons life – not only to do a good job!

Bagels & Beans is a Dutch chain of resturant businesses which was founded in 1996. In January of that year the first Bagels & Beans restaurant was opened by the founder Ronald Baker, in Ferdinand Bolstraat in Amsterdam. In America the bagel is already a huge success and now it has become very popular in The Netherlands because of the Bagels & Beans. In 2011, Bagels & Beans had 45 branches in the Netherlands. Since July 2010, there is also a branch in Germany. Much of the stores run by franchisees. In Bagels & Beans you can enjoy some delicious bagels for both breakfast and lunch. Many different varieties are on the menu, such as the standard bagel with cream cheese, or with Scottish smoked salmon. Complement your bagel with a blended fruit drink or a bracing cappuccino. A typical eatary, based on bagels with a great selection available. And also while there, get a healthy shake to go with it and wheatgerm on the side!! Based around the city wide, you have a great selection. Kathy, tourist in Amsterdam Great place for breakfast . You can find branches of this franchise concept all over Amsterdam as well as the whole Netherlands. A very lovely little cafe indeed. John, tourist in Amsterdam Offering not a wide variety of bagels with different toppings, but also yogurts with fresh fruits, salads etc. Usually the place should have also free wifi. Ana, tourist Bagels & Beans is a great little place to pop into if you’re looking to pick up a quick breakfast or a takeaway lunch. I stumbled upon the place on the way to the Museum Quarter, and managed to grab two coffees and two bagels with salmon & cream cheese for less than 10 euros. Vikoria, tourist

handcrafted: self-made jam, fresh baked bread, sweet fruit tartes, chocolate cakes or salty quiches. Even a soup of the day or lunch and picnic packages are available. While enjoying the atmosphere and a fresh served coffee, you can watch Pavel preparing the next dough. They call themselves food-lovers and

actually they show their respect for food by using organic, regional or seasonal ingredients. NO CRUMB WILL SURVIVE!

We love food and wanted to create a place where people feel like at home. A tiny living-room-atmosphere with adequate music according to the time seemed to us to be the best place to enjoy our food. We prepare our food in right in front of you - we want to share the experience of quality by handcrafting.

Your food... … is made with love and the pure craft of our hands! Being authentic and craft our things ourselves – not only the food, even the counter is self-made – is important to us. Home-made food, where you know what is inside became special to our todays society. We want our visitors to have a taste experience by simplicity.

The ingredients… ... are mostly from organic origin. I like to use seasonal and regional fruits and vegetables, this ensures that we have fresh products to craft our delicious food. Besides that we use also fairtraded products. With our different suppliers bonds us their equal respect for food and its preparation. The partnerships provide us with best material!

De Laatste Kruimel in numbers... 2011 - in December was the opening. 600 eggs per week are needed. 60 kg oranges weekly we need in winter time for jam and cakes. 25 kg chocolate for our delicious chocolate cakes. 20 kg mixed fruits per week for jam. 11 seats for visitors. 2 people who run this restaurant: Ivelina & Pavel. The guests can see how the chef prepares the dishes on open fire. This gives the kitchen an authentic character. Furthermore, the owner tries to serve pure and responsible food as much as possible. The food is inspired by the Italien Slow food movement. The owner has a farm in the Italien region „Le Marche“ and imports wine, meat and pickles from there. Mr Langendijk also repairs ships and sells self-made furniture.

Pont 13 Pont 13 is a cozy restaurant on a boat in Amsterdam‘s North-West, in the so called „Westelijke Houthaven“. When the former ferry was offered for sale, the current owener René Langendijk decided to buy it and convert it to a nice restaurant with a special relaxed and cozy atmosphere.

„Le Marche“ the best of Italy The owner René Langendijk has a farm in the Italien region „Le Marche“ from where he imports wine, meat and pickles for his restaurant. The wine is from the vineyard „La Collina“ in Fermo.

„Le Marche“ is located in Central Italy between the Adriatic sea and the Apennines. The region has an area of 9,366 km2 and 1.565.335 citizens. The main capital is Ancona. The region is separated in three parts: the coastal plain with Ancona, Pesaro and Fano; the hilly countryside with the old cities Urbino and Ascoli Piceno and the border to Umbria. The kitchen of this region is marked by less decorations but fresh ingredients. Most of the dishes are served „alla nonna“, means like grandmother it does. In „Le Marche“ they serve more meat than in other Italien regions, especially grilled meat called „grigliata mista“. They use everything they have an the fields and in the forest: mushrooms, deer, nuts and herbs. The most favorit speciailty are truffles.

Pont 13

From a ferry to a restaurant The history of Pont 13

The ferry was built in 1927. Until the late nineties it was used for transport of pedestrians on motor vehicles on „the IJ“, the canal that separates the northern part of Amsterdam from the rest of the city. After this, the ferry was sold by the Amsterdam municipal transport company and was used for freight transport in the direction of Ijburg. A couple of years later, the ferry was offered for sale as scrap-metal in Zaandam. René Langendijk, the current owner of Pont 13, decided to buy the ferry an converted it into a restaurant.
