LETTER FROM THE EDITOR

GREETINGS!

s I write this letter, I am vacationing with my family in Utah. The breathtaking views of the red mountains surrounding us have led to many hours of reflection on the last year and a deep appreciation for the opportunity to develop this magazine and fulfill a dream. In July of 2012, my dearest friend Chrystal and I made the decision to start publishing this magazine, despite our lives being already very busy and full of commitments to other important people. At the time, I was 37 weeks pregnant with my second daughter and Chrystal was settling into a new home with her thenfiancé. While it may not have been the ideal time to take on such a big venture, we both felt that this magazine was something we needed to do, and neither of us has a single regret. Now, as we get ready to publish our fourth issue of The Winepress, it is difficult to look back and not feel proud that we made the leap into publishing an entire magazine dedicated to our passion for wine and the Paso Robles area of California’s Central Coast. It is so exciting to meet new people as we continue to explore the Paso Robles wine region and share our experiences with readers. When I am out interviewing for my next story, exploring a new winery a reader has shared as their favorite or CHRYSTAL TRENADO researching for an upcoming Publisher issue, it is amazing to have the opportunity to meet and get to know the people in the Paso Robles community on a different level. The opportunity to work with my best friend on a dayto-day basis on a project we both love is a blessing and we are grateful. We are so lucky we get to say this is work! It has been very personally fulfilling to be able to develop an idea into a reality – we are pouring our passion (pun intended!) into this magazine as we do everything in our lives. As I juggle co-parenting two spirited little girls

with my husband Jeremy, Chrystal has taken the next step towards her future by marrying her soul mate Arqui. Our lives are full, but we are living our dreams. I am very excited about this autumn issue of the magazine, as it highlights a region in Paso that is still a wellkept secret, San Miguel. The San Miguel area is host to some fantastic wineries and, as it is a little more remote and set apart from the rest of the Paso wine region, Central Coast wine lovers are still discovering this little-known gem. Just as in the more well-known vineyards of Paso Robles, the winemakers and winery owners in San Miguel have heart and passion for the wines they are producing. We hope the articles we have put forth in this issue will inspire you to take a journey to explore all that San Miguel has to offer soon. In addition to uncovering some secrets of San Miguel, I am excited to introduce hash tags to our magazine. Our social media savvy readers can find us on Instagram (TheWinepressMagazine) and use our hash tags to share your experiences in the Paso Robles wine region. In this, our fourth issue of the magazine, we are continuing to grow The Winepress as we do our families. We have big plans for the future, including several fun contests with incredible prizes. At this time of change, reflection and giving thanks, fall is here and temperatures are beginning to drop in Paso Robles. Harvest season is in full force, and for many of the vineyards in Paso Robles, harvest began early this year. By the end of August, grapes were being plucked from the vines and carted off to wineries for crush. It is an exciting time in Paso Robles as the wineries begin to see their next vintage take shape. As for us, we have only begun to explore all that The Winepress has in its future. Thank you, dear readers, for helping us make this dream project a reality. Take care and drink more wine! he Pleasant Valley Wine Trail, a little-known gem in the Paso Robles area, is a “must-see” when visiting the region. My favorite time of year driving through the Pleasant Valley Wine Trail is spring. As far as one can see, being out amongst the rolling green hills, it feels like an entirely different country. In addition to the gorgeous scenery, the exceptional value and quality of wine available on the PVWT will not disappoint.

An extension of Paso Robles’s east side, the Pleasant Valley Wine Trail is in good company in the area with other notable wineries as neighbors; J Lohr, Eberle, Pretty-Smith and Record Family are just a few. There is a rich local history in this area, including Mission San Miguel, which is open to explore and provides stimulation for the brain and the taste buds alike. The PVWT is filled with many great sightseeing options worthy of investing time exploring. Several

wineries on the trail offer accommodations as well, thus making the decision to slow down and spend a few days in the area an easy one. *Please be forewarned that GPS is often unreliable out on the Pleasant Valley Wine Trail, so be sure to bring a map with you (the one in this magazine is excellent!) to help navigate the roads. GRAVEYARD VINEYARDS You Might Think You Died and Went to Heaven

