“VITTORIA PEACOCK COLLECTION”, VINO NOBILE DI MONTEPULCIANO RESERVE TUSCANY

DESCRIPTION:

A noble wine in name and in fact, the result of the best Tuscan tradition. This wine ages for 18 months in Slavonian oak barrels and for another 6 months in bottle. In the glass, the bright ruby red stands out, with its dark red shades according to its ageing in the barrel. The bouquet is intense and besides plums, thanks to the Prugnolo Gentile, there can be fragrance of cherries, violets and earthy notes.

In the mouth it is a well-balanced and wide wine, the aroma is lasting with smells of wood that remind its ageing in barrels. It is a fresh wine, with a strong tannic note, sweetened by the ageing in wood containers, and with a long-lasting end. The tannic structure of this wine really makes for a great match to tomato-based sauces and fat meats. The particular notes of this wine make it pleasant also with savory cheeses.

WINEMAKER NOTES:

As the mention “Riserva” suggests, the difference between the two types of Vino Nobile di Montepulciano concerns their aging period. The Vino Nobile basic version must have an aging period of at least 2 years, of which at least 1 in wooden barrels. Vino Nobile Riserva, on the other hand, must have an aging period of at least 3 years, of which 6 months of refinement in the bottle. So, the reserve one has a greater structure and alcohol content.

This Brunello is characterized by a bright ruby red color. The nose opens with elegant hints of cherries and plums, enriched with pleasant nuances of herbs. “TRECENTO” TORCIANO CAVE COLLECTION TUSCANY

DESCRIPTION:

Trecento is a wine we crafted in celebration of the 300th anniversary of Tenuta Torciano Winery.

Trecento translates to “winds” and is also the number 300 in Italian, so a name strategically tied to a significant milestone for us and representing one of the strong natural elements at our Tuscan wine estate.

Barrel aging the best selection of our Sangiovese and Cabernet in oak for 24 months, followed by one year of bottle aging has resulted in a wine of impressive character and graceful complexity, showcasing the best of our grapes. This refined, beautifully balanced wine has the fruit, structure, and depth to continue to develop and evolve for many years with careful cellaring. Elegant, fruity and with balsamic notes, fine and velvety tannins. It could be preferable when paired with structured foods rich in sauces that give succulence to the dishes. Perfect combinations with Trecento can therefore be dishes based on game such as stews, braised, wild boar, or duck based, but also roast veal and pork. Sensational also the combinations with first courses rich in seasonings such as pici with wild boar ragù, or pappardelle. We recommend to uncork the bottle and decant it at least one hour before use.

WINEMAKER NOTES:

Tradition, passion, instinct and love are the principles that have distinguished the management of the Tenuta Torciano by the Giachi Family, who in 2020 celebrated 300 years of activity, during which the art of making wine has been continuously handed down from father to son. This bottle represents the excellence of Tenuta Torciano through three centuries.

“TERRESTRE” TORCIANO CAVE COLLECTION, TUSCANY

DESCRIPTION:

Terrestre is the champion of our Super Tuscans. This awardwinning wine is globally revered and has been celebrated at Vinitaly in Verona. This red blend has a musky smell with sweet notes of dried leaves, characteristic of the Tuscan woods, and a scent of vanilla is derived from the aging process. Pairs beautifully with pasta, red meat sauces, and roast meat dishes.

WINEMAKER NOTES:

This wine is produced with a blend of Sangiovese, Cabernet and a small percentual of other local red grapes, all cultivated in Tuscany around San Gimignano area. But what about “Super Tuscans”? Super Tuscans are well-structured powerful reds, food with a strong meaty flavour profile is an ideal match. In the 1970s, Tuscan wine producers began to experiment with foreign grape varietals, such as Cabernet Sauvignon and Syrah. By combining these with the Sangiovese grape, they created Super Tuscan wines, an unofficial category of Tuscan wines that is not recognized within the Italian wine classification system, making up some of Italy’s most famous wines.

Located in central Italy along the Tyrrhenian coast, Tuscany is home to some of the world’s most notable wine regions. The Cavaliere is a renowned, elegant blend of our finest Sangiovese and Merlot grapes. After vinification, the wine is aged in barriques for almost 3 years. Beautifully dry and smooth, it is a deep, ruby red color and features a rounded, complete bouquet. The sip is balanced and reveals dense and well-behaved tannins. The finish is persistent. Excellent to pair with richly flavored first courses, game, duck, mature or spicy cheeses.

WINEMAKER NOTES:

Merlot - Sangiovese wines are made from two grape varieties extensively grown and widely appreciated in Italy. Sangiovese is internationally renowned for its well-balanced structure and savory flavors.

Sangiovese almost always plays the dominant role in the blend, with Merlot used to soften the wine’s texture and make it more approachable in its youth. Merlot also adds fruitiness and juiciness to the blend, complementing Sangiovese’s more savory and herbaceous qualities.

