GENERAL MANAGER’S MESSAGE

“ Welcome to the fifth edition of Sangu Magazine! It is less than 30 days to open, and we are delighted to unveil our culinary experiences to the world. As I look back on my days as a chef, 20 something years ago, those humble days bring back great memories; the culinary landscape then was definitely different, but what hasn’t changed is the emotional connection travellers have with food. The Maldives is a special destination, taking new heights in the culinary world. Whether it’s Lebanese or Peruvian cuisine, rare Wagyu beef or caviar or vintage bottles of wine, the island nation has a taste for fine and evolving cuisines.


The Fari Islands archipelago, once complete, features over 23 different restaurants and bars; The Ritz-Carlton Maldives, Fari Islands alone offers seven restaurants and bars, in addition to the destination dining experiences - definitely an exciting culinary landscape in one lagoon. The ambiences and cuisines are designed to take guests on a culinary journey around the world, though our focus will always be to curate a personalised experience for guests - crafting lasting memories. CULINARY LANDSCAPE Embark on an exquisite culinary journey, as the Fari Islands archipelago presents a refreshing culinary landscape, expecting to open 23 restaurants and bars. Ambiences, culinary creations and flavours are curated to take guests on a journey throughout the world. Guests can wake up to the aromas of freshly brewed coffee at the Espresso Bar in La Locanda, where the Southern Italian cuisine and customs unfold; savour indulgent mezze platters and succulent kebabs at Arabesque, taking your taste buds from the coasts of Lebanon to Northern India, or appreciate Oriental flavours at Summer Pavilion, a contemporary Cantonese fine dining restaurant. The Ritz-Carlton Maldives, Fari Islands alone features seven restaurants and bars at its dedicated Culinary Island, Grand Sunset Beach and Fari Marina Village. La Locanda - Custom and cuisine of Southern Italy The scent of coffee signals the arrival of morning, inviting guests to begin their day at the Espresso Bar in La Locanda, complemented by Southern Italian breakfast specialities and global favourites served from an open kitchen of fering personalisation and interac tion. This restaurant, ex tended overwater, presents a relaxing ambience throughout the day; the design is light and fresh, with floor-to-ceiling glass walls opening onto the Indian Ocean, tempting guests to graze around all day. Handmade pasta, fresh seafood and special homemade sauces and boutique oils


prepared by Chef Francesco Battisti, an Italian native, are the highlights of the restaurant, carefully paired with Proseccos and Italian wines. The Chef’s table comes alive with cooking classes and bespoke tasting menus, and a Private Dining Room for intimate dinners. Guests can enjoy Southern Italian customs with daily Sicilian Cannolis and sunset Aperitivos. Summer Pavilion – Contemporary Cantonese cuisine Floating overwater, Summer Pavilion offers a Cantonese tapas-style fine dining experience, a 600-label wine cellar and Afternoon Tea in a lantern-inspired space. The design is completed with a hidden Chinese garden filled with delicate plants and lanterns enclosed by beautiful latticework, evoking an elegant scene of a bygone era from the Orient. With influences and inspirations from the Michelin-starred restaurant Summer Pavilion in Singapore, this restaurant showcases traditional Peking duck to lobster dishes from a live lobster tank. Dishes can be paired with vintage wines or artisanal tea. IWAU – a celebration under the stars Celebrate under the star-filled Maldivian sky at IWAU, translated as ‘to celebrate’ in Japanese, with showstopping teppanyaki experiences. Guests can enjoy intimate moments by savouring freshly prepared sushi and sashimi served at romantic tables set within the iconic round-shaped pool. Or entrust your dinner experience to the Chef in an artistic Omakase experience where seasonal flavours take centre stage. A selection of sakes, whiskies and teas are available for a perfect pairing.

Eau Bar – an elegant oasis Overlooking the Indian Ocean, Eau Bar invites you to a sophisticated setting to relax under the Maldivian sun with a book, while enjoying fresh oysters and caviar. The zero-waste balanced menu features a large selection of plant-based dishes and fresh seafood prepared with Japanese influences, as well as healthy elixirs and cocktails prepared tableside. Afternoon tea is served with Hedhika, petite-sized sweet or savoury pastries filled with tuna and coconut, an integral part of the Maldivian food culture. Sunsets are celebrated with a refined Bodu Beru performance and a flaming ceremony, marking a full day of discoveries and the beginning of an evening of indulgence and reflection. Beach Shack - Joie de Vivre Live the Joie de Vivre lifestyle at the Beach Shack, where the Mediterranean meets the Maldives, with sand underfoot and the sea just steps away. Enjoy long lunches over laughter-filled tables with sharing dishes of grilled seafood alongside fruit- and herb-driven cocktails and an impressive selection of French rosés. Resident and visiting DJs spin throughout the day, fireside stories are told over s’mores; cinema nights are set on the beach and Lobster and Champagne nights are under the stars, while a host of weekly themed events around art, fashion and food curated for all generations are the highlights of the Beach Shack. Island Creamery Indulge in a wide range of decadent homemade ice creams and cold healthy treats.