A

fter a day of hopping from one winery to another, make your way over to Graveyard Winery for a peaceful and relaxing break in your schedule. With a serene setting, delicious wines and knowledgeable staff, it is sure to be a crowd pleaser. While the name may sound ominous, the wines are quite the opposite – bright and cheerful, in fact. The name Graveyard Winery pays respect to the active graveyard that is on site. Before making your way up the hill to the winery, you will find the graveyard. As you crest the top of the hill and begin to make your way down to the tasting room, you will be hit with an awe-inspiring view of the lake and the rolling hills. The tasting room sits just beside the lake; it is truly a beautiful sight. There is also a unique covered area that makes for a perfect lakeside wedding site. Upon sliding open the grand barn doors to the tasting room, guests are greeted by the friendly Graveyard Winery staff. Most days the tasting room

is open, visitors will see a gentleman called “Cab Frank” behind the bar. (You will know of his presence on a given day with a roadster parked out front proudly showcasing the license plate “CABFRANK.”) No matter who is walking you through your tasting at this lovely winery, it will be pleasurable. The wines offered at Graveyard are all tasty, from whites to reds and even a surprising dessert wine that was created for chocolate lovers. TACKITT FAMILY VINEYARDS

Supporting a Cause We Can Drink To

T

ackitt Family Vineyards started long before the official opening of the vineyard. When Leon Tackitt’s grandfather migrated from Germany to California, he brought Gewurztraminer vines and planted them to create a modest family vineyard. However, those grapes were solely used for home winemaking and shared amongst the family. It wouldn’t be until Leon was close to retirement from the U.S. Navy that he and his wife Cindy considered expanding the family vineyard to produce wine for the public. While the wines they produce are wonderful, what makes this winery really special is the commitment to EOD (Explosive Ordinance Disposal) Warrior Foundation. With the creation of a label, EOD Cellars, the Tackitt family is dedicated to raising funds and awareness for this worthy non-profit organization. As a now-retired Lieutenant in the U.S. Navy Explosive Ordinance Disposal community, this is a cause that is close to Leon’s heart. In fact, the net proceeds of each bottle of Tackitt Family Vineyards’ EOD Cellars wine go directly to the foundation. In the cozy tasting room on the vineyard property, guests are warmly greeted by both the staff and the vineyard dogs Gus and Harley. Tastings are experienced amongst the aging barrels of wine, which only adds to the ambience. While a seat at the bar may not always be open, the tasting experience at Tackitt is welcoming and certainly worthy of the stop. #EODcellars #TackittFamilyVineyards

LOCATELLI Good Family Wines

S

tepping into Locatelli’s tasting room, visitors are warmly greeted by Raynette Gregory, co-proprietor, and instantly feel at home. As a mother of five who has been in business with her husband, brother and cousin, if nothing else, Raynette knows family. Being owner and having intimately worked all aspects of Locatelli Vineyard and Winery for the last 17 years, clearly she knows wine too. Under the tutelage of such a knowledgeable and gracious tour guide, guests will leave the property with new insight on the goings-on of a working vineyard, Mission San Miguel history, and of course, wine. Locatelli came to existence when Raynette and Louis Gregory decided to buy 100 acres of land in San Miguel and transformed the property from cattle ranch to vineyards. They bought the property in 1996 but it wasn’t until 2001 that they left their life in Visalia behind and moved the family permanently to San Miguel. After the move, the Gregory family opened the winery. In 2008, Raynette’s brother and cousin joined the team and the four divided the many responsibilities of working and running a vineyard and winery.

Ushering in a New Dream for Retirement

hen contemplating retirement, rarely would an undertaking as daunting as developing a vineyard be considered. However, that is just what Bill and Teresa Hinrichs did when they purchased the vineyard now known as Ranchita Canyon upon their retirement. Never ones to be intimidated by a challenge, the Hinrichs took on this calling with a passion for excellence and drive to succeed. With ten varieties of grapes grown on the estate, it is not surprising that they have an extensive wine list and a very generous tasting list. The new Ranchita Canyon tasting room boasts great views of the vineyards out a large picture window behind the tasting room bar. From the ambiance to their understanding of the winemaking process, the only thing more extensive than the Ranchita Canyon wine list is the knowledge of the tasting room staff. There is no question that guests will have a better grasp of wine and new insight on the area after a visit to this tasting room.

