WATKINS GLEN, NY – The Seneca Lake Wine Trail is happy to announce that tickets for all 2010 events, plus complete event packages, and the Polar Passport, are now on sale, just in time for the holiday season! With all of its popular weekend wine and food pairing weekend events back in 2010, including the Polar Passport, the coming year will be one of the most exciting ever for fans of the Seneca Lake Wine Trail. Paul Thomas, executive director of the wine trail explains, “We really wanted to get all our event tickets available for customers to purchase as holiday gifts since they make a great gift for either seasoned fans of wine, or folks that are new to the experience of wine tasting. Also, we have put together several packages revolving around each of our events, consisting of accommodations, transportation, event tickets and other features which are perfect for people that prefer to just buy their entire weekend experience at one time.” With 35 member wineries making up the Seneca Lake Wine Trail membership, all weekend wine and food pairing events will be three days long in 2010 at all participating wineries. The Largest Ship Ever: Oasis of the Seas

In order to be able to give my true opinion, I am delighted to say that I was invited onboard this ship for a pre-inaugural cruise along with travel agents, press, and media before actual paying passengers arrived. It was a wonderful treat, and I was thrilled to be a part of this event.

Merry Christmas and welcome to Ellicottville! For most of us, our favorite time of year is upon us. By now, your shopping is done, your cards and packages are sent, and gifts are opened and being enjoyed. In previous articles, I explored small and medium ship cruising. I saved the large ships for last, as I knew there would be so much to write about. You may have seen television clips about Royal Caribbean’s Oasis of the Seas which arrived to the Port of Fort Lauderdale in November. She is by far the largest cruise ship ever built, weighing in at over 220,000 gross tons (60% larger that the previous largest ship built - also by Royal Caribbean.) While watching the progress of this gargantuan ship, I wondered if this ship was just too big, was it really necessary, what the impact would be on ports of call, and would it really appeal to new and previous passengers. This ship literally changed the skyline of this port starting with the terminal in Port Everglades. $75 million was spent to accommodate this ship as no less than 5,000 passengers will be embarking and disembarking at the same time, so arrivals and departures are handled much like an airport. In less than 15 minutes, I was checked in and in my cabin, just as promised. There was not a corner I turned or area I entered that I did not say “wow” as every conceivable

activity was available on this ship … and then some. Here are some facts about this ship - and be prepared to be amazed: • Oasis is hardly a ship - it is a hotel with a ship built around it. • It is so big that if it stood on end it would be taller than the Chrysler Building in New York. • It can carry over 5,000 passengers at one time. • In the center of the ship is the Royal Promenade, lined with shops, pubs, bars, cafes, and a pizzeria. There is a car parked in the middle - a racy two-seater, a replica of a 1936 Auburn. There is also the Rising Tide bar - it slowly ascends through three decks with a 32-person capacity. While it is ascending, others can enjoy a water fountain display and light show underneath it. • There are 7 neighborhoods onboard, including Central Park and the Boardwalk. Each of these has balconies that overlook these areas versus a traditional ocean balcony. The beautiful Central Park Gardens are amazing they contain 93 different plant varieties, lilies, ferns, ginger, trees, and vines. Vintages Wine Bar is an exclusive little mews and there are outdoor cafes and sidewalk tables that make you feel like you are in the center on New York. The Boardwalk neighborhood features a Coney Island-style esplanade with an ice cream parlor, Johnny Rockets hamburger joint, a seafood shack, and a working carousel featuring carved

painted animals and a steam organ’s tinny chords. • An Aqua Theatre - an amphitheatre where the stage is a pool - almost 181 feet deep! During the day, it is used as a scuba lesson pool and water show at night featuring Olympic and world champion divers. • Entertainment at night jazz, dancing, karaoke, disco, comedy, a production of Hairspray, an outstanding ice show, piano bars, Latin dancing, and an Elton John tribute that will leave you astounded, to name some of the choices. • Shops on board - fun and upscale besides the usual logo and jewelry. • Oasis also offers a “facial recognition program.” You can simply insert your room key into a kiosk and a computer will recognize your face and bring up all photos with you in it. No more looking through hundreds of photos or missing the ones you look great in. As far as how this impacts the ports of call - this is a ship for cruise veterans. If you have been to the ports and have cruised before, this ship is the destination. No need to go into the over crowded ports - just stay onboard and enjoy the activates. Go zip-lining, surfing, rock climbing, ice skating, boxing, use the spa, use the gym, or one of the 21 places to cool off - pools, Jacuzzis, water parks, “beach pools,” or the solitude of the solarium (off limits to kiddies.) So, my opinion? Here it is … Do we need this colossal ship? Probably not. Is it too big? Most likely. But that really does not matter. This ship is so amazing it just must be experienced. It is a bit like Las Vegas - maybe a bit over the top, but way too much fun! Speaking of too much fun enjoy our wonderful town and have a very Merry Christmas! This Week’s Recipe: The Cuccidati (Fig Cookies) NGREDIENTS: 1 cup brown sugar 2 cups water 1 ring mission figs ½ tsp ground cloves ½ tsp cinnamon Zest of one orange ½ chopped walnuts (very small) Juice from one orange or 1-2 Tbsp of concentrate from can, not watered down. Egg wash

METHOD: Remove stems from figs and place in a pot with brown sugar to water. Add a pinch of ground cloves and let mixture cook down until tender. Mixture will become thick and figs will plump up. Once done, remove from pot and allow to cool. Once cooled, add to blender or food processor with cloves and cinnamon along with the zest of the orange and juice. If going with concentrate, add 1-2 Tbsp. Blend until lightly chunky. Once blended, remove and fold in chopped nuts. Allow mixture to rest overnight in the fridge. For Dough: In a food processor or mixing bowl, combine flour, sugar, baking powder, and salt and pulse to mix. Add margarine and pulse until it looks like fine crumbs. In a small bowl, whisk together 3 eggs and vanilla. While the motor is running, pour the liquid in slowly until just combined and a dough is formed. Form Basic plain white dough: the dough into a disk and chill 30 minutes. On a lightly floured 3 cups all purpose flour surface, roll out dough to 1/8 inch thick. Cut out long three inch in 1 cup granulated sugar width strips of dough and set aside. Using a pastry brush, paint the 1 ½ sticks unsalted margarine edges of the rolled out dough with egg wash. Place 1 tsp or more 1 Tbsp pure vanilla of fig filling on strips of dough spaced 1-2 inches apart. You want 3 tsp baking powder to have a crust on each cookie and have an overlapping of dough Pinch of salt to seal and press with a fork. With a second layer of dough, top off 3 eggs first layer and press gently on and around the mixture so you can see where to cut. Cut dough to form cookies and seal edges with Glaze: (The consistency should fork to create an authentic design. Preheat oven to 350 degrees F. be somewhat runny and Brush cookies with the egg wash.
