5 Summer Recipes

Looking forward to chow down on some delicious summer food, but want to stay heal recipes! Some of these I have personally tested out and can truthfully say that they a

1. Detox Smoothies – Don’t shy away from the word detox. Everyone loves ice-cold, sweet smoothies during the summer, and detox smoothies can be just as delicious as those sugary things people usually get. Whole Living Magazine has several easy detox smoothie recipes available online to try, but I personally recommend trying a mango mint smoothie. Ingredients: 1 cup frozen mango chunks ½ cup freshly squeezed orange juice ½ cup carrot juice ¼ cup fresh mint leaves Instructions: Simply blend all ingredients in a blender and enjoy! This makes one glass.

2.Spicy Spinach and Tomato Quinoa – Keen what? Yes, it’s pronounced KEEN-WAH, like something a ninja would say, and this recipe from myrecipes.com is delicious! Plus quinoa is a protein and fiber rich, nutrient-packed super food. My roommate actually made this one for me. I have to eat this stuff more often. Ingredients: •1 whole garlic head •1 tablespoon olive oil •1 tablespoon finely chopped shallots •1/4 teaspoon crushed red pepper •1/2 cup uncooked quinoa, rinsed and drained •1 tablespoon dry white wine •1 cup fat-free, less-sodium chicken broth •1/2 cup baby spinach leaves • 1/3 cup chopped seeded tomato •1 tablespoon shaved fresh Parmesan cheese •1/4 teaspoon salt

You Have to Try!

lthy and in-shape for beach season? Then you HAVE to try out some of these are delicious. Others are still on my “wish list”.

BY Instructions: Preheat oven to 350°. Remove papery skin from garlic head and separate into cloves. Wrap half of the head in foil; set aside the rest. Bake at 350° for 1 hour and then cool for 10 minutes. Separate cloves and squeeze to extract garlic pulp. Discard skins. Then heat oil in a saucepan over medium heat. Add shallots and red pepper to pan and cook for 1 minute. Add quinoa to pan, cook 2 minutes, stirring constantly. Add wine, cook until liquid is absorbed, stirring constantly. Add broth and bring to a boil. Cover, reduce heat, and simmer 15 minutes or until liquid is absorbed. Remove from heat; stir in garlic pulp, spinach, tomato, cheese and salt. This recipe is for four servings and is a little tricky to downsize, so just make the whole batch and share with friends! Also, if you’re not so into spicy foods, go light on the red pepper flakes.

Instructions: Mash avocado in a bowl with garlic, lime juice and cumin. Add salt and pepper to taste. Lightly toast tortillas (my roommates and I find it easiest to do in a non-stick pan over the stove). Then put the avocado mixture, kale, black beans and sunflower seeds on the tortillas and enjoy! Note: There are actually exact amounts of kale, black beans and sunflower seeds in the original recipe online, but no one really bothers to measure out toppings when their making tacos, right? So just put on as much or as little as you want of each. This recipe makes two tacos.

3. Avocado and Black Bean Tacos – Aa another recipe to try from Whole Living Magazine, these vegetarian/vegan tacos are light, yet satisfying. They bring a whole new meaning to “taco night.” Ingredients: •1/2 avocado •1/2 garlic clove, minced •1 Tbsp lime juice • Dash of cumin • Salt and pepper, to taste • Two corn tortillas • Thinly sliced kale • Black beans • Sunflower seeds

4. Tilapia and mango salsa – This is one I have yet to try, but doesn’t this just scream summer? There are multiple recipes online, so you might want to do some research to find one that has the ingredients you like the most. This recipe from allrecipes.com, however, sounds pretty tasty and got rave reviews! This recipe does take some time, but if you want a special summer night’s dinner I think it will be well worth the effort!

