CHICKEN MACHBOOS Good for 4 guests Ingredients for French Onion Soup • 700 grams White Onions • 4 pcs Cloves • 5 grams Pepper Corn • 4 leaves Bay Leaves • 1.5 L Chicken Stock Ingredients for Machboos • 400 grams Basmati rice • 1 L French Onion Soup • 700 grams “Label Rouge” Chicken. • 15 grams Machboos Spices • 4tbsp olive oil Procedure for the French Onion Soup 1. Stir-fry the onions until dark brown. 2. Add all other ingredient of the soup & simmer for five hours then let it rest off the heat for another hour.

Final procedure 1. Quarter the raw chicken then sear its skin on all sides until golden brown. 2. Remove the chicken from the oven proof pot and in the same pot stir-fry the raw rice for few minutes with Olive oil and machboos spices. 3. Place the seared chicken on top of the rice, cover all the rice and chicken with the French onion soup. 4. Cover the pot with a lid then slide the dish in the oven at 160C and bake until all the liquid has been absorbed. 5. Once the rice is cooked, place on the serving plate and arrange with the cooked chicken. 6. Garnish creatively.
