by Kathy Wolfe October is National Corn Month, and Tidbits is taking the opportunity to inform our readers of the facts about the largest crop grown in the United States. • By the time Christopher Columbus landed in the New World, the ancient Mayans had been cultivating corn for centuries. Corn was domesticated from a wild grass called teosinte. Prior to Columbus’ voyages, there was no corn in Europe. The explorer traded with the inhabitants of the West Indies and brought the grain back to Europe. • Many countries refer to corn as “maize,” which translates “sacred mother” or “giver of life.” • Because corn is domesticated, you won’t find it growing in the wild. • The typical corn plant can reach a height of 10 feet (3 m), although certain strains can grow to 39 feet (12 m). The ear or cob of corn is part of the plant’s flower. Each individual kernel is a seed. One pound of corn (0.45 kg) will contain about 1,300 kernels. At the end of each ear is a cluster of silks, each about 7 inches (18 cm) long. There is one piece of silk for each kernel. At the end of each hairlike silk is a carpel, the female reproductive organ of the plant that holds the ovules. If the carpel is fertilized by a pollen grain, it will develop into a kernel.

CORN (continued): • Each ear has about 800 kernels in 16 rows. There are always an even number of rows on each ear. • Corn is measured in bushels, but how much is a bushel? One bushel is equal to 8 gallons, contains up to 90,000 kernels, depending on moisture content, and weighs 56 pounds (25.4 kg). • Corn is grown on every continent in the world except Antarctica. The U.S. produces more than 40% of the world’s supply of corn. America’s corn production is more than twice that of any other crop grown. More than half of that amount is grown in Iowa, Minnesota, Nebraska, and Illinois, with the remainder coming from Indiana, Ohio, Wisconsin South Dakota, Michigan, Missouri, Kansas, and Kentucky. All of these states comprise what is referred to as the “Corn Belt.” With about 90 million acres planted in the U.S. every year on approximately 400,000 farms, that makes for about 14 billion bushels of corn! • In 1880, about 62 million acres of corn were planted in the U.S. In 1900, that number was 95 million. The most acres of corn planted in one year in the U.S. was in 1917, when 111 million acres were cultivated. However, the yield has significantly changed. In 1906, an acre yielded 31.7 bushels per acre. Today, that number is about 155! Farmers are growing five times more corn today than they did in the 1930s, yet on 20% less land! An acre of corn contains about 30,000 plants. • When corn starch is processed with enzymes or acid to create a dextrose solution, the result is corn syrup. High fructose corn syrup is even further processed in order to increase sweetness. Because it is cheaper to produce than ordinary sugar, high fructose corn syrup is used in many processed foods and soft drinks. One bushel of corn can sweeten 400 cans of soda pop.

Walking the Dog

DEAR PAW’S CORNER: I’m trying to train my 6-month-old Lab, “Pepper,” to be well-behaved on our walks around the neighborhood, especially when she meets other dogs. She’s very excited and tugs at her leash and barks; many of the other dogs do the same, but they’re not always friendly -- there’s a lot of growling sometimes. How can I keep the peace among the neighborhood dogs? -- Nervous Dad in Delaware DEAR DAD: You don’t have much control over how other owners train their dogs -other than making sure they keep their dogs on a leash unless they’re in a designated free-run area like a fenced-in dog park -- but you can control Pepper’s experience and her behavior.