Instructions: 1.For the fish, whisk together the extra-virgin olive oil, lemon juice, parsley, garlic, basil, and salt and pepper to taste in a bowl and pour into a resealable plastic bag. Add the tilapia fillets, coat with the marinade, squeeze out excess air, and seal the bag. 5.Greek Yogurt with Warm Black and Blueberry Sauce – This is the other one I have yet to taste, but this was specifically on a list of summer recipes on myrecipes.com and it caught my eye. I don’t know about you, but I’m a huge fan of blueberry pie. This is probably a healthier substitute. Ingredients: •2/3 cup frozen blueberries •2/3 cup frozen blackberries •1/2 cup water •1/4 cup sugar •2 tablespoons fresh lemon juice •1 tablespoon butter •2 cups plain 2% reduced-fat Greek yogurt Instructions: In a pan, combine blueberries, blackberries, water, sugar and lemon juice and bring mixture to a boil. Reduce heat to mediumlow and gently boil for 10 minutes or until sauce thickens. Stir in butter. Evenly spoon yogurt into four bowls or glasses, stir in sauce and serve. Note: To make it even healthier, perhaps it will still taste good without the butter? Enjoy!


What does the Coming Summer Mean for International Students?

International students are starting to collect their minds as well as luggage at the end of this semester at UIUC. Most of them long to go back to their home country, especially those who stayed in the U.S over winter break. However, long flights may stop some of them from this desire.

SUMMER BUCKET LIST

I have a list of random activities that I want to check off my to-do list every summer. To push myself in the direction of actually doing them, I write them down in a bucket list. However, after two failed attempts, this is my third year of trying to fill up that bucket. This year I’ve taken my list to a different spot — one that won’t be forgotten in a Word document on my computer. Instead of filling documents with boring Calibri font letters, I’ve pinned all of these activities onto Pinterest. Here are a few things I plan to do before the summer of 2013 has kicked the bucket.

•Learn to play piano: I’ve almost got “Mary had a Little Lamb” down. •Make a summer scrapbook Basically just another excuse to take more pictures. •Have the time of my life •Finish an entire coloring book: I find this to be more of an accomplishment of practicing patience. Coloring inside the lines is a lot of work.

Summer Staples •Have a water gun fight/water balloon fight •Catch a firefly: You could catch more than one too. They’re tricky little bugs. •Go camping (in my back yard) •Sidewalk chalk mural: I tell myself every year I’ll make a huge one in a parking lot, but this year will be the year I actually do it. I’m thinking flowers and poorly-drawn stick figures. •Snow cones •Pull an all-nighter: You could make this a night on the town, whether driving around talking or hitting every other 24-hour fast food place. •Drive-in movie •Go stargazing •Swim at midnight: Floating in the pool in the moonlight sounds like the perfect place for a nap.

Despite the frigid temperatures (snow in late April is just ridiculous), it is almost summer. School is going to be out before you know it and legions of students will begrudgingly head home and leave their precious Joe’s, Kam’s, Brother’s, Red Lion and more behind. Many will work summer jobs in order to save up money for booze – I mean books, for the entire summer. More likely than not, these will be minimum wage jobs, so the pay isn’t going to be making anyone rich. That means students with a significant other aren’t going to be giving a ton of expensive gifts or going out on pricy dates. If students in this situation want to save money to get enough “books” for the entire academic year, they are going to have to get creative with their dates and gift ideas. Here is a list of five date ideas that are both perfectly romantic and cost-effective. Some of them might seem a little strange at first, but don’t bash it until you have tried it. 1. Picnic in the park This is a staple of cheap date ideas for the summer months. All it takes is a basket full of food (which hopefully you can snag from your parents’ groceries), a blanket and a method of transportation to get to the park. The great thing is parks are free so anyone can spend as much time as they want there. 2. Outdoor activity (Walking, hiking, biking, boating, etc.) A free, fun way to enjoy the summer with

a loved one is to simply spend time outdoors together. A nice walk around the block at dusk, a leisurely bike ride through the countryside or a paddle boat trip across a lake are all great (usually free) ways to have fun as a couple. Come on, if you’ve seen a romantic comedy, you know this stuff is gold. 3. Yard sales/ Farmers’ market If you have never been to a farmers’ market or a yard sale, you are missing out. A farmers’ market is full of fresh, usually cheap food. Perhaps you could make a day of it and buy some food from the market and take it home to make a romantic dinner? If you are turning your nose up at the idea of a yard sale, you better think again. There are tons of yard sales going on every weekend filled with cool, cheap stuff. This equals lots of presents. Plus, you get to haggle. It’s a win-win situation. 4. Make your own meal and rent a movie You know the drill: Cheap meal (FARMERS MARKET), rent a movie and snuggle on the couch. A way to make it more interesting is to set up the TV outside – much more romantic. 5. Stargaze Yes, this is perhaps the cheesiest thing on the list but think about it – simply drive to the country, park and sit on the hood of the car and look up. The view is great and it is a nice opportunity to chat with your significant other. Plus, it is FREE.