Arabesque – a journey from Lebanon to North India An eye-catching tribute to a traditional Bedouin tent, Arabesque invites diners on a journey from Lebanon to North India. Located at the Fari Marina Village, the sunken dining room with hanging lanterns and colourful fabrics sets the scene for shareable mezze platters, tandoor-grilled meats and iconic street fare. Dishes are offered alongside flavourful hookahs, Turkish coffee, Moroccan tea and creative cocktails. TUM TUM – a colourful Asian Journey Tum Tum, a festive food trailer located at Fari Marina Village, offers the perfect stop amidst shopping, arts and culture. Its menu takes you across the Asian continent; each country offering its own version of street-friendly fare from meat- and vegetable-filled bao buns, steamed dumplings, aromatic soups and f lavour ful noodle dishes. DINE BY DESIGN Whether set on a private sandbank, a lantern-filled beach or a private yacht, the resort offers exquisite venues and curated menus to celebrate life’s most meaningful moments. Sunset Sandbank Dinner Savour the sunset and a barbecue spread on a secluded sandbank in the middle of the Indian Ocean. Under the Stars Dinner Dine under a million stars on the beach or in a secluded garden setting. Omasake IWAU Experience Japanese culinary artistry unfolds under the stars, with intimate seatings in the iconic circular pool. Epicurean Wine Cellar Dinner Embark on an epicurean journey with an exquisite pairing of rare wines and bespoke dishes. DINING AT THE FARI MARINA VILLAGE The Fari Marina Village presents a vibrant scene of art, fashion, music and culture. Guests can expect a world of flavours and island specialities at distinct venues. FARINE – An island patisserie, with traditional homemade butter croissants, signature bread, pastries and sandwiches. KŌEN – Enjoy teppanyaki, specialising in Japanese premium Wagyu beef from Akita prefecture. BRASA – Savour premium meats and South American marinades served on a countertop - a sharing-table concept dining setting. GO GO BURGER – Discover homemade gourmet burgers served from a truck on the beach. TUK TUK GELATO – Indulge in homemade cold treats and creamery ice-creams - the perfect pairing with the Maldivian sun. FLAVOURS OF THE ARCHIPELAGO The island nation is celebrated for its breathtakingly beautiful lagoons, colourful coral reefs and idyllic islands, but the culture and history are little known to the world. The Ritz-Carlton Maldives, Fari Islands revives the food culture of the Maldives, offering guests a slice of its maritime spice route past. Amongst its seven restaurant and bars, guests can taste and discover exotic ingredients and flavours of the archipelago.

At the helm of the culinary creations at The Ritz-Carlton Maldives, Fari Islands, is the Executive Chef, Nishantha, a Sri Lankan born who has made the Maldives his home for the past 20 years. His passion for travel had taken him to the heart of Sichuan province in search of the fieriest peppercorn, deep in the rainforests of Malaysia seeking for exotic fruits or a detour to his home country, Sri Lanka, to discover heirloom recipes from grandmothers. Guests can enjoy one of such discoveries at the Beach Shack, the Jaffna-style mud crab, a recipe passed on from generations. His philosophy is reflected in the resort’s culinary offerings; fresh and organic herbs and vegetables cultivated from the organic garden and sustainably caught fresh fish and lobsters from the Maldivian seas are part of the menus. One of the must-try Maldivian experiences at The Ritz-Carlton Maldives, Fari Islands, is the Afternoon Tea at Eau Bar. Guests can taste Hedhika, local bite-sized pastries and it is an added benefit for Marriott Bonvoy guests. Or enjoy the taste of the archipelago in exquisite glasses of cocktails prepared with the five spices of the archipelago: cinnamon, cloves, cardamom, cumin and turmeric, with the Indian Ocean as a backdrop.