Another unique experience one can have at Ranchita is an olive oil tasting. The extra virgin olive oil here is made from olive trees planted on the vineyards -- one press and delicious. (Of note is that the production of olive oil at Ranchita may be diminished this year, as this is a small production and some years are not as bountiful as others. VILLA SAN-JULIETTE Dream-makers chase their own dream to Paso Robles By Hayley Thomas

V

illa San-Juliette co-owner Nigel Lythgoe is making the rounds at the winery’s first-ever Locavore Dinner, held late last August at the ornate San Miguel winery. As the sun sets on the pristine, 168acre vineyard, a vibrant mix of wine club members, foodies and area media are chowing down on a rigorously-paired multi-course feast — everything sourced within 50 miles of the 14,000-square-foot Tuscan-style estate. When I ask Lythgoe, now somewhat of a “local” personality himself, to tell me something I don’t know about his partnership with co-owner and fellow Hollywood T.V. producer Ken Warwick, he gives me an offthe-cuff answer in his charismatic English accent. “The reason why we work so well together is that we’re so different. We’re good at completely different sides of the business, but together, it works,” says Lythgoe. “Sometimes he ignores me, and sometimes I ignore him. We know how each other thinks.” When I suggest that this complementary, tit-for-tat companionship sounds something akin to a marriage, Lythgoe busts up laughing. The truth is, there’s a lot of history between the two men: They grew up together in 24

Liverpool before becoming entertainment industry moguls. (For those who haven’t yet heard the news, Lythgoe is co-creator and executive producer of “So You Think You Can Dance” and Warwick is executive producer of “American Idol.”) Since bottling their first estate-grown vintage wine in 2008, Villa San-Juliette Winery has upped the buzz-factor for San Miguel’s burgeoning Pleasant Valley Wine Trail. It is par for the course, then, that the pair would borrow a few tips from their respective television shows when it came to choosing a winemaker. After winning in a blind taste test against a dozen other local cabernet sauvignons last spring, winemaker Matt Ortman was picked to lead Villa San-Juliette’s winemaking team. Ortman has worked as a winemaker throughout the Central Coast, as well as in northern California, Oregon and Italy. A secondgeneration winemaker, he spent a decade as general manager and winemaker at his own Paso Robles winery, Ortman Family Vineyards. Ortman completed an important piece to the puzzle: As much as Lythgoe and Warwick love the limelight, it’s evident that their real love is for producing quality Bordeaux and Rhone-style wines. All one has to do is watch the pair’s 2006 reality television show, “Corkscrewed,” which details Lythgoe and Warwick’s topsy-turvy journey into winery ownership, to appreciate just how far they’ve chased that dream. And if there is anything the executive producers of “American Idol” and “So You Think You Can Dance” know, it is that dreams, however far-fetched, can indeed come true.

t is easy to lose yourself in Mission San Miguel. ince 2008, this restaurant, bar and music venue has attracted nationally-acclaimed rock bands, Nashville royalty and a bevy of stand-up comedy, wrestling acts and DJs to its ample stage.

According to entertainment director Trisha Butcher, the establishment, family-owned and operated by Marty and Sheila Elisarraras, has brought a jolt of star power to North County. “It’s a great spot, catering to an eclectic crowd,” said Butcher. “We get many larger entertainers out of Nashville who, at first, don’t know where San Miguel is — but then they have an amazing experience, and can’t wait to come back.” The Ranch recently expanded to encompass its neighbor, the historic Elkhorn Bar (known as the second oldest bar in the state of California), which will include about 200 additional seats for dining. “We have re-sealed the hardwood floors, are adding mirrors along the walls and cleaning it up without taking away the original historical value,” Butcher said of the newly-acquired space. Boasting one of the largest dance floors on the Central Coast, locals and tourists alike are encouraged to enjoy The Ranch’s full dinner menu, order a few drinks, ride the mechanical bull and, of course, shake a tail feather. “There’s plenty of room to be free to enjoy a really great indoor concert experience. here are few guarantees in this world. However, if you are planning on dining at San Miguel’s legendary 10th Street Basque Café, there are at least three things you can count on: You will be presented with a meal for the ages that Chef Dallas Holt has so lovingly prepared, you will get to know your tablemates (who started off as strangers) and you will leave feeling fuller — and perhaps more fulfilled — than when you first walked through the door.

For more than a decade, the eatery has attracted tourists and locals alike with its cozy, down-home atmosphere, communal-style seating and robust Basque fare. Author of the cookbook, “Never Cook Bacon Naked,” Holt is a hands-on and jovial host who enjoys personally greeting restaurant guests in his kitchen whites, and always with a genuine smile.