Before walks and during the day, reinforce her basic behavioral training, particularly teaching her to sit and stay on command. This is helpful when meeting other dogs; keeping Pepper from leaping around excitedly can go a long way toward keeping other dogs calm as well. When walking Pepper, pick a route where fewer dogs will pass, or with dogs who are calmer and not aggressive. Start by walking Pepper across the street from approaching dogs; as you draw closer, stop and command Pepper to sit and stay while the other dog and owner pass. CORN (continued): • About 20% of all the calories consumed in the world come from corn. However, nearly 75% of all corn grown in the U.S. isn’t consumed by humans, but is either fed to livestock or used for ethanol production. The process of making fuel ethanol takes between 40 and 50 hours. It involves breaking down the corn’s starch into simple sugars, adding ammonia, and combining the sugars with yeast. It is then processed at high temperatures and cooled in fermenters. One bushel of corn yields about 2 ½ gallons (9.5 liters) of ethanol fuel. • The major types of corn include dent, flint, sweet, flour, and popcorn. Dent corn is another name for field corn, which is grown to feed livestock and poultry. It’s also used for ethanol production and other industrial uses. Flint corn is also known as Indian corn, or calico corn, as the kernels have a wide range of colors from white to dark red. Sweet corn contains more natural sugar than any other type, 10% compared to field corn at 4%. Sweet corn is primarily eaten on the cob, but is canned and frozen as well. Because nearly half of sweet corn’s sugar is converted to starch just 24 hours after it is picked, it tastes best when it’s freshly picked. After just six hours at room temperature, up to 40% of its sweetness is lost. Flour corn has a soft, starchfilled kernel that is easy to grind, making it optimum for use in baked goods. Popcorn has a very hard exterior shell surrounding a soft starchy center. When it is heated, the moisture inside the kernel turns to steam, creating pressure for the kernel to explode and turn inside out.

Q: I lived in Canada when I was a youngster. During the 1950s I watched the “Davy Crockett” series on television. I talked my dad into buying me a Davy Crockett lunchbox in 1956. It was made by the Kruger Manufacturing Company LTD. It’s found in hundreds of household products, including laundry detergent, aspirin, antibiotics, marshmallows, chewing gum, and shoe polish. It’s even in your toothpaste and cosmetics! In the industrial world, corn is a component of rust preventatives, glue, paint, ink, film, plastics, and even fireworks. • How do you know when sweet corn is ready to pick? It will be ready for harvest about 20 days after the silk first begins to appear. When it’s ready, the silk turns brown, while the husks are still green. The corn needs to be in the “milk” stage. When a kernel is punctured, there will be a milky liquid inside. A clear liquid means it’s not ready, while no liquid means you’ve waited too long. • The Gleaner Harvester Combine Corporation introduced the first mechanical corn harvester in 1930 and revolutionized the harvesting of corn. Picking by hand before the machines were available, a farmer might gather about 100 bushels of corn during a nine-hour day. Today’s combines can harvest that same 100 bushels in less than seven minutes, about 900 bushels per hour. • Some folks love corn so much they enter contests for eating it. Dave “Coondog” O’Karma set a record for eating 5.1 pounds (2.3 kg) of corn in seven minutes, while Ed “Cookie” Jarvis holds the world record of eating 33 ½ ears of corn in 12 minutes. DeAngelo deMoulin has a record of eating one ear in 11.61 seconds.

UNUSUAL ANIMALS: ARMADILLOS This week, Tidbits is bringing you up to date on the facts about that little armored animal, the armadillo. • The word armadillo translates from the Spanish for “little armored one.” This animal is most closely related to sloths and anteaters, and is native to North and South America. The leathery armored shell is made up of plates of bone with a covering of horn that overlap, creating a shield over the shoulders and hips. More armor covers the top of the head, the upper part of the limbs, and the tail. Only the armadillo’s underside has no armor, covered with only fur and soft skin. • The armadillo is born with very soft shells, similar to human fingernails. As they mature, the scales, known as “scutes,” become harder as bone is deposited under the skin. • The nine-banded armadillo is the most common one found in North America, and is named such for the nine breaks in its armor, which allow it to flex its stiff hide. Because the tough armored plates are so inflexible, most species cannot roll into a ball as a means of defense. Only the three-banded armadillo can roll into a complete armored ball that can actually be rolled along the ground, and can’t be broken open. • Armadillo shells are so strong, those shooting at the animals have been injured when their bullets ricocheted off the shell. A Marietta, Texas man shot three bullets at an armadillo, one of which ricocheted and hit him in the jaw. They have two interesting methods of crossing water. They are able to actually walk underwater on the bottom for up to six minutes, the amount of time they are able to hold their breath. They can also float on the surface by swallowing air to inflate their stomach and intestines to twice the normal size, increasing their buoyancy. • There are 20 species of armadillos, with the country of Paraguay home to the most varieties, with 11. The average armadillo will reach a length of about 30 inches (75 cm), including the tail. One species, the giant armadillo grows to about 59 inches (150 cm) and will weigh up to 119 lbs. (54 kg). The smallest, the pink fairy armadillo, is just 6 inches (15 cm) long. • Although they have an excellent sense of smell, armadillos are nearly deaf and blind. Because of their poor eyesight, they frequently wander out onto roads and are killed by vehicles. This has earned them the nickname “hillbilly speed bumps.” • Oddly enough, armadillos can contract leprosy, and so they are often used in the study of the disease. Eating them has been connected to leprosy in humans. • A lute instrument of the Andes Mountains is frequently fashioned from the shell of the armadillo. • Because an armadillo’s claws are designed for digging and they do so most of their waking hours, they can be very destructive. Their burrowing under a concrete foundation, sidewalk, or porch can cause it to crack. In addition to causing serious damage to landscaping, their burrows also attract other damage-causing animals.