Summer Music F With summer fast approaching, many of you will be busy with music festivals. Lollapalooza, EDC, Bonaroo, Country Thunder — no matter what your music taste entails these tips will help you survive. Whether you are a festival newbie or a festival veteran, these reminders will prepare you for a great experience.

Water/Agua/H2O: However you fancy to say it, it will translate into one thing for you and that is heaven. Seriously, you’re going to pull some hunger games tactics to find some water. It’s like every festival doesn’t understand that water is, well, essential for fans to survive. They jack up the prices on a bottle and know you will cave to buying it because you really don’t have an option. You’re at their mercy. Open up your pocket, buy that water and hydrate. Cultivate Patience: You probably aren’t used to waiting an hour to pee, but now is the time to practice. More than likely, there will be rows of port-a-potties but somehow they will all be filled, all the time. You’re going to cultivate a skill of finding possible bushes to use as victims but the friendly cop eyeing you will remind you that that option isn’t really ideal. Be patient. Everyone else also wants to relieve their bladder. I feel like Ghandi preaching this, but your turn will come, I assure you. Survival of the Fittest: I never thought music and this saying would go hand in hand. If you want to be first row for your favorite band I suggest investing in some serious protection. No, no, like legitimate knee and arm pads. Chances are it will be a struggle, and be ready to put up a fight to get to the front.

Festival Guide Strip Down: For some of you this is like a given, what better time to go as bare as possible? For others, this is a new concept. You’ll catch on that the difference between a t-shirt and a bikini top is life changing when you’re spending the entire day in 90-degree weather. Wear as little as possible. Hey, it’s an excuse to show a little more skin. Poncho Time: I’m not even kidding with this one. Buy one, because there will be that moment when you’re totally vibing listening to your favorite band and it will just pour. It never just drizzles, it pours. And being wet isn’t fun. Unless you’re like totally into that natural, earthy, indie vibe, get a fricken poncho. You can get colorful; they sell colors so you don’t look totally geeky in white or black. No one carries an umbrella. You don’t want to be hit by a bunch of umbrellas when you’re in the crowd, so forget about it. Fanny/Funny Pack Throwback to the ‘80s but it’s totally making a comeback. Get one if you’re adventurous. If not, get a small satchel. Backpacks are heavy and you might miss it if someone tries to steal something from you. Think of how upset you will be when you’re lighter is missing.

7 Super Awesome Summer Festivals Whatever you are doing this summer, forget about it. This is your time to go out. What’s that saying? Young, wild and free? Yeah, something like that. Feel the music and soak up the sun. There’s still some time left to buy your tickets to these summer festivals – aside from Lolla. Anyway, here are the top seven summer festivals for 2013. 1. Six Reasons Why Record Stores Are Better than the Internet By Daniel James Broderick Everything has become available on the Internet. We depend on Youtube videos, Limewire, iTunes and Hulkshare to give us the newest, hippest, most bodacious songs to have ever hit the music scene. When’s the last time you went to a F.Y.E. or even Best Buy, let alone a real record store with a long-haired hippie cashier? Audiophiles are yesterday’s news, and tomorrow is full of sprouting Napster wanna-be websites. Because I’m still celebrating 4/20, which is infamously known as Record Store Day, I’m sharing with you six simple reasons why records stores are better than downloading huge .zip files off the information highway.

1.Cool Artwork on CDs, Vinyl — I like pretty pictures. 2.The hippie-long haired cashier has good stories 3. Finding a “secret treasure” album = :o 4. Record store shows are sweet! 5. I like to give $$$ to people, not corporations 6. You are guaranteed to get mad tail with those “alternative” peeps — If you use the right code words ;)

Bored? GO OUTSIDE! Summer is here! The NFL season is over, MLB doesn’t really matter, the NBA playoffs are just beginning but are getting kind of boring already and, well, golf is on TV. Soccer just gets a bit boring after awhile and NASCAR is exhilarating for the turn-left enthusiasts. Now is the perfect time to go outside and enjoy the sunshine until the Chicago Bulls win the NBA Championship (yeah, that’s right). Here are some wonderful sports you and your friends should play before it gets cold again.

