The Sunderland Maple Syrup Festival is one of our township’s premiere events celebrating the ageold Canadian tradition of maple syrup. As you can see by the schedule of events, there is again much to enjoy at this year’s event. Do what you can to take it all in. While you’re enjoying the many events don’t forget to visit with the vast array of vendors, exhibitors, and farms again taking part in this year’s festival. After a winter like the one we’ve had it’s great to have spring ushered in by this fantastic festival!
I want to also thank the many volunteers and organizers for this year’s event. Organizing an event of this size is no easy task and they all deserve our thanks and appreciation. The organizers have again outdone themselves by putting on a big city event in the small rural township of Brock. These hardworking individuals continue to put on a great show for our residents and visitors every year and I can’t thank them enough.

HOT MAPLE BACON
You know when you’re eating pancakes with bacon and some of the maple syrup flows onto the meat?And you know how great that tastes?
Well, this year, we offer a recipe for “Hot Maple Bacon” - the perfect sweet/salty breakfast treat with a kick!
INGREDIENTS:
1 lb. thick-sliced bacon
1/2 cup maple syrup (the darker, the better)
1/4 cup dark brown sugar
1/2 teaspoon cayenne pepper ( or more, depending on how much kick you want!)
DIRECTIONS
1. Preheat oven to 350°F/180°C.
2. Line a pan with shallow sides with foil and coat with non-stick spray
3. Mix maple syrup, brown sugar and cayenne in a small bowl that is wide enough to take the bacon.
4. Dip the bacon slices in the mixture and hold up so that excess can drop off.
5.Arrange the bacon slices on the pan so they’re not crowded.
6. Bake for 25 minutes (less time if you use thin bacon).
7.The bacon should be crisp and brown.
8. Place the slices on a rack and leave for several minutes so they can harden up
NOTE: Refrigerate any leftovers.Adjust oven timing to achieve the crispness you prefer.

Welcome to Soper Creek Wildlife Rescue, Durham Region’s ONLY Wildlife Rehabilitation Hospital; we are licensed by the Ministry of Natural Resources & Forestry and Canadian Wildlife Services to rescue and rehabilitate sick, injured, abandoned, and orphaned wildlife. Our goal is to release our patients back into the wild.

2025 marks the 28th year that Harlaine Maple Products has welcomed visitors to its sugar shack as part of the Sunderland Maple Syrup Festival.Hundredsofpeoplehavevisitedtheir farm on Concession 1 south of Sunderland to seehowanold-fashionedproductismadeusing thelatestinmoderntechnology
Douglas and Gloria Harder purchased the farmin1954fromVinceBeaton(sonsJackand Jim) who had previously boiled sap at this maple bush, since 1933. Douglas started boilingathisparentsmaplebushwhenhewas in his early teens, and continued on after purchasing the property. At age 87, Douglas passedawayin2004.
Paul and his Dad tapped around 500 to 600 taps in the 1970’s, all with buckets. In 1984, theyputinthefirstpipelinewithapproximately 150taps.Thenextyear,thewholebushwason pipeline. They always had a used evaporator, approximately,4×8,andboiledinthebushwith nohydrountil1991,whenanewbuildingwas built near the house. Now there is water and hydro for late night boiling. The building includesanevaporationroom,astore,akitchen and a small bottling room. Once this building was erected, we were able to expand and now haveapproximately2,500taps.
In2011,wefinallypurchasedanewLapierre Force 5 evaporator It’s all stainless steel and very efficient.We still fire it with wood, and it can process approximately 250 gallons of sap anhour.Onagoodyear,withmanycoldnights and warm sunny days, we can make approximately 1700 liters of maple syrup. We alsomakemaplebutterandmaplesugarcandy,
for sale along with the popular maple syrup. During the festival years, we have seen over 4,000peoplecomeouttothebushtowatchthe syrup being made. We have had people involved for the last 18 years of the festival, hostingbushtours,demonstratingmaplesyrup production,boilingsapinalargekettleasthe pioneers did, and showing how the native peopleboiledsapusingahollowedoutlogand hotstonesfromthefire.
Harlaine Maple Products store is open duringthefestival,pluswehaveaboothonthe mainstreetofSunderland.In2012,wehosted the first tapping for the Kawartha Haliburton Maple Syrup Association. We are also members of the Ontario Maple Syrup ProducersAssociation.