DICTIONARY DAY Don’t miss the chance to celebrate Dictionary Day on October 16, named as such in honor of Noah Webster’s birthday. • Noah Webster wasn’t just a lexicographer (one who compiles, writes, or edits dictionaries), he was also a political writer, author, lawyer, schoolteacher, and one of the founders of Amherst College. Webster was a descendant of the first governor of the Plymouth Colony, William Bradford, who came to the New World aboard the Mayflower. • After graduating from Yale University and passing the bar exam in 1781, Webster had difficulty finding a job in the legal field. His passion for education led him to found a private school instead. It bothered Webster that all the colonies’ textbooks came from England, and he set out to develop his own. In 1783 he wrote A Grammatical Institute of the English Language. Because of its blue cover, the book was known as “The Blue-Backed Speller,” which became the most popular American book of its time, and taught five generations of children how to spell and read. The royalties of a half cent per copy enabled Webster to spend time compiling a dictionary. Over 25 million copies of the book were sold during his lifetime, and 100 million in the book’s first 100 years. • The first American English dictionary, A Compendious Dictionary of the English Language, containing about 37,000 words, was published in 1806, in which Webster permanently altered the old English spellings. He was the one who changed “colour” to “color,” “centre” to “center,” and “musick” to “music.” Webster tried changing “tongue” to “tung,” but it was unpopular. He spent most of the remainder of his life in debt. • In 1828, at age 70, Webster published The American Dictionary of the English Language, containing definitions of more than 65,000 words, 12,000 of which had never appeared in any previous dictionary. As a lifelong activist for copyright protection, (he became known as the “father of copyright”), he registered the dictionary immediately. His new dictionary continued to reform spelling away from the old English so that it matched pronunciation. • Webster learned 28 different languages, including Old English, German, Greek, Latin, Italian, Spanish, French, Dutch, Aramaic, and Sanskrit, to evaluate the origins of words. In 1843, George and Charles Merriam acquired the rights to Webster’s dictionary from his estate. • Webster published the first American English dictionary, but the first English dictionary was written in 1604, and is attributed to Samuel Johnson. • The Oxford English Dictionary, first released in 1928, is considered one of the most reliable. J.R.R. Tolkien, author of the famous Lord of the Rings series of books, landed his first job right after World War I, as an assistant to the editor, Tolkien was tasked with working on words beginning with the letter “W.” Tolkien later spoke of this period, saying he “learned more in those two years than in any other equal period of my life.” • The first edition of the Oxford Dictionary took 70 years to compile. There are about 600,000 words in the current edition. The word “run” has more definitions than any other word.