3. Tennis – It actually is a really fun sport if you can get through sucking for the first two months of playing. If you still stink at tennis after that, you should probably give up and play something else.

1. Sand/Beach Volleyball – If you can play volleyball with your shirt off, actually play well and look ok doing so … guaranteed lay right there. Those Olympic players get mad ladies.

2. Flag/Two-Hand-Touch Football – If you can get into a league over the summer, it is possibly one of the most fun things you could do with your time. Nothing better than keeping track of your own stats and then bringing them up in random conversations. “What did you do this summer, Dan?” “Oh nothing, except for guide my flag football team to the Promised Land with 4,000 yards passing and 20 TDs, with only 2 Ints … suck it!” 4. Basketball … Streetball style – Outdoor basketball is a great way to enjoy the beautiful weather while also meeting new people. It also keeps your skills sharp, but might be a little embarrassing if the one stranger on the other team dunks on you.

5. Ultimate Frisbee – It’s great exercise if you are a hippie. This game tires you out, but it is just so much fun. Trick throws and all the cool ways to throw a Frisbee are fun to learn. It is a fantastic feeling when you defeat a team of high hippies at their own game.


WHERE’S THE INTRIGUE? 16


Russian Roulette with a loaded gun. Rock, Paper, Scissors sans rock and paper. A Republican primary in San Francisco. Predetermined outcomes are boring. Watching paint dry may be more fun—oh look, a drip! In a sports world where video highlights and a written summary follow everything, the only reason to watch is uncertainty. March Madness captivates with Cinderellas named Florida Gulf Coast and La Salle. An ultimate underdog eight seed last hoisted the Stanley Cup. The Wild Card Ravens own the Lombardi Trophy. The intrigue is the thrill. The NBA lacks intrigue. With every first round matchup now two games in, lower seeded teams are 2-14. The Golden State-Denver series looks interesting, but every other series is a yawnfest. The Pacers-Hawks matchup is so underwhelming Atlanta’s ownership has taken to selling half-priced playoff tickets in a meager attempt to fill their stadium. The NBA, where empty seats happen! Sure, it’s the first round. Higher seeds are supposed to cruise to early round advances. The Heat earned the right to cut the antlers off the Milwaukee Bucks. But the lack of intrigue will continue to plague these playoffs. The defending champion Miami Heat has looked unstoppable all year. Essentially the same team from one year ago, the Heat only replaced sharpshooting bionic man Mike Miller with Ray Allen, the greatest three-point shooter in NBA history. LeBron James, defending and three-time MVP, increased his shooting percentage to an absurd 56.5% this season and also recorded a career best 40.6% shooting from the three-point line.

Barring meteor strike, the Knicks will play the Heat in the Eastern Conference Championship. Much will be made of Knicks star Carmelo Anthony’s stellar season and smooth stroke. But the later the NBA playoffs get, the more it becomes about the role players. The Knicks may have this year’s Sixth Man of the Year in J.R. Smith, but the Heat have one of the NBA’s best benches. The Heat will advance with minor difficulty. Come championship time, regardless of opponent, the Heat will be better rested. The gauntlet that is the Western Conference will spit out a champion looking rougher than a freshman leaving Red Lion at 2 a.m. Whether it be the Nuggets, Thunder, Spurs or another team, the Heat will show up looking like a “before” picture of that sorry freshman before his first fateful night in the Champaign wild. LeBron will be tested before he responds ferociously, DeWyane Wade will be called old before he reverse dunks and Chris Bosh will be called a Boshtrich before, well, being a Boshtrich. The role players will have their say too. Do not forget Shane Battier and Mike Miller’s shining moments in last year’s finals. Such a shame for a wonderful sport to be ruined by the doldrums of unchallenged superiority. Even a huge Kevin Durant fan like myself can see the Thunder stand no chance against an improve Heat machine. If only some intrigue were to enter the scene. If only a fallen hero were prepared to return and challenge the terrible Miami trio. Hold on, Chicago is calling.