The 10th Street Basque Café seats a limited crowd, so reservations are a must. As the wine and conversation heat up, so do the braised lamb, sausage paella and spiced potatoes. Needless to say, there are no menus at Holt’s dinner table; only course after course of flavorful food accompanied by more than a few bottles of local wine.

The clatter of cast iron pans adds an authenticity to the experience that leaves little room for white tablecloths and fancy garnishes. That said, who needs formal dining pomp and circumstance when you’ve got a Central Coast bounty to choose from and a passionate chef preparing each dish? Each year as the autumn weather is cooling down in San Luis Obispo county, thousands flock to the area to enjoy Sunset SAVOR the Central Coast, a four-day wine and food event hosted by Sunset Magazine. This annual gathering has grown in size, popularity, value and variety of offerings with each passing year and 2013 was no exception.

One of the most exciting aspects of Sunset SAVOR the Central Coast is the choice of activities offered – from wine tastings and chef demonstrations and samples to adventure tours and a sunset cocktail party at Hearst Castle. Unlike other festivals, where it can feel like a parade of wineries with the occasional break of food to nibble on, this event offers a well-rounded wine and food festival experience. Beyond the many booths of wineries usually present at an event such as this, there are cooking demonstrations, presentations, live music and even rides available on the Pacific Coast Railroad (a twomile track that circles the property at Santa Margarita Ranch). Guests can sample some of the finest wines the Central Coast has to offer, enjoy a taste of delicious (often locally-grown) food and take a break in the barn to watch a cooking demonstration by one of the many guest celebrity chefs*. A surprising highlight of Sunset SAVOR the Central Coast is the beer garden, which showcases the rising craft beer movement with local breweries on hand with the best of their beer. The beer garden was aptly named as it did look like a garden, fresh flower arrangements on the tables, lush green grass and hedges surrounding to make it appear like you are in a separate garden. More than 10,000 people attended Sunset SAVOR the Central Coast last year and it would be hard

to imagine that number was not surpassed greatly this year. With numbers like those, it may seem difficult to imagine, but the event did not feel crowded because of the expansive property and wellplanned layout. There were plenty of opportunities to chat one-onone with the folks pouring the wine or serving the food. All in all, this is a high-quality event with many great offerings for all who attend. RECIPES of Wine Country Petrale Sole with Pinot Noir Butter Sauce Pinot Noir Butter Sauce 1 large shallot, very finely chopped 1 cup Central Coast Pinot Noir 1 teaspoon ouzo, Pernod, or anisette ¼ teaspoon Pinot Noir salt or fine sea salt 6 tablespoons salted butter (preferably cultured), softened

1½ teaspoons coarsely chopped fresh flat-leaf parsley ½ cup all-purpose flour 1 teaspoon ground fennel (optional) ½ teaspoon fine sea salt ¼ teaspoon mild or hot chili powder 12 ounces petrale, Dover, or rex sole or flounder fillets, patted dry 2 tablespoons butter

To make the sauce, in a small saucepan, simmer the shallot, wine, ouzo, and salt until almost all of the wine has evaporated but the mixture is still slightly juicy, 20 to 25 minutes. Let cool for 10 minutes. In a small food processor, combine the wine mixture, butter, and parsley. Process until smooth. If desired, refrigerate for up to 12 hours; return to room temperature before proceeding. Blend the flour, fennel, salt, and chili powder on a plate. In a large, nonstick skillet, warm the butter over medium-high heat. When the butter foam has subsided and is about to turn brown, dredge the sole fillets thoroughly in the flour mixture, shaking off the excess. Slide the fillets carefully into the pan and sauté for 1½ to 2 minutes on each side, turning gently once, until golden brown. Immediately transfer to warm plates and top with a few spoonfuls of the softened, deep purple-red butter sauce. Serve at once. Pair with: Windward Vineyards Pinot Noir “Barrel Select Gold”

1 ½ pounds mixed wild mushrooms, such as chanterelles, lobster, oyster, and/or shitake 2 tablespoons olive oil 1 tablespoon butter 2 shallots, finely chopped Fine sea salt and freshly ground black pepper

4 cloves garlic, minced or pushed through a press

3 tablespoons finely chopped fresh flat-leaf parsley 6 (8-inch) flour tortillas

3 ounces fresh or 1 ounce dried cepes/porcini/ boletus mushrooms (if dried, reconstituted; optional; see above)

¾ cup (6 ounces) salted or unsalted butter, melted

6 cups (about 6 ounces mixed greens

3 ounces plump and juicy sun-dried tomatoes, cut into small pieces

10 fresh chives, snipped into 2-inch lengths

In a bowl, combine the ricotta, shallot, chives, half the parsley, ½ teaspoon salt, and plenty of pepper. Use a fork to whisk until evenly blended.