Skin Rash Associated With Many Conditions DEAR DR. ROACH: I am a 64-year-old male in good health. I had an outbreak of blisterlike sores on my upper torso, in my mouth and near my eyes. I had an almost-incapacitating feeling and was able to consume only liquids and shakes because of the mouth blisters. The blisters took their course in seven to 10 days and scabbed over. These episodes reoccurred three separate times, returning two to three weeks apart. Just prior to the outbreaks, I started taking Aleve because of sore knees while I was walking. On the third outbreak, I consulted my dermatologist, and he observed a reddened throat without any noticeable soreness on my part, so he swabbed the throat, and it showed strep throat. The sore throat was treated, and I believe I was also given steroids. The physician’s diagnosis was erythema multiforme. The doctor thought the EM was related to the strep throat, and he wasn’t sure if the Aleve played a role. I am interested in your thoughts on the possible causes of the EM and the chances of it returning. I have been blister-free for a year now, but fear that the EM will return or that there is some underlying autoimmune issue. -- T.C. ANSWER: Erythema multiforme is a skin rash with a characteristic target appearance. They tend to appear on the backs of hands to the elbows, or on the legs from the top of the feet to the knees, and then appear closer toward the body. They stay for a few days and then leave after two weeks or so. EM has been associated with many medical conditions, including autoimmune diseases; however, 90 percent of EM is related to infection. The most common infection is herpes simplex (the cause of cold sores as well as genital herpes). Strep throat is not a common cause of EM. However, the naproxen (Aleve) is a well-known cause. I would advise against using Aleve or related medications, and reassure you that the likelihood of a hidden autoimmune disease is low. *** DEAR DR. ROACH: I am in good general health. My problem is not being able to drink enough water to quench my thirst, especially in warm weather. If I drink more than 25 ounces per day, my stomach becomes upset. In warm weather, I have to balance my fluid intake between dehydration and an upset stomach. I am not diabetic. Is there a solution? -- E.K. ANSWER: A sensation of feeling bloated after fluid intake is not uncommon among athletes during competitions. I have heard many possible treatments. These include sipping fluids slowly over time; however, some people seem to find relief by gulping fluids down in large amounts, the theory being that distending the stomach stimulates it to contract and send the fluid into the intestines to be absorbed. Having some food with the fluid helps many people, especially starchy foods (like cereals or crackers) to absorb lots of water. Tepid water may be more easily absorbed than ice-cold water. If none of these works, you might try adding a little fruit juice and very little salt to your water, which should reduce the stomach upset. *** Dr. Roach regrets that he is unable to answer individual letters, but will incorporate them in the column whenever possible. The Artful Dodger This has been a season of losses. Muhammad Ali, Gordie Howe, Arnold Palmer ... icons, idols and champions measured on a mythical scale that can never be tipped. But for every great player, there has been an equally masterful play-caller broadcasting their every move. They are the ones who paint the vivid, indelible pictures of their exploits into our minds and weave each significant moment into the fabric of time. They are the men and women who make calling singular moments of a game into their life’s calling. When Bobby Thompson hit one out of the Polo Grounds to send the New York Giants to the postseason, it wasn’t a mere home run, it was “the shot heard ‘round the world” that saw “The Giants win the pennant! The Giants win the pennant! The Giants win the pennant!” When George Foreman jacked up the champ, the moment was described as “Down Goes Frazier! Down goes Frazier!” Would anyone remember Bobby Thompson, a lifetime .270 hitter, if Russ Hodges hadn’t made that call? Would Foreman be the wrecking machine Ali used to shock the world with his “rope-a-dope” if Cosell didn’t set the scene? Would you remember who won the 1980 gold medal in hockey had Al Michaels not been there to ask if you believed in miracles? In California, residents and sports fans have a peculiar sadness to deal with, for they have lost not one, but two broadcasting legends on the very same day -- Vin Scully and Dick Enberg -- yet both are still alive. Enberg not only did wonderful play-by-play for the Padres, he was the happy yet dignified play caller, the one who exclaimed “Oh my!” for every great shot at Wimbledon for decades. For fans in Los Angeles -- and really, for all baseball fans -- the loss of Scully is particularly painful. Nobody called a game better than Scully, and it’s unlikely anyone ever will again. For anyone under the age of 67, his was the only voice they heard broadcasting Dodger games. His genuine warmth and ability to make every game seem special had to be heard to be believed. Maybe that’s why his final sign off was enough to bring tears to adults everywhere: “You know friends, so many people have wished me congratulations on a 67-year career in baseball, and they wished me a wonderful retirement with my family, and now, all I can do is tell you what I wish for you. May God give you ... For every storm, a rainbow, For every tear, a smile, For every care, a promise, And a blessing in each trial. For every problem life sends, A faithful friend to share, For every sigh, a sweet song, And an answer for each prayer. “You and I have been friends for a long time, but I know in my heart I’ve always needed you more than you’ve ever needed me. And I’ll miss our time together more than I can say. But you know what? There will be a new day and, eventually, a new year. And when the upcoming winter gives way to spring, rest assured, once again, it will be time for Dodger baseball. “So this is Vin Scully, wishing you a very pleasant good afternoon -- wherever you may be.” Goodbye Vin, you were the true artful Dodger. Oktoberfest Feast This quick recipe is much easier than a trip to Germany, and just as tasty. 12 ounce kielbasa, sliced 1 1/3 cup sauerkraut 1 small red onion, cut into wedges 1 apple, cored and sliced 2 teaspoons caraway seeds 1/4 cup beer Rye toast Spicy mustard 1. Toss together kielbasa, sauerkraut, red onion, apple and caraway seeds. Divide among 4 large foil sheets; pour beer over each. 2. Crimp edges to seal packets; grill 15 minutes over medium heat. Should --- You Redeem Old Savings Bonds? Do you have any old savings bonds tucked away, ones bought years ago to help a grandchild with college expenses? Or maybe you want to take care of all your credit-card debt by cashing in bonds. Redeeming savings bonds isn’t as easy as it used to be. Savings bonds have been paperless for many years, and you can’t just buy or redeem them anywhere now. There are some banks where you can cash in your bonds, but the preferred method now is to do it online. As a first step, go online to check the value of each bond. Try SavingsBonds.com and use the calculator. Click the yellow box (“Get your bond values here”) and select the details of your bond from the drop-down menu. It’s not necessary to include the bond’s serial number if your other details (series, face value, date issued) are correct. You’ll get a color-coded message at the top. Red, for example, means that your bond isn’t earning interest and should be cashed in. Blue means the bond is less than five years old, and you’ll forfeit three months in interest if you redeem it too early. Before you can get a printout list of your bonds, you’ll need to enter your email address. Look at the In the News section for specific information about how your interest can affect your taxes. When you cash in bonds, you’ll get a Form 1099-INT showing the interest you earned. You might have to pay taxes on it. If you have paper bonds that you don’t want to redeem yet, you can have them switched to digital. Your best bet: Ask your bank if it redeems savings bonds, and let it help you. Tuition Payment Errors Add Up to Big Bucks