“BALDASSARRE” TENUTA TORCIANO ESTATE, TOSCANA

DESCRIPTION:

Our Baldassarre is an elegant, smooth and very round blend of Sangiovese, Cabernet and Merlot grapes, grown in clay-based soil. Fermentation takes place in stainless steel tanks at a controlled temperature. Subsequently the wine ages for about 3 years in barriques and for a further 6 months in bottle.

Its ruby red color tends to garnet with age. Wooden and herbaceous notes, even a hint of leather scent, alongside dark chocolate. Pairs beautifully with steak, roasted meats, pasta dishes and cheese.

WINEMAKER NOTES:

Cabernet – Merlot – Sangiovese is the composition of many of the so-called “Super Tuscan” wines of central Italy. The blend can be made to any number of variations, but the combination typically draws on the power and structure of Cabernet Sauvignon, the sweet, juicy fruit flavors of Merlot and the rustic, sour-cherry tang of Sangiovese. Sangiovese is the defining grape in the blend and gives the wine a distinctively Italian accent. The variety’s black-cherry flavors and forest-floor aromas offer a fresh interpretation of the traditional Cabernet – Merlot blend.

One of Italy’s most famous wine regions. DOCG regulations require Brunello vineyards to be planted on hills with good sun exposure, at altitudes not surpassing 600 meters (1968 ft).

BRUNELLO DI MONTALCINO TORCIANO, TOSCANA

DESCRIPTION:

Obtained by using Sangiovese grapes, the selection and harvest are carried out by hand, and the grapes are immediately transported to our cellar where they start the fermentation. The wine is then aged for two years in large Slavonia oak barrels. Brunello has bright garnet color and an intense perfume, persistent and ethereal. One can recognize scents of aromatic wood, berries, light vanilla and jam. To the taste the wine has an elegant harmonious body, it is dry with a lengthy aromatic persistence. Because of its characteristics, Brunello can be aged for a long time, improving as the years go by (from 10 to around 30 years, depending on the vintage). This wine goes wonderfully with game and lamb dishes, but also red meats cooked on the grill and aged cheeses.

WINEMAKER NOTES:

Brunello di Montalcino is made from the Sangiovese Grosso grape, a variety traditionally referred to as Brunello in this area. The regulations governing wine production dictate the date of the wine being released onto the market, which is January 1st of the fifth year after harvesting. During this long period, the wine must spend at least two years in wooden barrels and age at least four months in the bottle.

ROSSO DI MONTALCINO TORCIANO, TOSCANA

DESCRIPTION:

Fresh and elegant, this wine is produced exclusively with 100% Sangiovese Grosso grapes. Each vintage can be sold after September 1st of the year after harvest.

The alcoholic fermentation, followed by a brief maceration, allows us to extract relatively modest quantities of tannins, enhancing softness and allowing for the fresh scents that are typical of younger wines.

The nose reveals aromas of red fruit such as cherry and spicy notes. The sip is warm and harmonious, with velvety tannins and discreet persistence. It goes well with dishes of medium structure, such as pasta with meat sauce, mushrooms or truffles, composite risottos; main courses of pork or veal with sauce.

WINEMAKER NOTES:

Montalcino, a land dedicated to quality, does not stop at Brunello. Perhaps for this reason, for the first time in Italy, producers from this area were allowed to obtain from the same vineyards, two denomination of origin wines: Brunello, destined to age for a long time, and Rosso di Montalcino, a younger wine that combines with its superb structure, attributes of vivacity and freshness. Starting with the 1984 vintage, it obtained DOC status

It is produced with Sangiovese grapes and Canaiolo grapes, harvested by hand. Fermentation takes place in stainless steel tanks, subsequently the wine is aged for 6 months in Slavonian oak barrels. The nose opens with hints of red fruits, enriched by pleasant spicy notes. On the palate it is young, full-bodied and pleasantly fruity. It pairs exceptionally well with grilled or roasted red meat, chicken, and pasta dishes served with meat-based sauces.

WINEMAKER NOTES:

Rosso di Montepulciano is a DOC for red wines based on the Sangiovese grape located in Tuscany, central Italy. It is the junior appellation of Vino Nobile di Montepulciano DOCG. Generally, this wine (like its neighbor Rosso di Montalcino and its relation to Brunello di Montalcino) is an easier-drinking, fresher and fruitier version of the senior wine, though it is shorter lived.

One of the main differences between Vino Rosso and Vino Nobile di Montepulciano lies in the ageing: the red is aged for a shorter time, about six months, while the Vino Nobile requires at least 2 years of aging with 6 months in the bottle, and 3 years for the Reserve.

DESCRIPTION:

This wine takes its name from the homonymous grape of which it is composed and is produced with the best selections of Sangiovese from the company’s vines.