Preheat the oven to 350°F. Use a 2-inch cookie cutter to cut 8 or 9 rounds from each of the tortillas; you should have about 48 rounds. In a baking dish, drench the tortilla rounds in the melted butter, turning to be sure all sides are evenly coated. Press each circle down firmly into the cups of mini muffin pans (or small tartlet pans). Bake for 8 to 10 minutes, until just starting to turn golden. Set aside in their pans to cool briefly. Leave the oven on (or you may prepare the shells ahead of time and warm the tartlets just before serving time).

To make the dressing, combine the vinegar, mustard, ½ teaspoon salt, plenty of pepper, and the olive oil in a large bowl. Whisk until smooth and set aside.

Spoon 1 mounded teaspoon of the ricotta mixture into each tartlet shell and top with a pinch of the sun-dried tomatoes. Return to the oven for a few minutes just to warm through. Transfer to a platter, scatter the remaining half of the parsley over all, and serve immediately. Note: Sheep’s milk ricotta can be hard to find; if it’s not available, whisk about ½ cup finely grated Manchego into 8 ounces of whole-milk ricotta Pair with: Tablas Creek “Patelin Blanc”

Remove any fibrous stems from the wild mushrooms, brush them clean and slice any larger mushrooms; quarter the smaller varieties. Heat the olive oil and butter in a large skillet over medium-high heat. As soon as the foam has subsided, add the wild mushrooms and shallots, season generously with salt and pepper, and cook, stirring frequently, until the mushrooms are dry, brown, and slightly crisped, 6 to 8 minutes. Add the garlic and cepes, remove from the heat and toss for 1 minute more. Add the greens, chives, parsley, and dill to the bowl with the dressing; toss to combine. When searching for a privately rented property, some important factors to consider include: • Is a kitchen included, and if so, how is it equipped? • What is the rental cancellation policy? • Is there a per-person fee to stay? • Are there security deposits and cleaning fees? • Is there a minimum number of nights required for your stay? • Are pets welcome? If so, what are additional pet rent costs?

When a location of interest is found, take note of any posted reviews from past customers of that particular rental and take note of how often the property listing is updated by the hosts. While pictures are nice, they can sometimes be deceiving or outdated, so buyer beware. Current contact information and recent activity are good signs that the owner is likely to be responsive in the event of an issue or concern while renting the property. By seeking out privately rented homes and other unique accommodations, travelers may discover a new joy in the off-beaten path beyond standard hotels. With insurance and references available, the guesswork has been taken out of vacation rentals by owners and a whole new world of lodging possibilities is available! I was out wine tasting the other weekend and witnessed some disturbing behavior by fellow wine tasting visitors.

Dear Annoyed Wine Country Visitor, You are not alone! There appears to be a growing trend in which people think we want to know what they really think in a brutally honest and uncensored manner. The truth is -- we do not!

In general, the group was on the loud side but they were having fun so that was easy to overlook. However, at one point a member of the boisterous group was asked if she was enjoying her wine. Her response was a bit shocking: “No, I don’t like this at all – it smells like sh*t!” Now I can appreciate the fact that not every wine will suit every person, but is it really okay to be so forthcoming with an opinion? Am I the only one offended by how blunt people have become lately with their opinions? Sincerely, Annoyed Wine Country Visitor

Of course no one is saying you should keep drinking a wine you don’t enjoy or buy a bottle of wine from a winery you do not love. If you are not happy with a wine you are tasting, politely pour it out and move on to the next one. If you did not enjoy any of the wines you sampled, thank the staff (or in many cases, the owner/winemaker) for the tasting, pay your tasting fee (if applicable) and go on your merry way. It is perfectly understandable to not like a wine and it’s even acceptable to politely say you don’t care for a wine, but there is no need to be rude about your thoughts. Wine tasting should be a fun and enjoyable experience for all parties -- the tasters, the pourers, the winemakers and others. While I certainly don’t think you have to completely keep your opinions locked away while wine tasting, I do think there is something to the old adage, “It is not what you say, but how you say it.” Happy wine country exploring!