Hundreds of millions of dollars spent on Post-9/11 G.I. Bill payments is being lost due to mishandling and errors, according to the Department of Veterans Affairs Office of the Inspector General. The VAOIG recently evaluated the Veterans Benefits Administration to see if payments were being made correctly. In one year alone, the VBA was responsible for $5.2 billion in tuition and fee payments for 796,000 students. The VAOIG picked 225 students at 50 schools, totaling $1.7 million in payments, to double-check. One problem it found is that the VBA must rely on enrollment information provided by the schools, which sometimes submitted incorrect information. Is it a regular college or a community college? Tuition varies. How many times does the school let a student attempt to pass a class? One small item (until you add it all up) is the cost of books. VBA can’t tell whether it’s paying for supported or unsupported services, supplies and books, and generally it just pays the bill without asking. VAOIG’s suggestions were to reach out to the schools to ask for complete certifications, revise the handbook used by those who cut the checks and develop a way to check for satisfactory completion of classes (or at least remaining academically eligible), enrollment status, duplicate information on students and repeated classes. The bottom line: Of the $5.2 billion in tuition and fee payments for one year, the VAOIG calculated that $247 million was lost in improper payments, and more than $205 million was lost in missed recoupments (getting the money back in case of overpayment). Doing the math, the VAOIG concluded that, if things don’t change, the VBA could lose $1.2 billion in improper payments and $1 billion in missed recoupments over the next five years.