Vinified with long maceration on the skins, it is refined and aged for over a year. The nose has pleasant hints of violets and berries, a slight spiciness of the wood. This is a fullbodied wine, with enveloping and mellow tannins. Fine and elegant aftertaste. Sangiovese is an absolute knock out wine with anything Italian; pizza and pasta of all sorts, tomatobased sauces, all the rustic garden herbs, mushroom risotto, braised lamb, veal ragu, cured sausages and hard cheeses.

WINEMAKER NOTES:

Sangiovese is grown from Romagna to Campania and is the most widespread grape variety in Tuscany. DESCRIPTION:

It is a deep and structured red wine that comes from a careful enological research aimed at enhancing the potential of a new grape variety for the Italian scene, malbech, a grape of French origin that has found a perfect terroir in the volcanic Maremma in southern Tuscany.

Intense and deep ruby red. The nose perceives notes of ripe black fruit well integrated with spicy and vanilla hints. On the palate it is balanced and enveloping, with a good persistence. The aftertaste is characterized by hints of blueberry that fade on notes of coffee and bitter chocolate It goes well with rich meat-based dishes. Excellent with roasts and braised meats and we suggest to try it with long aged cheeses.

WINEMAKER NOTES:

Malbech is a grape of French origin, very common in the Bordeaux area and arrived in Italy in the mid-19th century. Today Malbech is cultivated in Veneto, Sardinia, Abruzzo, Friuli-Venezia Giulia, Tuscany, Sicily, Puglia, Umbria. The wines obtained from 100% Malbech grapes are very versatile, easy to drink, quite soft and graceful in structure and aromas, suitable for pairing appetizers and white and red meats.

Part of our signature “Monogram” collection, this intense ruby red colored wine is made from selected Petit Verdot grapes. It has a spicy, full, dry, tannic flavor. It serves very well with noble poultry, game dishes, Taggiasca olives and cheeses. Suitable for long aging, so would be a great addition to your cellar or as a gift to wine collectors!

WINEMAKER NOTES:

Petit Verdot is a grape originating from the Médoc area in France, where it is used to produce Bordeaux, and is also widespread in California. In Italy, the Petit Verdot can express itself in a truly excellent way in Tuscany, in the Livorno Maremma and in the Grosseto Maremma. Petit Verdot is a very demanding grape for maturation and often its best potential is expressed far from the places of origin. Petit Verdot ripens late, and offers excellent results in areas characterized by a warm climate, sunny, constantly ventilated and with very little rainfall during the vegetative phase. When vinified alone, Petit Verdot gives wines an intense ruby red color, with floral aromas and a spicy note, with tannins in evidence even if soft, suitable for long aging

DESCRIPTION:

This classic fruity white wine is made with Vernaccia grapes grown exclusively in the San Gimignano region of Tuscany. Its delicate yellow hue tends to golden with age, and carries a characteristically beautiful, slightly bitter aftertaste.

A fine, penetrating, fruity bouquet and features aromatic hints of banana. This incredibly fresh choice can be enjoyed on its own or with lighter fare, such as appetizers and grilled fish. It also pairs beautifully with white meats, crêpes, and souffles.

WINEMAKER NOTES:

Vernaccia di San Gimignano stands out among the top wines of Tuscany, being the region’s only white wine to have reached the lofty heights of DOCG status. Long before its DOCG promotion (in 1993) its renown was well established and it was among the very first wines officially classified when Italy introduced the DOC system in 1966.

Vernaccia-based wine from San Gimignano has a long history, and since the Renaissance period has been considered one of Italy’s oldest and most noble wines. Its fame has no doubt been strongly connected to its region of origin: San Gimignano – an ancient Tuscan town famed for its medieval towers.

“VITTORIA PEACOCK COLLECTION” TORCIANO VERMENTINO TOSCANA

DESCRIPTION:

Vermentino grapes are meticulously selected. This wine has a pale-yellow color and a nose of exotic yellow pulpy fruits. Its fresh flavor gives it an excellent balance and persistence in the mouth. The typical expressions of Vermentino, delicate, fresh and fragrant, make it particularly suitable when it’s paired with seafood dishes. Its growing area, close to the coast, makes Vermentino a natural choice to pair first courses, shellfish and fish-based courses. We suggest it with fresh cheeses and white meats.

Southern Tuscany

The main provinces where Vermentino di Toscana is grown are those of Grosseto, Livorno, Lucca and Massa Carrara; in the rest of the region, however, cultivation is authorized.

WINEMAKER NOTES:

Vermentino grape expresses a beautifully refined, light citrus and tree fruit personality. Vermentino is a thinskinned white wine grape. It thrives in warmer climate regions, due to its tendency to ripen quite late in the growing season. Vermentino di Toscana shines in its straw yellow color mottled with light greenish and golden reflections. PINOT GRIGIO TORCIANO

DESCRIPTION:

Obtained from Pinot Grigio grapes, it has a straw yellow color with greenish reflections. On the nose it offers a wide aromatic range that recalls acacia flowers and white pulp fruit. In the mouth it shows a medium-bodied white, fresh, intense and harmonious, with a great drink. This wine can be served chilled as an aperitif, but it also goes perfectly with appetizers and light fish-based main courses.

WINEMAKER NOTES:

From the north of Italy in particular, Pinot Grigio is a lean and crisp dry white with relatively high acidity that adds a spritzy sensation, complemented by aromas of lemon, lime, green apple and blossoms.

This “everyday” Grigio Italian style is achieved firstly by harvesting the grapes relatively early. This is done to retain as much fresh acidity as possible.

To retain freshness, fermentation and storage typically take place in stainless steel tanks. Northeastern Italy (Veneto, Friuli-Venezia Giulia and Trentino-Alto Adige) is the Pinot Grigio producing heartland. The refreshing style of this wine enjoyed great success in various countries, particularly in the US (where it is fondly nicknamed “Greej”).

Prosecco Sparkling Wine

PROSECCO TORCIANO

Wine Description:

Prosecco is obtained from Glera grapes, harvested and selected only by hand. It has a straw yellow color with a fine and persistent perlage. The nose opens floral notes of acacia that mix with fruity sensations of apricot and honey. On the palate it is elegant and harmonious, with a pleasant flavor and freshness. The sip is soft and dry Excellent aperitif, it goes well with appetizers, first courses, fish and white meats. Also suitable as a cocktail ingredient.

Grapes:

The grapes used for making Prosecco DOC are primarily of the Glera variety, a type native to North East Italy and renowned since Roman times. The Glera is a white grape variety, it has nut-brown vines and produces long, generous bunches of golden yellow grapes.

Glera may be combined with up to 15% Verdiso, Bianchetta Trevigiana, Perera, Glera lunga, Chardonnay, Pinot Bianco, Pinot Grigio and Pinot nero grapes, vinified off the skins. The Prosecco DOC area of production is in North East Italy, in territories falling within 4 provinces of Friuli Venezia Giulia (Gorizia, Pordenone, Trieste and Udine) and 5 provinces of Veneto (Belluno, Padua, Treviso, Venice, Vicenza).

ROSÈ TORCIANO TOSCANA DESCRIPTION:

The Tuscan red grapes are vinified in rosè by soft pressing to obtain this rosé wine. The nose is characterized by fresh fruity and floral aromas reminiscent of pink grapefruit, strawberry and dog rose.

On the palate it is balanced, soft and fragrant. When tasted, it conquers with its fruity character, enlivened by flavor and freshness that invite you to taste it again and make it particularly pleasant to sip.

Very fresh and flowing, it proves to be full-bodied and persistent. The long finish highlights fruity and mineral notes. This rosé is perfect as an aperitif but also goes well with cold cuts and croutons appetizers, lightly seasoned first courses and risottos, soups, white meats and all fishbased dishes. Excellent in combination with cheese and pizza.

WINEMAKER NOTES:

A rosé wine is not a blend of red and white wine! It is wine made specially, with close attention given at every moment in its development, to the color, aromas and taste. Because of the precision that it demands, of all the three colors, rosé wine is probably the most complicated to produce.

Only the skins of black grapes contain color pigments; the pulp, which gives the juice, is colorless. As a result, the color of a rosé wine will depend on how long the skins and the juice are in contact, and at what temperature. This is known as the maceration process. The choice of varietals and the terroir also affect the color and personality of a rosé wine.

“LUCIANA COLLECTION”

VIN SANTO TORCIANO TOSCANA

DESCRIPTION:

Dark amber yellow color in the glass, with deep golden hues. The olfactory bouquet is complex and articulated, composed of hints that recall honey, vanilla, dried fruit and caramel. The taste is sweet, soft, velvety and dense, well balanced between sugars and freshness, and with excellent persistence. Perfect in combination with dry pastries, such as pies or biscuits, and especially with the famous Tuscan cantucci. We also recommend tasting it with almonds, dark chocolate and dried figs. These flavors, in fact, recall the complex and enveloping fragrances that Vin Santo gives to the palate.

WINEMAKER NOTES:

Vin Santo di Montepulciano is made from a minimum 70% Malvasia Bianca and Trebbiano Toscano grapes, individually or blended together. All the fruit must be grown in the specified prime area, which is the entire municipality of Montepulciano except for the lower part of Chiana Valley. Regulations governing vinification and maturation are prescriptive. The grapes are carefully selected and left to dry on straw mats in temperature-controlled rooms. Vin Santo di Montepulciano must be aged for at least three years.
